Sophie says

You should really post that one too, but maybe after the whole what-to-do-for-mothers-day problem is resolved. I’d rather have the red velvet fudge cake (is it healthy???? because that’s like a dream come true)

I have a challenge for you. You should try to make Vegan Slutty Brownies!!! If you don’t know what a slutty brownie is, it’s a layer of cookie dough, a layer of Oreos, topped off with a brownie layer and then baked 🙂
Erica says
Ohhh that one’s easy! CCK’s deep dish cookie pie + organic vegan Oreos (such as Newman-Os) + vegan black bean brownies i.e. http://happyherbivore.com/recipe/vegan-blackbean-brownies/ 😀
Casey @ Insatiably Healthy says
Healthy Lemon Squares. Especially with this nice springtime weather!

lemon squares would be phenomenal as well; my mom loves “frozen chocolate covered key lime pie on a stick” after trying it on vacation once.. she found the little stand selling it, got one for herself & didn’t tell anyone else LOL- then spent the rest of the trip **raving** about it.. she still talks about how crazy good it was, and still gets railed on for not sharing w/ anyone ha.. would love to make her the lemon squares but w/ key lime juice & chocolate ganache or something. & you are going to make someone VERY happy with that giveaway.. so awesome!

Hi Katie!
I love your site! I think it’s great that you’re showing people that being vegan and healthy doesn’t mean you have to “sacrifice” or eat “rabbit food”. Unfortunately, although I have been following your blog religiously for months (and have even gotten some friends hooked!), I’ve never yet commented because, apparently, I’m a lazy bum…but really, there’s a first time for everything, I guess, so here goes:
I vote for the Chocolate Puppy Chow and then the Reese’s frosting. Lemon squares come up dead last (not a big lemon-in-desserts fan)…but those are just my thoughts 🙂
Keep up the great work!
Chocolate-Covered Katie says
Haha I’m with you, usually… lemon desserts are not my thing. Actually, fruit desserts in general aren’t my favorite. Chocolate always comes first :).

Hi Katie! I’m also a Katie, also a HUGE chocoholic, also a baker and also a health nut who wants to be healthy but still eat tons of dessert! (I was getting bored with my go-to “healthy” desserts; brownies made with egg whites & apple sauce and chocolate chip oatmeal cookies made the same way.) I stumbled across your blog a few months ago and I think it’s just amazing. I have been a regular reader ever since. You have tons of great recipes that I really love! And as a gluten intolerant girl, I LOVE that your recipes are adaptable for special diets.
Thank you so much for your blog. 🙂

Charlotte says
Healthy lemon squares, Reeses pieces frosting and sugar cookie bars all sound AMAZING! I just want to say what an inspiration your blog is as someone who is trying to transition into veganism. You’re living proof that you don’t have to sacrifice all the yummy stuff to live a healthy lifestyle. 🙂
I was wondering if there is any way you could send me the recipe for the single-lady cookie dough pie you mentioned quite a while back, if you still have it. I think it may have been around valentine’s day that you mentioned it.Thank you so much!
Chocolate-Covered Katie says
Here’s the recipe so far, but it’s not perfected… I’m thinking it tastes a little dry right now, but maybe not? If you try it, let me know what you think!
•1/4c spelt flour (or maybe another flour like peanut flour?)
•1/8 plus 1/16 tsp salt
•1/8 tsp baking soda
•2 tsp sugar or evaporated cane juise
•1 stevia pack or 1 tablespoon more sugar
•1 tablespoon oil (coconut or canola or veg)
•3 tablespoons milk of choice
•1/4 tsp vanilla
•2-3 tsp chocolate chips
Combine dry. Add wet. Microwave 1 min, 20 seconds (or more or less, depending on your microwave).
Samantha says
OK, I am maybe slightly embarrassed to admit this but I had so much fun so thank you. Anyway, I did test this recipe. Three versions:
Spelt + coconut oil
Oat flour + coconut oil
Spelt + applesauce
All were done true to recipe. I used white sugar and almond milk. I did 1 minute 20 sec.
All three turned out nicely. My favorite for consistency and flavor would be spelt + coconut oil. When I do this again I will use brown sugar and increase the vanilla (I love vanilla).
None of my tests came out dry. Two came out very slightly runny in the center but I think that was because I microwaved two at once. And actually I liked it.
It was a fun way to relax for the evening.
Chocolate-Covered Katie says
You are awesome!!! Seriously, I think you might be my favorite person, Samantha. Thanks for being so active in the comment section… and for pretty much being the best taste-tester. I mean, three different trials? They should make a cookie dough medal for that ;). (And if they do, I want one too… so I can eat it.)
Samantha says
I agree, it would be a total honor to accept a medal like that! LOL.
Really, it is very fun for me and THANK YOU for what you do and being such a wonderful person.
cassie says

Oh gosh, you sure pamper us!! They all sound DELICIOUS… mmmm… How is a girl supposed to choose!?!? 😉
But if you insist, my top picks would be Lemon Squares (sweet and sour AND it’s a half-cookie!), Reeses Pieces Frosting (because PB + CHOCOLATE!!!), and Strawberry Cheesecake Fruit Dip (sounds super-convenient AND tasty!)
After that, it would be Red Velvet Fudge Cake (I’m a sucker for all things Red Velvet) and Hot Chocolate Sticks! (perfect party food, I think!)
P.S. This is my first time commenting, although I’ve been subscribing for a while now. You’re an inspiration, cliched as it sounds :’)

Sapphire says
I’d like to see anything sugar cookie related! My mother-in-law is a diabetic and on a very low (to no) sugar diet, as well as a low salt diet and I need some more healthy sweet recipes for her. I’m trying to get her acclimated to stevia, and get her off artificial sweeteners, but it’s taking some time. She really likes sugar cookies, and I hope to see a few good recipes here, because I adore your recipes! 🙂
Fit4sure says

Hi Katie! I’ve been a following CCK faithfully since I discovered you a few years ago when I started reading it to pull myself out of depression. You’ve been my happy mentor- seriously! The post about your smiley face phase made something click in my brain that happiness was going to be a choice for me. I could have emailed you this, but I wanted to testify! I’m giving back today by offering my opinion:
Red Velvet Fudge Cake, Reese’s Pieces Frosting, Sugar Cookie Bars or the pancake recipe, especially if it’s gluten free. If I had to to choose only one, it would be whichever could be most easily made gluten free.
P.S.- By now I have lots of questions for you from one vegan runner to another. Would it be best to e-mail?
.
Chocolate-Covered Katie says
Email or comment. Whatever works for you! I’m very behind in my emails so it might take awhile to hear back, but I promise I will write back eventually lol!

Hi Katie, I have a baking question for you. I LOVE your site and have made numerous recipes of yours. You talk about the magic bullet when you make some of your recipes. I bought it and can not get it to work. I tried numerous recipes using it and it never seems to chop up the dates. The dates seem to just hover over the top and get in a clumpy ball. I bought the bullet because my blender was doing the same thing so thinking that the bullet was different I went and bought it. Is there something I am doing wrong? Please help! Thank you! Your friend biting the bullet, Wendi in wisconsin…
CCK says
The bullet is good for single serving recipes. It sounds like you would be better off with a food processor, like a cuisinart. 🙂

Can you show how to make the cheesecake fruit dip? I teach middle school cooking and we are in our fruit unit and I would love to have a foods lab using your recipe! Healthy and vegan! I have told some of my students and co-workers about your awesome blog. I even put a link on the recipe section of my school website under my favorite foods.
Chocolate-Covered Katie says
Sure thing!
Strawberry-Cheesecake Dip
3/4 cup Tofutti cream cheese (I used non-hydrogenated)
6 strawberries (I used frozen, and thawed them so they’d blend but still make the sauce cold)
1 tsp pure vanilla extract
dry sweetener of choice, or NuNaturals stevia drops (I haven’t tried this with a liquid sweetener and worry it would be too runny.)
Substitution notes: You can sub coconut butter for the tofutti cream cheese. You could probably also sub cashews (soak for a few hours, then drain and puree) or raw cashew butter.
If you try any of the versions, I would really love to know how it goes! 🙂
Chocolate-Covered Katie says
Oh, you can also add a little mori-nu silken-firm tofu (or plain silken tofu) if desired.
Erin says
Thank you! I will let you know if 50, 13 year olds approve 🙂
Erin says
The cheesecake dip was a hit with my middle schoolers. We used about 3 oz of the Tofutti and added 1/4 c of powdered sugar. We did use frozen thawed strawberries. It was given 2 thumbs up by my students. Thanks!!
Chocolate-Covered Katie says

Just curious… have you posted the puppy chow recipe yet? I looked through your old posts and haven’t found it, but maybe youare just saving it for your cookbook? Thanks! 🙂
Chocolate-Covered Katie says
I didn’t post it yet 🙁
I can’t seem to find the recipe. Unfortunately, this happens to me too often, as I scribble my recipes down on tiny sheets of whatever paper is available (or even cardboard boxes) when I get an idea. I might have to try and re-create it when I get time, but I keep hoping the recipe will turn up somewhere.
Sophie says
As far as I can tell you’ve only posted two of those so far. Don’t get me wrong, both of those recipes were great, but are you planning to post any others from that list?
The red velvet fudge cake would beach appreciated!
Chocolate-Covered Katie says
I just need to make that one again so I can photograph it! The photos I have are kinda ugly… Thanks for the reminder 🙂
