Note: Nutritional info may vary greatly, depending on the size of your berries, how deeply you dip them, and how thickly you dip them. Above info (calculated via caloriecount.com) is based on 15 strawberries and all of the peanut butter dip. Also: the nutrition label lists 1 gram of sugar, but this is naturally-occurring sugar in the berries (as opposed to refined sugar or added sugars).
Substitution Notes:
For the coconut oil: My first thought was to tell you to simply melt peanut butter chips and dip the berries in the melted chips instead of the pb-coconut mixture. But when I googled it, I was surprised to find that apparently nobody sells peanut butter chips for people who, like me, are vegan. So… homemade peanut butter chips might have to be my next project!
If anyone wants to experiment before I get around to it, I was thinking of trying this filling as a basic starting point for the homemade peanut butter chips. If you try it, let me know! 🙂
For the berries: try dipping bananas, cookies, truffles (or raw truffles like my fudge babies), raspberries… I wouldn’t try apples unless you are eating them right away. Apples tend to turn mushy when frozen.
