*Nutrition info is based on the Pumpkin Bread Baked Oatmeal, but all flavors are pretty similar, nutritionally-speaking. I usually add some form of nut butter to my boatmeal, but I’ve calculated the nutritional info without the optional nut butter for those of you who wish to keep it low-cal. (Add 100 calories per tablespoon of nut butter or oil, if using.)
Along with my oatmeal cake I had a green smoothie in a bowl, unpictured, due to its ugliness. It’s not easy being green. And then I got ready for our family’s annual Christmas-shopping outing. My sister just loves these… Don’t you, Michelle? I’m sure she was extremely disappointed to miss it this year. (Sarcasm!)
Going Christmas shopping with my mom is intense. She gets on a roll. (No pun intended.)

I love the idea of ‘Hummingbird Cake’ for boatmeal. Throw in coconut, chopped pecans, crushed pineapple, and mashed bananas. Add cinnamon and a little vanilla extract for extra flavor. Then ‘frost’ it with a coconut butter! Mmmm so I am officially drooling. Off to make Hummingbird boatmeal Cake!

I made the pumpkin boatmeal for breakfast this morning and it was delicious! It made my apartment smell so good!
I was actually thinking of replacing the pumpkin with applesauce and adding crasins for an cran-apple take on the boatmeal! Hmmm….maybe tomorrow morning.

I’ve done that! HH’s recipe calls for applesauce as the fat replacer/binder. It’s reeeallly good. Especially with bits of dried apples added. I use unsweetened cinnamon applesauce.
I also got some cups of peach applesauce to try out in the recipe since peaches and cream was my favorite when I ate the crappy microwaveable, so not vegan, Quaker quick packages. 😉
I also pureed some frozen strawberries and mixed them with the milk in a boatmeal once. Also tasty! I love that it’s so open for experimentation. 🙂

Oh fun! In honor of Veteran’s Day and all our hard-fighting troops, I suggest some sort of Red, White, and Blue Boatmeal. Maybe red berries (strawberries, raspberries, dried cranberries?), coconut, and…something blue. Or a better flavor combination with the same color scheme hehe.

How fun that it turned into a little cake! I think anything with coconut butter would be absolutely marvelous. Perhaps a tropical boatmeal with pineapple, coconut, and mango (or banana)? Or maybe a (vegan) Elvis boatmeal with bananas and peanut butter? I think a layered effect would be quite nice with that one. Hey, it would be like a layer cake, especially if you “frosted” it with banana butter. Oh boy, the ideas just keep coming :D.

Okay, so don’t change your boatmeal cake. What you need to do is add to it! Gently heat a 1/2 cup of blueberries in a tsp of maple syrup on your stovetop. Pour over your pumpkin boatmeal, add pieces of a chopped dried fig, and drizzle some sunflower seed butter on the top. Magic!! Trust me. I make this in stovetop oat bran form every morning and I haven’t gotten hooked off of it yet, and it’s been a month and a half. (Cashew butter is good with this too if you want to mix it up instead of having Sunbutter.) Sounds like a weird combo, but you gotta believe me. Now I have to try boatmeal, I really really am intrigued!! Thanks for enlightening me!

Hey Katie: We made something like this, and we call it Chunky Monkey Boatmeal, after your boatmeal and Ben&Jerry’s ice cream flavor. We use the pumpkin boatmeal recipe as a start, but use banana instead of pumpkin, add Ghiardelli chocolate chunks, nutmeg, and walnuts. It’s a great combination!

Katie, I’ve fallen in love w/boatmeal, but I have a question about the nutritional information. How could it be only 180 calories when the oatmeal alone is 190 calories? (Bob’s Red Mill) I used Cron-O-Meter (free online software for calculating and keeping track of daily intakes) and after I plug in your recipe I came up w/427 Calories for the pumpkin pie boatmeal. Am I doing something wrong?

I became officially obsessed with Pumpkin Boatmeal and ate it for 2 weeks straight – until I realized I had a small allergy to cinnamon! I decided to experimental with different flavors and found a new favorite (although higher calorie) boatmeal! Peanut Butter Banana Boatmeal! I have started posting carb grams for all my recipes where I give nutrition facts, beginning a few months ago. If I ever do another oatmeal cake flavor (and I’m sure I will at some point!), I’ll be sure to include carb grams as well. I’m sorry if this question has already been answered, but does it matter which type of oats? Quick-cooking or old-fashioned? I am sooo looking forward to making this on Saturday when I don’t have to rush to work! Btw, I just discovered your blog about 10 days ago, and I have had a great time looking over all the recipes. 🙂

Words cannot express how much I adore you and your recipes! I look forward to coming home after long days at work and unwinding by finding a low guilt chocolate treat to bake from your site. To put it simply, you brighten my days. 🙂
So I am excited to say that just bought some coconut oil (for the first time). As a rookie, in the world of baking with coconut oil, I am wondering if I can use it in place of the other oils in all your recipes or will it not work in some?
ps If ever you find the time to revamp your site, adding a search bar would be super helpful. Often I have an ingredient leftover from a prior experiment (ie canned pumpkin) and am looking for something to use it in as to not waste. As it turns out, I typically am way more excited about something else I find on your site first and end up having to bake 2 recipes (more leftover ingredients!) Also, a “scroll to top” button would be rockin’ too–pinterest wins big for that! 🙂

I just made this for breakfast! It was sooooo yummy! I sort of used the oatmeal raisin recipe, but i made it into a blueberry muffin kind of thing. Thanks so much for all the inspiring breakfast ideas! I swear i come to this site every morning 🙂

I make one of these for breakfast at least twice a week and it keep me full forever! I even threw some hersheys special dark cocoa in and a tad extra stevia and dark chocolate chips and it’s the best thing ever.

I calculated these on spark and for some reason mine is coming up with WAY more than 180 cals. I don’t know why but it is. Just wondering how you calculated, maybe spark isn’t reliable?

I’ve actually used spark recipes for some things. I think a few of their ingredients are incorrectly listed. I know oats are incorrectly listed on that site, in terms of calories.
1/2 cup raw rolled oats has around 150 calories.

Can you tell me how many carbs are in this recipe. I do weight watchers and love your recipes. Even for other recipes the carbs would be a nice thing to add!

How do u eat boat meal? With a fork? Like a bar or muffin? Like a wheatable cereal and pour milk over top? I’m new to the page but I’ve loved every recipe I’ve seen. I love oats! And you’re teaching me so much about raw and vegan and gluten etc. This has become one of my favorite sites! So are boatmeals meant to be enjoyed as a muffin type and in milk. Some of the boatmeals look like I should use a fork but others look super creamy….

Really, any/all of those ways. Many people eat them like a muffin/cupcake, especially because they’re portable. But you can leave them in the ramekin and top with milk if you’d prefer. 🙂

I have all of the ingredients at home except for rolled oats. Can this be made with steel cut oats instead? I realize the calorie count changes, but that doesn’t matter. What matters is whether or not I have to head to the store!

Does anyone know a way to make this in the microwave? Could I microzap it and then cook it for like 5 min so it gets crispy? I want to have it for breakfast but I don’t have 20 to wait for it to cook! 🙁

I can’t tell you how much your lovely recipes have meant to me. I’ve lost 10 of 40 pounds in a month with one of your recipes for breakfast and a snack everyday. My husband (who also has a huge chocolate/sweet tooth) is eating them as well and loves them. I particularly like the recipes with beans and oats, since the protein is there right along with the carbs. Also, I have to eat gluten and soy free. Thank you so much Katie. I can really say you have helped to change our lives. (Did I forget to mention delicious?).

What can I use as a substitute for all of these baked oatmeal recipes if I can’t use the banana or applesauce? I’m intolerant to fruits and vegetables…. So the fruit ingredients will kill me!

I made the Cinnamon Bun Boatmeal, and when I plugged the recipe into Spark Recipe Calculator, it came up with 282 calories and 57 carbs, rather than the numbers you have here.

thank you so much for the baled oatmeal recipe.i’ve never been a fan of oats until i tried these recipes, and right now i actually have to force myself to have other things for other meals instead of baked oatmeal.im jot sure how healthy they become after all the addins like sugar and salt, but theyre too delicious and easy to make to not eat.
However, i wanted to ask what the function of the mashed fruit OR applesauce that you have in those recipes.are they used ijnplave of eggs, as a binder? in which case is it possible to omit it or use an actual egg, you think?this is in the interest of someone trying to lose weight.

What are the sugars? I am diabetic and the carb is kind of high, but it could be a once in awhile treat!
