Pumpkin-Finding Tip:

The Libby’s pumpkin has been a bit hard to find lately, due to a poor pumpkin crop this year. But apparently the poor conditions did not affect organic pumpkin farms. If your store is out of Libby’s or generic canned pumpkin, make sure to look in the organic section before you give up! Or try a natural-food store. And if all else fails, you can buy a real pumpkin and cook your own.

    I LOOOOOOVE pumpkin!
    Unfortunately you can’t get canned pumpkin here in the UK, well not in your usual suspect supermarkets anyway.
    One of the leading ones here stocked it for a few months last year in autumn and I went nuts and bought tons, I was silently hoping they’d be there for good but sadly no. 🙁

    I used it in my oatmeal and made pumpkin pie, I was careful not to waste it as it’s soo precious!
    If I had it readily available I’d bake/cook a lot more with it.

    Butternut squash is a super duper substitute and my favourite but I prefer it just roasted. 😉

    Pumpkin and I have a long standing relationship. I would panic if I didn’t have at least one tin of pumpkin purée in my cupboard at all times. And a winter squash in the fridge… I like to add it to my oatmeal, make pumpkin pie, pumpkin muffins, pumpkin pasta, pumpkin stew… and since I have discovered this blog I am also now in love with squash fries and pumpkin pie babies. Ahh… it’s a tough life. 😉

    I have 2 cans of pumpkin but am saving them for when the craving is unbearable. The stores I have checked do not carry them right now because of the shortage last year. My favorite way to eat pumpkin is in oatmeal. That pumpkin pie mousse looks good though. Right now I satisfy my craving by eating other squash.

    Thanks for the tip about organic pumpkin! I only ever check in the baking aisle. Maybe I’ll have more luck in the organic section!

    I go through extreme pumpkin-love phases. Usually it hits me in the fall when you see pumpkin decorations and patches everywhere! Then I have to buy some pie pumpkins (and squash) and get baking!

    I make your Pumpkin Pie Babies and then cover them in chocolate and shredded coconut! They are the most amazing things!!! Like trail mix babies covered in chocolate. You should try it!

    Ah-ha! I’ve been looking everywhere for canned pumpkin lately. I use it in my dog’s favorite dinner, made with pumpkin, red beans, and brown rice. But lately, I’ve had to sub sweet potato (which my dog also loves) because no one carries pumpkin right now! I thought maybe it was just a seasonal thing. Thanks for clearing up this mystery.

    Love pumpkin! favorite things to do with it is the obvious pumpkin oats! Also banana ss with pumpkin and pumpkin pie spice, and truvia makes like pumpkin “ice cream” that is really yummi! and mixing it into polenta for a dinner + veggies etc is another fav.

    I can go through a good 40 ounces of pumpkin a week with oats–it’s just too good. It definitely begs for a sweet peanut butter to get the sweet and savory thing going

    Who knew there would be such a pumpkin crisis this year? I have literally driven across town multiple times to find a can. I’ll sell anyone the can of Libby in my cupboard for $24.99. 🙂

    That picture is so pretty and detailed wow! I am honestly not a big pumpkin fan. Maybe I have never had it done right, but pumpkin pie is okay. Perhaps I should take a leaf out of your book and try me some! 🙂

    i love pumpkin! my favorite thing to make with canned pumkin would have to be pumkin scones or pumkin scuffins!

    I stocked up on canned pumpkin in the fall, but blew threw my stash before christmas. I’ve been using pureed butternut in it’s place, which is just as good, but not as convenient. I pretty much eat it in everything, but I love making savory sauces with it, or just mixing it with a little milk and some cinnamon for a creamy “mousse”.

    I go through pumpkin phases. Hasn’t really hit me much this year, but I do have a can in my cabinet. Actually bought it for the pups b/c I give them spoonfuls whenever we switch dog foods since it’s helps with their digestion. Hmm, maybe I’ll eat it instead. Sorry pups. 😉

    That pumpkin concoction looks really good! I have to admit, I had kind of relegated pumpkin to pies until the past year or so – now I use it in all kinds of things and I wonder how I went so long without incorporating this into everything!

    I bought 2 huge pumpkins this winter and froze the puree, and have been enjoying it especially with the shortage…but now I’m out!! I looked in 3 different stores today!!! nada! I don’t know what to do, I eat it every day! I wonder if you can order it online haha

    I’m so in love with pumpkin that I’m still working off the huge quantities I bought at BJ’s and Sam’s club last fall. I heard a little rumor that canned pumpkin is scarce right now, but I haven’t had to look for it! Unfortunately, I will need to look soon and I’m not looking forward to not finding it!

    I’m a weird one (or probably just Finnish) but I never eat pumpkin. In anything. Hmmm.. I’m intrigued about it, because almost everyone in the blog world seems to be eating it on everything and with everything 😀 I think I’d like to try pumpkin ice cream, that can’t be bad!

    I like pumpkin in small doses, usually in muffins or pancakes. Sometimes I stir it into my oatmeal straight out of the can, but I REALLY have to be in the mood. I’m more of a sweet potato kind of girl!!

    LOVE the picture and it looks delicous! I went to the link for pumpkin mouse, but it didn’t say anything about the topping…it looks like you have some yummy crisp topping on it. I love crumbly crisp toppings! I’d love to know how you got the crisp on top:)
