      Wow, they all sound amazing and I am sure they are! But I have a serious peanut butter obsession and would love to try the Reeses Pieces Frosting and have always been looking for a healthier puppy chow recipe!

    If you’re giving away a VitaMix blender, I might just have a heart attack from shock. But an I Love Lucy mug would be good too!

    I’m trying to think like my mother, who only ever gets excited about Shortbread (and Hot Tamales)… so my vote is Sugar Cookie Bars. That’s close to Shortbread, right??

    FYI I keep making your desserts for various gatherings and my husband and I make your chocolate chip cookie dough (with 3 ingredient chocolate chips) at least once a week. It tends to take the place of dinner on date night… or any night we forgot to get dinner-like things… 😛

    I love your site! I think it’s great that you’re showing people that being vegan and healthy doesn’t mean you have to “sacrifice” or eat “rabbit food”. Unfortunately, although I have been following your blog religiously for months (and have even gotten some friends hooked!), I’ve never yet commented because, apparently, I’m a lazy bum…but really, there’s a first time for everything, I guess, so here goes:

      Here’s the recipe so far, but it’s not perfected… I’m thinking it tastes a little dry right now, but maybe not? If you try it, let me know what you think!

      •1/4c spelt flour (or maybe another flour like peanut flour?)
      •1/8 plus 1/16 tsp salt
      •1/8 tsp baking soda
      •2 tsp sugar or evaporated cane juise
      •1 stevia pack or 1 tablespoon more sugar
      •1 tablespoon oil (coconut or canola or veg)
      •3 tablespoons milk of choice
      •1/4 tsp vanilla
      •2-3 tsp chocolate chips
      Combine dry. Add wet. Microwave 1 min, 20 seconds (or more or less, depending on your microwave).

        OK, I am maybe slightly embarrassed to admit this but I had so much fun so thank you. Anyway, I did test this recipe. Three versions:

        Spelt + coconut oil
        Oat flour + coconut oil
        Spelt + applesauce

        All were done true to recipe. I used white sugar and almond milk. I did 1 minute 20 sec.

        All three turned out nicely. My favorite for consistency and flavor would be spelt + coconut oil. When I do this again I will use brown sugar and increase the vanilla (I love vanilla).

        None of my tests came out dry. Two came out very slightly runny in the center but I think that was because I microwaved two at once. And actually I liked it.

        It was a fun way to relax for the evening.

I bought it and can not get it to work. I tried numerous recipes using it and it never seems to chop up the dates. The dates seem to just hover over the top and get in a clumpy ball.       The bullet is good for single serving recipes. It sounds like you would be better off with a food processor, like a cuisinart. 🙂

    I vote for the lemon squares, especially if they are gluten-free. Can I modify the recipe to make healthy key lime squares? I’m having a craving.

    My daughter votes for the Red Velvet cupcakes. That’s her favorite and I’d make it more if it was healthier.

    I have to thank you. You have inspired me to bake more because using your recipes means I’m not making junk and empty calorie-ladened sweets.

    I’d like to see the Sugar Cookie recipe, and I hope it’s sugar free! *lol* What a contradiction there! But my mother in law is diabetic, and I’m trying to make more and more desserts for her that are sugar free. And for me, anything will do, but the lemon bars seem to be a nice change of pace, and quite summery 🙂

    And now, I’m off to make a one minute chocolate cake with the new reese’s frosting!

    First of all, from one Katie Foodie to the other, I’m obsessed with your blog. You have an amazing variety of recipes of food to satisfy all cravings. A healthy cook and baker myself, I have transformed my family’s opinion of “healthy” desserts (the cookie pie in particular).     It all sounds great! But we’re gonna get all the recipes anyway right ;P, just not all on Mothersday and not all at once.

    They all sound wonderful, but if I have to list, lemon squares, sugar cookies and the Red Velvet Fudge cake. The Reeses Pieces Frosting sounds great too, which you have posted.
    Thanks for all of the wonderful healthy recipes. My daughter got me a flat of strawberries last night and one for herself. I made us each strawberry ice cream from your ice cream recipe, delicious. I made peanut butter/chocolate chip the other day, her family loved it and so did I.

    Can you show how to make the cheesecake fruit dip? I teach middle school cooking and we are in our fruit unit and I would love to have a foods lab using your recipe! Healthy and vegan! I have told some of my students and co-workers about your awesome blog. I even put a link on the recipe section of my school website under my favorite foods.

      Sure thing!

      Strawberry-Cheesecake Dip

      3/4 cup Tofutti cream cheese (I used non-hydrogenated)
      6 strawberries (I used frozen, and thawed them so they’d blend but still make the sauce cold)
      1 tsp pure vanilla extract
      dry sweetener of choice, or NuNaturals stevia drops (I haven’t tried this with a liquid sweetener and worry it would be too runny.)

      Substitution notes: You can sub coconut butter for the tofutti cream cheese. You could probably also sub cashews (soak for a few hours, then drain and puree) or raw cashew butter.

      If you try any of the versions, I would really love to know how it goes! 🙂

      I can’t seem to find the recipe. Unfortunately, this happens to me too often, as I scribble my recipes down on tiny sheets of whatever paper is available (or even cardboard boxes) when I get an idea. I might have to try and re-create it when I get time, but I keep hoping the recipe will turn up somewhere.
