Banana Bread Baked Oatmeal


Yesterday morning, I spied a very brown banana hanging out on the kitchen counter. My first thought was:

Score! I can make… Banana Pancakes for One.

But then I got an even better idea.

Banana Bread Baked Oatmeal

Adapted from: Cookie Dough Baked Oatmeal

  • 1/2 cup rolled oats (50 g)
  • a litle over 1/16th tsp salt
  • a little over 2 tbsp mashed, very-ripe banana (40 g)
  • 3 tbsp milk of choice or water (45 g)
  • 1 tbsp virgin coconut oil or coconut butter (Or you can sub 1 tbsp more liquid or extra banana, for a lower-fat version. But the coconut oil makes this recipe so buttery!)
  • pinch stevia OR 1 tbsp sugar (Taste the batter to decide if you want more)
  • Optional: walnuts, cinnamon, vanilla extract, peanut butter, or whatever else you put in banana bread (Chocolate chips?)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. (Cooking time varies, depending on whether you use oil or not.) Finally, set your oven to “high broil” for 5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins or mini-loaf pan first if you want your cakes to pop out.

And white. A whole lotta white. See all that hair on the side of his bed? That’s the reason poor Henry is not allowed on the couch. Henry wants to know, “Where’s my banana boatmeal?”

We used to feed them table scraps, until Molly had to go on a diet. But they’re still fed raw veggies every now and then. (Carrots are a favorite.) My dogs don’t just eat people food, they think they are people!

    If you cooked one of these “boatmeals” the night before, and then heated it in the microwave the next morning, do you think it would be good? I looooove those oatmeal to go things, but they’re so bad for you and high in sugar. Do you think it would stay good overnight and then reheated?

      Yes, definitely 🙂

      You can even freeze them and then thaw another day.

    I made these last night – i was craving something delicious but we had no fun ingredients, these were perfect because i always have oats and a banana that is hanging dearly close to the edge! I made ’rounds’ in a large muffin tin and also used rice bran oil instead of coconut and i added some LSA. If i were to make them again i’d chuck in a bit of extra sweetener and maybe some cinnamon or something to spice them up a little.
    I loev that so many of your recipes can be altered depending on what we have in our cupboards – makes me so much more likely to try them!

    OMG!! I made this for breakfast this morning, it rocked!! My new fav way to eat oatmeal! All I did was use brown sugar, added cinnamon and walnuts. SOOOO good. Have you tried making this the night before and then baking in the am? I didn’t…but I would prefer to do that, except I like my oats kinda crunchy, not super soft…..

    We have a Henry and Molly too! Hey, I was curious if these baked banana bread oatmeal things can be frozen and thawed/re-heated, as needed. I’d like to make a larger batch since these are so yummy, but just didn’t know if they store well. THANKS!

        Thanks for the info! Making more of these tonight! Also, our Henry and Molly think they are people, as well. Every now and then I walk into the dining room and Molly is sitting upright in one of our dining room chairs. As if that is where we need to serve her her dinner. I find myself screaming “You’re a DOG” at least 3 times a day.

    I just tried your Baked Oatmeal recipe. Unfortunately it turned out a bit hard (?) and really bread-like … i doubled the recipe to get more out of it. Can you tell me what i possibly did wrong? I added so much water until the mass became sticky and smooth … could it be too less? Otherwise i was afraid to make it nearly liquid …

      Unfortunately, I’ve never doubled the recipe. Sometimes you can’t just double a recipe because the proportions don’t work that way for some odd reason. Maybe that’s the case with this recipe.

      I’ve successfully doubled the recipe, but I still baked in two mini loaf pans and cooked the same time as suggested above. It should be more dry and loaf-like after baking than when you microwave, though… Not hard, but you should be able to pick it up and have it stay in one piece. Maybe your oven is just stronger and you need to bake a bit less time? And just in case, it’s 380 degrees Fahrenheit, not Celsius. 🙂

    This is great! I’m trying to bake this now but my boatmeal is falling apart 🙁 The oats stay in little clumps and wont stick together should I add liquids? I’m going to bake it soon but I’m going to try again if it doesn’t come out right, thanks 🙂

      Don’t add any extra liquid aside from what’s in the recipe. Yes, it shouldn’t stick together before being baked… so I think you’re still on the right track. Hopefully it turned out well!

    My cat obviously wants to be vegan. She likes raw tofu, black beans, corn, tomato sauce, and frozen peas (she bats them around the floor until they thaw enough to eat aka hunting). Then again, she has a serious weakness for canned tuna, and likes to lick the butter off your toast if you aren’t looking.

    We used to have a cat with a serious sweet tooth, too! He once licked all the cream filling out of my mom’s eclair when she got up to answer the phone.

    If I wanted to make this recipe into something with more servings (like a bar), would I just multiply all of the ingredients by however many more servings I want? I love the single serving recipes most of the time, but with school starting soon, I’m looking for some easy breakfast recipes to make at the beginning of the week, freeze, and then just reheat every morning.     I made this but added a scoop of Vanilla Protein powder and made 2 bars. It works out to 22 g of Protein for one. Because I have had RNY I can’t even finish one of them. They are awesome! Thanks so much for the recipe
