Chocolate-Raspberry Fudge Bites

That’s what May said to us poor folks in Texas. Throughout April, we were treated to warm, sunny weather. But May hits and—bam!—suddenly it’s pouring rain and 40 degrees!

So much for April showers bring May flowers.

In an attempt to brighten my mood, I turned to chocolate.

My afternoon snack did the trick: chocolate-raspberry fudge.

Aren’t they supercalifraga-adorable-licious?!?

Expialidocious. Instead of making a cake, as I normally do with this recipe, I cut the fudge into bites this time. Who doesn’t love bites, right? Just looking at the photo makes me smile again. Oh, and now I want some more fudge! So that you don’t have to click back, here’s the recipe again:

Chocolate-Raspberry Fudge Bites

  • 80g raspberries (2/3cup)
  • 3 tbsp cocoa powder (16g)
  • 4 tbsp coconut butter or Homemade Coconut Butter
  • Scant 1/16th tsp salt
  • Sweetener: I like 5g agave, but my testers like 1 1/2 to 2 tbsp (20-30g)

Melt your coconut butter, then add the raspberries (I like to use frozen, thawed berries and melt them a little too) and other ingredients. (I have not tried this recipe with coconut oil, and therefore I can’t vouch for the results if you make that substitution.) Mash until it’s completely smooth, like chocolate butter. (If you wish, you can use a blender, but I never do. I just put it all in a Magic Bullet short cup and mash with a spoon. Use as frosting, or fridge/freeze. (If you freeze, be sure to thaw before eating.) This makes a very small serving (I used a mini springform for the slice in the photo), so if you want a regular-sized cake, make a bigger batch!! (Triple or quadruple for a normal-sized cake.)

See original fudge cake post for Nutritional Information.

(This version probably has fewer calories because raspberries aren’t as calorically-dense as bananas… but what’s a calorie-count anyway, if not an estimate?)

Unfortunately, while chocolate and raspberries work wonders for one’s mood, they have no effect on brightening dismal weather. It continued to rain all day… with more rain predicted for tomorrow. Yuck.

Dinner was comfort on a plate: Bread-Free Vegan Stuffing

In between snack and dinner, I escaped to the mall—I go stir-crazy if cooped up in the house all day (even if I’ve gotten exercise via the dreadmill). But before my great escape, I managed to make some yummy things in the oven. You might have heard me talking about these mysterious yummy things, yesterday, on Twitter. 😉

This week is going to be full-on desserts!
Cake, cookie dough, chocolate… prepare your tummies! Starting tomorrow, when things get sprinkled.

And those cake batter doughnuts look AMAZING!!! Ohmygeez I am SO DARN EXCITED for that recipe!! Katie you are a little GENIUS, and even though there’s no sun in Texas, you’re there so that’s quite enough sunshine for one state :)

  3. Lenna says:

I loved Mary Poppins when I was a child, but I haven´t seen it on the TV programme for like 10 years! It was so lovely movie, I should probably re-watch:)

  4. Jill K says:

Your photos look super yummy! Can’t wait to see what recipies are ahead. Chocolate is a favorite of mine!!

  5. Bring on the desserts!!!

Usually I feel stir crazy when I’m cooped up inside all day (like yesterday!) but I actually enjoyed it — laying around and watching tv was the perfect way to start my week! :)

  6. When I am stuck in the house all day, I can feel myself getting lazier by the minute, and I HATE it! LOL! If it’s planned, I’m ok, but if it’s because of the weather or something like that, I get so irritated!

  7. RAIN!>!!? EW EW! i wish i could send you the sun over here!!. um LOVE FUDGE- even better when its bite sized because eating lot sof little bites seems less naughty than eating a giant piece- even though Id probs eat the whole batch anyways! um this week sounds like a DELICIOUS LINEUP!

  8. Lisa Fine says:

Mary Poppins was one of my favorite movies as a kid, along with Cinderella.

Those fudge bites are so cute, and look perfect with that little raspberry on top.

    Happy Monday!

  9. I have to be outside…I am completely dreading my 3-day long car trip next week. 3 whole days stuck in the car while I look around outside and see beautiful, Spring weather and all the budding flowers….blech! I am going to need to bring myself some raspberry fudge, too, to cheer myself up in the car :)

  10. Full on desserts? I’m sold!

  11. I definitely get a little stir-crazy when I’ve been inside all day…the only time I can pull that off is if Im just all sorts of burnt out and dont have the energy to get off my couch!

  12. Jenny says:

Haven’t seen Mary Poppins in ages! I think my favourite parts are still the ones that involve Bert, however you spell his name. :) The chimney sweep! I loved when they went to that world in the pavement picture, haha.

And yes, you’re definitely not alone in terms of feeling like you’re going insane when stuck inside all day. I even get cabin fever like that when I’m sick and am supposed to stay put! Haha, it’s good to hear that you got out, even though the weather was blah.

  13. Oooh, I’ve been meaning to make that fudge, thanks for the reminder 😀 Can’t wait for dessert week 😀
I sometimes get stir crazy from being inside too long, and sometimes it doesn’t bother me. Weird 😛

  14. I feel stir crazy if I’m inside for longer than an hour it seems :) Looking forward to seeing all of these recipes, the cake batter donuts look amazing!

  15. Julia says:

I had my wisdom teeth removed on Saturday and I’ve been stuck inside for the past three days! It’s awful. It’s rainy here too, and I’m going stir crazy. Can’t wait for my chipmunk-sized cheeks to go back to normal so I can get up and exercise…

  16. Your blog always makes me drool :) Love ya katie!!

  17. Emily says:

Those cake batter donuts look amazing!

  18. Jeska says:

Worst was inpatient treatment… nine weeks of not going out much at all. I swear, going to the grocery store seemed exciting after that! :L

The days when I DO go out, I tend to feel a lot better afterwards.

Looking forward to all the dessert recipes 😀

  19. Oh my goodness. Those cake batter donuts look to LIVE for. Can’t wait for this ‘sweet week’ you’re bringing upon us 😀

  25. Girl, I seriously want to reach through the computer and eat that raspberry fudge because it looks INSANE! I LOVE LOVE LOVE your recipes! Stay fab girl!

  26. Cake batter donuts?! I die.

  27. those fudge bites look SO CUTE!

  28. A.Cook says:

That first picture is some serious food porn! Really gorgeous!
I am studying for finals all week so I’m feeling very stir crazy, especially because it’s so sunny and pretty out (though still sort of cold…low 50’s, wind) in Boston. I’m sitting in the living room with all windows open and blinds pulled up though, trying to feel a little outdoor spirit!

    1. Ugh it’s colder in Tx than in Boston? Double ugh. No, triple!
If you DO get a chance to go outside, breathe in some fresh air for me! 😉

  29. Sorry to hear about the crappy weather :(

Whenever I’m really busy, I long for a day where I can stay at home all day, but then once I’m actually doing it, I get antsy!

  30. A week of chocolate…oh, I love this week already :)

    The choc looks beautiful, Katie!

And I would LOVE to be cooped up in the house for awhile….but no, I am running around like a crazy lady…parenting, work, time to just chill in the house! I wish :)

  31. Natalie S. says:

Blech, I hate this weather! It makes me feel so lazy and lethargic. Hopefully the warm weather will kick this cold front’s ass in a few days!

    Natalie from Austin :)

    1. I heard it was colder yesterday in Tx than Boston :(. Yipes!

  32. We had similar – 27C summer last weekend and now still sunny but cold and with a bitter gale force (feels like) wind. Not good.
I hate being cooped up; when we had mental amounts of snow, I walked up to do the horses, just to burn off some energy!
And I loved Mary Poppins – me and my sister used to watch it every day. I think we knew all the words :-)

  33. Kimberley says:

Ahhh yum, I am excited for a desert weeek :) YAY!

  34. A FULL WEEK OF DESSERTS?! Ahhh, I’m so excited! I love desserts and all things sweet! 😀

  35. Megan says:

  37. I luuuuurve Mary Poppins! Totally one of my favorite disney movies! And who doesn’t love Julie Andres!?

You have totally convinced me to get a donut pan….donut shaped things are just more fun!

  38. im totally making this fudge since i am not a fan of bananas! oh i get cabin fever like crazy! totally relate!

  39. WOW That fudge looks good! Can’t wait to try it.

  40. Emma says:

i get soooooo stir crazy – restless legs and all. yay for desserts! yay for choccie! yay for life!!!!

  41. Tamara says:

I wasn’t craving chocolate, but I am now!! I can’t wait to see the rest of this week’s desserts!

  42. Excuse me while I go eat a dark chocolate square to console myself for not having a bite of your raspberry fudge…these look amazing! My grandmother used to make fudge every Christmas, so this reminds me of her :) xoxo

    1. Aww I LOVE when things remind me of my grandma. I miss her so much… but when I eat her favorite foods, it’s like she’s back with me, enjoying them too!

  43. Katarina says:

    The fudge looks so delicious!

  44. Nina says:

All your posts look absolutely delicious.
Incidentally, I’ve had frozen raspberries on my shopping list for so many weeks in a row I’d forgotten what I wanted them for! Cha-ching! NOW I remember! Your devine recipes. :)
    Thanks Katie.

    1. Thank YOU for the sweet comment :).

  45. BroccoliHut says:

I just about went crazy today–I was stuck inside doing take-home exams and keeping an eye on my new pup. I need time outside!!

    1. Your new pup is adorable! I think your professors would understand if you didn’t do the exams, opting to play with your puppy instead ;).

  46. Tara says:

DESSERTS <3 My favorite! I'm so excited for the donuts!
I've been meaning to ask you how you would recommend I use cocont butter. I finally nabbed a sample packet while I was in California. I've been hesitant to buy a full jar because it's so pricy and I wanted to try it first. How would you recommend I use the two tbsps? You are coconut butter queen after all!

    1. Oh my gosh… two tablespoons… that’s like a tease… how on earth can I pick just one favorite way? Too hard!!! Next question please! 😉
I’m thinking, you gotta try a little straight-up, first. And then… well, I’d say this fudge, but you need more than 2T. So… either on pancakes or as melties. Or raw macaroons. Or mixed with melted banana and then spread on toast. Or… oh wait, that’s way more than one idea. Oops!

Do be sure to let me know how you end up using it! And what you think of it!

  47. For me, Gotcha is a game I just learned where a group of people stand in a circle with one palm open in front of the person to their left and their right finger hovering over the open palm of another person’s hand in front of you. On the count of 3, you try to catch the finger that’s hoverinh above your hand, and you try to prevent your other finger from being caught.

Sorry for my randomness. It’s just that your mention of Gotcha made me smile….
Your chocolate raspberry fudge looks amazing.

    1. LOL I love that game! I always lose, though!

  48. Susan says:

OK – made the raw fudge cake tonight. Made a few changes to give it a protein boost. Went with: 1 TBSP cocnut butter, half banana, 1 TSP cocoa, 1/2 scoop chocolate protein powder, and about 2TBSP greek yogurt, couple drops stevia. Frozen chocolate fudge heaven. Keep those ideas coming!! Love this blog!

    1. Aww I’m so excited you tried it… and I love your protein powder addition :). I keep meaning to try protein powder in it, but I haven’t gotten around to it yet.

  49. uh-oh. better bring out my stretchy pants! 😛 that looks too creamy. that’s a good thing haha.

  50. Gwenevere says:

I would turn to chocolate too. :)

  51. shannonmarie says:

I’ve been known to get some mad cases of cabin fever, too. On weekdays, when I’m home alone with my youngest child, I actually look forward to our walk down to the bus stop to get her brother in the afternoon. The daily dose of vitamin D peps me back up again.

But, on rainy days, I dread it. I’ve gotta strap Hayden in her car seat and drive down to get him, unless its only a slight sprinkle. Then, we have fun with our umbrellas.

  52. Charissa says:

Well, Katie girl! You did again! Me thinks I will be making this…:)

  53. Love Mary Poppins! I consider my purse to be my “Mary Poppins bag”! I’ve been known to pull all sorts of stuff from there! Haha!

I definitely go stir crazy if cooped up all day! I have to get out at least for a little while so I can breathe!

  54. kathleen says:

I spent from december until march inside. It was just way too cold for a brand new baby. Yeah, I think it might have made me a bit crazy.

  55. Carine says:

Imagine some chili with the little fudge… or some coffee… yummy!

  56. Kirsty says:

I am currently waiting for a ‘triple the recipe’ to freeze right now. I also used coconut oil….and a very tiny sachet of decaff coffee (in place of a certain amount of cocoa powder) as my boyfriend hates caffeine but loves the taste of coffee. I tasted the mixture before putting it in the freezer and wish I hadn’t =( doesn’t taste very good so I reckon that was a huge mistake!
I hope it will be better once it has settled and such.
    I will keep you posted!

  57. Mariah H says:

WOW! i made these delicious drops of heaven (choc rasp fudge bites) and they look exactly like the picture!! so quick and easy they literally melt in my mouth!! everyone considering making these definately should! EAT YOUR HEART OUT KATIE! XX

  58. tia says:

What if you have a condition where you CANT digest fats, even healthy ones? Cause that’s me. Any recipe ideas?

  59. terri fields says:

    Love this

  60. genny potts says:

I like that their is snacks , food that are healthier for some of us who have to & the ones that really can’t tell they are eating healthy without losing flavor !
I don’t miss the things I can’t have . When I go out I eat a little before & pick carefully depending where I go. @ family events I bring some stuff I know I can have since I know I’m asked to bring things I know I can’t , but I still enjoy making them for family .

  61. Ruth says:

    Hi Katie,
Your chocolate-raspberry fudge bites look DEE-LISH! I have a question though. How does coconut oil differ from coconut butter? I have a jar of something labelled coconut oil and it’s white and solid. I REALLY want to make this recipe and will probably use what I have because, although I live in France (SUPPOSEDLY the gourmet capital of the world!), it’s very difficult to find anything that’s not garlic, frogs’ legs or chickens’ feet!!! (Well, almost!)
Many thanks and keep up the great work! LOVE your photographs!
