Hi Jennifer,

This is so weird… you are the second person to tell me you can’t see the post in the past two days. But when I click on it, it works fine! And the other girl clicked at a later time and it suddenly worked for her too :( . I have absolutely no clue what’s going on, and I’m going to contact my host provider today, because I don’t understand computers and am really frustrated with this.

Meanwhile, maybe you’ll have better luck clicking at a different time like the other commenter did? I really hope so! Here’s the link. It SHOULD work: http://chocolatecoveredkatie.com/2011/07/06/mint-chocolate-chip-ice-cream/

As I said, I’m contacting my host today, and hopefully they can tell me why some people can’t see the post. Can you tell me: are you seeing a “gnarly dude” error message? Or is the post just completely blank?

I love soy ice cream. Now that it’s so expensive in stores, I can’t buy it very often, so its good to have your recipes on hand (which are better)!

Hello! I was looking over your recipes, and I love them! I especially want to try your cookie dough dip. I am guilty of buying a tube of cookie dough, just to eat. ;]

I was wondering if you’ve ever heard of non-dairy banana ice cream! It is so easy to make, and you can make a single serving or a huge serving. Since your recipes are so healthy, I thought you would be interested.

All you have to do is get some bananas, slice them and freeze them solid. Then, you throw the frozen bananas in a blender and blend. The consistency is just like soft serve ice cream, and you don’t have to add anything to it. I like to use over ripe bananas because they have a sweeter flavor.

And if you’re not fond of the slight banana taste, a splash of vanilla extract will make it taste just like vanilla soft serve! To make it even more delcious, I add a scoop of chunky peanut butter or a little honey and agave. Or even some dark chocolate chips.

Try it! You’ll love it. :]

Since Christmas is coming up, I was hoping for a peppermint-y ice cream, with maybe some red food coloring to make it pink?

Sure! Just add a little peppermint extract to this one: http://chocolatecoveredkatie.com/2011/12/07/four-ingredient-ice-cream
(Or try the mint-chocoate chip one, and just use red food coloring instead of the green.)

I’m also working on a Christmas Cookie ice cream :) .

Hi Katie! I just bought a Vitamix and stumbled onto your blog while looking for ice cream recipes. Although I did just see your guest post on Gina’s blog, Skinnytaste! Vegan Chocolate pancakes? Yes, I think I will try those thank you very much!! Anyway, I am SERIOUSLY trying to make pistachio ice cream in the Vitamix. Any ideas or suggestions? Thanks so much and happy New Year!

Mmm that sounds really, really good! I hated pistachios when I was little, so I never tried pistachio ice cream. (Why on earth I hated such a delicious nut, I’ll never know!)

I wonder if you could take a recipe for a cashew-based ice cream and use pistachios instead… I might have to try it!

Ooooh great idea! If I come up with something worth passing along, I’ll let you know. Thanks again!

As a fellow chocolate lover named Katie, I just wanted to thank you for all your wonderful recipes. It’s great to see I can still eat dessert and still loose weight! Thanks so much :)

Just my humble opinion – you should play around with green tea ice cream/cookies. I fell in love with green tea desserts while living in China and it’s difficult (for me) to recreate. Have fun playing around with it (and I hope you do!!).

I’m so sorry I don’t know how to fix it. I’m working on it as hard as I possibly can

I’ve actually never had that one, so I can’t say if mine is similar… but I do have a coconut ice cream recipe: http://chocolatecoveredkatie.com/2011/12/07/four-ingredient-ice-cream/
Use all full-fat canned coconut milk for best results :) .

This weekend I tried the So Delicious banana split ice cream sandwichs made with coconuts. I was wondering if you have a recipe in your stash that is similar to it. Ice cream made with coconut milk is what I’m really after.

Yes, definitely! On my recipe page, under “ice cream and frozen treats” there are a ton of ice cream recipes that are coconut-milk-based :) .

I just LOVE your recipes! Someone on my blog messaged me and asked if I had ever read your blog, and I can’t believe I had missed it! (I definitely won’t be now.) Since I have health conditions and am also watching calories, I can’t tell you how excited I was to see you “ice cream” post. I drink unsweetened vanilla almond milk like it’s going out of style anyways – too fun! I’m so glad you thought of it!
(Now all I need is a new blender…) :)
