Oh… ummm… me neither. No, of course not…

*shifts awkwardly*

Anyways…

Just in time for Halloween, this recipe combines two of my favorite foods: brownies and Butterfingers! If you’d prefer, feel free to substitute your favorite chocolate bar or one of my Healthy Halloween Recipes.

Butterfinger Brownies

Ingredients

  • 1/2 cup plus 1 tbsp milk of choice (135g)
  • 1 tbsp ground chia or flaxmeal
  • 5 tbsp vegetable or coconut or olive oil (55g)
  • 1/2 tbsp pure vanilla extract (7g)
  • 1/2 cup spelt, all-purpose, or Bob’s gf flour (65g)
  • 1/2 cup unsweetened cacao or cocoa powder (40g)
  • 1/8 tsp plus 1/16 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup brown sugar or packed 1/3 cup coconut sugar (60g)
  • 1/4 cup stevia baking blend OR regular sugar
  • only if using Bob’s gf flour, add 1/4 tsp xanthan gum
  • 4 Butterfinger-type bars (such as GoMaxGo brand), OR Homemade Healthy Butterfingers
  • 1/4 cup mini chocolate chips, optional

Instructions

Preheat oven to 330F. Grease an 8×8 pan and set aside. Cut or crumble butterfinger bars into small pieces, and set aside. In a large mixing bowl, whisk together the first 4 ingredients (including flax or chia). In a separate bowl, thoroughly combine all remaining ingredients except the butterfingers. Pour wet into dry, stir to combine, then pour in the butterfinger pieces and stir gently just until combined. Pour batter into prepared pan. Bake 15 minutes, or until partially set but still undercooked. Let cool, then refrigerate overnight and the texture will firm up nicely! Makes 12-16 brownies (16 the size of the ones in the photos). Store in the refrigerator for up to 4 days. Please don’t taste until the second day, as both the taste and texture will change completely overnight.

    Hey Katie,

    This recipe looks lovely and reminded me to tell you of how I shamelessly mushed two of your recipes together the other day, with similar results. I made the pb filling of your homemade reese’s eggs, rolled them into smallish balls, then while they froze whipped up a recipe of your black bean brownies, adding more cocoa and two bananas. Then I mixed the frozen pb balls in and baked. Voila: chocolate banana peanut butter brownies!

    This was not really on the topic of this recipe, but ah well… Thanks for this site- it is a lot of fun!

    Intriguing idea! I’ve never had butterfinger bars but think I’ll try your recipe. I love peanut butter and brownies with peanut butter, so this sounds like a big idea 🙂

    Butterfingers were my absolute favorite candy bar from the page of 6 until about 13, so I love the idea of making them vegan and stuffing them in a brownie! Nicely done, lady.

    I don’t have an evil voice in my head telling me to consume chocolate in every form. Well, I DO have the voice, but I wouldn’t necessarily call it evil!

    I’m ALWAYS craving hummus. I cannot go a day without it or I’ll feel deprived and be quite the crab. I usually crave almond butter as well; I love me my nutty fats.

    I eat chocolate every day and it is the food I crave the most. I also love peanut butter!

    I usually crave anything with peanut butter… It can be sweet, like ice cream or cookies, or savory, like Asian peanut sauce. These brownies are definitely something worthy of craving!

    YUM! Love Butterfinger bars. I assume this would work with any type of candy bar? As far as foods I crave, it all depends on the weather, my mood, and what food blogs I’ve been reading that day! 🙂

    So, um, these were amazing. They had a wonderful fudgey texture that just melted in my – and my brother and mom’s – mouth(s), and I wish I could have the entire batch but, unfortunately, that would not give good results. However, I am definitely saving this recipe for future reference and it will probably be made at least once a month. Thank you so much. Yummm.
