Mounds Bar Pancake Roll Ups

Two days ago marked the birthday of a very special friend of mine.  She seriously is one of the kindest, most selfless girls I’ve ever been lucky enough to meet.  Because my friend is always so sweet to others, three of us decided that, for her birthday, we ought to reciprocate some of that kindness. This is why, on Tuesday morning, at an insanely early hour, I was in my kitchen making pancakes.

And to go along with the Pancake Challenge, I made Pancake Roll Ups :) .

Mounds Bar Pancake Roll Ups, to be exact:

(I used the Brownie Batter Pancakes as a base.)

Mounds Bar Pancake Roll Ups

(Serves one… and you get some sneaky leafy-green veggie servings in there as well)

  • Dark chocolate chips
  • Shredded coconut
  • the ingredients for a half recipe of Brownie Batter Pancakes
  • Coconut butter (or other filling)

First, cook the pancakes. (Cut the recipe in 1/2 to serve one.)  Then “ice” with the coconut butter (or use cheesecake mousse or whatever).

Add a few chocolate chips and melt.  Then add the shredded coconut. Roll up and top with more chips and coconut!

How cute! One of my favorite birthday memories is very similar…I was kidnapped for late night ice cream! Also, decorating my friend’s car at 5am before school…we would always repeat for others, but the firsts and the actual surprise was always the best.

Hey Katie, I made your oatmeal cookie crepe cakes today for breakfast! They were so good! I can’t even begin to thank you enough for posting such a delicious recipe. And now I need to get on that Mounds recipe!

Yumalicious! I used to love Mounds bars, and I actually have one of the Go Max Go Mahalo vegan “mounds-style” bars in my pantry waiting to be devoured. But your pancakes look sooooo good. MmmMmmm…I made crepe cakes this morning! Totally fab, topped with sliced banana and chocolate almond butter sauce (almond butter, unsweetened cocoa, vanilla rice milk and stevia) Amazing and easy peasy. Maybe the carrot cake version next, or these mound bar ones!

I just happened upon your blog today, I can’t remember how, after a number of clicks from one blog to the next I ended up here. And I am SO happy I did! I love your blog! I became vegetarian last October – I cut out everything except for milk, yogurt, and cheese. Last month I decided I want to work toward becoming completely vegan – I’ve had no problem eliminating the milk and yogurt – soy does me just fine. I am having a tough time with cheese, however. My live-in boyfriend is from Wisconsin, and you know how they are about their cheese. I haven’t found a non-dairy cheese that I have really liked so far – any suggestions?

Anyway, I love that you put all these awesome recipes up here – I’ve been cooking a lot more since I decided to go vegetarian/vegan, and I’ll definitely have to try some of the ones you have one here!

I’ve got my humorous blog already in full swing, but I’m in the process of developing a vegetarian/vegan blog as well to put up recipes, vegan shopping sources and health/beauty products as well as information about cruelty free and green living. I surprised the husband-friend one year by taking him on a weekend trip to the dunes for his birthday. And come to think of it, this year was a surprise birthday party.

OMG must get machine to let me steal food from my computer screen!!! I would get up at any hour of the day to get me some o’ that!

I love surprising people for bdays, etc. My favorite memory though was taking the campus bus over to my fiance’s (then bf) apartment off campus, letting myself in and cooking up mini quiches before he woke up. I had time to cook up a ton of tiny quiche lorraines & made a homemade strawberry smoothie just in time to catch him stirring. Man was he surprised!!

Oh I love surprising friends for their birthdays!!! I tried surprising my husband the year we were engaged. I was supposed to fly in for the night just for dinner (long distance relationship) but it didn’t work out.. the flight was delayed many times and then they didn’t fly at all! I was devastated and cried and cried! Funny now when I look back on it but it wasn’t then!

Is there any other way to enter this contest? I don’t eat flour or own egg replacer. I tried to make pancakes using almond flour flax and water and failed miserably. I would love to enter this challenge but I’d rather not waste food.

Hi Victoria!
You definitely do NOT have to make traditional flour pancakes!! (And they don’t have to be vegan either. Just because I’m a vegan doesn’t mean I want to force my beliefs on anyone else.)
You can make any kind of pancakes you want: potato pancakes, oatmeal pancakes, or something else entirely! Be creative and have fun! :)

mmmm these look deeelish! i’ve been on a pancake kick recently…made some the other day that mixed FOUR (count ‘em) different kinds of flour for a fun and unique flavor combo. the mix was: chestnut flour, sweet potato flour (!!!!), peanut flour, and spelt flour. half the batter mixed with banana chunks and chestnut pieces. yummers.
anywho, i’m a coconut addict at heart, and currently have two jars of coconut butter. i would love to try making my own at some point! also, went on a whole foods spree this weekend and picked up a bag of coconut flour and unsweetened shredded coconut (to replenish my stash)… gotta love bob’s RM.

I actually tried my first mounds bar when I was trick or treating wayyy back in elementary school. Ever since then I’ve been hooked! They’re so darn good. In the spirit of Halloween, I definitely plan on making these pancakes.. they sound so delicious!
