Seriously, thank you all so much.
I’ll try to make the blog a little more personal in the future, although it’s difficult because most of the personal stuff in my life involves other people. To respect the privacy of my real-world friends, I have a rule to not write about them or post their photos, which is why most of the pictures you see on this blog are of just me.
For today, you get another recipe… with chocolate. Hopefully you won’t mind. 😉
I’m honored to feature a recipe today from Tosca Reno, a New York Times best-selling author and one of the most well-respected and influential figures in the world of healthy food. This bread pudding recipe comes from her Eat Clean Diet Vegetarian Cookbook, which contains 150 meat-free recipes free of processed ingredients, refined sugars, and anything artificial (note to vegetarians: there is a chapter on fish).
The book, which comes with complete nutritional information for every recipe, is divided into ten chapters from breakfast to dessert. It also covers topics such as how to be a healthy vegetarian, eating vegetarian on a budget, and making fast-food and holiday recipes. Upon receiving the cookbook in the mail, I right away bookmarked at least fifteen things I wanted to make. With bananas, cinnamon, and chocolate chips, this healthy bread pudding was obviously on top of the list!
Chocolate Chip Banana Bread Pudding
(Adapted from Eat Clean Diet Vegetarian Cookbook, reprinted with permission)
- 2 1/2 cups (640ml) milk of choice
- 3 tbsp (45ml) arrowroot or cornstarch
- 1/4 cup (60ml) sucanat or sugar of choice
- 1/3 cup (80ml) pure maple syrup
- 1 tbsp pure vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 5 cups day-old bread, torn into 1-to-2-inch pieces, lightly packed
- 2 extra-ripe bananas, peeled and sliced
- 1/2 to 1 cup (120-240ml) chocolate chips
Preheat oven to 350F (177C). Grease a 1.5 to 2-quart ceramic dish and set aside. Thoroughly whisk together all but last three ingredients in a large bowl. Add remaining ingredients, and stir to combine, mashing the bananas a little and allowing the bread to absorb most of the liquid. Scrape into the prepared dish, and press down to smooth the top. Let sit 15 minutes so bread absorbs more liquid, then bake uncovered until lightly brown and firm (about 30 minutes). Serve warm. Good for you! I even try to limit what I share about my kids or spouse. It’s a tricky thing–the reason why people love/read blogs is for the personal touch, the intimate aspect. But we must draw boundaries as bloggers & realize that it’s okay to not share certain things.

I’m not sure how she manages to make a bunch of random vegetables floating around with stock and spices taste like home, but I’ve never been able to replicate it.

I have so many fun meatless recipes, but my go-to is an egg-free, meat-free, crustless spinach “quiche”. I take a package of frozen spinach and let it thaw while I cook a sweet potato or yam in the microwave – enough to mash it up. I mix the mashed sweet potato with the spinach, and then I add in cheese (I’m not vegan so I use whatever I have on hand, but I’m sure vegan cheese would work fine). Cook it for about 30 minutes and YUM!

One of my favorite meatless meals ever has been Braised Bok Choy. My mom made it one night, as she was trying all these veggie recipes from a cookbook, and she said I could have some. Some turned out to be, “You can have some more,” which turned into me finishing the entire pan of it which was pretty much an entire head of bok choy! 😀

My husband and I started eating better about 6 months ago. We started doing “Meatless Mondays”. I came across a recipe for a black bean nacho burger. It’s not vegan but it was the first vegetarian meal my husband truly enjoyed, so much that he was excited the next time I said I was going to make it. I altered the recipe a little to make a little healthier (less cheese, baked chips, my homemade wholegrain buns) and it is by far both our favorite meatless meal. It’s funny but I never even liked black beans and this is one of my favorite meals and you black bean brownies are my favorite brownies! Next thing I will actually eat and enjoy tofu..doubt it lol

AH! Well, I’m FINALLY commenting on a Chocolate Covered Katie recipe. It’s something I’ve been wanting to do for a long time, and now I have no more excuses to wait since that cookbook would really help out a college student who is having trouble keeping her gut clean with a “dirty” gluten and dairy infested meal plan. I am a diehard meat lover. Unfortunately, I can’t afford meat here in downtown Chicago. So I’ve been thriving off of meatless meals! I could always go for a heaping bowl of Rice Chex or any variation of chili, but my favorite would have to be pad thai (none of them egg shenanigans). It’s a rare occasion when I can score it, but when I do, I score a touchdown and my stomach ends up looking like a football field.

Stuffed acorn squash! I take an acorn squash and cut it in half, then bake it for 35-40 minutes, and fill each half with pre-cooked quinoa, peppers, onions, tomatoes, beans and anything else that sounds good 🙂 Top it with cheese, bake for ten more minutes and I’m good to go!

My favorite meatless meal is something I whipped up on my own. I call it sweet potato breakfast mash. Its basically a baked sweet potato mashed up with a banana, flax seed, a little almond milk, cinnamon, vanilla extract, and whatever else I have lying around. Sometimes I add some silken tofu, maple syrup, or berries. The variations are endless. It might sound kind of weird having a sweet potato for breakfast, but I promise it tastes great. Bonus points if you heat it up before eating! 🙂

My absolute favorite is Eggplant Parmesan and since I’m often too lazy to make it from scratch, I love using Dominex brand Eggplant Cutlets or the ones from Trader Joes. Thanks for this recipe, I just bought a big casserole dish for a Thanksgiving recipe that ended up failing so now I have something else to use it for!

My favorite meatless meal comes from Moosewood I call it Hippie Soup but they call it Mushroom-Sesame-Tofu Soup. It’s loaded with vegetarian proteins and can be used as a soup or stew, great over rice or potatoes or any grain. My favorite non-meat meal is my protein no bake overnight oats. I don’t use regular whey protein. I use raw Sunwarrior plant base protein, mix it with homemade almond milk, 1/4c of oat, chia seeds (it becomes pudding like) and other ingredients you like put it in the fridge overnight. It’s ready for breakfast when I am in a rush or my post work out snack the next day.
I incorporated some of your recipes with my vegan protein powder to make it a power post work out food.

My favorite is the always versatile rice bowl — on a base of brown rice (or barley or any other grain), I layer beans, just about any kind of vegetables (sauteed mushrooms and onions, steamed broccoli my faves), with salsa and/or guacamole. With the guacamole, even the kids will eat and enjoy!

One of my favorites is a bowl of cold leftover brown rice with chopped up walnuts or pecans, whatever fresh fruit you have (in summer blueberries, strawberries, banana etc – lately I’m using honeycrisp apples) and sprinkled cinnamon with soy milk. It’s good for any meal 🙂

I also love cooking. I beg my parents to let me cook sometimes. And I actually most often cook meatless meals. I don’t think I could choose a favorite, because they are all so good, but I think if I had to choose a favorite, it would by my orange tofu. I invented this recipe, and revised it, and now I don’t even have it written down. It just stays in my head. I have always been a big runner. I’m on a track team, and cross country team, and I have gone to district of the Hersheys meet, meaning that I was one of the fastest girls my age for the 800. I have been in many cross country meets, and I often fear that what happened to you, will someday happen to me. But I know that whatever happens to me will be my choice, and that I have tried over 20 physical activities, so I will have some choices. I would have to say my favorite vegetarian meal is sauted veggies with quinoa. I will saute any vegetable I have on hand and top quinoa with the mix. Super easy, filling, and depending on the veggie mix, tastes different each time.

Ooh I love meatless meals, for breakfast I love my volumising oatmeal which I have everyday, I add mix berries, banana, cinnamon, ginger, chia seeds, LSA mix (I try to eat as many superfoods a day as I can).
For tea I love to make a tofu stir-fry with pad Thai noodles.
I bulk it up with heaps of veges usually cauliflower, broccoli, kale, cabbage, onion, mushroom, peppers, zucchini, carrots.
I make my own sauce and use half to marinate the tofu, the sauce is usually made up of rice wine vinegar, soy sauce, oyster sauce, sesame oil, chili, ginger, garlic, coriander.
I cook the noodles in boiling water and let soak for five minutes. Cook the veges in the wok, add the sauce and tofu to heat through, then add the noodles and serve, yum!!!

I discovered my favorite meatless meal this summer when I was living on an island in Northwest Washington called San Juan Island (if you Google it, you’ll probably find lots of articles about Orca whales because the island is famous for the Orcas that live in the surrounding waters). The island has one very small town, lots of lush fields and forests and tons of deer, since they have no predators. When you are there in early fall, you notice how the green bushes turn purple–with blackberries! I went on a blackberry picking-spree with friends with one goal in mind: to make coconut blackberry ice cream. There are essentially three ingredients: creamy coconut milk, mashed freshly-picked blackberries, and maple syrup (or another sweetener). If dessert counts as a meal, this coconut San Juan Island blackberry maple ice cream is the best food I have ever eaten in my life. Not only did it taste fantastic, but it is also my favorite because my fellow berry-harvesters are the people with whom I lived this summer and created wonderful memories: kayaking with Orca whales, playing driftwood crochet, jumping off the dock into the bay at midnight, and going out in the boats during a new moon to watch the bioluminescence make our kayaks, paddles, and all the curious seals around us glow as if trailing with fairy dust. Then going back to the “Dandelion House” and eating coconut San Juan Island blackberry maple ice cream really makes it something special. I’m sure you can understand now why this is my favorite meatless meal–even if dessert doesn’t count as a meal, I eat it for breakfast, too!

My favorite meatless meal is my own quickie vegetable curry:
1 microwaved ‘baked’ potato, diced
1 onion, sliced (plus sliced peppers or mushrooms or just about any other sliced/diced veg)
1 can diced tomatoes
2 T curry paste of choice
– sauté onion in curry paste over med heat till onion is tender.
– add diced cooked Potato; stir to coat and sauté to brown a little.
– deglaze with tomatoes; heat to boiling, reduce and gently simmer to desired consistency. Serve (yourself!) as a stew.

It’s either rice and dahl with lots of hot mango pickle (I was born and raised in India, which explains my bias–and I was a vegitatian until Dx with multi-grain allergies) OR cuban black beans and rice with hot sauce–rice has been a great aid in coping with my wheat/gluten allergies!
One of the reasons I LOVE your website is because I’m not only allergic to most grains, but also milk…so use either soy or almond milk. It’s like your website was created just for me!

I’d have to say my favorite meatless meal would be a whole-grain tuna/salmon sandwich with lettuce and tomato. Second only to Creamy Onion Soup with a side of fresh dark multi-grain bread to dunk with and a tossed salad with balsamic vinaigrette.
When I was younger my favorite dinner was oven-roasted squash (cut open once, baked open-faced) spread with butter and generously seasoned with All-Seasoning and salt (didn’t really need salt bc slreacy had but liked it better anyway); eaten by scooping out the flesh with spoons and saving the savoury crust for last. ( I actually onced used that same dinner in my workbook- I was asked to describe the one meal I’d love to have if I were stranded on an island somewhere, so I chose and described that squash!)
My favorite breakfast for the longest time was fresh Belgian Waffles served in a stacked heap with butter squares, maple syrup berries and sometimes whipped cream puffs; often chocolate chips. ; )

I’d have to say there is this roasted winter vegetable jambalaya recipe I found in the Vegetarian Times magazine recently that’s got to be my new favorite meatless recipe! Its got carrots, parsnips, potatoes, sweet potatoes, tomatoes, and some other stuff and a really yummy blend of spices. Freezes really well too so I can make a ton and have meals for weeks 🙂

I love tacos! I use textured soy protein instead of ground meat. Lots of black beans and corn, mushrooms, peppers, onions and garlic. In a crunchy shell, soft shell or a lettuce wrap!

I love oyster mushrooms so tonight i fried up a batch with olive oil and a little earth balance. Whole Foods gave me almost a pound free because they rung them up wrong.Yay- I was excited about that. I made some steamed brocolli and sauteed it in a little tamari and sesame oil and made a delicious sweet potatoe, black bean, quinoa patti with a cashew chipolte sauce.

We eat mostly meatless and there are lots of good ones, but our favorite is risotto because it’s so flexible – what ever vegetables we have, some rice, and some broth. I’ve even added quinoa and lentils in with the rice. et voila! Then then next day the leftovers become stuffed peppers. 😀

chickpeas and veggies hamburger! I boil or stir fry all the ingredients, blend them, shape the result into manageable patties and (after covering them in breadcrumbs) put them in the oven and bake them for 10 minutes ca. :)! Easy to make and you can prepare them in advance, freeze them, and put one in the microwave that nights when you don’t feel like cooking. 🙂

Vegetarian Moussaka served with warm pita and a crunchy salad. Traditional moussaka is a Greek eggplant and meat lasagna with a thick cheesy bechamel sauce on top. I like my version with lots of grilled eggplant, zucchini, red peppers and a lentil/walnut mixture that replaces the meat.

I might be too late, but I’ll answer the question anyway. I LOVE anything with beans. Like, I just had a spicy vegetarian chili last night and it was SO good. Just black beans, kidney beans, pinto beans, chickpeas, rice, corn, and peppers. (Then whatever was in the sauce)
Otherwise I really really love fruit. Any and all fruit.
P.S., I totally don’t like bread pudding, but this actually looks really awesome, so I think I’ll add this to my list of recipes to try!

I’ve had this recipe saved for a while, and finally gave it a shot. It tastes much like a mushy banana bread. I think next time I will add melted earth balance and a couple eggs to give it more of a bread pudding flavor. Still tasty, though! I’m a huge fan of nutmeg. 🙂

Just a quick clarification, if you would. In the description of the cookbook you adapted this from, it says the recipes are “free of refined sugars.” But the recipe itself has 1/4 cup. Am I correct to assume this is based on “sucanat” and not on white table sugar? I’m trying to slowly wean myself off sugars and wanted to start with cutting out white refined sugar and go from there. Not sure what sucanat is. Also, what about the chocolate chips used in the recipe? Are they a special kind you use that don’t have sugar? Or did you completely adapt the recipe into something pretty new? Confused. :/ Thanks!!
