Butter(nut) Me Up Fries

Coconut is the new Ketchup.

Coconut butter + butternut squash fries = This is waaaaay better than tomato ketchup.

Sorry, tomatoes.

For the fries…

“Butter(nut) Me Up” Fries

  • 1 Butternut Squash
  • a sprinkle of salt
  • cinnamon (optional, but awesome)
Procedure:
  • Cut the squash into fry shapes (use a fry cutter or a knife)
  • Preheat the oven to 425 degrees F
  • Put the fries and spices into a big Ziploc-type bag and mix
  • Line a baking sheet with tin foil, then spray with a tiny bit of Pam. (Wipe with a paper towel so it’s even on the foil.) Spread your fries on the baking sheet and shove ‘em in the oven
  • Bake for 30-40 minutes, depending on how crispy you like your fries, and depending on how many fries you put on the baking sheet.

Not missing from the equation were the ever-present chopsticks.

Math Time!

Other good coconut butter combinations: muffins + coconut butter, carrots + coconut butter, anything + coconut butter… There’s almost no wrong answer! Now that’s the kind of math they should be teaching in schools. It’ll be first on the agenda when I become president.

Oh Katie, you know I am always your biggest supporter but, I’m afraid, this post is where you and I must part ways. I loathe coconut. Seriously. I will eat anything, really, anything and usually like it. But coconut will never pass these lips! It does LOOK pretty, though, especially on all those fries.

Have no fear, I will still vote for you when you start your run for the White House. Yay for Vegan in Chief!

coconut butter is terrific with sweet potatoes and on breads and stuff.
the title is nice. i think it takes a long while to find anything that fits..might title is ridiculous..it was a whim decision…whatever, it is what is…just words 🙂

    Hi Katie –

I like the new header! It is colourful and creative. 🙂
And I am making more of your Butternut Fries tonight to use up half a butternut squash leftover from last night’s supper. Mmmm… I am going to the big health foods store in the city today so if I can find coconut butter I will definitely give it a try too.

I think its fun. Your tag line is catchy too. Its nice that there is a color that you are used through out it to tie it together. Good stuff girl! Anyways have a fantastic day!

  6. Melissa says

Oh, these fries look so yummy-what a great idea!

I like this header way better than your preceding one, because I thought the purple was a little too dark. Now it looks so much brighter and fun and I also adore your picture!

  7. Mae says

Your header is too cute!! Haha I love the pic of you and Pres. Bama!! So hilarious!
Do you eat all finger food with chopsticks too (like toast, pizza, etc.?)

  8. Stef @ moretolifethanlettuce says

what is this real life you speak of? haha, oh, right, you hanging out with the prez and all :). i like the new header, but i liked your old one too!! nice food combo!

  9. lexi. says

Oh my goodness, those fries with the coconut look so good!

I really like the new header. I love the type font, and of course the message! And you look stunning in that photo, per usual 🙂

Hi! I just stumbled onto your blog from HEAB. I read through a few of your posts, and I’m so excited to read more! You seem like such a fun girl! And those fries look ah-may-zing! I just might have to make some tonight. Oh, and I don’t know what your old header looked like, but this one is super cute:)

  11. Abby says

As soon as I clicked on your site I noticed the new header.. soo cute!! 🙂

Im making roasted butternut squash chunks (not fries) as we speak! Great minds think alike!

    Happy Sunday, Katie 🙂

  12. Vicki says

Hey there! I only recently stumbled across your blog (LOVE IT!!!) but I do really like the header 🙂

Can I ask – is coconut butter a recipe or can you buy it?

    Vicki

  13. Katie says

I love the new header, you are so beautiful!

That coconut butter/squash fry combo is also beautiful…I’ll teach that kind of math in my class. 😉

  14. Just Audrey says

I love butternut squash fries. Thanks for inspiring me to go get some squash and make them stat!

I have not had coconut butter but I do use coconut oil.

I love the photo of you an the prez. You’d make a great one! “With liberty and cupcakes for all.” Hehe.

  15. Iris says

Real life? What is this nonsense? I assume you live only to serve us, your loyal readers! J/k obvs…

I love coconut, but I think I might be developing an allergy to it, which does not make me happy at all! But I’m in the midst of an elimination diet (day 2 of a smoothie cleanse…I’m sso hungry!), so hopefully I’ll find out that coconut is fine for me.

  16. Veggiesmack says

I like the new header, it’s bright and cheerful. I think it pops more than the previous one. 🙂

The coconut butter on the butternut fries looks drool-tastic! Yum!

  17. Trail says

I like this header even better. The light/dark combo is easier to read and pops more. Have you considered making the title “Chocolate-Covered Goodness” with the same tagline? It would play on words even more between healthy goodness and tasty goodness, but still fit perfectly with the adorable and catchy tagline. Just a thought. It’s great either way.

And of course, the content is what keeps us drooling for more! That and hearing that I have won the coveted Vita-Mix. Seriously, I think I dreamed about it last night!

  18. Kristie says

The header is adorable. Mainly because it features YOU so how could it not be? 😀

I’ve never tried coconut butter. Think I’m missing out? Maybe just a little? GASP. Definitely should try getting my hands on some sooner rather than later. I feel like my eating experiences might just improve drastically!

  19. Jessie (Vegan-minded) says

That combination of those butternut squash fires and coconut butter looks wonderful! Cute new header too. 🙂

  20. Claire (College:Raw) says

Your picture in the banner is SUPER cute! I love the colors, but have you considered using a lighter pink, perhaps a color to match the pinks in the crown you’re wearing?

And I used chopsticks to eat a salad from Whole Foods yesterday…I’m still trying! It probably wasn’t the best idea to try to eat spinach with chopsticks, haha.

  21. Heather Eats Almond Butter says

Love seeing your cute little face on your new header. 🙂

Also love all things covered in coconut butter. Amazing on squash, pancakes, oatmeal…everything. Thanks again so much for restocking my Artisana supply Katie. Love you!

  22. Jocelyn says

I love your new header 🙂

I am off to bake some of your goodies! For fun..yummyness AND 6 bonus vitamix entires..hehe.

  23. Andria at Veg is Sexy says

Wow those look awesome! I think I’m going to make the fries this week.

I think the header is so cute, but I like “CC Vegan” or “CC Katie” better than “CC Healthy” – I just feel like they are more personal and have a better ring to them. The “Healthy” part is already implied 😉

  24. Ashlei says

<333 love the coconut girl! Mmm looks amazing! 🙂

I like how you coordinated your blue outfit with the blue tie on obama. You're so stylin'! 😉

  25. Averie (LoveVeggiesAndYoga) says

i noticed the header yesterday….cute! i like this better than the last one but whatever you end up with will be awesome.

coconut + squash fries = awesome combo!

  26. Bekah says

Um. YES. Completely agree with this post. And I still am gonna enter in the vita mix giveaway.. just didn’t want to comment there. Hope I’m not too late.

I definitely want to try the coconut butter on butternut squash fries, sounds delish!
    Thanks for the fab giveaway
    Xxx

  28. Teresa says

Hey Katie! I’m entering the artisana coconut giveaway via this awesome post. The only fries I eat are of the orange squash variety- butternut, kabocha, sweet potato… Oh so amazing! Add coconut butter (and maybe a drizzle of yacon if your feeling extra fancy) and we’ve got a match made in heaven! Thanks for the giveaway and pointing me out to all these awesome coco butter recipes!

  29. Tricia Marie says

That looks absolutely delicious. It reminds me of sweet potato fries- except this is probably healthier!! I love that you’re able to make recipes with WHOLE foods AND make it taste good. You don’t compromise flavor or taste just to eat healthy!

  30. Brandae says

Oh this looks so delicious – this is what I’d try first if I won the coconut butter! YUMMY! I love sweet potato and butternut fries already but imagine they’re simply decadent with the coconut butter drizzled on top!

  31. Amy H says

I need to try coconut butter on squash. It sounds interesting, which means I am sure I would like it. I loaded up on squash at the farmer’s market today…all I need now is some coconut butter to go along with it;)

  32. Heather says

    Katie,
ok so I’m hoping you can answer this question for me what exactly is the difference between coconut butter and the coconut spread that earth balance makes? I tried internet searches but no luck. I thought it was the same thing so I bought the spread and now I am second guessing that choice.
