Strawberry Shortcake Pancakes – Sweet homemade & fluffy pancakes, bursting with fresh strawberries in every bite!

You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.
You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

And I didn’t try to shape the one above into a heart; it just happened to fall that way!

Ingredients
- 1/2 cup chopped strawberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2Â tbsp rolled oats, gf if desired
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1Â tbsp sugar or pinch stevia
- 1/3 cup milk of choice
- 1 tbsp coconut oil (Omit only if you like the taste of fat-free pancakes)
Instructions
Strawberry Shortcake Pancakes: Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on a greased pan, on low-medium, flipping each pancake once. You can boil some more strawberries (with a bit of sugar if you wish) and smash them to make a compote.
Or top with fresh berries and Homemade Healthy Whipped Cream.

I made these pancakes, over the weekend. My husband and I had a friend visiting who is vegan, and was looking for a good brunch meal. These pancakes were incredible. So sweet, and hearty! Will definitely be making them again this summer!

I wanted to make these for breakfast today but i overslept ;so i made them for dinner and oh my goodness these are AMAZING!!! I’m definitely coming back to this recipe!
I would love to know the nutritional information on these? I might be over looking it, I have a 4 year old who is whacked out on cold meds to deal with at the same time as my browsing 😉

Pancakes are one of my favorite breakfast foods (when I’m splurging a little anyway) and I definitely enjoy them but I always feel guilty about some of the ingredients. With these ingredients there’s no reason to have to splurge. You can get the great taste and also be healthy at the same time.
Made these for breakfast Saturday morning. Topped them with some chopped strawberries & a few dark chocolate chips. Yum! Just one more reason breakfast is my favorite meal! Thanks again for sharing your recipes Katie!

Only thing was I had to triple the recipe. This “one serving” is enough for my 18 month-old. I needed two. And I’m 110 lbs.

Ok so for Valentine’s Day this year I used two of your recipes. The day before I picked strawberries and made your peanut butter dipped strawberries. Then the morning of I used the leftover strawberries and PB dip with this recipe. I used the extra PB dip to top the pancakes along with a bit of whipped cream and all of it turned out amazing. Thank you!
Now that strawberries are finally coming back in season, I gave these a go and man are they good! I made them for a second day in a row! Today I made a double batch for me and my 5yo son and he devoured them. Thank you Katie!
Made these for my kids for Fat Tuesday/Mardi Gras/Pancake Day! All out of plain non-dairy milk, so I used Chocolate Almond Milk instead and the pancakes turned out amazing! Chocolate Strawberry shortcake for dinner–can’t beat that. Thanks for the great recipe.
Holy cow these are good! Shhh, don’t tell the kids they’re healthy 🙂 We had them with a little chocolate syrup – really these are to die for!!!
Can I go half and half with spelt flour and WW pastry flour. I am not a real fan of the texture of the spelt flour alone.
