Carrot Cake in a Bowl

What’s up doc?
In a former life, I was Bugs Bunny.

I even have a special recipe tab: My Carrot Cake Recipes.
Now, there’s one more for the list:

This is based off of the wildly-popular Banana Bread in a Bowl.

And you get a vegetable serving from this breakfast!

Carrot Cake in a Bowl
(serves 1)

  • 1 banana (I used frozen)
  • 1 cup milk of choice
  • 1 cup flake cereal (I used spelt flakes) (You can use gluten-free)
  • 1 teaspoon pure vanilla extract
  • 1 large carrot, peeled
  • dash salt
  • optional: you can also add some coconut butter or oil

Steam the carrot first, then combine all of the ingredients in a food processor, blender, or Magic Bullet. Blend until smooth. Now eat! Optional: top with walnuts, shredded carrots, cinnamon, and/or raisins.

For my next carrot-cake magic trick, in honor of Bugs Bunny, I’ll make carrot cake ice cream. After all, I like putting vegetables in my ice cream, as I proved when paying homage to another favorite cartoon character—Popeye!

    Love this recipe!!!! I remember growing up I LOVED Animaniacs. I used to play the old video game with my brother all the time and we would have a picnic every time we went into the WB store. They had a bunch of cool set-ups for the show and such. Yup, I was pretty into them!

    I liked Tom and Jerry (old school, I know) but I also LOOOVED Recess, Arthur and Doug. Good stuff! We had such great cartoons…now kids have Spongebob crap!

    I loved Looney Tunes and Tiny Tunes — also Mickey Mouse, Porky the Pig, Animaniacs, I’m sure there are more but that is all I can think of for now.

    My favorite cartoon character was Chip of Chip and Dale…mostly because of the show Rescue Rangers! My brother and I got the Chip and Dale stuffed animals on our first trip to Disney…I still have my Chip!

    How creative!! I love love your recipes. I love even moreso the idea of paying homage to our fave cartoon characters through food. My fave cartoon was the Jetsons. I just loved the whole futuristic thing. I feel like we could totally bake up some interesting concoctions for that one!

    I am most definitely making your carrot cake in a bowl! I’ve made carrot cake oatmeal before with shredded carrot, but I never thought to cook/steam the carrot first.
    After you steam it, do you wait for it to cool or run it under cold water before blending it?

      I usually just throw it in, hot. It’s not a big amount, so it doesn’t heat the rest of the cereal (especially since I’m using a frozen banana). But I think your idea to run it under cold water is a great one… I’ll try it next time! 🙂

    My favorite character growing up was Bugs Bunny too! When the Looney Tunes Acme circle thing would come on before the episode began, I would always hope it would show Bug’s head because that meant the episode was about him 😀

    Fave cartoon characters…hmmm, I used to watch Scooby Doo all the time and loved that gang when I was growing up after school. I was never that into cartoons, but give me and episode of Three’s Company or the Brady Bunch and that was where it was at for me 🙂

      Hehehe you sound just like me! Chocolate, then carrot cake, and I *just* discovered the joys of red velvet. (with my red velvet pancake recipe I posted a few months ago… I’m thinking of doing cupcakes next!)

    We are more alike than I thought! I love putting carrots in my oatmeal, smoothies, yogurt, etc. Hey, why not? Carrots, when roasted, are one of the sweetest root veggies out there! Yum. I made the best carrot protein porridge recently with coconut milk, cinnamon, raisins, carrots (steamed) and coconut butter! Holy- heck it was good.

    So, I eat bran flakes like every morning. I love them-with a little cocoa powder. I was wondering if you happen to know of any other easy fun things to do to it?
    Also, wondering if you take a vegan mult-vitamin? My mom is wanting me to take one, and I have some mixed feelings about it.

      Besides this and the Banana Bread in a Bowl, I don’t… but someone else said she crushes bran flakes up and uses them in the single-lady cupcake recipe to make a bran muffin!

      As for a multi… I’d see a doctor and get a blood test to see if your levels are all ok. I don’t take one, since my levels are all ok and I don’t want to OD on any of the vitamins I’m already getting 100% of from diet. But I do take an omega3 supplement, and I make sure to get enough vit b12 from fortified foods every single day.

    My favorite cartoon character was Misty from pokemon. I had older brothers, so I was into all the boys shows!

    I love anything with carrots in it!! Carrot cake is one of my raves so I’ll definitely be trying this soon 🙂 Doug was my favorite cartoon of all times…I loved skeeter!! And the his dog pork chop lol. They definitely don’t make cartoons like they used to!

          Haha, Katherine, I definitely watched that movie! In fact, my siblings and I were just talking about it the other night. I, like you Katie, grew up living overseas, so when my parents found any VHS’s in english, you’d better be sure they were buying them for us to watch – Totoro being one of them!
          – and great recipe. Tried it this morning and will definitely be making this more often!

    ive tried your banana bread in a bowl, pumkin bread in a bowl, and gingerbread in a bowl and even though all these were absolutley wonderful and unbeleiveley tasty this one was by far my favorite! who knew i would love eating veggies for breakfast this much! its just so good especially when it thickens!!! mmm mmm mmmm

    I made this FOUR times already and it’s SO yummy! Great recipe, Katie!

    The fourth time I made this, I ran out of flake cereal (I was using Special K) so I subbed in Fiber One cereal. It came out tasty still, but I had to up the milk to 1 1/2 cups. Just a tip for anyone who wants to try with a different cereal!

    I recently had a baby and was looking for healthy recipes to keep me going and I stumbled across your sight. I have tried a few of the oatmeal recipes, the Guinness brownies and now this….I am in love!!!! I write down the recipes I tried and liked, but my stack keeps getting bigger because I fall in love with everything I try! Thank you!! 🙂
