A New Unsweetened Almond Milk

But first, I have an important question to ask:

Cake or Frosting?

Even as a little kid, I was a frosting-over-cake girl; I always vied for those frosting roses. Did any of y’all do that? (I’m not sure I even liked the taste; they were just so gosh-darn pretty!)

Anyway, in my exuberance about the Raw Chocolate-Raspberry Cake, I forgot to mention that you don’t have to make it a cake. You can do this…

If you dare. You might never want to eat anything else ever again. Or skip the pancakes and opt for straight-up frosting shots. Yeah, frosting shots. And if you’re looking for something with which to wash down said shots, I’ve gotcha covered. Or, rather, Silk’s gotcha covered:

I mentioned the coconut in the New Product Alerts page awhile back, but hadn’t yet tried it.

Unsweetened Almondmilk:

Silk came out with plain, vanilla, and chocolate almond milks a few months ago, but did you know that they now have an unsweetened one as well?

It’s my newest-favorite thing! I’ve always loved Almond Breeze, but this milk is like three times creamier! Plus, it’s fortified with vitamin B12. (Almond Breeze is not.) Price-wise, Silk also holds an edge ($3.50 for 8 cups as opposed to AB’s $2 for 4 cups when on sale).

Coconutmilk:

I love coconut. Did you know? Yeah, um, unless you’ve been living under a rock, I’m sure you did. (And even those of you rock-dwellers have probably heard by now.) So I was surprised to find I didn’t like the So Delicious brand’s coconut milk beverage. Even the sweetened one, I found to to be watery and bland. Good news, though: Silk Coconutmilk is much thicker. Even my dairy-drinking mom likes it! I bet it’d be really good in oatmeal!

Final thoughts… and opinions welcome:

I know Silk is owned by Dean Foods, who also happens to be the biggest dairy-seller in the US. I’m not sure how I feel about this… but I think their clout and reputation in the dairy industry give them the ability to make products like soymilk more mainstream (for example: Silk commercials, advertisements in magazines, and availability at places like Starbucks and Wal-Mart). And more easily-accessible vegan products means more people will be turned on to them, which will eventually translate to fewer animal products consumed. Obviously, there are positives and negatives (and I haven’t done much research on them, so if anyone wants to leave their own thoughts on the issue, I’d be happy to hear others’ opinions). But I’m just excited to see non-dairy milks are becoming so popular that even the big dairy guys are taking notice!

    Silk’s unsweetened almond milk is my go-to milk. I always have a container in my fridge! And yep, I drink it straight up. 🙂 Haven’t tried the coconut one yet.

    I like almond milk. My favorite brand is whole foods brand. It is a little more but it has a better texture and flavor then the others I have tried. I was a frostnig girl. My favorite was fudge frosting and would buy it from the bakery to eat plain.

    Eden Foods uses “Organic Soybeans” in their soymilk.

    Silk generally doesn’t.

    For the past year, I’ve usually bought Eden Foods’ soymilk instead of Silk.

    I usually buy unsweetened vanilla almond breeze — I really only use it in smoothies, other than that I don’t need it! I don’t buy Silk Almond only because AB is always cheaper at my grocery store!

    And you know me and coconut…moving on.

    I used to drink a ton of milk when I was a kid — I’m talking 3-4 big glasses of 1-2% milk per day. I loved it. And now my body can’t handle it — go figure!

    FROSTING SHOTS! thats what im talkin bout!!!!!! we dnt have silk here 🙁 but it sounds tasty! i use light soy milk cuz its the only non dairy milk that i can easlily acesss. tis tasty though and its not GMO so im down
    oo that is a toughie with the dairy situation.. its like you dnt wnt to support them but then if more ppl buy silk then itll be more popular and then maybe they will only make silk… TOUGHIE!

    All I can say is… sprinkles?!?! The rest of the article is pretty foogy now after I saw the last picture. Sprinkles, hundreds and thousands, nonpareils, whatever they are have my attention.

    Oh, and we have some coconut milk in the fridge, the So Delicious brand to try. I’ll be interested to see how it tastes, especially after your review on it. And why was the coconut milk hiding amongst the dairy milk in the cooler, not with all the other non-dairy milks? Huh… random grocery store mystery…

    Your post for tomorrow looks delish… cant wait!! I used to hate frosting, but now I love it esp. butter cream frosting 🙂 I drink organic skim milk, and I don’t drink it plain but I like to have milk with cereal and milk with my Carnation chocolate drink mix in the morning!!

    I have Silk coconut milk and Silk organic, unsweetened soy milk in my fridge right now. I love putting these milks in my smoothies every morning. I do have one concern. In the ingredients list you will find “Natural Flavor” in both milks. This concerns me. Why do the manufacturers have to include this.? Being a health nut that i am i struggle with this ingredient.

      As a vegan, I’m not so big on that either! ‘Cause then you can’t easily know if it’s animal-derived or not. I think it’s ridiculous that companies aren’t forced to list EVERY ingredient in their products! I mean, if they’re gonna bother listing ingredients…

      “Original Edensoy, Organic Soymilk” is a product without “Natural Flavor” in the ingredients.

      Instead:
      “Purified Water, Organic Soybeans, Naturally Malted Organic Wheat and Barley Extract, Calcium Carbonate, Kombu Seaweed , Sea Salt”

    Its funny that you would mention this today because I have been making my own almond milk for a few weeks now, and just today I was debating whether or not it would be okay to leave out the sweeteners… I usually use either dates or agave syrup, so today I put in just 1/8 cup agave instead of the full 1/4 cup that is called for.. I will taste it tomorrow and hope for the best 🙂

    BTW – the milkshakes? YUM!! I tried your Thin Mint one, then I tried the Cookie Dough. Then I combined them.. then I added a few other ingredients.. NOW, I have the most delicious (even if it isn’t the prettiest) shake for (too) many meals 🙂 THANK YOU for the ideas! I’m super excited for the cake batter one, too 🙂

    Wow! Silk has coconut now… lovely! I do occasionally buy the SoDelicious Coconut milk, vanilla flavor… but mostly because my lil man LOVES IT. I pretty much only use milk in my lil ol iced lattes, lol, and I don’t like the coconut for that – agreed – too watery! But perhaps I’ll give the new Silk one a try!

    I was always so dang dairy intolerant as a kid I didn’t drink cow’s milk either. Sometimes just for cereal, and then I never drank the milk, just ate the cereal and poured out the milk. So that was never an issue for me. Even to this day, I rarely just ‘drink’ a glass of a non-dairy milk. I use it IN stuff. And when I DO have just plain milk, it’s almost always with cookies *giggle* 🙂

    (You know, ironically, the ‘foodbuzz’ ad on your post as I was reading was for Hidden Valley Ranch! Blech. Hahhhaha!)

    I’m definitely a frosting person….as long as its the good frosting, not over sugary and processed kind! Anyway, frosting shots sound like a good idea to me! =D

    YUM! the chocolate-raspberry-butter looks fantastic!!! Now I almost regret making your Pina Colada Cupcakes this afternoon 😉 (well…like I said – almost^^)
    I´m Definitely frosting girl, as a kid my mum never made cakes with frosting, but since I´m the queen of my own kitchen (well…almost, I share an appartment with 3 boys, but that still makes me the queen^^) I can´t get enough frosting on cakes, I even make them less sweet so I can use more frosting 😀
    I always drink a mixture of soy- and oatmilk, as I don´t like the taste of plain soymilk, it reminds me too much of grass…

    I been wondering about the taste! Glad it has your seal of approval! I NEVER drank milk, it always made me gag! When I got my wisdom teeth out they wanted me to drink some milk to coat my stomach, but I told them I only drink non-dairy milk and they said it was fine, so I drank a glass of USVAB straight up and it was so good! I actually liked it, which is a huge step from hating all milk:)

    I like silk’s almond milk (although I recently started making my own, because it’s cheaper!) but I haven’t tried their coconut milk! I can see the conundrum with them being such a large dairy seller, but I guess it does have an upside, since they are more “mainstream”. I get so excited when I see more soymilk/almond milk/coconut milk options!

    Also, does ANYone shop at Aldi? They are opening one near me and my dad will start buying from there since it is so much cheeper, but I wanted to know if anybody knew about vegan products there?

    That frosting picture kills me! It looks amazing. I haven’t tried Silk’s brand of Almond Milk, but HEB is making their own line of almond milk now, too! I like it better than Almond Breeze. And don’t feel bad–I can’t get myself to like coconut milk either. It’s too water-y and bland.

    As for Silk, that’s great news on their coconut and unsweet almond milks. I love the plain Pure Almond. So creamy! I know I should boycott Silk or something because of their dairy connection, but I agree with you on the whole mainstreaming thing. Plus, Silk tastes damn good. 🙂

    Confetti cake batter milkshake – can it be???

    Being lactose intolerant my entire life I have a healthy loathing of milk. While I do use coconut/cashew/rice/almond milk in smoothies and cooking, I must say that to this day I still can’t bring myself to actually drink a glass of any of it straight. Scarred for life I suppose – made it much easier to give up all dairy though!!

    I accidently drank a half-gallon of unsweetened almond milk in one day. Between oatmeal, baking, cookie dunking and milkshakes, it just disappeared.

    I have a carton on the Silk unsweetened almond milk in my fridge right now. I’m really happy with it Almond milk is my go-to milk for oatmeal, smoothies, and other cooking, but I don’t drink it straight up. As a kid I drank cow’s milk straight up all the time.

    Your raw chocolate raspberry cake and frosting look SOOO delicious!

    But sorry—I would never drink Silk ANYTHING! Just like most of their soy milks, their coconut milk isn’t organic. We’re sticking with So Delicious Coconut Milk. It’s plenty thick enough for our family, and I think it’s really delicious and more like dairy milk than any other alternative. If I want something that tastes thicker or more coconutty, I’ll buy canned coconut milk.

    I am an unsweetend almond milk aficionado. I think I’ve tried every kind — but THIS one! Recently I’ve been buying the refrigerated kind at Trader Joe’s, because it’s $2.99 for 8 cups and is very creamy, too. But I’ll have to try the Silk brand. And I agree with your position on Silk — while it’s abhorrent to support a dairy company, we need to take advantage of Silk’s wide reach to increase popularity of non-dairy beverages.

    Thanks for this, I’ve been wondering if the Silk coconut was worth trying, after all the bad reviews I saw of the So Delicious. I’ll be checking it out. And that’s interesting that Silk is cheaper where you’re at; here they sell the AB for 2.99 a half gallon. Anyway thanks, it looks like I have new milks to check out.

    Ya know? I tried the Silk Almond milk yesterday and I totally agree that it is crazy good! I, too, have always been an AB girl (and not because my initials are A.B. ;)), but once I had a sip or two of the Silk stuff, I was hooked! I didn’t try the Coconut yet, but I am super excited to have a sip or two of it. 🙂 So excited!
    Also, yay CakeBatter Milkshake! 🙂 I’m on a soft foods/liquids diet only right now because of a silly viral infection in my stomach which caused Gastritis… Now my diet is ten times MORE restricted, boooo! But, all well! After the emergency room visit, things are going uphill! 🙂

    Can’t wait to eat that milkshake!! 😀

    First of all, I am a cake person. When I ate sugar, frosting was nasty. It still is….except when I make yummy frosting like yours 🙂

    Second, ohmygoodness I can’t wait to try this almond/coconut milk!!! I love Almond Breeze Unsweetened, and I CANNOT WAIT to try this. My mom loves So Delicious Coconut, but I, like you, thought it was too watery and not rich coconutty. I am looking for this next time I’m at the store.

    Third, I CAN”T WAIT to try the Cake Batter milkshake!!! I have been loving your thin mint shake (seriously, I drink it like every other day now…), but I have yet to try the cookie dough one…Maybe today is the day!

    Fourth, I hated milk. It was so nasty, and I just didn’t like it! It doesn’t taste good at all. I didn’t even like chocolate milk that much 😛 Now if it was hot chocolate, I was all over it! I still don’t drink milk because I just don’t want to waste my precious almond milk! I like to put it into recipes, but I don’t drink it plain. I’m a water drinker!

    I’m now hooked on the unsweetened pacific almond milk. I like that it’s organic however it isn’t fortified with calcium but is fortified with vitamin D. I actually bought it because you can’t take calcium with antibiotics and love the taste more than almond breeze. You’d be surprised how some of the more mainstream “healthy” products are owned by big company’s. Heinz actually owns a bunch… who knew?

        I thought they were still independent. Well, damn.

        General Mills doesn’t bug me as much as companies like Con Agra (Lightlife) and Dean (Silk) which are really founded and funded nearly entirely by animal torture, death and enslavement.

        I also will not buy any products from Proctor and Gamble, even “vegan” ones and I refuse to buy Kraft (Boca) due to the Phillip Morris connection. Super duper horrific animal testing goes on with P&G and PM, they kill and torture rats and other animals so I will not give them a dime, if I can help it.

        I might be funding them without knowing it, all the brands are so entangled!, but when I realize they are connected, I stop buying those products. My mom will occasionally get me Boca stuff when I come to visit and I’ll eat it – I just won’t buy it and she knows I prefer not to support Boca and why. 🙂 She’s a good lady. I also tell her she doesn’t need to buy me stuff(!) but that never works. LOL.

        In that vein, I refuse to buy Silk unless it is literally the only option and I absolutely must have milk for something – and that’s never been the case in the last couple of years (yay!) since, as you said, non-dairy stuff is more and more available. It’s a shame the most visible vegan milks are funded by and funding the number one perpetrator of the miseries of dairy, though. I just can’t do it. I think of the cows and the (veal) calves and they are just too much a part of what I see when I see Silk. 🙁 Luckily, I like So Delicious coconut milk and Almond Breeze is in like 90% of markets now? Crazy!

          I agree 100% about P&G. In fact, I stopped giving them a cent even before I went vegan! I found out about animal testing before factory farming. So yeah, it’s hard, but no p&g, kimberly clark, johnson-johnson, and oh holy cow so many others! Sometimes, it means I have to buy generic, and goodness knows if the generic brand tests too… but I try to do as much as I can, and I will not knowingly give my money to a company that tests on animals. Over 90% of those tests are deemed useless anyway, because people and animals are different! (Did you know tylenol causes cancer in rats?!)

            I did not know that. I did know that they tested Baytril on rats (and its one of the antibiotics I commonly use with my rattie kids – my hands are tied on veterinary medicine. I can choose to not take pharma for myself but the rats will die without medicine so many times and I can’t allow that!) and it was fine – but caused INSANE hallucination in humans! And who knows, maybe it makes the rat kids hallucinate, too. It doesn’t seem to but how could I know for sure?

            It just makes me so mad that they still test on animals when we have computer simulations that are a LOT more accurate. Forget the animal suffering for a moment… what about the huge waste of MONEY?!?

            If you haven’t read it, I highly recommend “Lethal Laws” about toxicology testing on animals and the many things that are wrong with it, scientifically.

            It’ll get your rage on, though.
            That and “The Unheard Cry”… powerful stuff. Good books.

I often write to those companies and let them know I’d like to see them stop the useless animal tests. I think that if people really knew what was going on (just like with factory farming), they’d be outraged.

    I LOVE that non-dairy milks are becoming mainstream. Even my fiance, who will never, ever be vegetarian let alone vegan in his life, now loves almond milk, and we now buy it exclusively to use in our coffee (no cow’s milk in our apartment!). He’s still terrified of soy milk but almond is a go.
    I think having Dean Foods as a backer for non-dairy milk is more positive than negative. If the demand is there, and non-dairy milk proves to be very profitable, this could someday result in them decreasing their production of cow’s milk in favor of non-dairy. I wish more companies would recognize that this is important! I have recently begun a crusade of one to get Dunkin Donuts to start carrying non-dairy milk. They would do alot of business, both from vegans and from people who are lactose-intolerant. The “America” that supposedly runs on Dunkin includes alot of people that don’t drink cow’s milk!

It’s awesome that the food industry is opening up more options to an eclectic range of folks. Dude, the SILK almond milk is awesome huh?! I def. think it’s better than almond breeze.     Yes the dairy companies are getting in on the nondairy milk. Just in case everyone goes vegan huh?

    I personally opt for non dairy owned products if possible because I don’t like the thought of my money going to anything that might hurt animals. But if there is only once choice obviously I go with it. My favorite nondairy milk is my own homemade almond or hazelnut milk, then if I am in a pinch, I also use so delicious coconut milk. Good stuff.

    Now I find most frostings waaay too sweet.

    Found this on the P&G website…not the best, but at least they make mention of their practices and intentions (goal of eventually not using any animals)… I avoid most of their products simply because they’re full of chemicals, but I hadn’t given a lot of thought to their testing practices. Again it’s such a conundrum because obviously they have the industry $$ and clout to do research and change things for the better, yet I really don’t want to support them. Here it is:

    “Today, more than 99% of our safety assessments are accomplished without the use of additional safety testing with animals. We reapply existing information and make extensive use of non-animal methods to determine safety. P&G is working with many partners and lawmakers globally to continue to advance science and technology in this area.

    P&G is well known for leadership in developing alternatives to animal tests, investing more than $265 million and developing or adapting more than 50 alternative methods. Many of these methods are not only faster than corresponding methods using animals, they are also more predictive of environmental or health effects.

    We are committed to continuing our leadership in developing non-animal alternatives, and our goal is to ultimately eliminate all animal research.”

      Wow, Rachel, THANK YOU for bringing this to my attention. I have to admit, I hadn’t really been keeping up with their policies except what I’d heard a few years ago (and I knew from PETA that they were still on the “naughty” list). But you’re right; it’s at least nice to know they’re starting to change, because this was definitely not the case a few years ago when I first started boycotting them.

      I don’t buy it. Not for a second.
      P&G will say whatever they think we want to hear to get the business.

      Monsanto has nice things to say about itself on its site, too.
      Until independent research shows that P&G is doing more than just blah blah blah I will never give them a cent. That Iams fiasco is a bit fresh in my mind, ditto so many other atrocities.

      Keep in mind that if they are only doing 1000 tests a year and only 1% are animal based, that’s still 100 animal tests. With 100s of animal subjects being killed in each one. They still do LD50s, they won’t make any real pledge for a solid animal testing cut off date – they just keep the positive spin that they are “working on it”. They’ve been saying the same thing for years. I call BS.

      Sorry, I just HATE them so much. They and Monsanto are my least favorite corporations ever – with Walmart a close third.

    I just saw Silk’s brand of coconut milk yesterday while grocery shopping! I pretty much dropped to the floor, now Silk’s getting on the coconut train? I even saw individual- sized milk cartons of unsweetened coconut milk. Wheeee! Now people are starting to get what’s good 🙂

    So glad you posted about this! I’m pretty happy with Almond Breeze or the Whole Foods 365 brand of unsweetened almond milk (and WF is the cheapest I’ve seen, usually $1.99 for 4 cups) but 3x creamier? I have to try that! And I use light coconut milk from the can – am I the only one who still does that??

    I didn’t know Silk was made by one of the biggest dairy companies! 🙁 at least they have nondairy options too. Also, I recently discovered that unsweetened almond milk and fell in love with it!! It makes for the best oatmeal and green monstas and only 35 calories a serving, yay! 🙂

    Frosting has ALWAYS been my favorite part of cake too!!! The cake is good, but the frosting? The BEST!!! 😀

    I tried Silk Almond milk once when the store was out of my beloved Almond Breeze, and I’ve been buying the Silk ever since! It seems much thicker and creamier to me 🙂

    And you don’t need to feel bad that you can’t go comment on everyone’s blogs. We all love you anyway and definitely don’t expect anything from you! Your amazing kindness is more than enough! 😀

    Hi there! I stumbled onto this blog a few days ago and am loving it! I’m not a vegan (total carnivore, sorry 🙁 but good food is good food. My hubs is even on board for some of the recipies, esp the sweet stuff.

    I drink dairy every now and then, but prefer the unsweetened Silk Almond Milk (I’m not big on sweets). The local store carried Silk DARK CHOCOLATE Almond Milk, but now I can’t find it! It was the perfect after-run nourishment for me.

    My favorite milk is this suff called Calorie Countdown from Hood. Not for the fact it’s lower in calories but has the same amount of protein as regular milk, but because it’s the only kind my stomach can handle straight up. I loveee unsweetened soymilk, but it turns my stomach upside down just like regular milk does. I don’t know what it is about Calorie Countdown, but it doesn’t affect my stomach at all.

    I loooove coconut milk. Actually, I love coconut ANYTHING! I do drink it straight up…or sometimes I make chia seed pudding or pour it over granola (coconut granola, of course).

    I haven’t tried the coconut but I LOVE the silk unsweetened almond. I drink it every single day multiple times. I’m currently drinking it in my chocolate protein smoothie with a vegan heart thrive =]

    I had not tried their coconut milk yet (Silk’s) b/c after buying So Delish and feeling it was watery and boring (Even tho everyone else has ‘loved’ it) I was sick of spending money on products I didnt love. So love your honest review AND your rec about Silk’s coconut milk.

    And also their unsweetened almond milk being 3x creamier!!! than Almond Breeze.

    LOVE milk! I’ve always been a skim milk kind of girl, but recently I’m really enjoying soy and almond milk. I like the variety! And yes, I’ve been known to drink milk straight up (hey, I live on my own right now)!

    As far as the dairy conglomerate behind Silk, I’m not the biggest fan, BUT I totally agree with what you said – more money = more visibility = more people converting to nondairy milk every day. Plus, it limits how much they TRASH nondairy milk – if they didn’t actually MAKE it, I bet they’d be on the warpath against it.

    Is that a Funfetti shake?!?!?

    I like unsweetened almond breeze, preferably refridgerated. It tastes a million times better that way. I don’t usually pour a glass of almond milk for myself, but I take a swig or two every once and a while (I’m the only one who uses it!)

    Yay! I am happy to see that Silk finally caught on to the unsweetened trend. I preferred Almond Breeze to Silk due to the added sugar in the latter brand.
    That being said, Almond Breeze is my favorite non-dairy milk, and I can guzzle it straight. Seth, on the other hand thinks it is foul! He claims it’s too bitter.

    I just started drinking the unsweetened AB milk, but I haven’t seen the silk one yet. I really like the almond milk in my green monster smoothies! I am imagining it’s probably good in oatmeal, too! And I totally need to get my hands on coconut milk! I adore coconut and have been on a coconut binge lately! 🙂

    Mmmm … that is totally a funfetti concoction, like the cake batter. Too cute.

    I’m an almond milk drinker myself. I like freshly made raw almond milk the best, but I also drink the unsweetened premade stuff to get the added nutrients (B12, Vitamin D and more calcium).

        Raw sprinkles are quite simple. The base is coconut flakes, which can be colored with fruit or veggie juice/puree (I use berry or carrot a lot), or a combination of agave (or other liquid sweetener) with green powder (spirulina works well), turmeric (makes a nice yellow), etc. Sometimes they can be used while still damp, but dehydrating them a bit yields the best results. You can also grind them into smaller pieces after they are dry.

    I had NO idea Silk made coconut milk. That must really be new. I knew they started making almond milk and I’d gotten coupons and everything…in the newspaper, but was waiting to see if they’d come out with an unsweetened version. And now they have! My favorite almond milk is Almond Dream…followed by Almond Breeze. I have yet to try Silk’s version….next time I get a coupon I’ll do so. Haven’t seen the coconut milk in any of my stores yet. Didn’t Silk make an “almond SOYmilk” too? That’s kind of sneaky.

    Just wanted to say…. You have the BEST blog ever. Everytime I come back from school, I BOOK IT to my computer and look to see if you posted anything….. Anyways…. I had a question. I just bought so delicious coconut milk and…. I DON’T UNDERSTAND WHAT IS SO GOOD ABOUT IT?! I was reading the label…. 20% sat fat :(…. only 1 gram of fiber….. only 0.4 g of protein…… and ZERO % calcium? What’s with all this hype around it? I do NOT get it! Thanks a lot~~ And I do agree with you… it tastes like goopy water 🙁 ew.

    I haven’t noticed Silk’s almond milk to be creamier than Almond Breeze. Now I am curious. However, I like to make chai with almond milk, but when I have used Silk, the milk seemed to separate. I haven’t had that happen with Almond Breeze. Anyone else have issues with heating?

    I’ve always had trouble drinking cold beverages. They ALWAYS make me sick. Can I drink these to milks hot? I prefer the dairy milk hot too.

    I just switched from Blue Diamond to Silk unsweetened almond milk because the Blue Diamond has Carrageenan and the Silk does not. I loved the Blue Diamond, but the Silk is a good substitute.

    I make my own almond milk in my Vitamix & it’s so amazing! I found the longer you soak the creamier it is. I use 1 cup raw almonds to 3 cups water. Store bought tastes sour next to homemade
