  1. Those thin mint brownie bites look incredible! So glad I’m stopping by the store after work today – adding the ingredients to my list!

  2. Hannah says:

I’ve decided to kidnap you and make you my slave, so that you make all your delicious things for US! 😉 Just kidding! Maybe I’ll just adopt you as my older sister.

These are some good looking recipes! I’m making your World’s Healthiest Chocolate Chip Cookies for St. Patrick’s Day, since I have limited ingredients. 😀 Actually, I’m making them today and saying they’re for St. Patrick’s Day, but I’m not expecting them to last that long!

  3. Kelly says:

One of my favorite greens is avocado! Check out these Vegetarian Shamrock Tostadas that I’ll be whipping up for St. Patrick’s Day:

  4. Lisa says:

Can’t wait to try some of these outs! I’ve been looking for some brownies for St. Patty’s. Too bad you can’t make brownies green;)

  5. Wow, Katie! I want all of that! The green color is so inviting! I’m still loving your new blog look. Thank you for sharing your creativity with us!

    All of this looks wonderful!

Broccoli has been a tried and true green for me, but Kale is definitely creeping up in the ranks. This post is making me crave all things chocolate and minty!

  8. Paige Flamm says:

Those thin mint brownies are calling my name!

  9. I would eat those frosting shots like erm…normal shots…that is all LOL.

I’m not a minty person personally so I tend to go for the more fruityish green recipes (whatever that means…) I guess like key lime.

  10. Jordan says:

Oooh! Now I am disappointed that St. Patrick’s Day is just one day and not a week long because I would like to make ALL of these lovely treats :)

  11. Sharla says:

I have never been able to get into the whole mint desset idea! (except Andes mints…but only after eating at Olive Garden) Is there something wrong with me?!

  12. Green Lemonade! I thought I had seen all your recipes, how on earth did I miss that one? Thanks for the roundup Katie, I discovered something new :)

  13. Sarah the official CCK drooler says:

I’m having a HUGE obsession with limes right now…huger (i know that’s not a word) than my obsession with chambray. That means serious business. And limes are green.
Seriously… I had this AWESOME lime vanilla smoothie for bfast the other day.
And tonight I’m trying my hand at an idea that’s been on the brain for a while (read: 5 minutes)- Lime Coconut Overnight Oats. Can’t wait!!!
No surprise that those key lime parfaits are really calling my name right now!

  14. Charlène says:

I’d go with the ice cream :) Anything with chocolate and mint together, really!

  15. Favorite green is totally spinach….there is so much you can do with it! I don’t celebrate, but I might need to have one of your goodies anyway!

  16. Sarah says:

Grasshopper pie!!! That brings me right back! Thanks for the healthy recipes. Le yum.

  17. Katie, I want to make ALL of these! It’s funny- I posted my recipe for a “Shamrock Smoothie” today and it contains many of the same ingredients as yours (but looks very different)! I’m glad to see that you’re a frozen spinach advocate as well- it makes such a difference!

  20. Jess says:

Veeeeery tempted to tote some of these along to the (pre) St. Patties breakfast I’m volunteering at!

Favorite green = Either Andes thin mints or dill pickles 😡

I’ve been challenged to green pancakes — without food coloring! Working on the first test batch now. Spinach! Very green, but the texture is off. Guess I’ll have to make more! (But really, I assume if people are drunk enough they’ll just eat them)

  24. Alyssa says:

My favorite green is probably spinach because it is so versatile. I love kale, but it takes a lot more work!

  25. I love avocado so I’d have to say that’s my favorite green! Everything looks amazing – especially that grasshopper pie!

  26. Ellen says:

Anything mint-chocolate is what calls my name! Although on the savory side I adore Swiss chard, even more than spinach and kale.
As or non-green stuff, I need I try the Irish soda baked oatmeal!

  27. These all look delicious! You amaze me with how healthy you can make such amazing sweets!

  28. Jenny says:

I’d have to say all greens! Except for lima beans… eeurgh, I’ve yet figured out a way to incorporate them into my meals so that they’re at least palatable 😐

  29. Wow these look amazing and I don’t even like mint that much! It’s my first time reading your blog, and I love it! I can’t wait to get home and try some of these! How are the brownies without mint? I love dessert (anything chocolate) too much and need some healthier alternatives :)

  30. Bek @ Crave says:

To be honest, I don’t really celebrate St Pattys Day usually…but I could if these babies were involved 😉

  31. My favorite green? Eeep, I think I like anything green that’s edible, well not lima beans, but otherwise, it’s fair game! Love this round-up, so many great treats!!

  32. Amanda says:

This blog used to be better… It seems now that there are rarely new recipes. :/

    1. Michelle says:

      Geez, talk about ungrateful.
Hey Amanda, what have you ever given CCK in return for the recipes you’ve used from her? Oh wait, a snarky comment. Yeah I can totally see how that makes you think you have the right to criticize. (eye roll)

  33. Was introduced to your blog by Jessica of AlmostOverNow. And your grasshopper pie? OMG. Looks DIVINE. Definitely have added you to my “significant blogs” queue. Looking forward to reading more!

  34. Amy says:

green apples (with peanut butter 😉
P.S. I love your new blog design!!

  35. Brid says:

Oh mo dhia, these sound delish! I think I’ll have to try the Irish oatmeal soda with some chocolate chips instead of raisins (could never stand raisins). Sounds beautiful! Lá fhéile Pádraig sona daoibh go léir! From an Irish fan xx
