Rice is Nice– Twice!

I love cooking with grains. They’re so versatile; you can just throw a bunch of stuff in a pot and voila– a quick, nutritious meal!
The first pan consists of brown rice, canned tomatoes, broccoli, green peppers, onions, oregano, basil, garlic, and maybe some other spices. As you can see from the picture, I made up a huge batch so I could enjoy lots of leftovers (and share some with my always-hungry friends!).
Pan #2 is a brown rice/wild rice blend, cooked in veggie broth, with celery, carrots, herbs and spices. Once again, leftovers galore!

Your rice dishes look nice, I haven’t had spanish rice in a long time, I think you may have inspired me to make some.

Congrats on the award! I love rice. Since I turned vegan, I’ve eaten so many new ones! Quinoa, wild rice, barley, etc… it’s amazing that these seem “exotic” to Americans, when the whole world has them on a daily basis!

Wow! That’s a crap ton of rice! I really want to reach into my computer screen and serve myself a bowl. You made a lot, so I doubt you’d even miss it. 🙂

I just found your site, and it is great!!! That is awesome you’ve been vegan for so long. I look forward to getting many meal ideas from you (you already have sooo many) and your yummy desserts make me hungry! haha! I really couldn’t afford to eat that many though shucks! Where was your school in PA? I go to the University of Pittsburgh

  13. Vegetation says

It’s funny, I didn’t like rice at all before going veg. Now I LOVE the stuff! It’s so versatile and like you said, easy, just chuck stuff in a pot with it and yumminess comes out (well hopefully :P)

And of course you can add me to your blog roll 😀 I’d be honoured.

pan # 2 looks really good. I love all of the veggies and the wild rice. It’s so chewy and textured compared to regular brown or white rice.

  17. Veg*Triathlete says

I love the wild rice combo, too! There’s something just kind of festive about wild rice in my mind – its resemblance to (healthy) confetti, I guess 🙂 Congrats on the nice award! You are, indeed, a delightful blogger.

  18. Rural Vegan says

Congrats on your very well deserved award! I have to start using rice more creatively, I love your first photo.

  19. Cakespy says

Those rice dishes are main-dish material! They look very filling and tasty. And congratulations on your award–you have a wonderful site! 🙂 yay!

  20. russ says

I’d love to know how you prepared that first dish – it looks great! Did you cook the rice first, and then add a bunch on other stuff, or cook everything altogether?

  21. russ says

I like the idea of chucking a load of raw veg and rice into a casserole dish and cooking the lot in an oven. I might give that a go and see if it works!
Thx for adding me to your list! I hope to get more than 1 post a month out next time!

  22. LisaRene says

Both those combinations look wonderful. There really is no excuse not to cook up a healthy meal, these are quick, easy and healthy one pot meals with lots of flavor.
