Yesterday morning, I spied a very brown banana hanging out on the kitchen counter. My first thought was:
Score! I can make… Banana Pancakes for One.
But then I got an even better idea.
Banana Bread Baked Oatmeal
Adapted from: Cookie Dough Baked Oatmeal
- 1/2 cup rolled oats (50 g)
- a litle over 1/16th tsp salt
- a little over 2 tbsp mashed, very-ripe banana (40 g)
- 3 tbsp milk of choice or water (45 g)
- 1 tbsp virgin coconut oil or coconut butter (Or you can sub 1 tbsp more liquid or extra banana, for a lower-fat version. But the coconut oil makes this recipe so buttery!)
- pinch stevia OR 1 tbsp sugar (Taste the batter to decide if you want more)
- Optional: walnuts, cinnamon, vanilla extract, peanut butter, or whatever else you put in banana bread (Chocolate chips?)
Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. (Cooking time varies, depending on whether you use oil or not.) Finally, set your oven to “high broil” for 5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins or mini-loaf pan first if you want your cakes to pop out.

And white. A whole lotta white. See all that hair on the side of his bed? That’s the reason poor Henry is not allowed on the couch. Henry wants to know, “Where’s my banana boatmeal?”

Henry adores bananas. He’d probably like the Melted Banana Trick!
We used to feed them table scraps, until Molly had to go on a diet. But they’re still fed raw veggies every now and then. (Carrots are a favorite.) My dogs don’t just eat people food, they think they are people!

LOL I always feel like that too! I wake up, thinking: “I want pancakes… but I also want oatmeal… but I also want a smoothie in a bowl…” We need more meals in the day!!!

I LOVE banana bread boatmeal! I made it for my mom’s birthday last year.
The only human food I give my dog is the occasional apple core. Or I will fill his bone up with peanut butter 😉 His favorite! I guess it isn’t just us humans who like the stuff!

My cat, Tiger, LOVES yogurt…I usually let him lick the container/bowl when I’m done eating! And weeks ago, I dropped a bit of coconut butter on the floor and he licked it right up and then looked at me like, “where’s the rest?” haha!
Hahahahahaha my dog Molly did the same thing when I spilled coconut oil! I think she licked the floor for an hour!
This was amazing! I just finished licking my bowl, and adding some dark chocolate chips, just made my day feel complete!
I really love these for 1 portion sizes there great, since im always left with way too much food then I can eat. Big Thumbs up!

Omgosh! My dog loves carrots too! Especially the carrot peels! I can’t peel a carrot without an audience. Even if Sunny is downstairs, the second I start peeling it, he’s scrambling up the stairs to beg. 😛
Haha yes! I do not understand how Henry knows it’s a carrot peeler… he hears it from other rooms. It’s like they have a 6th sense. Carrot sense!
I just realized but this recipe is a DOUBLE boatmeal
Because banana + oatmeal= boatmeal
And baked+oatmeal= boatmeal
TaDaaa double boatmeal!!!!

I use Quaker rolled oats (not quick oats). But any rolled oats will work! 🙂

I’m eating this as we speak! I’ve tried your other boatmeal recipes and they were great, but I think this is my favorite! I used almond milk and added cinnamon and it tastes delicious! After baking, I “iced” it with peanut butter (which got all melty because the cake was still warm. Yum!) and topped it with some more sliced bananas and cinnamon! It was so pretty that I took a picture :p Keep up the good work!

I really want to try your boatmeal, but I’m living in a dorm (woot college!) and don’t have an oven. I do, however, have a microwave. Do you have any recipes up your sleeves that only necessitate a microwave beside your basic oatmeal? Thanks!
Do you mean oatmeal recipes, or recipes in general? I have a TON of recipes that can be made in the microwave (or that don’t require cooking). As for oatmeal, I’ve never tried the boatmeal in the microwave, but it *might* work.
MMM! I am going to make two “mini boats” in smaller ramekins and sandwich them with natural peanut butter (rather than adding to the mix) and maybe some extra banana slices- wish I had some chocolate chips in my pantry! 🙂 Sounds delicous! Can’t wait to bake these- thanks!
