Yesterday, at around 3PM, I finally jumped on the protein-ice-cream bandwagon.
Protein-licious. Yesterday, by the time I finished eating this thing, I was freezing! So I took the second part of my meal outside—two slices of Ezekiel cinnamon-raisin bread.
French Toast Trick: I used to think I didn’t like Ezekiel cinnamon-raisin bread, because it’s so dry. But I discovered the secret: Moisten the bread (a lot) with water or non-dairy milk, sprinkle with extra cinnamon and a tiny bit of salt, and microwave for 30 seconds. Sounds odd, but when it comes out, the bread tastes like French Toast! For reals. French Toast for lazy girls. As for the protein ice cream, here’s the recipe I used:

CCK Choco-holic Protein Ice Cream
- 22g chocolate protein powder
- 120g (1/2 cup) almond milk
- Scant 1/4 tsp plus 1/8 tsp xantham gum
- Scant 1/4 tsp plus 1/8 tsp guar gum
- 13 ice cubes
- 1/16th tsp salt
Blend. Good to freeze for 20-40 mins prior to serving, for ultimate chilliness. If you missed it, I highly recommend you check out HEAB’s Protein Ice Cream Tutorial.
As I was finishing off my own protein ice cream, the doorbell rang. What was at the door? I’ll give you a hint:

There was something else at the door, too. I swear, the postman probably thinks I’m running some sort of Texas mafia. Yeehaw! Twas another belated birthday present:

Haha – your grandma must be made of money as those Wild Bars are not cheap. Mountain Mint flava is the best. Must get my hands on some soon. Going to have a little talk with Santa about them. 🙂

do you toast the bread after the milk/microwave process? i like ezekiel too but it is def a bit dry. so good for you though so i haven’t given up on it yet 😉

Great recipe! I’d like to try it–you think I could use double the xanthan and omit the guar gum? I can’t seem to find guar gum anywhere.

I don’t see why not. Honestly, it’d probably be pretty thick just thanks to the ice and protein powder even if you didn’t use anything.

oh my! I just read the negative comment for this post…I guess I was so excited to tell you about banana ice cream I didn’t look at the above comments! People can be SO mean and I’m glad you don’t let it bring you down! I used to work in an environment where everyone had “pig-ins” (a potluck where everyone bought the junkiest food they could make to share with everyone) and ordered out from fast-food restaurants every night! I always brought my own food (and healthy food to the pig-ins) and was taunted for being “insecure” and “anorexic”. I went home many days crying about how mean people were! Luckily I’m out of that environment and have (somewhat!) developed thicker skin!

I’ll go ahead and jump to Katie’s defense too – why can’t people keep weight-related comments to themselves or just get their brain past these things? When did it become okay to make all the comments we want about other people’s bodies? The people who make such a big deal about other people’s sizes are, in my opinion, the obsessed ones – the ones who actually have a problem.
Katie is awesome! =) And I agree, a girl just can’t have healthy skin and hair like Katie’s if she is malnourished.

I agree with VEGirl; if you were the slightest bit unhealthy or lacking in anything, you wouldn’t have such lovely, shiny hair *envy from this direction!* and beautiful, clear skin. I’m “skinny” too and although some people don’t realise how hurtful it can be when they comment on it, some, like this nasty piece of work, clearly do.
I’m glad you didn’t take any notice because the volume of nice comments shows exactly what people really think – you go, girl! 🙂
