Gigantic Ice Cream Sundae

Hugest-ever! According to dictionary.com, “hugest” is a word. Rejoice!

Yesterday, at around 3PM, I finally jumped on the protein-ice-cream bandwagon.

Protein-licious. Yesterday, by the time I finished eating this thing, I was freezing! So I took the second part of my meal outside—two slices of Ezekiel cinnamon-raisin bread.

French Toast Trick: I used to think I didn’t like Ezekiel cinnamon-raisin bread, because it’s so dry. But I discovered the secret: Moisten the bread (a lot) with water or non-dairy milk, sprinkle with extra cinnamon and a tiny bit of salt, and microwave for 30 seconds. Sounds odd, but when it comes out, the bread tastes like French Toast! For reals. French Toast for lazy girls. As for the protein ice cream, here’s the recipe I used:

CCK Choco-holic Protein Ice Cream

  • 22g chocolate protein powder
  • 120g (1/2 cup) almond milk
  • Scant 1/4 tsp plus 1/8 tsp xantham gum
  • Scant 1/4 tsp plus 1/8 tsp guar gum
  • 13 ice cubes
  • 1/16th tsp salt

Blend. Good to freeze for 20-40 mins prior to serving, for ultimate chilliness. If you missed it, I highly recommend you check out HEAB’s Protein Ice Cream Tutorial.

As I was finishing off my own protein ice cream, the doorbell rang. What was at the door? I’ll give you a hint:

      Really? Have you even read this blog? If you are here reading Katie’s blog hoping she will confess to anorexia, you’re in the wrong place. Please read the FAQ page and learn more about who Katie is and why she is so beautiful. Comments like these are hurtful, not just to Katie, but those of us who respect her too.

      Why do you feel the need to criticise someone you’ve (presumably) never met? It hasn’t got anything to do with you how much someone else weighs. I’ve seen plenty of anorexics, and trust me, you can tell by looking at their skin and hair that they aren’t getting adequate nutrition. CCK has shiny hair and glowing skin, which you can’t get without a consistently healthy diet with plenty of healthy fats and enough calories.

      I usually don’t like to draw any attention to negative comments like this, but I suggest you go back to that comment and read Katie’s response again, she never said she weighed 80lbs at any point in time. Actually, if you find her blog that triggering for you, why don’t you just leave??

        Your comment had me looking at the link you provided, and she was giving sound advice to someone! I agree with Hannah, in that physical features can point to malnutrition, and Katie has shiny hair, glowing skin, and bright alert eyes- where as that commenter you linked to said she had the opposite. Everyone has a weight range in which they are healthy, it different for everyone. I am coming to accept that myself. In my own recovery, Miss Katie actually helped ME with some pointers on a eating a high calorie diet (which I can have trouble with)!

        Katie, I can’t imagine how difficult it must be to feel like you have to “prove” yourself to all these people. I see a beautiful women in you, not because you are skinny, but because you are HEALTHY. Please know that I and all of the other kind people here adore you and don’t want you to stop blogging EVER. You provide so much inspiration to us, and I’m not sure what I would would do without ya! Go live in Texas with you, perhaps?

          That person was probably just a jealous little kid. No one on here who I’ve read who was criticizing Katie’s weight sounded older than 12. I don’t think you could be very smart or mature to have read all of Katie’s entries and not seen that she obviously looks, eats, and sounds healthy. And someone with integrity certainly wouldn’t make such an assuming post without getting the facts first. Lol let alone reading those comments, which clearly showed she was trying to help someone unhealthy eat healthier. Poor kid.

          Reading this blog helped me gain weight as well. I was 15 pounds underweight before I started using her raw dessert recipes. It’s laughable to think she’d be anorexic. She’s just one of those blessed naturally thin people that the jealous/immature feel inclined to criticize. Growing up, ironically I actually had an extremely high metabolism as well (though obviously it slowed down or I’d never have calorie-restricted later on in the first place), and I’d even stick my belly out on purpose in the hallways at school just to make myself look bigger, since I got teased so much for being too skinny. I was jealous of all the rounder girls because I thought they looked more womanly. I know from experience how hurtful it can be to be teased for being tiny–if you’re naturally that way and it’s not something you have striven to accomplish, you don’t feel proud at all or like it’s an accomplishment (until you realize that those things are just said to hurt you and don’t really mean anything, and that you define you) you just feel like it’s a curse and you feel bad about yourself. I’ve learned my lesson…I now see that every body type can be beautiful if you have some dignity, and there’s no reason to criticize Katie, from what I’ve seen, she more than anyone endorses healthy, nourishing, high-calorie eating and is very accepting on here towards everyone, regardless of their sizes. I’m really grateful she has the integrity to simply ignore disrespectful things like this, because she has a wonderful blog and whats to say one day she won’t get fed up with all this and simply take it down? I love your blog Katie. It makes me feel better about myself for eating fats and healthy rich foods 🙂 When I started reading your blog, I was eating only steamed veggies and raw fruit every day. Nothing else. Now I feel more comfortable eating a fuller diet. A pro-anorexia site would never endorse that kind of health. So thankyou 🙂
          (I know you’ve probably heard enough already from all the feedback comments on this subject, but I just had to give my 2 cents because you have helped me SO much. keep on writing and don’t listen to those fools! you are an amazing girl, and you are helping wayyyyyyy more than you are hurting 🙂 )

            Wow, oh wow, Lyza, how can I ever thank you for your kind words? Your comment was just so sweet and was exactly what I needed to hear right now! I actually even wrote a post about how I sometimes feel self-conscious about my skinniness… but I haven’t even gotten the courage to post it yet, because I don’t want people to roll their eyes and say, “Oh geez, a girl who’s complaining about being skinny.” Plus I don’t want it to make others feel bad about not being as thin, either… so I’m holding onto it at the moment, editing, making absolutely sure it is as unoffensive as it possibly can be before I post it!
            In any case, thank you again for such kindness.

      Yikes bikes drama. I debated just taking this comment down, as it definitely doesn’t fall under the “respectful” category. But by the time I saw it, so many others had already seen it that I feel compelled to leave it up so I can clarify for those of you who’ve already seen it: The link that the commenter posted was NOT written by me. As for the rest of her claims… I’m not even going to waste my breath acknowledging them. Nothing she said really upset me; it’s not like I haven’t heard it all before.

      aren’t you one insecure asshole to post something like this in someone’s positive space. i feel sorry for you–projecting your inner demons on a girl who puts in the effort to entertain her readers with a great message of health and happiness. do some self-reflection, loser, then let’s see if you’d want to make a comment like that. someone with self-respect probably wouldn’t.

          Totally get ya. That was a bad choice of words. However, I am not fat bashing. I am 70 pounds overweight myself!!!!             Not offended.
            It just reminded me of the awful “you sound fat!” stuff that gets tossed around online to insult random posters and that made me wince. Admittedly, I’m having a really hard time with body issues right now (lost 50+ lbs, working on keeping it off and getting happy with myself as a healthy, slim but with an imperfect, unmodel-like body) and am a bit more sensitive due to that. 😉

            And yes, I agree it’s HARD to keep a polite tone in the face of these douche-nozzles insulting our girl! 😉 See, I resort to dropping d-bags all over the place. LOL. Thanks for taking the comment as I intended and not getting mad! I worried.

      Besides, Katie exudes healthy living. So what if she burns mega calories a day… she makes up for it by adjusting and LISTENING to what her body asks for.

      Ughhh…nasty, nasty, nasty people. So full of hate. Not everyone is built the same way. Some are naturally very skinny. Others are naturally curvy and have to be more cautious about what they eat. I know…old comments, but really?? Get a life, get off this blog if you have a problem with the author…who I think happens to be BEAUTIFUL.

    Gotta love grandparents. Your grandmother sounds awesome! That’s a whole lot of Wild Bars. Enjoy them!
    I don’t have a VitaMix, so no protein ice cream for me. Although, I could try taking my protein pudding and putting it through the ice cream maker – I wonder how that would turn out. Can’t go wrong. I’ll have to try it next summer. It’s getting too cold to make ice cream here. (It was 0C/32F this morning.)
    Best recipe I’ve tried recently? Hmmm… I made chocolate-almond-cranberry bark last night that turned out really awesome. And I made a hot and sour soup the day before last that was the best I’ve ever had. (I made the recipe up and it worked perfectly.)

    One of the new things I have tried and “LOVE” is fried butterbean sandwich. You have to try it its fabulous. You just cook up some butter beans in a pan until they start to turn a light brown. I think about 12 minutes. I removed from the pan and then cooked up some swiss chard with a little oil and garlic. I put the whole thing on a french roll and drizzled with baslamic vinegar. To die for! Love it!

    I got a Vitamix last week (best.birthday.present.ever) and used it a couple of nights ago to make protein ice cream. I didn’t have any guar and it still turned out pretty delicious and ice cream like. It expanded like crazy in the blender and it filled up a whole big bowl. Yum! I was freezing after eating it….

    Arg– Katie, help me 🙂 I SOOOOOO want my protein ice-cream to work out. No vita-mix on this end, just a plain jane Oster blender, but I do have a food processor, immersion and all that stuff 🙂 I have both gums, however, when I make it on my blender it never works out….

    Should I put ice in as I blend, or just put it all in at once (if i have no vita-mix)? Another question– What do you mean by 1/4 tsp plus 1/8? Add more after blending or just before? I hope my protein- ice cream concoction turns out well…. it’s been quite a trial and error process over the last few monthes, never know if it’ll be gooey or icy 🙂

    Aw once I get a powerful blender, I will be all over protein ice cream. I dont try many recipes since I only cook for me, but the best food I have recently made is def a broccoli and sweet potato wrap…sweet potato makes everything good!

    I LOVE your lazy girl’s french toast idea!! Ezekiel is totally on the dry side and I wish it wasn’t because it’s so darn good… but now we have a solution 🙂

    HEAB’s protein ice cream is certainly the recipe I’ve recently adopted with full force into my daily diet. Can’t get enough!

    I love Ezekial cinn/raisin toast, but I am going to try your idea since I love love love french toast. I love HEAB’s protein ice cream as well — although it doesn’t turn out the best in my magic bullet. I usually end up with 3-4 ice cubes that will not blend!

    I wish I could eat a pint of ice cream in one sitting. 😛 I wasn’t even able to when I was trying to gain weight..mainly cause too many sweets really upsets my tummy. I need to give protein ice cream a try! Do you use a Magic Bullet, vitamix, or what? Cause all I have is a Magic Bullet and I almost killed it not to long ago with a super thick smoothie..so I’m thinking it wouldn’t hold up for ice cream. I could try, though! 😛

    have you made banana ice cream? just take frozen bananas put them in the blender or food processor with protein powder, cocoa powder, and maybe frozen blueberries and it’s so good!

    That icecream looks pretty good Katie, I would love to try a vanilla version because despite lauuuuuuurving chocoloate, i dont like choco ice cream *blushes*.Fave recipe lately was a concoction of sweet potatoe, chillis and feta cheese, was realy yum.

      Oddly, I too am deeply in love with chocolate but have yet to find a chocolate ice cream that suits my fancy. It just doesn’t taste like chocolate to me :/

    Funny you should ask about fav recent recipes – I went to a friends for dinner last night and since I have been dying to dry your fudge babies, I gave them a shot. They were awesome and everyone loved them! I made the original fudgies, some coated with coconut. Then I also made the PB version, again some with coconut and they were such a hit!! Easy-peasy and delish, thanks much!!

    do you toast the bread after the milk/microwave process? i like ezekiel too but it is def a bit dry. so good for you though so i haven’t given up on it yet 😉

    oh my! I just read the negative comment for this post…I guess I was so excited to tell you about banana ice cream I didn’t look at the above comments! People can be SO mean and I’m glad you don’t let it bring you down! I used to work in an environment where everyone had “pig-ins” (a potluck where everyone bought the junkiest food they could make to share with everyone) and ordered out from fast-food restaurants every night! I always brought my own food (and healthy food to the pig-ins) and was taunted for being “insecure” and “anorexic”. I went home many days crying about how mean people were! Luckily I’m out of that environment and have (somewhat!) developed thicker skin!

    I’ll go ahead and jump to Katie’s defense too – why can’t people keep weight-related comments to themselves or just get their brain past these things? When did it become okay to make all the comments we want about other people’s bodies? The people who make such a big deal about other people’s sizes are, in my opinion, the obsessed ones – the ones who actually have a problem.

    Katie is awesome! =) And I agree, a girl just can’t have healthy skin and hair like Katie’s if she is malnourished.

    I agree with VEGirl; if you were the slightest bit unhealthy or lacking in anything, you wouldn’t have such lovely, shiny hair *envy from this direction!* and beautiful, clear skin. I’m “skinny” too and although some people don’t realise how hurtful it can be when they comment on it, some, like this nasty piece of work, clearly do.
    I’m glad you didn’t take any notice because the volume of nice comments shows exactly what people really think – you go, girl! 🙂
