Sweet, drippy ice cream, cascading into a delicious pool of vanilla.

Yeah, it’s winter. But I can’t keep this dreamy recipe to myself for the next four months. And actually, I really like eating ice cream in the winter.

One of my favorite memories is of a Christmas my family spent with relatives in Italy. The weather was bitter cold and rainy, and yet we knew it’d be a sin to leave without sampling the famed Italian gelato. Therefore—decked in hats, scarves, and heavy coats—we sat in a little gelateria, clumsily using gloved hands to spoon the rich, creamy dessert into our mouths. I’ve never tasted ice cream as delectable as on that blustery December day.

Perhaps this memory is what prompted me to pull out my ice cream maker a few days ago, in the ugliest weather we’ve experienced so far this year. The frustrating thing about ice cream makers is that you can really only make one batch per day, since the base needs to be completely frozen for optimum performance.

And I am not a patient person! If a recipe experiment doesn’t come out perfectly the first time, I immediately want to try again. My first attempt at making a healthy ice cream was awful. Loosely following a recipe from The New York Times, I mixed cornstarch in with my almond milk. The result was not an ice cream; it was a paste! In my second attempt, I reduced the amount of cornstarch, but it was still pasty. So, on day three, I omitted the cornstarch altogether…

Feel free to customize this basic recipe any way you want! Add cocoa powder for healthy chocolate ice cream, berries for a sherbet, or even crushed candy canes and peppermint extract for a Christmas treat.

Four Ingredient Ice Cream

(Can be any flavor!)

  • 2 cups milk of choice or nondairy creamer or coconut milk (see note below)
  • 1/4 cup sweetener of choice: such as pure maple syrup, brown sugar, or xylitol for sugar-free
  • pinch stevia or 1 extra tbsp sugar
  • 1/8 tsp salt
  • 1 and 1/2 tsp pure vanilla extract
  • optional ingredients for whatever flavor you desire

Mix all ingredients (except optional ingredients, if they are chunky) in a dish. If you have an ice-cream maker: simply transfer to your ice cream maker and watch the magic! (I have a Cuisinart, and it took 12-14 minutes to turn the liquid into ice cream. Warning: Make sure your ice cream maker’s base is completely frozen before use, or it will NOT work!!) You can eat it straight from the machine, or freeze a few hours for firmer texture. Homemade ice cream is best the day it’s made, but you can technically thaw it out and it will keep for a few weeks. A word about the milk: This tastes delicious if you use only almond milk, but the texture is more foam-y (in a good way, if that makes sense!) than creamy. If you use only nondairy creamer or full-fat canned coconut milk, the texture is more like ice cream. (Brand ideas include: Silk creamer, So Delicious creamer, or Good Karma.) If not serving right away, be sure to thaw a little if your freezer is super-cold. (Also, I’d probably stay away from fat-free milks, such as ricemilk.)

Edit: If you are using all almond milk and still want it creamy (not foamy), you can freeze the ice cream and then re-blend it in a Vita-Mix for Vita-mix ice cream. The end result is incredibly creamy, without the fat and calories of using the coconut milk or creamer.

Mine’s always been mint-chocolate chip. But plain chocolate is a close second. Coconut’s good, too! And cookie dough, peanut butter, cookies-n-cream… probably the only flavors I’m not big on are sorbets or sherbets.

    Well, i have a very special and different thing i would do with your ice cream-
    Here in northern California mushroom hunting is VERY popular at this time of year. There are so many different types of mushrooms to eat because they all have there own unique flavor:) i have a few faves. One of them is called a “candy cap” mushroom and for those who dont like mushroom, well you would never know you were eating one. They Taste JUST like maple syrup when dried. My local ice cream shop makes mushroom ice cream and is is crazy good! Due to being lactose intolerant its hard for me to eat it with out stomach aches. Thats why i love your recipe!! :) and i would love an ice cream maker too! 😉

  20. Geez girl! You are popular! Understandably though. =) I don’t know if I’ve seen this on your blog yet or not, but I know you like Coconut Milk so I thought I’d share this recipe. I got a can of Thai Kitchen Light Coconut Milk. I froze it in a tupperware overnight. The next day, I microwaved it for like 45 seconds so it would come loose from the container. I tossed in in my food processor with maybe a half a cup of water and a few tablespoons of stevia, plus a teaspoon of vanilla. It took a few minutes for it to break down, but eventually, it was ice cream consistency. It was delicious. Like a creamy, sweet, coconut ice cream. It would’ve been great with chocolate, but I went minimal. A whole can of light coconut milk was just 240 calories total. And all I added was stevia and vanilla. It sure beats ice cream as far as fat and the junk that comes with traditional ice cream. If you haven’t tried it (and I think you probably have) it’s great!

    Instead of vanilla, almaretto with berries as toppings…or cinnamon with baked apples to vanilla flavor. It is even simple to make sorbets with fruit juice ice and sugar but I like a creamy non dairy base like coconut milk or almond milk…i like the textures rather than rich ice cream.     I worked at an ice cream store when I was in high school and it was the BEST job ever!     YEAH! I can get on here today! I am a blending queen lately and my 6 year old son just asked me when I was going to get an ice cream maker. I seriously use my ninja at least 2 to 3 times a day for smoothies, milkshakes, soups, dips, baking your awesome desserts :) M son, Ayden, enjoys all the cold stuff I make with my blender, so I know he would love an ice cream maker. He actually has a Dip n Dots maker on his Christmas list. :) Anyways, my FAVORITE ICE CREAM IS CHOCOLATE CHIP COOKIE DOUGH! I think a great ice cream to try to create would be a gingerbread ice cream for the Holidays. I LOVE chuncks of cookies so baking up some vegan gingerbread cookies and chopping them up and adding them to some ice cream would be GREAT!

    I love making ice cream! I did a lot of experimenting this summer because I lived on a farm and had access to raw cow and goat milk to make amazing ice cream. My favorites were lavender vanilla ice cream, basil ice cream and also earl grey ice cream. With the lavender and earl grey, I would steep the lavender while I heated the milk, or steep the tea bags while I steeped the milk. AMAZING! So delicious and fresh tasting and not too sweet!

    I have been dying to get an ice cream maker of my own! Here’s my chance… My ultimate naughty but nice to your waist line ice cream would be Berry Dark Chocolate Peanut Butter Truffle Ice Cream! Can you say yum?! Vanilla bean ice cream base from your recipe, with ribbons of dark chocolate peanut butter “frosting” from your peanut butter fudge recipe, mixed with fresh raspberries, blueberries and blackberries! If I could customize this, I would add in peanut butter, cocoa powder, frozen(?) berries, pumpkin puree, chocolate chips, pretzels, cookie chunks, raw/vegan cookie dough balls, cinnamon + sugar (maybe) or a snickerdoodly ice cream (I wonder if this combo could work!), and cake mix for a cake batter ice cream.

After it came through the machine, I would add dark chocolate flakes and crushed vegan whole wheat pretzels (I love salted ice cream!). Salted dark chocolate, peanut butter, and banana flavors?     I’m from Ohio, so I have to put in a cheer for Buckeye ice cream. Add a few Tbsp of peanut butter to the recipe, and melt some high quality dark chocolate and drizzle it into your ice cream for the last few minutes of mixing time. Makes a smooth, chocolaty chunk that’s to die for!

    Aahh! I LOVE Ice cream! I think I would add imitation butter flavoring to create a birthday-cake type flavor and maybe mix in some frosting for the full cake effect. I love your blog..and the healthy take on chocolate :)

    I would love an ice cream maker! Currently I have to do the ice/salt/shake method, which works, but gets a little tiring.     I would put a ton of cinnamon and maybe nutmeg in the ice cream, and because I chunks of things in my ice cream I would also put in chocolate chip oatmeal cookie dough pieces.

    Also, these days I am really into black tea flavors (if you ever need a new way to eat oatmeal, try infusing the water/milk with your favorite black tea before adding the oatmeal. chai oatmeal! earl grey oatmeal!) I think I would try infusing the milk (will it work the same if it is heated and then allowed to cool or would the heating somehow change the chemical makeup?) with an English breakfast tea bag.

    I would customize it with Chocolate and Wasabi!!! I know it sounds like a weird combo but I had an epiphany the other day while mixing together two of my favorite homemade trail mixes :) The chocolate+spicy combo really works!!

    My favorite type of ice cream would have to be….Mint (maybe w/Dark Chocolate chips)!
    But for 2nd, it’s a tie between green tea and red bean….maybe that’s why i usually eat them together hehe~

    Will definitely try this with the Dutch hagelslag. It’s basically just sprinkles but they have some variations such as chocolate shavings and the dark chocolate (puur as it is called here in Holland) shavings/sprinkles are fantastic. It is so cheap over here too, I am packing my bags for the US tomorrow with so much chocolate it’s ridiculous. Pick me for the ice cream maker!

    1. As it says in the recipe, it won’t be as rich, but you can use whatever milk you wish for this.

    I was experimenting around with making low-calorie ice cream and I sort of…blended your idea with another one I’d heard of…and I want to post the recipe to my own not-very-popular recipe blog (weight watchers friendly recipes), but not w/out permission. Basically, I used almond milk, sliced bananas into the little dishes of almond milk, and froze it with sliced bananas in the milk…then blended THAT instead of just frozen milk? So it was creamier without the coconut milk.

    I was planning to credit your blog along with the whole “frozen banana ice cream” idea in my post. Is that ok? Because freezing the almond milk was totally your idea, but I noticed you said that it was “foamy” if you used almond milk so…voila…add banana!

    1. I never believed it was any healthier or less healthy than any other sugar (white, brown, corn syrup, etc). Sugar is sugar is sugar… to be honest, I don’t really like things sweet and so I barely use any sweeteners anyway. I’d rather have things creamy, rich, and of course chocolatey!
