Strawberry Shortcake Pancakes

Strawberry Shortcake Pancakes – Sweet homemade & fluffy pancakes, bursting with fresh strawberries in every bite!


Your guests’ tastebuds will think they’ve died and gone to a tropical paradise.


You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.


Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.

You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!


I linked my favorite vegan-friendly whipped cream recipe below in the recipe, but feel free to use coconut whipped cream or even your favorite store-bought whipped cream if you prefer.

And I didn’t try to shape the one above into a heart; it just happened to fall that way!

  • 1/2 cup chopped strawberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats, gf if desired
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or pinch stevia
  • 1/3 cup milk of choice
  • 1 tbsp coconut oil (Omit only if you like the taste of fat-free pancakes)


Strawberry Shortcake Pancakes: Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on a greased pan, on low-medium, flipping each pancake once. You can boil some more strawberries (with a bit of sugar if you wish) and smash them to make a compote.

Or top with fresh berries and Homemade Healthy Whipped Cream.

    I am a self-proclaimed pancake queen. I have done every successful and failed GF experiment I can think of, and yet I always seem to think of more :). I with eat them like bread a a sandwich, top them with peanut butter and chocolate chips, fruit, pour almond milk on them, or eat them with a soup! They are so easy to personalize, and they don’t require an oven 😉

      We are huge pancake lovers in my house, in addition, we have included buttermilk pancakes in our women’s dieting group and have achieved excellent weight loss. The secret is in the buttermilk.

    I love pancakes! When I was little, special occasions like birthdays and holidays always called for my mom’s amazing blueberry pancakes for breakfast. Now I have pancakes way more often than only special occasions because I just love them that much! They’re probably my second favorite breakfast, only a little bit behind cold oats!

I know that I eat quite a bit (way more than my friends), but I know how active I am and that I need to eat a lot.     Oh and if you do make the brownies with pumpkin (or even without), you should try this! Once you spread the batter in the pan, sprinkle chocolate chips on top. After they come out, spread them around. Once they cool, they have a delicious crunchy top! You could even sprinkle some sprinkles on them before the chocolate hardens (gosh, I really want to try that now!! 🙂 )!

    I love pancakes, but I very rarely make them! I haven’t made them at all since sticking to a GF diet, even though I have a bag of Bob’s GF pancake mix in my cupboard! Fail. Usually I would prefer either bananas or blueberries in my pancakes, but these strawberry pancakes are making me rethink those preferences! I think it’s the perfectly piled stack that makes them look so damn amazing.

    Wow, these look awesome! Unfortunately, the strawberries at my primary grocery store seem to have gone AWOL since summer began (??) Maybe I could use biwa instead (called “Lorquat” in English, apparently). With yuzu zest. It’ll be a Japanese-flavored bonanza.

    I love how they are thick and not some little flimsy pancake. I am always so impressed with your pancake cooking skills b/c I can never seem to get the batter consistency down pat or the cooking. They either burn on the outside and are raw in the middle or they are too thin and dont hold up in the flipping process.

    After my move and when I get my kitchen functional again, I must try these!

    How delicious! I had some blueberry muffin pancakes this weekend, I love how quick and simple they are! My boyfriend hates pancakes but I was able to whip myself up a batch in the time it took him to toast a bagel and pour cereal. Plus single-serve means no waste!! Love it.

    I made these today and they were SO yum! I actually think adding that 1/8th of a tsp of salt makes a difference because the had a really nice flavour! I topped mine with some fresh thinly sliced pear and a sprinkle of cinnamon. Thanks for the recipe!

    I made theese today. My sister was home so I made som for her to, first I was a little scared. I’ve never made on of your pancakes. I’ve never made 100% whole wheat pancakes. And I’ve never made pancakes without eggs!

    But I love american pancakes (more than the crepes we eat in Sweden), I love 100% whole wheat Not Guilty chip cookies so I decided to try.

    I doubled the recipe and it yielded 7 2tbsp sized pancakes. I was first worried that it would’nt fill me or my sister up. Like 3-4 pancakes each. But they were super-fat and both of us were really full after the meal.

    I made theese with ww flour, I did not measure the strawberries I just put in some, dairy milk and no oil (I never put it in pancakes). Then I served them with Turkisk Yoghurt (it’s like Greek), strawberries and sirap. YUM!

    I’m going to try the strawberry shortcake muffins single serving later today! 🙂

    Second, I had a question… I am not vegan, and lots of your recipes (including this one) says to use non-dairy milk, almond milk or soy milk, but I don’t have any of those, and can’t spend the money buying them when I have regular milk in the frige… ANYWAY, what I am trying to say is, do you know if your recipes would still work with regular milk?
    Well, keep up the good work!! You are a GENIOUS!!! I wish you could just come and live with me! I would be in HEAVEN!!!!

    Thank you sooo much!!! I’ve actually tried this recipe before and though I love it (it tastes like really dark chocolate!!!) it never EVER works like yours!! After I make it, it has the texture of water, and after stirring it forever, I tried to refrigerate it, but it turns into a solid bar!! But now I have a amazing dark chocolate bar!!! lol
    I really can’t say enough how wonderful and amazing you are!! Me and my mom (and sometimes my brother) have been trying SOO many recipes and LOVE them!!! It is soo fun and a new way to eat things that are normally so boring!! (oatmeal) Thank you sooo much!!!

    I just discovered your blog over the weekend and have been paralyzed with indecision as to which recipes to try first, they all look so delish! So I started with a smoothie and yesterday tried these pancakes (breakfast is my favorite meal) and loved them! I used the cheesecake sauce sweetened with a little agave and some maple syrup (and doubled the recipe after tasting) and my daughter declared these “5 out of 5”. I even made it gluten free and no one missed the wheat. I used the all purpose flour mix from gluten free goddess: 2 parts sorghum: 2 parts potato starch: 1 part almond flour: little xanthum gum.

    omg just had these for breakfast and let me tell you firsthand…they were delicious! i multiplied the recipe by three so that the rest of my family could have some too..they couldn’t believe that this didn’t have any egg or butter in them! they tasted sooo good<3 i was a little worried at first because the batter wasnt as liquidy as pancake batter usually is.. they don't taste like your normal brunch place pancakes but they still taste amazing! it's a small price to pay for such a delicicious but low fat pancake~

    i made mine with whole wheat flour and i had to stop myself after three hehe 😉 i probably could have eaten the whole batch! i had a little maple syrup on the side and yummm..i can't wait to make them again!

    My only problem (if, you can even call it that) is that I always have problems with your pancakes 🙁 I don’t know what I’m possibly doing wrong, but mine always turn out so eensyweensy compared to the pictures of yours.     You rocked my taste bud’s with the blueberry pancakes with cheesecake sauce. My husband insists that it should be called vanilla ice cream sauce. I am going to try the strawberry one’s by myself. You know, just in case they are too good to share ; ) I had to go buy coconut oil just so I could make these pancakes. I spent, easily, 30 minutes searching threw the grocery store to find it! If these pancakes taste as good as I think they will, it will totally be worth it.
    I do have a question/favor to ask. Is there any way you can make a “printer friendly” option to your recipe’s? I am a little “special” in the kitchen. If the recipe is not in front of me, I will some how mess it up. If I write it down, I will get all dyslexic with measurements. Believe me when I say, one CUP is not the same as one Tablespoon!     These were absolutely amazing — and I’m not a vegan. (Or a vegetarian. I love my cheese. And meat.) My boys have been begging me to have “breakfast for dinner” so I tried these tonight with the cheesecake sauce, and they were a HUGE hit. My 7-year-old asked me if I could get up early tomorrow to make them again for breakfast, and my 4-year-old and 1-year-old both loved them too. I can’t wait to try the blueberry ones!!     These were amazing! The first time I made the recipe, they didn’t even make it to the frying pan because the batter was so good. Once I actually cooked them, I melted a banana on top which was really yummy!

    Katie (and everyone else) — this recipe works as waffles, too!!! 😀 I just tried it in my waffle maker, and I got three delicious golden waffles out of it. The second batch came out a little ugly since it wasn’t quite done and ripped apart when I opened the lid, but I’m pretty sure if I’d have just ignored the little green light and waited a bit longer, it would have been just as perfect as the first set. I really need to make some vanilla ice cream to go over these as a sundae, but I couldn’t resist eating them as soon as they came out, so I’ll have to try it again another day. (Note: I used the optional oil so I’m not sure if they’d come out the same if that’s omitted.)

    These look so good!! I am on a sugar-free, starch-free diet but I could make these if I used almond flour instead of the other flours suggested… you think that would work? I have tried an almond flour pancake before and it was not so good, but I am willing to try again!

    Dear Katie.

    Thank you for this recipe. But I have a problem. My pancakes doesn’t seem like the ones in the picture, and I had to put eggs in the recipe, because they’d stuck to the pan. I would really love those fluffy pancakes, but I must be very bad in making these. I use spelt flour, rolled oats and coconut oil in the recipe. I have tried psyllium seeds and even “No Egg”, but still they’re stuck. Normally everything turns well, but this one… *crying for help*.

    Everyone else seems to get them perfect…

    I was very excited after sampling this batter (most pancake batter is bland/dull)!

    I added pecans, but didnt have/use vanilla extract and tried it at a women’s get-together…they LOVED it! Also: Used some coconut oil in the fry pan and sprinkled chocolate chips atop and used different cream cheese whipped cream…just WOW!

    I never write comments, but considering how good these were I just had to.

    This is the second recipe I’ve tried from your site and I’m blown away. (The first was the Reeses Peanut Butter Cup Baked Oatmeal, but, to be honest, it was bit too chocolatey for me. However I did not want to leave that as my first comment as your blog is title “chocolate-covered Katie”)

    I’m not vegan, vegetarian nor need to lose weight, just a ballerina with a serious sweet tooth who can’t really eat normal sweets becuase it causes weight gain. These recipes are prefect for that. They’re healthy and yet have enough sweetness to satisfy me.

    I made these today and totally forgot the sugar, didn’t even think use the oil and added no toppings, but they didn’t lack any type of sweetness at all [I did throw a small handful of chocolate chips inspired by your opening comments. If figured if the only think stopping them from being the best was the lack of chocolate, I could fix that]. They tasted like strawberry crepes! (And I love love love crepes). Plus it completely filled me up. I had to force the last two bites down.

    I will be calling these “Strawberry Crepe Pancakes” from now on, since I’ve never had shortcake. I hope you don’t mind. I can’t wait to try more pancakes (And this is from someone who thought they hated pancakes a day ago)

    (p.s. my last one ended up looking like a heart too ( I took it on my iphone and didn’t touch it up, so it kind of, blah, lol)

        It definitely works; I tried this a while back because I love waffles! You may need to cook them longer than usual because when the indicator light came on they definitely weren’t done yet (it seemed like the extra moisture in the strawberries kept it a bit gooey), but be patient and they should turn out! 🙂

    I just made these strawberry shortcake pancakes today. Wow! They were surprisingly delicious for something so healthy. Although I did have to add more flour because the batter was too liquidy and add more sugar because they weren’t sweet enough with just the stevia. Thank u Katie!

    Btw was this recipe made for one serving or two?

    Thank you so much for this amazing recipe! I am a huge pancake fan and have always strived to create healthier versions of the popular breakfast food. Nothing beats fresh strawberries, pancakes (in shortcake form) and a yummy filling! I followed the recipe except added some vanilla protein powder/nonfat cottage cheese for a bit more texture. I made the filling from nonfat Chobani yogurt, chia seeds, vanilla creme stevia and a splash of unsweetened almond milk. I was in heaven!!! This is my new favorite, and again, thank you :)!

    Hi Katie, I made these for Valentine’s breakfast for little guy who’s almost 2. He is SUCH a picky eater, and while he LOVES strawberries, I do like for him to eat more than just the actual berries. Enter your pancakes. He ate a few bites and then snacked on the rest all morning yesterday, and he’s working through a new batch today. And they’re healthy, so I can feel good about giving them to him (or a few bites to myself!) Thanks!

    Hi Katie! I love your site! I especially love your simple pancake recipes. I was going to share that for the recipes that call for 1/3 C of flour (like this one), I usually cut that in half and fill the rest of the measuring cup with toasted wheat germ. It’s lighter than flour and I find it gives the pancakes that perfect golden-brown color when you cook them! Also, I made my ‘cheesecake sauce’ out of plain greek yogurt with a little sprinkling of cheesecake jello pudding powder! It was delicious! Just thought I’d share 🙂 Thank you!

    I just discovered your site 3 days ago. My daughter and I were in the mood for something “sweet” tonight and I came across these pancakes. I had some frozen strawberries and I said, “what the heck, lets give them a try”. I followed the recipe using Bob’s gf flour, unsweetened vanilla almond milk and stevia. (I also made sure to add the coconut oil) I doubled the recipe and we ended up with 3 good sized pancakes each and I topped them with sugar free maple syrup! WOW! These are the BEST sugar free, dairy free, gluten free pancakes I have ever tasted. They will forever be a part of my breakfast/dessert rotation. I can’t wait to try more of your recipes.

    Hi Katie! I am not vegan, but I am all for finding tasty, healthier alternatives whenever possible. I have made many of your recipes and have had fabulous results with all! I have made the Strawberry Shortcake Pancakes twice now, served both times with just some local maple syrup. The first time, I made the recipe exactly as written. The second time, I had a bit of cooked quinoa left over, so I replaced the oats with about 1/4 C quinoa. They, too, were really good and gave the pancakes the same “bite” as the oats and a slightly different texture. Just thought I’d share!

    These had a great flavor but has anyone had a problem getting them to “set” and then flip? Mine were gobbled up quickly by my family, but they cooked very slowly. otherwise they were just perfect!

    Also, any suggestions on making them Paleo? I though of subbing out the flour with almond flour. What’s a good sub for rolled oats? perhaps some flax meal or chia seeds? Thanks Katie and fellow bloggers!

I love how your recipes are so flexible and don’t require much processed vegan replacement products like soy margarine- like this one uses coconut oil! natural and delicious- my husband is not a vegan and he always is reluctant to try a vegan recipe but then we make one of yours and he loves them. He said these were better than regular strawberry short cake.

    Pancakes are one of my favorite breakfast foods (when I’m splurging a little anyway) and I definitely enjoy them but I always feel guilty about some of the ingredients. With these ingredients there’s no reason to have to splurge. You can get the great taste and also be healthy at the same time.

    Ok so for Valentine’s Day this year I used two of your recipes. The day before I picked strawberries and made your peanut butter dipped strawberries. Then the morning of I used the leftover strawberries and PB dip with this recipe. I used the extra PB dip to top the pancakes along with a bit of whipped cream and all of it turned out amazing.     These were AMAZING!! I’m a terrible cook and mess up most recipes, but these turned out great! Fantastic consistency and so tasty 🙂 I used brown rice flour and it didn’t affect the recipe at all. I topped my pancakes with blueberry preserves and maple syrup. Can’t wait to make these again!

    Honestly, I didn’t expect these to be that great since the recipe doesn’t call for an egg or anything. I made them this morning and holy guacamole, I was impressed. These are as good as my dad’s buttermilk pancakes but so much healthier! I will be making these again and possibly modifying the recipe to include chocolate chips 🙂
