Yesterday morning, I spied a very brown banana hanging out on the kitchen counter. My first thought was:
Score! I can make… Banana Pancakes for One.
But then I got an even better idea.
Banana Bread Baked Oatmeal
Adapted from: Cookie Dough Baked Oatmeal
- 1/2 cup rolled oats (50 g)
- a litle over 1/16th tsp salt
- a little over 2 tbsp mashed, very-ripe banana (40 g)
- 3 tbsp milk of choice or water (45 g)
- 1 tbsp virgin coconut oil or coconut butter (Or you can sub 1 tbsp more liquid or extra banana, for a lower-fat version. But the coconut oil makes this recipe so buttery!)
- pinch stevia OR 1 tbsp sugar (Taste the batter to decide if you want more)
- Optional: walnuts, cinnamon, vanilla extract, peanut butter, or whatever else you put in banana bread (Chocolate chips?)
Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. (Cooking time varies, depending on whether you use oil or not.) Finally, set your oven to “high broil” for 5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins or mini-loaf pan first if you want your cakes to pop out.

Henry adores bananas. He’d probably like the Melted Banana Trick!
We used to feed them table scraps, until Molly had to go on a diet. But they’re still fed raw veggies every now and then. (Carrots are a favorite.) My dogs don’t just eat people food, they think they are people!
















I am ALWAYS looking for new ideas for my bananas, i buy a bunch on sale and they turn too fast for me to eat them all! Do you think this would work in a larger pan if I scaled it up but still kept it thin? There is no way 2T of banana will make a dent in my ripe pile!
Oh girl, I wish you could send me some of those bananas! I constantly find myself wanting to make something–my chocolate fudge, a milkshake, banana bread, etc–that calls for an overripe banana… and I have to wait days and days for them to ripen!
To answer your question, I don’t see why your idea wouldn’t work. You might have to cook it longer, though. In any case, it’s a really great idea! (Also, if you can’t use bananas before they go bad, a good thing to do is to peel them and then freeze them for later. Thawed frozen bananas will work in almost any recipe that calls for an overripe banana.)
hahahaha, that’s why I buy a huge bunch whenever they are on sale! then I can give presents to all my friends (the guys love it!) and freeze individual portions for myself =) I do freeze them occasionally, but my freezer is the size of a shoe box, and i need that space for icecream 😉

Just made this but with unsweetened applesause in place of the coconut butter, added vanilla extract and 1T dark chocolate chips… Then baked them in heart-shaped silicon cupcake moulds 🙂

I often cook it the night before and then put it in the fridge (not completely covered, or it’d get mushy). Then you can re-heat in the morning (maybe in a toaster oven?)… but I am weird and like it cold!
Wow. You are amazing! I have tried a couple of your recipes, and they are sooooo good!!! I can’t wait to try this…now I just gotta wait for my bananas to turn brown!! I do not have a dog at the moment…but my two cats LOVE people food…even broccoli. I do not like for them to eat people food bc I know it’s not very good for them…but with a four year old in the house, it’s very easy for them to find treats :p
We just moved and have zero baking dishes. And out of necessity comes creativity right? So I made these in the toaster oven & poured it onto a baking sheet & cut them into square cookies. They turned out amazing. Still 15 mins at 400 & then up to 450 for 5.
Used a lower glycemic fruit: pears (instead of bananas). Apples would be great, but pears are cheaper this week. I made “pear sauce” by steaming pear slices in the microwave in a magic bullet cup & then giving them a whirl in said Magic Bullet. Literally took 2 mins.
Left out sweetener & oil. Pears did the trick, and I also added some peanut butter. I find that anything that needs to be sweeter gets delicious with a bit of pb.
And can I say CCK that I love you? I am always making sugar & flour substitutions, and your recipes are amazing & delicious “as is.” You make this world an even better place 😉

Makes my life a bit more exciting by combining the boring stuff I usually eat – banana, oatmeal, milk, walnuts – into BREAD. A pretty one, too! I always sprinkle a bit of cocoa powder on top to make it even more special. Then I take tons of picture the moment it comes out of the oven.
This thing is real. Someday I’ll quadruple this recipe and make a whole Banana Oatmeal Cake. Seriously, I wish someone baked me this for my birthday.

Baked oatmeal has become my new favorite thing! Also, Henry is absolutely adorable! This is going to sound crazy, but the other day I was in the pet store and they had all natural PB&J dog treats, and they happen to be 100% vegan! I usually don’t let Buddy share my food, but… maybe he’d let me have a taste if I get these for him!
Oh my goodness! This stuff is so addictingly delicious! I’ve had it 3 times in the last two weeks twice for breakfast on a weekend and once for dinner on a weeknight! I added chocolate chips and it was even more indulging! Sooo yummy, way to go Katie!

Oh wow. I’ve made the cookie dough and cinnamon roll boatmeals and loved them, and today I made this and the Irish soda boatmeal. The Irish soda was yummy for sure (especially with the raisins!), but the banana is outta this world!! I was surprised this still called for sugar since the banana replaces the sugar in your regular oatmeal recipes, but I used 1 T just in case and it was marvelous. (Also used 3 T water and 1 T Canola oil.) I didn’t have any fresh bananas, but I have loads of frozen ripe ones so I used one of those and melted it down. I think I could eat this every day and not get tired of it. 🙂
Wow, this will probably me my new favorite breakfast! I mixed it up and put it in the fridge the night before, then stuck it in my toaster oven to bake while I took a shower and got ready for work. My house smelled AMAZING, and it kept me full until lunch time. I can’t wait to try the other flavors too!

Just finished making this banana boatmeal, and it was AMAZING!!!! I used an extra tbs of banana instead of the oil, but also added 1/2 tsp cinnamon and topped it with melted peanut butter. YUMMMMMM 😀 Thanks sooo much for the recipe!
Anyway, YES. I swear, my animals are definitely not normal. Both of my dogs LOVE veggies and we often feed them the extra broccoli stalks. Also our little kitty used to love bread a while ago. We had to hide the bread in the cabinet to keep it away from her haha. She now has a strange obsession with peppermint chewing gum though…
