S’more Muffins/Cupcakes

S’more Muffins

2 c Graham crackers, crushed
2 t Baking powder

1 c milk of choice
1 tsp energ powder OR 1 tbsp flaxmeal
2 tbsp pure maple syrup or agave
Chocolate chips
Optional marshmallow fluff (Ricemellow Creme is vegan, as is Smuckers marshmallow ice cream topping)

Directions: Preheat oven to 400 degrees F. Grease 12 muffin cups or line with paper muffin liners. In a large bowl, combine cracker crumbs and baking powder. Add the agave (tip: spray your tablespoon with oil spray so the Agave slides off easily). In a separate cup, stir together the milk and egg replacer. Stir this into the dry ingredients, mixing just until moistened. Spoon batter into prepared muffin cups and stick some chocolate chips into each. Bake in the preheated oven for 15 to 18 minutes, until a toothpick comes out clean. Let stand for 5 minutes. Spread marshmallow fluff over the muffins. Yield: 8 Servings

Katie, these s’more muffins are beyond brilliant!!!! what brand of graham crackers do you use? vegan graham crackers are hard to come by…

  2. Vegan_Noodle says

Yes, I second veggie girl’s question…what brand do you use? I should probably order some online because I haven’t found them here.
    S’more muffins sound brilliant!

  3. The Little Vegan says

Health Valley makes a vegan graham cracker. You can get them online at Or you can make your own. Sadly, I haven’t found any vegan graham crackers that are the “normal” graham-cracker size and shape.

  4. LisaRene says

These muffins are a great idea. I bet keeping the recipe simple contributes to their success. I would definitely have one with the marshmallow fluff icing!

It would be fun to get one of those little culinary torches and singe the marshmallow fluff a bit like a real burnt marshmallow 🙂

  5. Joanna says

OMG!!! S’mores muffins! I swear muffins are the perfect meal. haha. I will definitely be making these. I ALWAYS have Ricemellow Creme in the house. It’s so good with cashew butter.

  6. Crazy Vegan Mom says

These sound awesome, I have to try them.
Trustmyintuition- no marshmallow fluff is not vegan, it contains egg, but Ricemallow creme is a vegan version that is very similar to marshmallow fluff.

yayyy I believe i’ve found the picture for the giveaway!!! Yippee!! I’m so glad that you came up with such a creative way to do your giveaway!! I would love to bake more vegan treats like I have lately!!! (Peanut butter and jelly banana bread all the way!!!) 😛

  9. Anna says

I concur. my first try too! i feel like i ought to look around a bit more though….naw–this is it, gotta be, with that little loop of cream at the bottom of the second chip from the right. might still go peruse some other recipes. I’m back in the states on monday; does that count? i’ve got all these recipes from england that use scales and no scales when i get back home….

  10. Jules says

Hi! I used to comment a lot, but then I stopped commenting because I’ve been very busy with school and whatnot.
Anyway, this is my guess for the kitchen scale giveaway 🙂

  11. Ava says

Yes!!! Found it! Haha…that was frustrating (I went through all the desert-like sections before this one), but oh so satisfying in the end. Plus it was an excellent way to procrastinate on studying for finals. Thanks for holding the giveaway!

This was one of the first recipes I picked for the mystery picture, but I said “NO” right away, and now I’m realizing I may have been wrong to so quickly dismiss it! Here’s my 3rd guess, although it looks as though many have already guessed this recipe.

  13. Vanilla says

    OOoohhh!!! FINALLY I FOUND IT!!!
    Guess #10 is the one!

I knew it was a Hershey kiss or something like that, so I typed ‘kiss’ and ‘hershey’ but nothing looked like the pic!

Now give me my scale! haha just joking, it was fun!

…but I should be doing my homework instead of trying to win a kitchen gadget, chut, don’t tell my mom!

  14. Kelly Michelle says

this is clearly the right answer, I knew as soon as I saw the first picture …. but I also clicked on your original photo which took me to a link with a bigger photo… which totally gave it away 🙂 (you could see the chip/frosting/cupcake combo

  15. Yoga Witch says

This is my guess for the scale contest… And thanks for having such amazing giveaways! That’s really generous of you!

  17. k says

i think this is the mystery close-up picture! i’d love to win a food scale…anything that will help me with my baking skills is a welcome addition to my kitchen!

  18. Tara says

Hey, I just came across your blog. These recipes look amazing. I tried the melted banana trick this morning — DELISH. Anyway, this has to be the mystery picture. I really need a new kitchen scale!!

  19. Erika says

I would love to make these but I am not vegan so I don’t have egg replacer. Would I have to reduce the liquid if I use 1 whole egg?

    Erika 🙂

    • Chocolate-Covered Katie says

I think you’d be ok with the same amount of liquid… but I really don’t know much about working with eggs! Sorry I can’t be more helpful. But if you do end up making them, let me know how they turn out! 🙂

  20. De says

Whoa, I’ve never seen this recipe before. I think it is one that missed being indexed! It looks yummy! Is there a way to make it without egg replacer? A couple recipes I’ve seen on here lately have called for some. I might have to go get some kind eventually.
