S’more Muffins/Cupcakes

S’more Muffins

2 c Graham crackers, crushed
2 t Baking powder

1 c milk of choice
1 tsp energ powder OR 1 tbsp flaxmeal
2 tbsp pure maple syrup or agave
Chocolate chips
Optional marshmallow fluff (Ricemellow Creme is vegan, as is Smuckers marshmallow ice cream topping)

Directions: Preheat oven to 400 degrees F. Grease 12 muffin cups or line with paper muffin liners. In a large bowl, combine cracker crumbs and baking powder. Add the agave (tip: spray your tablespoon with oil spray so the Agave slides off easily). In a separate cup, stir together the milk and egg replacer. Stir this into the dry ingredients, mixing just until moistened. Spoon batter into prepared muffin cups and stick some chocolate chips into each. Bake in the preheated oven for 15 to 18 minutes, until a toothpick comes out clean. Let stand for 5 minutes. Spread marshmallow fluff over the muffins. Yield: 8 Servings

    Health Valley makes a vegan graham cracker. You can get them online at Veganessentials.com. Or you can make your own. Sadly, I haven’t found any vegan graham crackers that are the “normal” graham-cracker size and shape.

    These muffins are a great idea. I bet keeping the recipe simple contributes to their success. I would definitely have one with the marshmallow fluff icing!

    It would be fun to get one of those little culinary torches and singe the marshmallow fluff a bit like a real burnt marshmallow 🙂

    OMG!!! S’mores muffins! I swear muffins are the perfect meal. haha. I will definitely be making these. I ALWAYS have Ricemellow Creme in the house. It’s so good with cashew butter.

    Trustmyintuition- no marshmallow fluff is not vegan, it contains egg, but Ricemallow creme is a vegan version that is very similar to marshmallow fluff.

    I concur. my first try too! i feel like i ought to look around a bit more though….naw–this is it, gotta be, with that little loop of cream at the bottom of the second chip from the right. might still go peruse some other recipes. I’m back in the states on monday; does that count? i’ve got all these recipes from england that use scales and no scales when i get back home….

    I would love to make these but I am not vegan so I don’t have egg replacer. Would I have to reduce the liquid if I use 1 whole egg?

      I think you’d be ok with the same amount of liquid… but I really don’t know much about working with eggs! Sorry I can’t be more helpful. But if you do end up making them, let me know how they turn out! 🙂

    Whoa, I’ve never seen this recipe before. I think it is one that missed being indexed! It looks yummy! Is there a way to make it without egg replacer? A couple recipes I’ve seen on here lately have called for some. I might have to go get some kind eventually.
