Carrot Cake in a Bowl

What’s up doc?
In a former life, I was Bugs Bunny.

I even have a special recipe tab: My Carrot Cake Recipes.
Now, there’s one more for the list:

This is based off of the wildly-popular Banana Bread in a Bowl.

And you get a vegetable serving from this breakfast!

Carrot Cake in a Bowl
(serves 1)

  • 1 banana (I used frozen)
  • 1 cup milk of choice
  • 1 cup flake cereal (I used spelt flakes) (You can use gluten-free)
  • 1 teaspoon pure vanilla extract
  • 1 large carrot, peeled
  • dash salt
  • optional: you can also add some coconut butter or oil

Steam the carrot first, then combine all of the ingredients in a food processor, blender, or Magic Bullet. Blend until smooth. Now eat! Optional: top with walnuts, shredded carrots, cinnamon, and/or raisins.

See original post for Calories and Nutrition Info.

For my next carrot-cake magic trick, in honor of Bugs Bunny, I’ll make carrot cake ice cream. After all, I like putting vegetables in my ice cream, as I proved when paying homage to another favorite cartoon character—Popeye!

Question of the Day:
Growing up, who were your favorite cartoon characters?

Mine were Bugs Bunny, Popeye, and Pluto. Remember my Pluto Cupcake?

Oh, and I always rooted for Tom to eat that annoying mouse, Jerry. (Would you ever have guessed I’d later become a vegan?)

Katie is the baker, photographer, and author of the popular blog Chocolate-Covered Katie. Her favorite food is chocolate, and she believes in eating a balanced diet that includes dessert every single day. More about Katie—>

I loved the PowerPuff girls. I have a PowerPuff girls mug, and a PowerPuff girls lunchbox (which I still use…! :P)

      1. Haha you know me too well!! I am SUCH a child!! I also have a Peter Rabbit bedspread that I still use…but lets keep that between us, k? 😉

        1. Ok. I won’t tell anyone. So basically only you, me, and everyone else who reads my blog will know. Is that cool with you? 😉 😉

          1. Hela says:

            Love Peter Rabbit, too!

  6. I always feel like carrot cake needs to be topped with coconut butter…..mmm….

fav character-the telly tubbies! I LOVED the little red one-Po….

  7. I was a HUGE fan of the classic Mickey and Minnie Mouse or even the Disney Princesses as I secretely believed that I too was an actual princess, hahaha!

  8. I liked Tom and Jerry (old school, I know) but I also LOOOVED Recess, Arthur and Doug. Good stuff! We had such great cartoons…now kids have Spongebob crap!

    1. Ugh or Ed Edd and Eddy. What the heck is that?!

  9. i’m not even sure I had a favorite cartoon character! Eeeek, some childhood…. ALthough I do remember watching Tom and Jerry Kids with my brother haha.

    looks delish as always

  10. I loved Looney Tunes and Tiny Tunes — also Mickey Mouse, Porky the Pig, Animaniacs, I’m sure there are more but that is all I can think of for now.

Love the idea of getting veggies in at breakfast!

  11. Hannah says:

Pebbles from the flintstones was one of my favorites!
Mmm…I cant wait to try carrot cake in bowl:)

  12. I was all about whinnie the pooh haha. I love carrot cake, so that is perfect way for me to get my craving! :)

  13. I love carrot cake so I KNOW I will love this – it kind of looks a little like oatmeal… Did you eat it warm or cold? I’m sure its delish both ways :)

    1. For me, always cold! I am strange and even eat my oatmeal cold! But when I’ve made this for others, I usually heat it up… then the banana gets all caramelized!

  14. Carrot Cake in a Bowl looks fab! I love Carrot Cake!
As a kid my favorite cartoon characters were Road Runner (meep, meep!) and Bugs Bunny (What’s up, doc?). 😛

  15. Kimberley says:

Hahah LOVE the intro! And your a genius… just saying :)

I looved bugs and goofy. 😛
That oatmeal looks soooooo awesome!! I bet even my mom would eat it (and she hates oats!)

  17. Spinach ice cream is awesome..just sayin!
I loved scooby and I can’t forget my girls the powerpuffs!

  18. Carrot makes everything so dessert-like. Love it!

My favorite was Garfield. And – like my fav cat – I love lasagna. :)

    1. s says:

haha i loved garfield too 😀

  19. Carrots are my fave.. eat them EVERY day.. am very interested in finding out how they will taste in my morning oats!

My favorite cartoon character was Snoopy!

  20. I am most definitely making your carrot cake in a bowl! I’ve made carrot cake oatmeal before with shredded carrot, but I never thought to cook/steam the carrot first.
After you steam it, do you wait for it to cool or run it under cold water before blending it?

    1. I usually just throw it in, hot. It’s not a big amount, so it doesn’t heat the rest of the cereal (especially since I’m using a frozen banana). But I think your idea to run it under cold water is a great one… I’ll try it next time! :)

  21. Dalai Lina says:

What a great way to use the 2 pounds of carrots in my fridge from my CSA. Now, ice cream – you put that right into your ice cream maker? You are very creative!

    1. I actually just use the vita mix for the ice cream. I do have an ice cream maker… but I am embarrassed to admit I always forget to use it. I think it’s in my garage :(.

  22. Love this recipe!!!! I remember growing up I LOVED Animaniacs. I used to play the old video game with my brother all the time and we would have a picnic every time we went into the WB store. They had a bunch of cool set-ups for the show and such. Yup, I was pretty into them!

    1. Anamaniacs… I loved that theme song! I think I played the game once and was lousy at it, though lol.

  23. Yum! Carrot cake is probably one of my top 5 favorite desserts! I’ve got to try this – you’re recipes are always spectacular!

My favorite cartoon characters were Babs and Buster from Tiny Tunes. We’re tiny, we’re tooney, we’re all a little looney, and in this cartooney we’re invading your TV! Ha! I’ll be singing that all day now!

    1. Aw darn it, and now I will too! 😉

  24. I love veggies with breakfast! I had some carrot filled pancakes this morning. De-lish! Your breakfast makes me hungry again!

  25. Every time I see that spinach ice cream it makes my mouth water! I need some :)

  26. KATIE, you’re a genius. I can’t wait to try this bowl!

  27. Mmm, can’t wait to try this! Thanks for the idea
My favorite character growing up was Bugs Bunny too! When the Looney Tunes Acme circle thing would come on before the episode began, I would always hope it would show Bug’s head because that meant the episode was about him 😀

    1. Oh wow, you were a perceptive little child! I must’ve watched a million of those cartoons, and I never knew that!

  28. A.Cook says:

Carrot cake oatmeal?! Wow–you are so creative!
My favorite cartoon character was Chip of Chip and Dale…mostly because of the show Rescue Rangers! My brother and I got the Chip and Dale stuffed animals on our first trip to Disney…I still have my Chip!

    1. No no, no oatmeal! LOL but I should make carrot cake oatmeal, huh? Mmmm maybe tomorrow’s breakfast… :)

      1. A.Cook says:

Ahahaha oops! I feel so dumb–it says it right there in the title! Well anyway, it looks delish and I am going to make it!!! :)

        1. Oh my gosh, no do not feel dumb! I SHOULD make carrot cake oatmeal!!! Maybe even chocolate carrot cake oatmeal! Is that taking it too far? Hmmm…

          1. A.Cook says:

No…definitely not taking it too far. I am a full believer in you power to add chocolate to anything and make it superb!

  29. Carrot cake oats…yum!

Fave cartoon characters…hmmm, I used to watch Scooby Doo all the time and loved that gang when I was growing up after school. I was never that into cartoons, but give me and episode of Three’s Company or the Brady Bunch and that was where it was at for me :)

    1. LOL there’s no oatmeal ;).

      1. Oops, I thought there were oats laying on the bottom of that picture. Well, whatever is in the bowl looks great :)

  30. Heather says:

I love carrots and never thought to have them for breakfast. I’ll have to try this! As a kid I LOVED animaniacs and tiny toones!

  31. Camille says:

I was/am a giant fan of Spongebob. I kind of still am. In fact, 2 Christmases ago my sister and I watched Spongebob for like, 4 days straight without leaving the house. Just to clarify, I am 21 years old. Nerd alert!

  32. How creative!! I love love your recipes. I love even moreso the idea of paying homage to our fave cartoon characters through food. My fave cartoon was the Jetsons. I just loved the whole futuristic thing. I feel like we could totally bake up some interesting concoctions for that one!

  33. Emilia says:

We are more alike than I thought! I love putting carrots in my oatmeal, smoothies, yogurt, etc. Hey, why not? Carrots, when roasted, are one of the sweetest root veggies out there! Yum. I made the best carrot protein porridge recently with coconut milk, cinnamon, raisins, carrots (steamed) and coconut butter! Holy- heck it was good.

  34. I made carrot cake oatmeal for my boyfriend just last week, great minds think alike! I may have to make it again, now!

  35. im gonna bee-line to the store for some carrots and whip up this gorgeous concoction! i knew your recipe would be good!! <3

  36. Haha, I used to LOVE Tom and Jerry (actually, I still love Tom and Jerry 😉 )

I just put a banana in the freezer, and now I know why… I think I am destined to make your carrot cake in a bowl! 😀

And if I ever go to Texas, I’m definitely taking you up on your offer 😉

  37. I have so many carrots that I have no idea what to do with, so this recipe is perfect :)

I used to love Rugrats and Doug when I was a kid!

  38. I love anything with carrots in it!! Carrot cake is one of my raves so I’ll definitely be trying this soon :) Doug was my favorite cartoon of all times…I loved skeeter!! And the his dog pork chop lol. They definitely don’t make cartoons like they used to!

  39. Serena says:

Mmm, this is like a smoothie of carrot cake! This is the first time I’ve been to your website and already I love it :)

    1. Awww I’m so glad you found me!!

  40. Carrot cake and red velvet cake are two of my FAVE desserts!! Well, and chocolate…I guess it always depends on my mood. Anywho, I can’t wait to try some of your carrot cake-inspired recipes! You’re so creative, I love it :)

    1. Hehehe you sound just like me! Chocolate, then carrot cake, and I *just* discovered the joys of red velvet. (with my red velvet pancake recipe I posted a few months ago… I’m thinking of doing cupcakes next!)

  41. Ally says:

WOW – I had this for dinner and it was so good! My mom even liked it (even after she said it looked suspiciously like orange porridge). THANK YOU for always getting so creative with grains :)

    1. You had it for dinner? I think you are my new favorite person :).

  42. BroccoliHut says:

Love this! I have a recipe for carrot cake oat bran, but I never thought to translate it into colder form…great idea:)

  43. Disturbed says:

This looks amazing. I want to make this now! lol

So, I eat bran flakes like every morning. I love them-with a little cocoa powder. I was wondering if you happen to know of any other easy fun things to do to it?
Also, wondering if you take a vegan mult-vitamin? My mom is wanting me to take one, and I have some mixed feelings about it.

    1. Besides this and the Banana Bread in a Bowl, I don’t… but someone else said she crushes bran flakes up and uses them in the single-lady cupcake recipe to make a bran muffin!

As for a multi… I’d see a doctor and get a blood test to see if your levels are all ok. I don’t take one, since my levels are all ok and I don’t want to OD on any of the vitamins I’m already getting 100% of from diet. But I do take an omega3 supplement, and I make sure to get enough vit b12 from fortified foods every single day.

  44. This bowl sounds so delicious. I love carrots in all forms
My favorite character was sailor moon

  45. Stephanie says:

Ooh, are you using your new spoon?

  46. Tara says:

Carrot cake anything is right up my alley. Anyone who doesn’t think vegetables can taste good and be healthy needs to come to your blog!
My favorite cartoon character was Misty from pokemon. I had older brothers, so I was into all the boys shows!

    1. Hehe a few months ago, I made a chocolate pb pie with zucchini and fed it to unsuspecting college boys :) :). Evil!

  47. s says:

haha i feel like i say the same thing a lot of the time (“i’m so going to make this!”) but it’s just true. i look forward to new and interesting breakfasts thanks to your blog!

and umm i LOVED pretty much all of the muppet babies (especially fozzy bear! wakka wakka wakka.), donatello from the power rangers, and minnie mouse. 😀

    1. Awww I miss the Muppet Babies! Except nanny… I hated how you never saw her head!

  48. Mihika says:

What are spelt flakes? Are they pre-cooked, like cornflakes, or are do they look like oats?

    1. They look almost exactly like bran flakes (or, as you said, cornflakes). They’re a cold cereal, so not like oats.

      1. Mihika says:

Thanks :) I can’t find spelt flakes anywhere, so I think I’ll try substituting bran flakes. No reason why it shouldn’t work! I love bran flakes anyway.

        1. Yup, bran flakes work perfectly! :)

  49. Mihika says:

    * Excuse that awful sentence 😛 I meant, do they look like oats? I’ve seen spelt flakes at the supermarket that looked like them.

  50. did you watch ‘My Neighbor Tortoro’??

    1. No, I’ve never heard of it… a cartoon?

      1. yes! I thought it was Japanese but I could be wrong

        1. LisaB says:

Haha, Katherine, I definitely watched that movie! In fact, my siblings and I were just talking about it the other night. I, like you Katie, grew up living overseas, so when my parents found any VHS’s in english, you’d better be sure they were buying them for us to watch – Totoro being one of them!
          – and great recipe. Tried it this morning and will definitely be making this more often!

  51. Katie, this is so unique and creative!! I love it! I will try it as soon as I get some cereal and a frozen banana. Can’t wait!

  52. All your recipes are so awesome! I had no idea your page had a facebook, but I liked it lol! Your oatmeal/pancakes recipes are definetely a staple in my diet!

  53. Sarah says:

carrot cake ANYTHING has me sold! Cant wait to eat it!

  54. Ummm def Aladdin! I was (am) kinda in love with him!!!

    1. Hahaha me too! Whenever I’d stay home sick as a little girl, I always had Alladin marathons, where I’d watch all of them! (Well, the first three anyways)

  55. Alicia says:

Can I just say, “YUMMM!” I’m new to your blog and I’m loving every bit of it. Can’t wait to try this and read more. :)

    1. Aww hi Alicia! I’m so glad you found me :) :).

  56. Whole grain cereal plus protein (milk) plus a fruit AND a vegetable . . . and it doesn’t taste too shabby either? It’s a keeper!

  59. Anonymous says:

sorry for commenting aton im just really obsessed with this recipie :/

  60. Carly says:

I made this FOUR times already and it’s SO yummy! Great recipe, Katie!

The fourth time I made this, I ran out of flake cereal (I was using Special K) so I subbed in Fiber One cereal. It came out tasty still, but I had to up the milk to 1 1/2 cups. Just a tip for anyone who wants to try with a different cereal!

  61. Nina says:

I recently had a baby and was looking for healthy recipes to keep me going and I stumbled across your sight. I have tried a few of the oatmeal recipes, the Guinness brownies and now this….I am in love!!!! I write down the recipes I tried and liked, but my stack keeps getting bigger because I fall in love with everything I try! Thank you!! :)
Oh and bugs bunny and old school cartoons were always favorites of mine :)

  62. éclipse69 says:
