Banana Bread Baked Oatmeal

Yesterday morning, I spied a very brown banana hanging out on the kitchen counter. My first thought was:

Score! I can make… Banana Pancakes for One.

But then I got an even better idea.

Banana Bread Baked Oatmeal

Adapted from: Cookie Dough Baked Oatmeal

  • 1/2 cup rolled oats (50 g)
  • a litle over 1/16th tsp salt
  • a little over 2 tbsp mashed, very-ripe banana (40 g)
  • 3 tbsp milk of choice or water (45 g)
  • 1 tbsp virgin coconut oil or coconut butter (Or you can sub 1 tbsp more liquid or extra banana, for a lower-fat version. But the coconut oil makes this recipe so buttery!)
  • pinch stevia OR 1 tbsp sugar (Taste the batter to decide if you want more)
  • Optional: walnuts, cinnamon, vanilla extract, peanut butter, or whatever else you put in banana bread (Chocolate chips?)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. (Cooking time varies, depending on whether you use oil or not.) Finally, set your oven to “high broil” for 5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins or mini-loaf pan first if you want your cakes to pop out.

And white. A whole lotta white. See all that hair on the side of his bed? That’s the reason poor Henry is not allowed on the couch. Henry wants to know, “Where’s my banana boatmeal?”

Question of the Day:
Do your pets ever eat “people” food?

Henry adores bananas. He’d probably like the Melted Banana Trick!

We used to feed them table scraps, until Molly had to go on a diet. But they’re still fed raw veggies every now and then. (Carrots are a favorite.) My dogs don’t just eat people food, they think they are people!

Katie, I just got finished eating this…
WOW. It tasted EXACTLY (and smelled) like banana bread! I subbed the coconut oil for some Torani sugar-free syrup, and ohmygosh. new breakfast favorite 😀 your recipes never fail me!

YUM! I added flax seed and wheat germ for added nutrition, and baked them in a cupcake tin.

Great new way to use up old bananas and eat oatmeal! I get tired of the same old oatmeal every morning so thank you for the many variations on your site 🙂

    This recipe changed my life…
Well, at least it changed the way I look at breakfast.

I just made this and it was DELICIOUS. I topped it off with your homemade chocolate frosting recipe. This is just way too good. I can’t believe how healthy the ingredients are!

Keep posting, I love your blog.

Just made this but used coconut oil for the first time! Made the mistake of adding it after I added cold milk and it made it clumpy. I had to remove it and melt it in micro than add it back! Can’t wait to have it tomorrow for breakfast!

My pets are terrible for eating human food, the cats tend to get into the cupboards and on the table, and eat whatever they can get (we have 4, well we have 5 but one seems to live somewhere else and eat there most the time) 2 of our dogs eat some though 1 of our 3 dogs can’t eat human food cause he has loads of allergies, he even has to have special dog food, not that that stops him from nicking food.

this looks delicious found your site yesterday, and have been thinking yum at all your recipes, thinking of making this now

As I type I have the banana boatmeal ramekins in the oven. I added chopped medjool dates and pumpkin pie spice. They smell DEE-VINE 🙂

I’m totally addicted to your site! Thank you, thank you!

I have a stack of bananas going brown and this is deinitely getting made.
My dog loved carrots and cheese, and when she was recovering from an operation she had some scrambled egg. She also had a corner of Mum’s toast every morning.
It’s lucky I walked her properly every day!

I made this for breakfast this morning, and it was divine! I topped it with your better than peanut butter peanut butter. So good! 😀

This is my favorite recipe of yours. The other day, my aunt made me zucchini bread and it was so good (but unhealthy) so the next day I decided to make zucchini bread baked oatmeal inspired by this recipe. It was amazing, you must try it 😉

I just made this recipe and it was delicious!! I will be making baked oatmeal from now on as a breakfast food and dessert! It’s so easy to modify based on what it’s for- sweetness, additional mixings! I threw in some chopped pecans and raisins and used 1 Tbsp Maply Syrup for the sweetener.
    Thanks for the recipe 🙂

I found your Blog a couple of weeks ago and have been trying out recipe after recipe and I think this is the BEST one I’ve tried so far! I added some crushed walnuts, cinnamon and a little vanilla and topped it off with peanut butter and more banana! And the peanut butter actually melted when I spread it on top! It was so delicious and looked so amazing that I even took a picture of it :D! I also love your chocolate chip cookie dough but this one tops them all! And it was super filling as well!!! Keep up the good work! I love your blog and spend way too much time scrolling through all the recipes!;)

This looks great! Just a thought: for each recipe, could you provide proportions for a single-serving and an entire batch? Sometimes I just want to make one, and sometimes I want to make enough for the whole family. I love your recipes. Keep it up!

  13. Kristen says:

I’ve got two brown bananas… think I could double the recipe and it would work fine?

    1. Chocolate Covered Katie says:

      I don’t see why not, but I haven’t tried.

  14. Cheri Grothoff says:

So do you have a recipe for this that will make a larger amount?

  15. Le'Ann says:

Wow! I doubled this recipe, added pecans and mini chocolate chips. My husband and I both loved it. This recipe is a keeper for us!

  16. Anna says:

I made this tonight for dessert, and oh my gosh it is delicious! I added cinnamon (my favorite) to the mix. I will definitely be making this more!
