Peanut Butter Breakfast Pudding

I’m going to be on television!!

The Dallas ABC affiliate news team is filming a story on me, for the 5 o’clock news! It’s pretty much the coolest thing to happen to me since… ever?!

For the feature, I’m thinking of making this recipe.

Right now I’m more excited than nervous, but that’s maybe just because it hasn’t really sunk in yet how many people are going to see this! Today’s agenda: figuring out what to wear, setting up dishes, and going on a cleaning spree. To power me through, I made a stand-by favorite breakfast:

Peanut Butter Breakfast Pudding

(serves 1)

One of My Oatmeal Recipes.

  • 1/2 cup rolled oats
  • 1 cup milk of choice (I used almond)
  • 1/4 tsp salt
  • 1/2 a ripe banana
  • 1-2 T peanut butter (or other nut butter)
  • 1/4 tsp pure vanilla extract
  • sweetener (the amount will vary, depending on your tastebuds and what milk you use)
  • optional: chocolate chips

Cook the oats, salt, and milk (either on the stove or in the microwave). Meanwhile, blend the pb and banana. Then add your vanilla, sweetener, and 1/2 of the cooked oats to the blender (I used a Magic Bullet) and re-blend. Stir in the rest of the oats. You can blend all the oats if you prefer, but I like the chewiness of leaving some un-blended.

Question of the Day:

Are you comfortable speaking in front of a group?

Or do you dread giving public presentations? Have you ever acted in a play or been on tv? I always loved giving class presentations and speeches in school, so I probably would’ve enjoyed acting. Unfortunately, I was too busy with soccer and tennis to join the drama club. As for the upcoming tv story, I am nervous about one thing (which might sound silly and superficial): what to wear. I’m clueless about fashion. Any tips?? Please send them my way!

How exciting!! I was on TV for work once and our PR ppl said to wear solid colors, no black or white, and pastels are generally better. I remember because it was cold out, and I had very few warm pastels to choose from!! My mom’s advice has always just been to smile!

You should wear bright colors. Black, white, and neutrals will wash you out under the camera lights. My two cents? Where something that envokes the mood of your blog, which to me is young, fresh, and fun.

Good luck on the TV debut! I agree with the comment above about sticking to solid colors. You want your marvelous food and your shining enthusiasm to stand out, and that can be somewhat harder to accomplish with distracting print or highlighter-inspired colors. You could also call your contact at the station and ask for their recommendations – they’re sure to have some!

Wow how exciting, I am so happy for you!!!!! I hope you will post the video on your site for those of us who don’t live in your area. The deep dish cookie pie is wonderful, great choice! I eat a similar oatmeal to the peanut butter pudding you posted very often. I was inspired to make it based on your melted banana trick. I make steel cut oatmeal, since I’m not a huge fan of creamy like you are, then I use your melted banana trick and add it as well as a dollop of almond butter in the oatmeal once it has finished cooking. I just stir it together. Too lazy to get out the blender, but it is great. I like the idea of the vanilla extract I will have to add that in as well. I recently added 1/2 tspn of cinnamon which was a nice addition as well. I don’t use any sweetener, the melted banana is sweet enough. Thanks so much for your great site and inspiring all of us to eat better and enjoy it! Wishing you the best on your telelvision debut!

You’re going to be SO fab! The cookie pie is a great choice, I haven’t made it though so I don’t know how quick and easy it is to make but I know everyone loves it! I know your chocolate fudge pie would be super easy to make and impressive, and your cookie dough dip would probably go over a treat too!

Don’t worry about public speaking – just be yourself and pretend it’s just you and the interviewer there. And if you can get it on YouTube so we can all watch! :) x

Congratulations! That is so exciting. :) This sounds like a great recipe to use. I’d go with what other people said about what to wear: solid colors. Partly, that way people can see what you are doing with your hands- an old secret of sign language interpreters. And I would add- wear something comfortable that makes you feel confident and happy. :)

OHMYGOODNESS!!! How exciting for you…I can’t imagine why it hasn’t happened sooner. =) I use to be mortified of speaking in front of groups, but then when I was asked to…I learned the empowerment that knowing someone has enough faith in you to think you can do it…and I learned to love it! I relax by beginning with a couple of funny stories (that may not be your option on tv!) and it gives me time to swallow the lump in my throat, and I am off and running. You have sooo much good knowledge and wisdom to share..you’ll do just great! Congrats!!!

Oh and total coincidence but I had a dream last night that I was making your pizza hummus and used a whole can of garbanzo beans instead of just the 1/2 cup called out in the recipe and freaked out because I thought I had ruined the batch. But that’s all I remember so I don’t know how it turned out in the end. Totally random! lol :)

Do you think you can make this the night before? (If someone already asked this, you don’t have to answer, I’ll look up at the comments after I write it) Because this would be the BEST way to start my morning and I’m just too crunched for time getting to work.

As for fashion, I am a fashion teacher! I would recommend something black or neutral, because it will put the focus on your face. Do you have an outfit that makes you feel like you can rule the world? Wear that. You’ll be comfortable and you wont waste energy worrying about it while you’re on camera.

Congrats!!! I only recently discovered you (via pinterest) and your recipes look great. I can’t wait to try them. You’ll do great, best of luck to you!
Public speaking isn’t my forte, I think I manage to pull it off well enough (at least I think so) but inwardly I am in total freaked out mode.
As for dressing, nothing over the top. I think one key bright piece will make a nice outfit have a pop. Perhaps a bright blazer or cardigan. You’ll look great no matter :)

Funny I had banana peanut butter oatmeal for breakfast today but I snuck in a few chocolate chips.
As for what to wear, I say wear something you are comfortable with because the last thing you want to do is fret over your shirt riding up or something like that. Simple but classy.

Congrats on your TV appearance! That’s so exciting!

If I were in your place, I’d err on the side wearing something simple and comfortable. You will be nervous enough, so you don’t want to be thinking about messing with your outfit or potential wardrobe malfunctions! With that being said, using something that’s brand new and hasn’t yet been tested probably wouldn’t be the best idea. I would definitely go with something tried and true that you feel GREAT in.

Oh my gosh, I’m so, so excited for you!! What a wonderful opportunity and you totally deserve it! You create the most amazing recipes and I’m glad you get to share them with the tv-viewing world! I’ve always been comfortable with public speaking and was in plays growing up and then was in Speech and Debate and Moot court in high school! I’m with you, figuring out what to wear is the hardest part! I’d go with something classic and if you are going to be cooking you could wear a cute apron!

Congratulations on this splendid TV opportunity!! I was on tv for an icecream commercial. While shooting, they said it’s only an audition.. so naturally I wasn’t very nervous. But as it turned out, they used the audition footage for the commercial. oops! My tip is to wear 3/4 length sleeves… easier to work with, in a kitchen.
I can’t wait to make your deep dish cookie pie! I hope you can suggest a workaround for the 1.5 C brown sugar. That will make the pie completely healthy. :)

I use Nunaturals stevia baking blend. You can go cup for cup but I’ve found I get no stevia taste if I use half the amount. It’s still plenty sweet enough!

I tend to halve the recipe and use about 5-6 Tbs of baking blend.
That stuff is *awesome*. Nunaturals is the only stevia brand I like – no icky aftertaste.
I use it for everything – homemade vegan frozen yogurt, ice cream, baking, etc. :) I even used half baking blend and half powdered sugar recently to make a really tasting frosting.

I’m actually going to be on tv next week too! Just the local morning show, but I’m still nervous about what to wear too! I went shopping last weekend and completely struck out. My fashion-y friend told me that she’s heard you should stick to solid colors rather than stripes or patterns when you are on tv, but that you should go with a nice, bright color like a blue or green or red. Does that help? Have fun!

HOW EXCITING!!! You definitely deserve it! Just think of how many people will see that HEALTHY can be DELICIOUS!!!!!!! Awesome opportunity – I am so pumped for you!

I am a teacher, so I’m comfortable in front of a group. I teach 7th graders, but then I also teach dance classes (zumba, cardio dance, hip hop, abs) for adults, and I enjoy both. I was invited to speak earlier this year at a university about classroom management. At first I was nervous, but I really enjoyed it! They asked me to come back this semester for another seminar, and I’m thinking of trying to get my name out there to work with other universities. :)

You’ll be great!!!

Please record the broadcast (or get a friend to) and then you can figure out how to post the video later.

A DVR would be the best way to record, but a VCR would be OK if a DVR isn’t available.

Wow Katie Congratulations!!!

Will people outside of Dallas be able to watch the show? Maybe in a couple of days on You tube or something.

And it’s not silly to be nervous about what to wear. I would be too!

As for me, never been on TV. I was in the newspaper once though… in the 5th grade, since I was part of a project (writing and putting on a play, actually) which won a local competition.

This looks delicious. I’m on tv a lot. Usually wardrobe likes jewel tones especially purples and blues. Avoid red or white and don’t wear a lot of black. Avoid prints and a little layering usually is nice. Wear accessories but nothing too crazy. Earrings look nice. Good luck and have fun!

What a fabulous recipe! I love anything that is pudding-like (hence my love for oatmeal and thick smoothies).
I completely dread speaking in front of groups. I’ve gotten much better after having done it frequently throughout grad school, but it still gets me anxious. Surprisingly, doing video blog posts has also helped a lot!

You GO Girl! That’s pretty much the most exciting thing EVER. And you will obviously rock it! I’d be SO nervous, I’m definitely not a presentation/perform in front of people kinda gal so being on TV would pretty much be terrifying for me. It just seems SO perfect for you though. And you picked an amazing recipe to showcase. Oh yes I’ve tried it. Oh yes it disappeared in a day. SO so good. And this PB Breakfast Pudding is going on my breakfast to-make list right now too. I totally forgot about your blended oats technique, I used to do that a LOT after I first found out about it from you but it flew off y radar over time… I’m so excited that you reminded me. I have just about no fashion sense, lol. But I hate speaking in a public group because I am naturally a really quiet person. I remember when I moved to another town when I was starting 5th grade. The desks weren’t in groups or next to each other and I barely talked for 2 whole weeks! (a group of people even started calling me, ‘the girl who never talks’) then the teacher put the desks into groups of 4 or 5 and then I started to become more social.

I decided tonight to get healthy. I have been wanting to for a while now but. I have been “Pinning” on Pinterest and surfing Foodgawker and I have come to know so many great blogs like yours here. I am going to get healthy. I am going to blog it too (then I will have to go through with it right?? I want to get other people in on this. I don’t want to do it alone.

Hi Katie, congratulations and break a leg — or, should I say, break an egg! BTW, I don’t think breakfast is too early for a light sprinkling of miniature chocolate chips, do you? Just seems a shame to leave out the chocolate if you’re going to have peanut butter. I’ll let you know how it goes, but it is safe to predict that my 9 and 12 year old sons won’t be complaining (nor will I!) about breakfast tomorrow.

Haha I actually *did* add chocolate yesterday! I throw in some Dagoba 100% chocolate when it’s still warm, and the chocolate gets all melty.

The oatmeal pudding looks awesome, and very similar to how I make my oatmeal. I add in egg whites too, because I love that custard-y flavor.
I’ve gotten really good at talking in front of a group, because I’m a teacher and have to do it every day. Piece of cake now- but it wasn’t always that easy!

Bravo! We need more good news like you getting on the news! You’ll be fabulous. Everyone remembers their first time;-) I’m an executive coach and work with folks on executive presence–the trick is ENERGY–which you have oozing out of your photos, so no worries. A tip from an old movie–tuck the back of your shirt or dress down into the seat when you sit down (or tuck it into your shirt or pants), it helps remind you to sit up straight so the camera can focus on your beautiful face. Break leg!

1) This pudding looks so incredible, I can’t wait to try it out.
2) Congrats on the upcoming TV feature. That’s so awesome. Ironically I got an email earlier this evening (this isn’t nearly as cool but…) to speak on a local panel about food, cooking, food blogging and social media to a local organization. I have spoken at quite a few different universities across the country about design and illustration, I have made pitches to large agencies and clients about our work and have been interviewed by magazines and filmmakers, but somehow talking about food and a passionate hobby still kinda makes me nervous. Being in front of people and talking can be hard, knowing your being filmed or recorded can make it even more nerve wracking (IMO), but I promise, once you get going and can take a few deep cleansing breaths, it will feel totally natural and then you will never want it to stop. At least that has been my experience. Good luck, can’t wait to hear more about it.

I hate public speaking. I have to take a speech class for my major and I’m avoiding it like the plague! And I dread doing presentations.
I used to be the Oregon Goodwill Ambassador for Muscular Dystrophy when I was a child and they would make my sister (who was also a Goodwill Ambassador) do all these public speaking evens, news paper articles, news interviews, the MD telethon. I did it for two years and hated it. I cried every time I had to do any of it (I was a very dramatic child). I don’t cry about public speaking anymore, but I do get some pretty sexy rosacea before I talk in front of a large group.

I recently had my first TV stint as well. My husband is a sports anchor so he is used to being on camera. I asked him for some pointers…..here are a couple. Don’t look at the camera….look at the person talking to you, and remember it is just a conversation you are having. you are sooo talented you will be fine, besides you are passionate about what you are talking about so let others see that!

Thanks so for much for sharing this. I made this for my kids as a snack this afternoon and they were practically LICKING their bowls, as was I! My bananas weren’t very ripe and I was low on Splenda sl I added some sugar-free caramel syrup that I use for my coffee. This was so delicious. I can’t thank you enough. Loving your blog.
