Raw Macaroons

Completely raw macaroons that are entirely vegan and contain no added sugars…

(Form them into balls, bars, or cookie-cutter shapes, like the Peanut Butter Babies.)

Macaroon Babies

  • 160 grams dates (1 and 1/3 c) (I use Sunmaid because they’re softer)
  • 1/4 cup coconut butter
  • 1/4 cup tbsp shredded coconut (I used unsweetened)

Note: A few readers/bloggers have successfully subbed coconut oil for the coconut butter, but I haven’t tried. Blend first two ingredients, using your blending gadget-of-choice (I use the Magic Bullet short cup). Mix in your coconut. Alternatively, you can roll the balls in coconut after forming them (as in the first photo of this post). Form in shapes of your choice. You can use the plastic bag trick. If you find the mixture too crumbly, put the bag in the fridge for a while before forming shapes. Due to the melty nature of coconut butter, store the Macaroon Babies in the fridge or freezer (that is if ya don’t eat them all first!).

    OMG … Coconut Macaroons?! More than droolworthy, seriously!
    Well … I can’t get coconut butter .. aah, that sucks! (Germany sucks at the availability of many vegan things 🙁 )

      Sünne you can make your own coconut butter. Simply blitz some unsweetened shredded (desiccated) coconut together in a food processor until it comes together. It can take anything up to 12-15 minutes. Failing that, the recipe will also work with the solid blocks of creamed coconut.

        Ah, yes, I’ve seen several bloggers make their own coconut butter that way. Unfortunately, though, I don’t own a food processor. Also, I’m not sure how strong a food processor would have to be for this task (I’m from Europe and therefore can’t get the brands of food processors US bloggers have).

    I love all these raw goodies you’ve been makin’ lately…and I’m so mad cause yesterday was raw day, and I meant to make your fudgey babies for my next raw day. And totally forgot!!! I ended up getting my sweet fix with a Ginger snap Larabar…not as good as your babies, I’m sure.

    Question: I’ve seen recipes lately that call for coconut butter, which I see you have. I’ve never seen any around here, but it looks just like solidified coconut oil. Is that the same thing?

    Looking AMAZING Katie, way to go!!!!!!!! Basically once you have your date (and/or nuts) blend…you can just start adding ANYthing and the possibilities are endless and that’s what i love about raw cooking too…you can just go and create and do awesome stuff. No other appliances needed 🙂

    I bet I know what mound babies are made out of…..bliss??? hehe good thing I have a jar of that stuff lying around here. Ummm what’s the best way of melting coconut butter a bit so it can come out in tablespoon format? I’ve been boiling some water in a pot and then sticking the jar in there. I guess that’s really the only way…is that how everyone else does it?? (i’m a no microwave radiation kinda gal…*shudder*)

    Katie, I am amazed at how you make all of these creations with dates… I cannot keep dates in my house for longer than 24 hours!! My husband and I devour them within seconds, we are so addicted. I can never keep enough around!

    Mounds bar sounds awesome – I also love to make raw, vegan “Almond Joy” bars by blending 3 c. almond meal, 6 T cocoa powder, 7 or 8 T. agave nectar, a splash of almond extract and a pinch of salt! 🙂

    Wow! Great photos. I was always curious about the chocolate coconut butter. Ive seen it at the store a bunch and have always been tempted to buy it. What else do you use it for?     I would use the coconut butter in banana oatmeal. Of course I would ‘melt’ the banana first, and prolly have to add some of that cocao bliss! Super YUM!

    I have so many uses for these butters swirling around in my head (sauces, treats, dips, w/ fruit, plain….), but mostly I want to share them with my family so they can taste the deliciousness of nutritious raw nut butters! Especially my little brother who will only eat peanut butter and even then he “prefers” skip and jiffy because they are “real” peanut butter.     The lovely nut butters would join me on my journey back to my home in Denmark. They would sure make a nice addition to the rice pudding we always get for Christmas. Instead of the traditional topping of cinnamon, sugar, and butter I’m imagining a spoonful of coconut butter, lots of cinnamon and a swirl of runny honey. Yum-o! Can’t think of a better marriage between Danish traditional cooking and American heaven-in-a-jar.

    Coconut Butter is one of my ALL TIME favorite ingredients. I have a million uses for this amazing & delicious treat, a few of which include: spelt biscuits (to make the batter and coat before baking), vegan pie crusts (and a little bit to my vegan fruit fillings too!); cacao-coconut truffles (raw and YUM); as the oil to saute veggies for my vegan coconut-cauliflower curry; and… given that it’s cold and dry outside I may even rub some on my skin for extra hydration!

    The Cashew, Cacao, and Macadamia Butters will be EQUALLY used and enjoyed – mostly for baking and creating raw treats (especially that Cacao Bliss… mmm!). But they are also excellent additions to smoothies, sandwiches, and good to dip fruit in too. YUM YUM YUM!

    Wow! I would make raw oatmeal nut butter raisin cookies with 1/2 cup oatmeal, 1/2 cup dates, 2 T. nut butter, 1/4 cup raisins all blended in the food processor!

    Hmm if I were to win I’d totally jump on one of your fudge baby recipes, except I’d probably mess up in the process! In the mornings I always have such a hard time thinking of good, healthy breakfasts that will keep my brain going at college, I would probably put some on a whole grain waffle or toast with 100% fruit spread…and some more fruit of course. I’m a fruit freak.

    If I won the nut butters, I would would put it to good use by making these raw macaroons and the different fudge/cocoa babies recipes that are posted on your site for my family. I’ve trying to adopt a more vegan/raw food lifestyle to take better care of my health and I want to get my family to do the same.     I so really want to try to raw macaroons and and bars. I would use the butters to make me a big batch. I made the pumpkin pie babies last night. Have to admit I am in love. This was my first raw recipe. I might be converted!! After trying the pumpkin pie babies last night I wrote the recipes down for other babies. I clicked on the link to see the nut butters that was listed and planned to order some. However the price is too hefty for my budget. I order a lot of finds from websites since I live in the sticks and don’t have a lot of options around me 🙁 I enjoy your blog and read it daily.

    Gosh, nut butta is gooood on anything. I’ve never tried Artisana brand before, but i can tell that they are just heaven in the mouth!!! I’m thinkin right now I’d like to mix the butters with pasta, mmmmmm. Can anyone say chocolate pasta. Drool…..Anyway, I be dreaming up some more ideas tonight as I sleep.     Honestly it doesn’t take much for me to enjoy nut butters! I’ll eat them out of the jar, or dip celery or carrot sticks in them. I’ll put them on my homemade gluten-free breads (I’m gluten intolerant) or whip up a creamy dessert. There’s nothing I can’t do with nut butter, or that coconut oil!

    i would make a big fat wrap with lots of salad greens and a dollop of the cashew butter (FIRST) (but then i’d like to give all of them a fair chance) and then add in hummus, honey, olives, some cherry tomatoes…some mushrooms too, now that i think of it…some goat cheese too.

    I don’t even know where to start! There are way too many options. I love cashew butter simply spread on toast or good bread, or mixed into oatmeal. It’s really good with exotic jellies like my guava, or the latest addition from world market- orange ginger 🙂
    I’d have to make some coconut babies of course and then just try it on toast or with cereals too. I use coconut oil for baking (though I have to admit to trying it with a spoon numerous times :X)
    I think the cacao bliss could be mixed with my orange ginger jelly to make some amazing choco orange babies! :0!!
    Ok well I’ll stop before I get carried away with all the great recipes I’ll invent.

    I’m in love with homemade bread toasted with nut butters and a banana! Spice it up with some cinnamon or drizzled agave on top. Another way I’d use the nut butters is in my morning oatmeal!!! MMMMMmmmm…:)

    How I would use the Nut butters if I won? You can put Coconut and Nut Butters on ANYTHING!!! I would probably make up some Samoan cookie thing with them, on bananas, or try a crazy new concoction, Kabocha anyone?

    If I win the nut butters I will:
    -Add over flowing spoon fulls to my morning oats to power me up for Pilates classes.
    -Add them to nanner/spinach/hemp milk/flax smoothies.
    -Eat them with sliced apples and nanners as I dash from class to class.
    -Eat plain spoon fulls for when that midnight hunger that always seems to hit comes.

    How would we eat our new yummy nut butters? Well, our favorite is spread over cinnamon bread, smeared with banana butter (great idea by the way) and topped with some chocolate and raisins…totally yummy! Then there is of course our morning oatmeal…and smeared between two halves of banana, used as a dip, oh…and we’d probably go to sleep with it too! hehehheee! 🙂

    So if I won these nut butters, first of all my oatmeal would get a whole new plethora of makeovers!     if i win those nut butters i would make a humongous sandwich with coconut butter spreaded on both sides of 100% wholegrain bread, then a sliced banana, 85% lindt exellence dark chocolate over it then crushed almonds or walnuts then put it all together and place it into a to a sandwich press and toast it until dark chocolate is all melted and the coconut butter is oozing out! yumm!

    These look so good- I love Artisana coconut butter! It actually makes everything better, and I agree with you that it tastes like shortbread. I love that it is also 100% whole food, raw coconut with nothing added or taken away. If I can get my hands on some coconut butter, I will definitely be making your raw macaroons.

    I finally got a jar of Coconut Butter and I’ve been wanting to make these…
    too bad I almost have EATEN THE WHOLE JAR. SOB. I also have taken to just eating it straight up. Soooo good. I’ve been making butternut squash fries lately, though, and wonder about eating them with the butter on like you do. Hrm. I typically do kosher salt and fresh ground pepper for savory fries… but cinnamon/nutmeg sprinkled fries with coconut butter sounds good too!

    I hope I win the jar since mine is almost gone. The horror!

    Wow! I am sooo impressed and delighted re: the macaroons,but, I am allergic to a million things. So if I follow the recipe w/o chopped nuts, is this totally nut free? Also, since you seem genious on raw and vegan, have you come across a peanut(or any nut for that matter) butter subsitute? I want to try the peanut butter babies but cannot even look at a nut w/o being sick.. Does anyone have a suggestion? It would be so very appreciated!
