Single-Lady Carrot Cake Cupcake

Once upon a time, I devised a super-healthy cupcake to bring to a nursing home.

Voted most popular? The 24-Carrot Cupcakes.

With their good-for-you stats and delicious taste, it seemed everyone in bloggieland wanted to be their friend. However, the cupcakes must’ve done something to fall out of favor with the “in” crowd; recently they’ve felt very lonely. How lonely? Why, single-lady lonely, of course!

Single-Lady Carrot Cake Cupcake

(Serves One!)

  • 30g (scant 1/4 cup) flour
  • 20g applesauce, oil, or pre-melted margarine (scant 1T plus 1 tsp)
  • a little over 1/16th tsp salt
  • about 1T shredded carrot (20g)
  • 1T water or milk of choice (or a little more if needed)
  • 1/4 tsp each vanilla extract, cinnamon, and baking powder
  • sweetener, such as 1 packet NuNaturals stevia or 2 tsp sugar

Combine all dry ingredients, then mix in liquid (including applesauce, if using). Transfer to a muffin tin, ramekin, or even a mini loaf pan. Bake in a pre-heated oven at 325F, for 12-15 minutes. Or try cooking it in the microwave!

I iced my carrot cupcake with Healthy Cream-Cheese Icing.

And added a little shredded carrot for panache.

Super Bowl Sunday

How did you spend your Sunday? Did you watch the Super Bowl?

Football’s not my favorite sport to watch (that’d be hockey). However, depending on the teams involved, I’m sometimes interested in the Super Bowl. This year, not so much. But I did go to a party… and I did bring along a healthy chocolate cake. More on that later this week! And thanks to everyone who weighed in on yesterday’s post. There didn’t seem to be any clear-cut winners, but I’d love to hear your thoughts if you haven’t yet left them.

Maybe it’s me and the fact that my brain doesn’t work on Mondays as well as it does on other days (if it ever does!), but are there any carrots in the cupcake itself?

I am, though, a great lover of carrot cake, so this is very exciting!

  2. Albizia says

The concept of carrot cake is not very clear for me but I also thought there should be carrots in it. But carrot cake is not very popular on this side of the Earth 🙂 .

  3. Katelyn @ Chef Katelyn says

Girl, I watche dthe commercials and that was IT. I almost fell asleep during the approx. 3 minutes of the actual game that I watched;)

Slash carrot cake = my favorite! I made my own carrot cake on my birthday, and ohhh my goodness it lasted so long!

  4. Sarena (The Non Dairy Queen) says

Ya gotta love easy single serving recipes especially for favorite baked treats! This looks perfectly delicious! We watched mindless tv last night and played scrabble instead of football. Perfect night if you ask me. Have a great day Katie!

  5. Holly @ Couch Potato Athlete says

    The cupcake is so cute!

I missed Christina singing but I heard about it — I’m sure she is super embarrassed today, I would be! I thought the BEP sounded terrible, did their microphones not work right? The dancing was cool though.

I loved the Darth Vader/VW commercial and the one where the guy is told “you hit reply all” and then runs around slapping laptops out of everyone’s hands. Ha!

    • Chocolate-Covered Katie says

Oh my gosh, I felt exactly the same way! I love the BEPs and was so excited they were the 1/2-time show… but then they started singing (if you can call it that?) and it was awful :-?.
And the Darth Vader commercial was one of my favorites, too :). (And I liked the reply all one too… you have good taste!) So many of the other ones were trying to get laughs with violence. Apparently violence is funny now?

      • Holly @ Couch Potato Athlete says

For some reason I felt compelled to come back and tell you this — one of my least favorite commercials was the Kim Kardashian Shape-Ups one — I just get annoyed with those shoes in the first place and I hate to think that people will think she keeps her body in shape with those worthless shoes.

Why bash Christina Aguilera over a small mistake in a live performance?
    ============================
ARLINGTON, Texas (AP) — Christina Aguilera says she flubbed a line as she belted out the national anthem at the start of the Super Bowl after getting lost in the moment and losing her place.

She says in a statement, “I can only hope that everyone could feel my love for this country and that the true spirit of it’s anthem still came through.”

  7. Leslie says

I’ve been waiting for this cupcake recipe for my whole life! I didn’t even know it ;). Will definitely be making this today, and I’ll let you know how it goes. Thanks, Katie!

  8. Hannah says

I know you probably get this all the time….BUT YOU ARE AMAZING!
No seriously, you are! In my very short blogging life, I can honestly say I find myself on your page every time I open up my computer. I am now a fan of baby-making (and one has even taken the spotlight on my header!), and my list of “To-make” has grown about a page longer, haha.
To top that all off, I told my roommate last night that I really wanted some carrot cake, and I was super excited when I saw that’s what your post was about today!

Wow, long comment….but I had to tell you how amazing you are!

  9. Sable says

I went to the gym during the Superbowl (would’ve watched if my team was playing but honestly I didn’t care who won!) — it was MARVELOUS. I had the place to myself. There was *one* other person there.

  10. Gina says

Perfection for one is more like it! Now I just need to experiment with a gluten-free flour in this recipe and my belly will be one happy camper 🙂

  11. Cat says

Must try this recipe tonight… I can’t say we were too into the game last night since the only football I really like watching is college football. Instead of the traditional superbowl food we went for your roasted cauliflower nuggets, some veggie crudite and wine. Who says football parties can’t be fancy? 🙂

I have to say my fav commercial was the Audi one with the jail for “old money” along with the “Reply All” one. Particularly bc I’ve made that mistake myself!

  12. Rach says

Definitely loved the commercial with the little boy dressed as Darth Vader playing outside. And his dad starts the car from inside the house. It’s brilliant. I love it. It is SO something my husband would do!

  13. GabyE says

ooooo that cupcake looks soooo good. (wow there’s a lot of o’s in that sentence)

+ I wanted to tell you I got “food for life’s” moofrey burgers and cluckfrey nuggets at whole foods. I don’t usually eat meat substitutes, but I thought I’d try these after your fabulous review. lol. And they are so delicious, and its so much fun eating them too!

  14. Caitlin (EatFeats) says

Yay Superbowl! I like watching football, and I was especially interested in this game because it featured two former Cal Bears (Aaron Rodgers and Desmond Bishop). But I totally felt like the odd woman out at the Superbowl Party I attended. Other girls were more interested in cooking and watching the Puppy Bowl–which WAS adorable.

      • CutePi314 says

Late to the party on this one but…

I feel the same way about hockey, Katie. My boyfriend just recently got into it after meeting me about 7 months ago, and it was so fun to have to be teaching a GUY about a sport! I’ve been watching hockey since I was born (unfortunately I’ve never seen the Bruins win a Cup, too young), and I absolutely love it. I shout and swear at the TV just like one of the boys. I grew up in and around the sport. I even work at a hockey rink!

And the Puppy Bowl is the only thing I watch during the Super Bowl. Football…yuck!

        ~Laura

        • Chocolate-Covered Katie says

I hate hockey!!! Hate hate hate!
Or maybe I’m just feeling bitter… because my beloved Dallas Stars didn’t make the playoffs 🙁 🙁 :(.
That’s so cool you work at a hockey rink… when I was little, I actually wanted to play! There were no girl leagues, but there are now!

  15. Angie says

Great recipe! I like how you make it an individual cupcake instead of a dozen! My mom is ready to kill me with all the left over muffins/bars/brownies we have!

  16. Sabine @ thefruitpursuit says

I have seen these so many times but never tried them, and I just bought an INSANE amount of carrots… 1 + 1 = carrot cake? 😉

  17. Christin@purplebirdblog says

I know I’m totally a communist, but carrot cake is just not my favorite thing! *ducks from thrown tomatoes… or throw carrots?* I would put blueberries it anyday though 🙂

  18. Alex@Spoonful of Sugar Free says

YuM! I love topping my carrot cakes with coconut butter 🙂

I actually was playing in a tennis tournament this weekend, so by the time I got home I was very tired, but I watched it anyway. I’m not a football fan, but I like watching the funny commercials and the half-time show. While having some good ol comfort food in a bowl. 🙂

  19. melissa @ the delicate place says

yay you made the carrot cake. i had to root for the black and gold BUT omg how do you botch the national anthem? also, i was pained to sit through that halftime show. holy fergie keep your mouth shut! yikes.

    • Maria says

I agree! I’d told my bf that I liked the black eyed peas, and he said, “Who are they?” After halftime, I was embarrassed to have said I liked them!

  20. bitt says

I didn’t really watch anything other than the halftime game. I’ve already forgotten who’s won. I prefer hockey and just about any other sport. Although the Glee show afterwards did make football more interesting to me. 🙂

  21. Alyson says

I didn’t even see the superbowl, let alone go to a party. I was busy doing homework watching the office and outsourced with my boyfriend. 🙂 Needless to say, it was a very unproductive night, followed by Glee after the superbowl. 🙂 (I kind of wanted to watch it, but I didn’t know what channel it was on… Isn’t that silly? And I realized after that I had missed all the commercials. 🙁 So left out of American culture…. Hahahaha. Those cupcakes sound yummlicious, and I hope everyone enjoyed that cake! It sounds fantastic! (Then again, anything chocolate sounds fantastic! 😉)

  22. Averie (LoveVeggiesAndYoga) says

Didnt watch football, havent even been online enough yet today to even hear about and debacles or anything that went wrong with the halftime show, Christina, etc. Im sure I will hear all about it 🙂

Skylar and i went to the mall during the game for a girls day out 🙂 We went make up and body spray shopping and it was fabulous!

    Love the cupcake!!

  23. Helen says

Love football so we did watch the game, but it wasn’t really an exciting game. Hated the performances this year, embarressing!!

I will have to try this cupcake, I love cupcakes 🙂

As for yesterdays post, I sometimes plan in advance for posts on weekends. If I have several thoughts at once I start the draft, mainly so I don’t forget. I usually blog daily but have be known to miss a day…soemtimes life is more important.

I love and live by lists!

  24. Tara says

I can’t wait to try that cupcake. Carrot Cake is the dessert of my childhood, so it’s definitely one of my favorite desserts. Or breakfasts, because this is healthy enough for breakfast!

I’m totally a hockey girl too, but there was a doritos commercial that was hilarious. I think it was called “house sitting” or something.

  25. Emma (Sweet Tooth Runner) says

I am SO making this!! It’ll be my first vegan carrot cake! I’ll go out tomorrow to buy a carrot specially 🙂 Can’t wait for your chocolate cake recipe too!! You are SO amazingly creative Katie!! GENIUS GIRL! 😀

  26. Geraldine says

Amazing! Now I can get my cake hit without having to eat a whole batch. Plus I can’t eat the batter b/c then there would be no cake 🙂 Thanks for this recipe!

  27. Moni'sMeals says

yum yum yum yummmmm! That is what I got for you today Katie!

Did not watch much of the super bowl at all but I liked the Darth Vader Kid car commercial. 🙂

  28. Melomeals: Vegan for $3.33 a Day says

I made something really similar to this for breakfast the other day.. and used the microwave. I used oats instead of flour.. so good! Yay for healthy baked goods.

  29. Leslie says

You are a genius! I made this as soon as I got home from work. I might have even left work a little early just to make it that much sooner ;). It was AWESOME! Perfect to satisfy an enormous carrot cake craving!

    • Leslie says

Oh, and I know you’ll approve: I topped it with Artisana coconut butter, which you introduced me to in the first place! What would I do without your blog, Katie?!?

  30. ashley@quasichick says

Katie I forgot to tell you I tried my very first single lady cupcake and it was perfect! So easy and delish! I topped mine with a little drippy almond butter 🙂

  31. Kalyn says

Katie, I just made this, and OMG! I added in raisins, walnuts, and coconut. Then I topped it with melted coconut butter and toasted walnuts and coconut shreds. OMG. OMG! So good (: Thanks for the inspiration!

  32. Rebecca says

I made these last night! So delicious! My parents loved them (which is great because my dad has a big sweet tooth and I’m trying to learn to make healthier options for him, dessert-wise). Thanks Katie. You have no idea how much of a relief it is to find healthier desserts for my family!

Also, I tried making the chocolate-raspberry fudge cake again last night (I’d asked you about it yesterday) and just added a tablespoon more cocoa, and it turned out exactly how I wanted!

I also made Fro-Co a couple of days ago and it was seriously like heaven.

In case you can’t tell, I’m completely obsessed with the food on your blog. Thanks!

  33. lucy says

i just made this and it is amazing!
i subbed oats for the flour and added in a few raisins. delicious!
i didnt have any tofu in my fridge, so for the frosting, i mixed some soy cream cheese and soy yogurt with a little agave and put that on top.
    Thanks for the great recipe!

  34. Yesenia says

Wait a sec… did that say “try it in the Microwave”????!!! Please explain?? i ask because I currently am without a working oven and if i can use my microwave, that would be just AWESOME!!! 😀

  35. Kate says

I know I’m late to stumble upon this post, but I am SO EXCITED about this. I have recently been trying to eat “healthier”. Gave up Diet Coke (my lifeline) and have been trying to really cut out the processed foods. I LOVE carrot cake and I am so excited to find this gem of a recipe that fits into my diet! I would make the whole recipe of carrot cake muffins but I’m afraid they would be gone in 1 day! Totally making this tomorrow! It will be my first recipe from your website, but probably not my last – you have such awesome ideas!

  36. Fern says

Just made this! My first time baking with apple sauce and I must say I was very impressed- it rose but didn’t taste soapy like other vegan cakes I’ve tried to do. Lovely stuff!

  37. Lara says

I used regular whole wheat flour, added three crushed walnuts, and frosted it with vegan cashew cream cheese frosting. Eating it was like sliding down a rainbow onto a fluffy cloud. Thank you for the recipe!

  38. Hayley says

I have one in the oven right now! I didn’t have any applesauce so I even made my own applesauce just before specially to make one!

  39. Amelia Newton says

I just had this recipe (instead of cream cheese frosting, I used sugar free pudding and a drizzle of honey on top). It was delishus! Absolutely satisfied my sweet tooth!

  40. Sam says

For people calorie counting: it can be up to 300cals for this recipe alone, if you don’t use sweeteners and low calorie options on purpose! Not sure if it’s really as tiny as it looks, but wanted to make a comment so those trying to find low calorie recipes don’t end up surprised. These do look really good.
