*These cookie bites are highly delicious. But don’t expect them to taste like Tollhouse chocolate chip cookies. I do have a healthy recipe for those, if you want to try my Flourless Chocolate Chip Cookies.

Chocolate Chip Breakfast Cookies

Chocolate Chip Breakfast Cookies

Ingredients

  • 1/2 cup rolled oats
  • scant 1/2 cup applesauce or mashed banana
  • 1/4 cup almond or cashew butter OR allergy-friendly sub
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2-3 tbsp mini chocolate chips or chunks
  • 2 1/2 tbsp freeze-dried raspberries OR 2 tbsp dried fruit or more chocolate chips
  • pinch stevia OR 1 tbsp sugar (If you have no sweet tooth you can omit. If you are used to non-healthy-tasting desserts, add extra sugar as desired.)

Instructions

Preheat the oven to 350 degrees. Mash the applesauce or banana with the nut butter, then add all other ingredients and mix until well-combined. Shape into cookies–I used a mini cookie scoop–and bake on a greased cookie sheet for around 15 minutes, then let cool 10 minutes before removing from sheet. This makes 18 mini cookies (as shown in the photos), or 10-12 bigger cookies.

    Good to know on the Whole Foods chocolate chunk, I have been on a Sunspire Organic Fair Trade 65% Cacao Bittersweet Baking Chips rampage and need to change it up.

    These look so heavenly and I love raspberry and chocolate as a combination. Will be trying soon.

    Oh yes, grew up on Sesame Street! It is amazing how much it has changed and still managed to continue on.

        No kidding. “Single Lady” fall in my why-didn’t-I-think-of-that category. Especially for recipes like these that are very easy to consume. 🙂

        Anyway, I did a quick and tiny run at these today and if you wanted and idea of tiny portion this is what I did:

        2Tbls oats
        2Tbls applesauce
        1Tbls PB
        Splash vanilla (I love vanilla, I usually go higher than called for)
        Didn’t worry about the salt
        Didn’t worry about the sugar
        2Tbls Frozen raspberries (the main reason I was testing actually – besides eating)

        This produced about 5 mini-cookies. A blip on my cookie eating radar. You can see I maintained her ratios and just cut the recipe to a 1/4…I think.

        Tomorrow I will do tiny amount again because I need to evaluate the sugar question. For my tastes – perfect without the sugar. But these are in my running for a bake sale this weekend and I have to think about public preference. 🙂

          Edit to my own reply. Um. I think I didn’t maintain ratios in the raspberries or the chocolate however. That is a bit funny now that I am re-reading this.

          The chocolate I just eyeballed because I had a situation called trying to chop up whatever chocolate bar I had around.

          And I think I did 2 full Tablespoons of frozen berries! No wonder the darn things didn’t set! Yes, frozen may have been an issue, but talk about tipping the liquid scale.

          If you are wondering: of course I still ate them – they were doughy but not inedible!

    Yum, yum, yum. These look delicious and, I agree, perfect for breakfast! I’m taking an overnight flight this weekend and may make these to have instead of the yucky plane breakfast they serve. I’m sure whoever sits next to me will be jealous 🙂

    I loved Sesame Street! Did anyone else see the movie Follow That Bird? Those cookies look awesome (and CCK is gorgeous as always)! I’m not sure I’ve seen freeze-dried fruit, though… does it taste different than regular dried fruit? I often have dried cherries and cranberries around so I may have to try a variation with those. 🙂

      Gosh…I totally forgot about follow that bird.

      Anyway, in the Seattle area of WA state there is a lot of freeze-dried fruits actually. Around here they tend to be expensive and naturally totally addictive. This used to be the main brand around me:

      I would buy these containers of Just Fruit Munchies for something like $8 and trust me it never lasted long (I had to put myself on financial restriction). I think (hope) the prices have come down considerably since they first started showing up in the mainstream stores. I will know later today when I go shopping. 🙂

      It used to be you could find bags of it in the camping sections (lighter than dried fruit in the pack and sometimes every oz truly does count).

        I used frozen raspberries in mine! They were really good. I just put the raspberries in the microwave for about 15 seconds, then mashed them a bit with a fork. 🙂

    I’m almost out of Sunbutter, otherwise I would try the cookies with it. I do have a new jar of Almond butter, and just picked up a perfectly beautiful bag of leopard bananas hahah! I’ll try to make these this weekend and let you know how it turns out.

    That Nat King Cole song always makes me think of Parent Trap with Lindsay Lohan – I learned all the words to that song by watching that movie over and over and over again as a kid 🙂

    OK, these look AMAZING. Seriously. I’m practically drooling over my keyboard right now. Sadly, I’m on a diet which doesn’t permit oats or grains…what could I sub instead? Do you think these would work maybe with coconut flour? Or coconut flour and flaxseed? I love the look of so many of your recipes but not being able to eat oats is knocking out a lot of stuff for me 🙁 Any suggestions you have on how I could adapt your scrummy recipes would be very gratefully received!

    I hate the thought of my kids watching any TV, but if they want to watch Sesame Street, I’ll let them watch it all day long! I have such fond memories of watching when I was a kid and I think it’s such a smart, funny, and fun educational show.

      Sorry, I’m not sure… it might be too liquidy, but maybe not! I can’t say because I haven’t tried it. But if you just want a more-natural sugar to the sugar, you could also do coconut sugar or evaporated cane juice.
      And if you try it with agave please report back! 🙂

    Oh wow, Katie, you didn’t mention how dangerous these are. I popped three in my mouth, and you can bet that I’m going back for a 4th as soon as I finish typing this!

    Oh, and the only change I made was to use freeze-fried strawberries instead of the raspberries which I didn’t have.

    I want to make these right now! I don’t have any dried fruit though. Would frozen berries work or would that change the texture?

    I watched Sesame Street growing up and I always liked Grover. My daughter is almost 2 and just became interested in Sesame Street. She just learned to say Cookie (as in Cookie Monster) and mommy is so proud! 🙂 Lol! Although this might mean she will know how to get me to share my cookies!

        So I made a really mini-batch and tried out frozen berries. I just chopped them in frozen. I would guess it was the reason they didn’t set up (didn’t stop me from eating them).

        I could have cooked a bit longer probably but they were browning and I pulled them.

        The taste was great and I will try them again with freeze-dried after I get to the store.

    These look delicious! I have a question though…what could I substitute for the roasted cashew butter? Would peanut butter work (or regular butter/margarine)? I’d rather use something I have on hand, instead of buying anything new.

      My first run at this I did with peanut butter and it worked fine for me, but peanut butter rarely ruins anything. I did use frozen berries however and that was probably what messed up the set of the cookie (not the taste however :))

    LOVE your make-up in that last picture. It looks darker than the usual shades you use? Those colors look very elegant on you 🙂 cashew butter is such a lovely unexpected nut butter to bake with… I love the buttery flavor it adds. Do you make your own or do you buy pre-made cashew butter?? I would imagine making your own, especially when you bake a lot, would be a liiittle bit more economical. Those nut butters add up!

      Thank you, Sarah! I think maybe it’s just the lighting, or that I’m wearing black… I only own mascara and light blue eyeshadow. I have ridiculously sensitive eyes and am afraid of eyeliner!
      And I’ve still never tried making my own nut butter. Sad, I know. Not even peanut butter! Someday I really do need to change this.

    I watched Sesame Street every day growing up. By watched I mean had it on in the background while I played. I think my parents did it to keep me quiet. They could’ve just given me chocolate.

        I tried it with pumpkin puree -since I didn’t have applesauce- … and it was delicious! I followed your recipe but added dried cranberries in the mixture. I also used Ghiradelli white chocolate chips -since it was all we had- and used some cinnamon spice. I didn’t think about putting the pumpkin spice. I probably should next time but it still came out tasting so gooood 🙂 The chocolate chips were sweet by themselves so I didn’t add any sweetener.

    I just bought a bag of baking chocolate last week without any particular idea what to bake but now I know. These cookies will make the prefect breakfast for somebody like me who almost always craves something sweet in the morning.

    I used to watch Sesame Street a lot as a kid. The Cookie Monster was funny but Elmo has always been my favorite because he is just soooo adorable. Two weeks ago I went with some friends to Universal Studios Japan and the only souvenir I bought for myself was a mug with Sesame Street characters. The child in me is still alive 😉 .

    I made these tonight, and my boys and I loved them! I used the 1/2 cup banana, about 1/4 cup extra oats (we are at high elevation, and often have problems with flat cookies), almond butter, all chocolate chips (didn’t have any fruit), and a scant tablespoon of agave for sweetener.     This looks and sounds delightful. And you know what strikes me? This could very easily be made as a _raw_ recipe too! Simply dehydrate overnight instead of baking, and if desired use homemade raw chocolate, or just cacao nibs, in place of the choc chips. May have to try that! Did you see my gf version of your pina/coconut cake? Worked great!

        Mindi: It’s on my to-do list to figure out how to make one! Unfortunately, my blog’s been having issues with plugins so I can’t add another at the moment until I sort out the bug.

        But I usually just copy/paste the actual recipe into a word document… then you can make the font even smaller and save tons of paper by putting a bunch of recipes on one page :).

    Just made them! I guess I have a big eye for the size of my cookies bc I doubled the recipe and it only made 22 mini cookies (more like clusters)… oops! What’s the size of your mini cookie scoop? I really enjoyed them, they were delicious. Will take the rest to a function tomorrow. Made them with peanut butter, applesauce and only chocolate chips.

    I love this recipe its so good. I didnt use the freeze dried fruit and used little chopped up pieces of 85% dark Lindt chocolate instead of the chocolate chips (4 squares worth) and didnt bother to cook them I just threw the batter into a mason jar and eat it by the spoonful. Also used applesauce, peanut butter (all natural), and no added sugar for me. next time i might add little pieces of chopped walnut or pecan

    Yum, yum, yum! I made these last night and they are delicous. I didn’t have dried raspberries so I used a combo of dried blueberries and raisins. My boyfriend’s only complaint was that I should have doubled the recipe. He could have eaten every cookie last night.

    Sorry! Thanks for responding so quickly. Well, they didn’t seem to cook. They tasted raw and very peanut buttery. I expected them to have a more cookie like taste and texture but it was more like chunky pudding, if that makes sense. Maybe I didn’t cook it long enough?

      After I wrote my comment, I meant to add, “Maybe you didn’t do anything wrong and these are just not your style, which is perfectly ok too!” As I said at the end, these aren’t supposed to taste like Tollhouse cookies (see the last link for more “desert-type” cookies). But yeah they’re definitely supposed to cook… maybe your oven is less powerful than mine and they needed longer? Oh, and just in case: make sure you preheated the oven too.

    Hey Katie, could you include how many servings a recipe yields? Sometimes it’s hard to judge the size of the desserts from the photos, and thus calculate the proper nutritional values per serving.
    This looks great, though! I’m going home this weekend to surprise my mum before she leaves on holiday, and I think these will be warmly welcomed on the breakfast-in-bed menu.

    Okay, so, question here, hoping it isn’t really stupid – why not use any baking powder/soda in the recipe? I know that these are supposed to be mini, but wouldn’t adding bp/bs allow you to use less dough for each cookie (taking into account that they’ll grow) which would make the recipe yield more cookies?

    Hope that didn’t sound totally dumb. As always, love your website, and these are baking in the oven right now 😉

    I made this recipe with dried cranberries, instead of the raspberries and Better ‘n’ Peanut Butter, instead of nut butter, and they turned out delish 🙂 The batter was a bit runnier, so I just added a bit more oats and the cookies were flat, but they turned out great.     Mmm, Mmmm, Good! I just made these, or, well, something based on your idea anyway. Here’s what I changed to make it really 100% good and healthy (a little extra work and expense, but worth it, to me). I used 1 cup fresh ground raw apple sauce (yep, Norwalk juicer) with no sugar added to moisten the extra dry ingredients I added below. I used almond flour instead of nut-butter, and I added raw unsweetened coconut flakes and 2 Tbsp coconut flour and also a half cup of melted organic extra virgin coconut oil and 1/2 tsp of non-aluminum baking powder, dried cranberries instead of raspberries, 1/8 tsp pure stevia powder and my own homemade midnight extra dark chocolate chunks. No gluten, no GMO, no sugar, NO guilt, just good. This made a full small cookie sheet which I can ration out for 3 days. Thanks for the inspiration!

    I just made these with crunchy peanut butter, applesauce, and dried cranberries. I baked them for close to 20 min at 350 and then let them cool. They still seem “mushy” inside. Is that expected? They taste fabulous, but I’m not sure about the texture. Any thoughts?

    I made these the other day so I could have some snacks on hand for friends that were helping me move. They were great, and despite being healthy they all loved them!my friends have been vary of my cooking as I try to sneak healthy ingredients in given the chance but these went over very well. I quadrupled the recipe (and there were none left). I did have to make some substitutions. I used almond butter, dried cranberries and chopped up sugar free baking chocolate. The cookie dough was a bit sticky so I added almost a 1/2 cup of whole wheat flour and it turned out wonderfully. Thanks for the great recipe!

    Thanks for the amazing recipe!! My boyfriend gave up sugar about a month ago…so of course he’s been craving something sweet. This was perfect–we subbed chocolate chips for carib chips that was got at our local whole foods store. DELICIOUS. We’re planning on making them a new breakfast staple 😀

    i just made these! i subbed dried cranberries (couldn’t find freeze-dried raspberries), and i subbed peanut butter. they came out great! they’re so incredible! way better than any tollhouse cookie.

    i made them gluten free for a few co-workers who are intolerant by using the GF oats.

    I’ve made these twice already, and I LOVE them! You’re right, you don’t even need to add sweetener. I didn’t want to make these without the freeze-dried raspberries, so when I finally found some at Trader Joe’s that didn’t cost a fortune, I ran home to make these. I love how you’re recipes are so easy and small batches. I mixed these in a soup bowl and they were in the oven in less than 10 minutes! YUM!

    Next time I think I will definitely use fruit though. I never thought I would say this, but the chocolate seemed a bit too much for the recipe – maybe because I doubled it. I think it would be amazing with cinnamon and raisins or maybe almonds with the raspberries, yummy – getting hungry thinking about it.

    Hey Katie, I just made these. Printed and literally ran to the kitchen. The whole family loved them including Sugar-Loving Teen (That’s the true barometer of success). We’re allowed to eat these for dessert too right?
    I literally plunked everything in my food processor. So easy! I added a bit of flax and nuts. I had to triple the recipe though, so we wouldn’t fight over them. As always … Love your blog!

      I think that’s the right consistency. As I say in the post, not everyone will like them. Maybe they’re just not your style? Some of my friends didn’t like the texture, but others loved them. Different strokes ;).

I added a bit of sugar, salt, and vanilla. I also used banana instead of applesauce and almond butter instead of cashew.     I followed this recipe exactly and yet somehow I only got 3 regular sized cookies and 1 mini cookie out of this batch. I have the same problem with the sugar cookies in that it’ll only make enough for 5 cookies. I can’t think of a reason why it would do this. Do you have any ideas?

    I made my own applesauce, used chopped fresh raspberries, and omitted the extra sugar and they are so yummy! It made about 10 bigger cookies and 2 cookies are 178 calories. I wish I had some chopped walnuts to add in but I will definitely make these again!

    I just made these with pumpkin since I didn’t have any applesauce. I also added some shredded coconut and pumpkin pie spice. They are super delicious.

    I have another batch in the oven but this time with white chocolate chips and almond extract instead of vanilla. The batter was delicious so I am sure they will turn out just as well!

    I am the new girl! New to your blog, at least, though not GF lifestyle. My oldest son has Type One diabetes, celiac diseas, IBS… and a slew of other diagnoses. I have been on a journey towards whole food lifestyle for a long time, with starts and stops along the way, it’s been about 7 years now. Always gluten free, not always whole food based. Yesterday a trip to the hospital due to intestinal problems (which auto correct wants to make ‘international problems’) has restarted the journey towards holistic cooking without leaving taste behind. After my friends and I had a good (more than virtual) laugh re: GI docs and international complications, one sent me your blog. I have only just begun to peruse and research… so let me get the the REAL question:

    Do you order the specialty flours online? Whole foods is a bit far from where I live (small city near Dallas, but takes a lot of traffic to get there, though Sprouts is not too far… AND less pricey, I’ve found.)

    Thanks for marking the recipes that are GF. We are also doing low dairy to help the gut heal.
    BTW- I love cookie monster, too! Except I wanted to BE Cookie Monster, so I could eat chocolate all day. That or a princess! The ultimate being to live forever as Cookie Princess Extraordinaire… happy, healthy, and Gluten free! I think your blog may be a stepping stone towards such a lifestyle. Good to know my sweet loving boy won’t have to give up desserts!

    My boyfriend and I both loved these! They didn’t last long enough to be breakfast cookies! haha. They taste a bit like macaroons, only there is no coconut, if that makes any sense at all. Delicious! Great job!

    I cannot have any nuts ( allergy and don’t like). I got Trader Joesvcookie butter. So good however would that work in that cookies? Is ther any other suggestion such as honey or pure maple syrup? Of coruse iwill add sugar.

    I made these tonight and I love them! I do want to mention that I clicked over because these were described as having no added sugar, and they’re labeled here as sugar free. I don’t want to be a jerk about this, but it is SO helpful for so many people when ‘special’ foods are described correctly! 🙂 It happens so often – I get really excited about a recipe I see on Pinterest or elsewhere because it’s described as ‘paleo’ or ‘no added sugar’ or something else I might be looking for, but it’s really not – it’s just maybe-possibly-if-you-sub-five-ingredients… I know that there’s not technically a cup of sugar in this, but there are chocolate chips (sugar), dried fruit (most kinds contain sugar), etc. It really, really would be so appreciated by many, I know it. 🙂

    That said, I made these, and they are delicious. I doubled the recipe and I did the almond butter and (very ripe!) banana version, and used unsweetened golden raisins for the fruit. I added about a teaspoon of dry roasted pecans and the same of mini chocolate chips. I felt like they needed a little sweetness, so I added one teaspoon of coconut sugar. I was surprised that that was enough sweetness for a double batch, but they came out perfectly – I’m going to omit the chocolate chips and make these into breakfast bars.

I am doing South Beach Diet and an entire batch falls within my daily target limits, although I am trying to spread a batch over a few days. 🙂 I will definitely be coming back to your blog on a regular basis for South Beach friendly whole grain and low sugar recipes! Love that most of the recipes don’t make a ton so that you feel like you have to eat them all.

    I just made these and they were delicious! Thanks for sharing your recipe. I used peanut butter, and added some cinnamon, I didn’t have any fruit to use but I used chocolate chips and peanut butter chips (sunspire), went with the applesauce and added a lil stevia. Such good flavor and so many ways to tweak them for various tastes, next time I think I will add some apple or carrot shreds, maybe even a lil unsweetened coconut shreds. Kids loved these too!

    I had two things in the kitchen I wanted to use up: fresh picked raspberries and crumbs from the bottom of a bag of shredded wheat cereal. I started with your basic recipe, subbed in white chocolate chunks for the dark chocolate and 1/4 cup fresh raspberries for the freeze-dried. Then I added 1/2 cup of the cereal crumbs. Didn’t add any sugar since there was plenty in the cereal. Came out great!

    Just made these. I used dairy free dark chocolate chips, applesauce and dried cherries. I did add 1 TBSP of sugar. I think they need to be a little more sweet for me. They are not overly sweet. Next time I would use mashed banana and probably 1 TBSP of maple syrup. They will be good for a on the run breakfast or an afternoon sweet craving. Oh, I also used sunflower butter and I did not like the taste this gave it. I would use a nut butter next time. This way though my son can take them to school.

    I just tried this recipe and it is delicious! After promising my 3 year old that we would make some pikelets I discovered that we had no eggs. In order to avoid massive disappointment from my little one, I quickly scoured your recipes and knew I could buy my little man over with the promise of choc chip cookies instead. I had to make some substitutions as I was still missing a few of these key ingredients but the result was a success. We used peanut butter instead of the cashew butter and banana instead of the applesauce. I only had one smallish banana which came to about 1/3 cup when mashed but the bikkies still hold together well. We didn’t have any dried fruit or raspberries so these were omitted (it is really time to go shopping!) I also forgot to add the salt as I distracted by my 10 month old who wanted a piece of the baking action. Thanks for a great recipe and for your substitution tips… They saved the day. One very satisfied 3 year old!

    This was just the sort of thing I was looking for! I just made these with mashed banana and peanut butter (as I didn’t have any fancier nut-butters on hand), and subbed the freeze-dried raspberries with freeze-dried strawberries. And OH. MY. GOODNESS. These are just so tasty and comforting. The berries give them a unique nip of tartness, and they are incredibly satisfying without feeling too heavy. Love, love, love. I will be coming back to this recipe again for sure!

    Is the cashew nut butter to replace butter? Sigh. Sometimes “healthy” alternatives drive me nuts – I can eat butter, but can’t tolerate any nuts or seeds. My children would tickled at breakfast cookies.

    I just made this for breakfast the other day, and it was delicious! However, I’m on a “baking ban” right now, meaning that my mother would not be very happy if she saw me making cookies, and I had only just finished combining all of the ingredients when she woke up (I’m always up before her) and came into the kitchen. Thus, I got self-conscious and decided not to bake the cookie dough. The result? Delicious, healthy, breakfast-appropriate cookie dough. ALL FOR ME mwahahahaha

    Made these while studying for finals, I added some cinnamon, subbed almond butter, and a few pitted and chopped dates. Perfect, a lil sweet, chewy, and reminiscent of my mom’s homemade banana bread. 10/10 would make again.
