Strawberry Shortcake Pancakes

Strawberry Shortcake Pancakes – Sweet homemade & fluffy pancakes, bursting with fresh strawberries in every bite!

Your guests’ tastebuds will think they’ve died and gone to a tropical paradise.

You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.

You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

I linked my favorite vegan-friendly whipped cream recipe below in the recipe, but feel free to use coconut whipped cream or even your favorite store-bought whipped cream if you prefer.

Their fatness rivals my Blueberry Pie Pancakes.

And I didn’t try to shape the one above into a heart; it just happened to fall that way!

I am a self-proclaimed pancake queen. I have done every successful and failed GF experiment I can think of, and yet I always seem to think of more :). I with eat them like bread a a sandwich, top them with peanut butter and chocolate chips, fruit, pour almond milk on them, or eat them with a soup! They are so easy to personalize, and they don’t require an oven 😉

    • momwithkids says

We are huge pancake lovers in my house, in addition, we have included buttermilk pancakes in our women’s dieting group and have achieved excellent weight loss. The secret is in the buttermilk.

  2. teabag says

honestly, i don’t really like pancakes! i know – sacrilage! i prefer my carbs in the form of slow-digesting oats (super thick & plain)! 🙂 but yours are gorgeous!

  3. Julie H. of Spinach and Sprinkles says

I love pancakes, these look like they would ROCK MY WORLD!
….Crud, now I’m going to have to add these to the wish list from your site, the order of making things… The bad thing about this wish list of mine, they are all so good, I make one and get hung up on it….. Great work! I can never decide what of your I want to try next!

  4. Charissa says

Looks amazing girlie! You know how much I looooove pancakes, more than any other flipping food….gaah, can you come over and visit me, for like a month? 🙂

  5. Lauren says

I think I just might have to whip those up tomorrow morning! They look delicious!

I love pancakes! When I was little, special occasions like birthdays and holidays always called for my mom’s amazing blueberry pancakes for breakfast. Now I have pancakes way more often than only special occasions because I just love them that much! They’re probably my second favorite breakfast, only a little bit behind cold oats!

  6. Liz @ Tip Top Shape says

I LOVE these!! Saw them on fb first and then hightailed it over here to read the recipe! It just hit me how easy all of these healthy pancakes are to make. I always figured there would be strange ingredients, but there really aren’t! Now I need to go check out the cookie dough ones!

  7. Lilly says

holy yummm! I just made these and I basically die and went to heaven! I have to admit, I doubled the recipe – I am one hungry girl 🙂 and might have consumed a little coconut butter along with. SO GOOD, thanks Katie!

  8. Sarena (The Non Dairy Queen) says

Strawberry shortcakes must be in the air…I made a strawberry trifle this weekend that was to die for with angel food cake and dairy free pastry cream! YUM! Your pancakes look amazing! I love thick doughy pancakes. Smother them in any kind of luscious topping and I’m sold!

  9. Alexandra (Veggin' Out in the Kitchen) says

Um Katie, I have mentioned I love you right? Only about 100 times? Well, make the 101 😉 I already had breakfast, but I’m dying for these pancakes!! Solution: pancakes for lunch 😀

And comment for your last post: I eat three pretty large meals a day and sometimes an afternoon snack. I know that I eat quite a bit (way more than my friends), but I know how active I am and that I need to eat a lot. And I feel great about it because I know that what I’m putting into my body is good for it! 🙂 Awesome post!

    <3 <3

Oh and if you do make the brownies with pumpkin (or even without), you should try this! Once you spread the batter in the pan, sprinkle chocolate chips on top. After they come out, spread them around. Once they cool, they have a delicious crunchy top! You could even sprinkle some sprinkles on them before the chocolate hardens (gosh, I really want to try that now!! 🙂 )!

  10. Jen says

I love pancakes, but I very rarely make them! I haven’t made them at all since sticking to a GF diet, even though I have a bag of Bob’s GF pancake mix in my cupboard! Fail. Usually I would prefer either bananas or blueberries in my pancakes, but these strawberry pancakes are making me rethink those preferences! I think it’s the perfectly piled stack that makes them look so damn amazing.

  11. Nicky says

These sound SOO good!! I love all of your pancake recipes Katie – and they’re so easy to change to different flavors! 🙂 Thankyouu for yet another one <3

  12. Ragnhild says

These photos are just stunning Katie! They look so so good <3

Haha, love the question 😀 How much do you love pancakes? 😀
I love pancakes because I know I like them, and because my friends+brothers dies of happiness when I make it for them 🙂 I dont have the best relationship with them though, but Im working on it. Im actually planning on making oat pancakes (without baking powder.. haha- silly fear food ) 😀

  13. Holly @ The Runny Egg says

I love pancakes — blueberry is my favorite but nothing beats regular old buttermilk pancakes covered in maple syrup.

  14. Stephanie @ StephSnacks says

These look amazing! I have to hop on this… just made volumous chocolate ice cream the other day, definitely satisfying.

  15. Dawn @ Blonde on a Mission says

These look so summery & delicious! And I love the ‘love pancake’! 😀 I have an on/off relationship with pancakes. For a while, I used to make them every sunday with dark chocolate chips in them & topped with banana. This recipe might rev up my love for them again!

  16. Lauren B. says

Hi Katie! New reader here… I am loving reading your recipes and trying different ones out. I tried your banana pancakes on Saturday, and OMGoodness!! They were so yummy, so dense, so moist- I was in pancake heaven! Thanks!

  17. Aja says

    Yum!
I tried making the cookie dough ones a while back but they always hated me and would stick even if the pan was non-sticked or would fall apart and refuse to flip.

  18. Elise says

    Hello!
How funny, I’m halfway through writing a blog post on pancakes too, but mine are blackcurrant. Great minds and all that! Seriously though these look really good. And luckily I have some not-to-great-to-eat-raw strawberries in the fridge. Yum!

  19. Emma (Sweet Tooth Runner) says

Now I seriously can’t WAIT for Pancake Sunday!! Aaah noo wait I’ll be on holiday so I won’t be able to have one for WEEKS!! How will I live?! I guess just the anticipation of your strawberry shortcake pancakes will tide me over 🙂

  20. Heather says

I love you, I love you, I FRICKIN LOVE YOU! I thought about making a strawberry version after trying your blueberry pie pancakes (which were insanely delicious)!

How much do I love pancakes? Must you really ask me that question? 😉

  21. Chocolate Covered Mitchell says

Great post as always Katie!! Long time reader, first time commenter, just wanted to let you and all your fans know that I’ve started a blog as well called Chocolate Covered Mitchell!

It’s a lot like your blog, but more chocolatey and maybe even a bit naughtier! Ha! Would love to know what you think! Keep up the great posts!

  22. Errign says

I have been eating pancakes every morning for breakfast for days…another awesome recipe… think I will try with cherries since I have them on hand 🙂

  23. Nathalie says

How much do I love pancakes? Let me count the ways…..

Wow, these look awesome! Unfortunately, the strawberries at my primary grocery store seem to have gone AWOL since summer began (??) Maybe I could use biwa instead (called “Lorquat” in English, apparently). With yuzu zest. It’ll be a Japanese-flavored bonanza.

OH. I bought an ice cream maker yesterday. Just so I could make your awesome ice creams (or try to). My blender is weaksauce and I really wanted to see if they could work in an ice cream maker instead =D. I’ll let you know how they turn out!

  24. Lauren says

love this recipe dear!! i’ve been trying to make pancakes lately for our weekend brunches (my fiance just LOVES waffles..even though its basically the same..dont ask lol i dont even understand!) but i think these will definitely be happening this weekend since i’ll be with my girlfriends instead! 🙂

  25. Michaela says

    I. WANT.THESE.PANCAKES.RIGHT.NOW!!!!!!!!!!! they look absolutely delicious!! I love pancakes, I love strawberries, and I am hungry, so please, pretty please, bring me some strawberry pancakes? 😉
I absolutely adore pancakes, bc you can add whatever ingredients you have on hand and they are super quick to cook. I love them!! Loooooooooooooooove them! Love that THAAAAAAAAAAAAAAAAAAAT much!!

  26. katie says

I must make these! I love how thick the pancakes are! look amazing!!! I might do a kiwi and strawberry pancake! love ya girl! You are amazing, always coming up with out of this world recipes!!

  27. Emilia says

I’m usually not a big pancake fan, I find them kind of boring, but I think this could be the recipe that changes that for me! I love strawberries…will definitely be making this soon

  28. Kate @ NaturaStride says

Those look so thick and filling! I made homemade pancakes over the weekend and was pleasantly surprised how well they came out – after being dependent on pancake batter my whole life! Definitely need to try these and incorporate oats. Thanks!

  29. Averie @ Love Veggies and Yoga says

    Katie these look phenomenal!

Both the recipe AND your photography!

I love how they are thick and not some little flimsy pancake. I am always so impressed with your pancake cooking skills b/c I can never seem to get the batter consistency down pat or the cooking. They either burn on the outside and are raw in the middle or they are too thin and dont hold up in the flipping process.

After my move and when I get my kitchen functional again, I must try these!

  30. Aine @ Something to Chew Over says

They look so pretty Katie! Can’t wait to try them 🙂

I like chocolate chip pancakes best! Or maybe blueberries. Or just plain. It’s all good! 😉

  31. Kaitlyn@TheTieDyeFIles says

How delicious! I had some blueberry muffin pancakes this weekend, I love how quick and simple they are! My boyfriend hates pancakes but I was able to whip myself up a batch in the time it took him to toast a bagel and pour cereal. Plus single-serve means no waste!! Love it.

  32. Alex@Spoonful of Sugar Free says

LOVE pancakes……I’m even making some for dinner tonight! Know what? We should have a “pancake day” where you make pancakes for breakfast lunch and dinner….or better yet-a pancake week where you eat a different flavored pancake for every meal….maybe I’ve gone a bit overboard….

  33. Tara says

eh, I’m not a huge fan of pancakes, but if the craving strikes they can’t be beat! I’ve never tried strawberries in my pancakes! I’ve had them as a topping, but I think they would taste even better cooked right in. or maybe with banana too for strawberry banana pancakes! Oh that would be fabulous!

  34. kaila @ healthy helper! says

OMG these look so thick and doughy! And I have been craving some strawberry shortcake like a mad woman! Must make these next time I am wanting some pancakes…..which is LIKE NOW!

  35. Emily@RunningPerspective says

these are the cutest things ever! strawberry shortcake is my fav…and in pancakes…um could there be a better combo??!

  36. BroccoliHut says

I’m a huge fan of strawberry + coconut, so I might make these with a little drizzle of coconut butter:)

  37. Jenny$1983 says

Today I ate the Hot Fudge Oatmeal for breakfast, ate these for tea, I’m about to eat a Mini Chocolate Chip Cookie Dough Muffin, and I’ve just made another attempt at the Voluminous Oatmeal trick (fingers crossed! 😀 ) for either your Holiday Twist Oatmeal or the Raspberry Truffle one for breakfast tomorrow; I’m not sure what I used to eat before I found your blog 😉

These pancakes are ridiculicious = ridiculously delicious: I’ve had to come up with a new neologism, as I thought your Blueberry Pie Pancakes were out of this world, but it turns out that these are even better and “yumlicious” just won’t do any more! Yes, I am quite, quite insane. Are you scared yet? 🙂

  38. Lorin says

I just had this for breakfast and it was really good! I topped the pancakes with some cottage cheese and more strawberries. One of the pancakes, I put on some of the gooey brownie (that I made last night from your brownie recipe) and it was awesome!

  39. Hamish says

These actually look amazing. So amazing, I think I might go and have a go at them now, I’ll let you know how they turn out!

(Oh and hi, I’m Hamish, I started reading your blog pretty recently, first comment :D)

  40. Jess says

I made these today and they were SO yum! I actually think adding that 1/8th of a tsp of salt makes a difference because the had a really nice flavour! I topped mine with some fresh thinly sliced pear and a sprinkle of cinnamon. Thanks for the recipe!

  41. Marianne says

Don’t hate me…I’m so not a pancake person. Waffles are okay. But French toast is my true breakfast love…when I have time for what I would deem a fancy breakfast. Mmmm, French toast. But your pancakes do look delicious – if you cooked me some, I’d definitely enjoy them.

  42. Annie says

Hi! I just wanted to let you know that I LOVE THIS RECIPE. Seriously, I wake up in the morning craving these pancakes; they’re such a healthy and delicious alternative to the regular white flour/butter ones. I made them with blueberries this morning and they were perfect. Thanks so much for sharing! 🙂

  43. Susan says

I woke up this morning, looked in my fridge, saw strawberries that were about to go bad, and thought of this post on your blog. I just made them and doubled the recipe cause I wanted leftovers, but these are so amazing there might not be any leftovers!! WOW!! Thank you for making my day!!

  44. Anonymous says

I would just like to say I made these this morning and they tasted so yummy! I added chocolate chips to the mixture (because you can never have enough chocolate 😉 ) and I ate mine with honey; I agree possibly THE best pancakes ever. I’m definitely making them again! Probably tomorrow morning! 😀

  45. M says

I made theese today. My sister was home so I made som for her to, first I was a little scared. I’ve never made on of your pancakes. I’ve never made 100% whole wheat pancakes. And I’ve never made pancakes without eggs!

But I love american pancakes (more than the crepes we eat in Sweden), I love 100% whole wheat Not Guilty chip cookies so I decided to try.

I doubled the recipe and it yielded 7 2tbsp sized pancakes. I was first worried that it would’nt fill me or my sister up. Like 3-4 pancakes each. But they were super-fat and both of us were really full after the meal.

I made theese with ww flour, I did not measure the strawberries I just put in some, dairy milk and no oil (I never put it in pancakes). Then I served them with Turkisk Yoghurt (it’s like Greek), strawberries and sirap. YUM!

I’m going to try the strawberry shortcake muffins single serving later today! 🙂

  46. Maegan says

It was “breakfast for dinner” night at our house! I just made these using whole wheat flour and fresh cherries instead of strawberries!! I also used almond extract as I thought it would be nice with the cherry. They were so delicious!! Thanks Katie!!! I love your blog SO much!!!

  47. Monica says

Hi Katie!! First, I LOVE your website!! I just found it a few days ago and now I am ADDICTED!! Seriously!! It is SOO great and I am going crazy (in a good way…) trying all your recipes!!
Second, I had a question… I am not vegan, and lots of your recipes (including this one) says to use non-dairy milk, almond milk or soy milk, but I don’t have any of those, and can’t spend the money buying them when I have regular milk in the frige… ANYWAY, what I am trying to say is, do you know if your recipes would still work with regular milk?
Well, keep up the good work!! You are a GENIOUS!!! I wish you could just come and live with me! I would be in HEAVEN!!!!
    Monica

  48. Monica says

Wonderful!! Thanks so much!!! I also had a quick question… I see lots of your recipes have an AMAZING looking chocolate sauce on top and was wondering if you had a recipe for that? It looks SOOO GOOD!!!! In fact, my mom was begging me to find it so we could use it!! lol

  49. Monica says

Thank you sooo much!!! I’ve actually tried this recipe before and though I love it (it tastes like really dark chocolate!!!) it never EVER works like yours!! After I make it, it has the texture of water, and after stirring it forever, I tried to refrigerate it, but it turns into a solid bar!! But now I have a amazing dark chocolate bar!!! lol
I really can’t say enough how wonderful and amazing you are!! Me and my mom (and sometimes my brother) have been trying SOO many recipes and LOVE them!!! It is soo fun and a new way to eat things that are normally so boring!! (oatmeal) Thank you sooo much!!!

  50. Monica says

That probably is it. You are so smart!! Coconut oil is soo tempermental!! lol Anyway, it still tastes GREAT!! I am TOTALY addicted!!!
(oh, btw, you were saying how you are a chatter box and really talkitive, SO AM I!!! Oh my gosh, I can’t shut up!!! I am known among my friends as “the girl who never stops talking” lol!!! =D I have only met one person in my life who talked more then me!!! So, it’s nice to know that other people talk a lot too!!! Because almost all of my friends are quitish!! Maybe it is becuase I am talking so much they can’t get a word in edge wise, but still…… LOL)

    • Chocolate-Covered Katie says

Hahaha it probably IS because there isn’t enough room for them to talk with you around ;).

My sister had a very talkative friend with a VERY quiet brother… my mom never could figure out how they came from the same family, but I said it made perfect sense: if he had been talkative too, can you imagine their house? Or their poor parents?!

  51. Marissa says

I just made these and they are soooooooo delicious!! These and your blueberry pie pancakes are awesome!! Definitely the best pancakes I’ve ever had!! Now, I’ve noticed that there’s a section missing from your recipes…how about waffles???? Girl, you’ve gotta make some of pancakes’ bff’s! I can only imagine how delish chocolate covered waffles would be!! Thanks for all of your wonderful recipes!!!

  52. Ann says

I just discovered your blog over the weekend and have been paralyzed with indecision as to which recipes to try first, they all look so delish! So I started with a smoothie and yesterday tried these pancakes (breakfast is my favorite meal) and loved them! I used the cheesecake sauce sweetened with a little agave and some maple syrup (and doubled the recipe after tasting) and my daughter declared these “5 out of 5”. I even made it gluten free and no one missed the wheat. I used the all purpose flour mix from gluten free goddess: 2 parts sorghum: 2 parts potato starch: 1 part almond flour: little xanthum gum.
Thanks for sharing your delicious ideas!

    • Chocolate-Covered Katie says

Aww Ann, that makes me SO happy!! And thanks for leaving the gluten-free suggestion. I try to provide gf options for my recipes as often as possible, but I admit I need a LOT more practice when it comes to knowing about gf baking!

  53. Clare says

Hey Katie! I’m currently living in Finland on an exchange year, and i’m always looking for recipes that will help keep off the usual exchange-student pounds….your website is awesome for those! these pancakes were incredible and my host family was amazed. thank you so much 🙂

  54. Anonymous says

Can you put normal quaker oats in this recipe instead of rolled? I don’t have rolled oats and I’m dying to make these!!

  55. Lauren says

My tummy is a very, very happy tummy, Katie! I just polished off my plate of these beauties (topped with a few dark chocolate chips, of course)! I left out the oil and didn’t miss a thing. They were just perfect as is, and so filling. Absolutely perfect for my pancake Sunday! I even added a little cinnamon (I just can’t stop adding it to things lately).

  56. Trieste says

I’m sure you’ve thought of/tried this, but I make these as chocolate-covered-strawberry pancakes by subbing cocoa for the rolled oats. Light, fluffy, sweet, and SO happifying!

  57. Christina Oh says

omg just had these for breakfast and let me tell you firsthand…they were delicious! i multiplied the recipe by three so that the rest of my family could have some too..they couldn’t believe that this didn’t have any egg or butter in them! they tasted sooo good<3 i was a little worried at first because the batter wasnt as liquidy as pancake batter usually is.. they don't taste like your normal brunch place pancakes but they still taste amazing! it's a small price to pay for such a delicicious but low fat pancake~

i made mine with whole wheat flour and i had to stop myself after three hehe 😉 i probably could have eaten the whole batch! i had a little maple syrup on the side and yummm..i can't wait to make them again!

  58. Kristyn says

I’m planning on making these for valentines day breakfast! …..I’m actually between this and your apple pie pancakes…Help me decide? Also- What is the whipped topping in the photos? If I made these I would want to have some sort of whipped topping for sure and regular whipped cream is not an option (that stuff is so gross to me)….loving your recipes!

  59. Kate J says

So i just made these and they are DELICIOUS!!! I have to say I haven’t ever baked with coconut oil before and mine came in solid form, am I supposed to warm it up first to make it liquid or leave it a solid?

  60. Nikki A. says

THESE ARE A GIFT FROM GOD! you are seriously amazing. i make one of your recipes everyday and have never been disappointed. thank you for being awesome!!!!

This may be a silly question, but could I substitute regular dairy milk instead of mom dairy milk in your recipes? Love your blog, I could spend hours on it!! Hope you get a cookbook soon! (:

  63. Paula @ All Things Moms says

Just the fact that you would even think these might be as good as chocolate chip cookied dough pancakes is enough to convince me- I’m adding them to my breakfast menu next week! For the record I will also be adding that Hot Fudge Oatmeal- Yummy 🙂 Thanks for sharing!!

  64. Caity says

I absolutely love love LOVE your recipes!! So perfect for me in the am when I want something indulgent, yet low in calories and quick.. YET- SOOO YUMMY!
My only problem (if, you can even call it that) is that I always have problems with your pancakes 🙁 I don’t know what I’m possibly doing wrong, but mine always turn out so eensyweensy compared to the pictures of yours. I’m planning on making the strawberry shortcake pancakes for my boyfriend’s birthday brekky, and I fear I will have the same problem, and want to double the recipe! Defeating the whole purpose of the low calorie end I enjoy so much 🙁 what did you use to measure these pancakes!? In specific, as in cups or!?

  65. Melissa says

I just tried this. It’s delicious! Thanks! So far, I’ve tried three of your recipes and loved them all!

  66. Katie says

I made these for Easter breakfast this morning, and I omitted the strawberries for half the recipe (added them in after half the batch was cooked so that there would be options for the family). Even the ones without strawberries were tasty! Thanks for all your great recipes. I’ve tried several and they’re all great!

  67. LaNita says

Just made these delicious morning treats but sub flax meal for oats, used half raspberry/strawberries!! WoW! the raspberries created a fragrance and taste that I have never had in pancakes before! Great recipe – please try with raspberries too!

    Continued thanks!

  68. Kat Creamer says

    Skinny-mini-Katie:
You rocked my taste bud’s with the blueberry pancakes with cheesecake sauce. My husband insists that it should be called vanilla ice cream sauce. I am going to try the strawberry one’s by myself. You know, just in case they are too good to share ; ) I had to go buy coconut oil just so I could make these pancakes. I spent, easily, 30 minutes searching threw the grocery store to find it! If these pancakes taste as good as I think they will, it will totally be worth it.
I do have a question/favor to ask. Is there any way you can make a “printer friendly” option to your recipe’s? I am a little “special” in the kitchen. If the recipe is not in front of me, I will some how mess it up. If I write it down, I will get all dyslexic with measurements. Believe me when I say, one CUP is not the same as one Tablespoon! Especially with flour, and cooking for ones in-laws. Suffice to say, glue-gravy disaster.
    Thanks again!
    Your friendly meat-eating-vegan,
    Kat Creamer

  69. Jennifer Young says

These were absolutely amazing — and I’m not a vegan. (Or a vegetarian. I love my cheese. And meat.) My boys have been begging me to have “breakfast for dinner” so I tried these tonight with the cheesecake sauce, and they were a HUGE hit. My 7-year-old asked me if I could get up early tomorrow to make them again for breakfast, and my 4-year-old and 1-year-old both loved them too. I can’t wait to try the blueberry ones!! Thanks so much for providing delicious, healthy options!!

  70. Chelsea says

I was having a hard time deciding if I wanted these or brownie batter pancakes… so I combined them! I added a tablespoon of dark cocoa powder to these. AMAZING!!!!

  71. Faith says

What is the calorie, fat, carbs, sugar, protein, etc. on these! They look so good, but I am trying to lose weight!

  72. Maggie says

These were amazing! The first time I made the recipe, they didn’t even make it to the frying pan because the batter was so good. Once I actually cooked them, I melted a banana on top which was really yummy!

  73. Alanna says

Katie (and everyone else) — this recipe works as waffles, too!!! 😀 I just tried it in my waffle maker, and I got three delicious golden waffles out of it. The second batch came out a little ugly since it wasn’t quite done and ripped apart when I opened the lid, but I’m pretty sure if I’d have just ignored the little green light and waited a bit longer, it would have been just as perfect as the first set. I really need to make some vanilla ice cream to go over these as a sundae, but I couldn’t resist eating them as soon as they came out, so I’ll have to try it again another day. (Note: I used the optional oil so I’m not sure if they’d come out the same if that’s omitted.)

  74. Rebecca says

These look so good!! I am on a sugar-free, starch-free diet but I could make these if I used almond flour instead of the other flours suggested… you think that would work? I have tried an almond flour pancake before and it was not so good, but I am willing to try again!

  75. jaime says

Umm…what to say? DELICIOUS!!!! I tripled the recipe and added a half of a banana. Absolutely amazing. Thanks Katie!

  76. Shade @ Thrift or Treasure says

SOOOOOOO GOOD! My sister loved them too…I may be eating these every day since I have a huge container of strawberries to work my way through 🙂

Thank you Katie! P.S. You need to get on instagram…your fans (myself included) have been posting lots of pics of our CCK recipe attempts…it’s great 🙂

    Dear Katie.

Thank you for this recipe. But I have a problem. My pancakes doesn’t seem like the ones in the picture, and I had to put eggs in the recipe, because they’d stuck to the pan. I would really love those fluffy pancakes, but I must be very bad in making these. I use spelt flour, rolled oats and coconut oil in the recipe. I have tried psyllium seeds and even “No Egg”, but still they’re stuck. Normally everything turns well, but this one… *crying for help*.

Everyone else seems to get them perfect…

    Darn!

    Love from Karina – Denmark

I made true strawberry shortcake pancakes this morning but used skim milk. They were terrific! I topped them with more strawberries and real maple syrup. Thanks for posting so many inspirational ideas! I have two chocolate loving girls who can’t wait to try your brownie batter pancakes for breakfast in the morning!

  79. Jeri says

I have a huge THANKS for you. The best part of cooking with my mom as a kid was licking the batter bowl clean. My girls never had that opportunity until now. We started making your vegan recipes and I have the joy of handing them spoons to clean the bowl! The batter is terrific and so are the results! Thanks for helping to make my cooking experience with my girls complete!

I made this today with all-purpose flour, soy milk, one packet strevia and old fashioned oats. The total calorie count came to 250.

  81. Karen says

Thank you so much for sharing these! I made these this morning and doubled the recipe for me and my husband. He said if I hadn’t told him these were vegan he never would have know. They are fabulous!

  82. Keroseen says

I was very excited after sampling this batter (most pancake batter is bland/dull)!

I added pecans, but didnt have/use vanilla extract and tried it at a women’s get-together…they LOVED it! Also: Used some coconut oil in the fry pan and sprinkled chocolate chips atop and used different cream cheese whipped cream…just WOW!

I never write comments, but considering how good these were I just had to.

This is the second recipe I’ve tried from your site and I’m blown away. (The first was the Reeses Peanut Butter Cup Baked Oatmeal, but, to be honest, it was bit too chocolatey for me. However I did not want to leave that as my first comment as your blog is title “chocolate-covered Katie”)

I’m not vegan, vegetarian nor need to lose weight, just a ballerina with a serious sweet tooth who can’t really eat normal sweets becuase it causes weight gain. These recipes are prefect for that. They’re healthy and yet have enough sweetness to satisfy me.

I made these today and totally forgot the sugar, didn’t even think use the oil and added no toppings, but they didn’t lack any type of sweetness at all [I did throw a small handful of chocolate chips inspired by your opening comments. If figured if the only think stopping them from being the best was the lack of chocolate, I could fix that]. They tasted like strawberry crepes! (And I love love love crepes). Plus it completely filled me up. I had to force the last two bites down.

I will be calling these “Strawberry Crepe Pancakes” from now on, since I’ve never had shortcake. I hope you don’t mind. I can’t wait to try more pancakes (And this is from someone who thought they hated pancakes a day ago)

(p.s. my last one ended up looking like a heart too (https://lh5.googleusercontent.com/-pt_SJAbfEWc/UDEV8wfgmYI/AAAAAAAAGFs/tDIkVe-ciOc/s512/strawberry%2520heart.jpg. I took it on my iphone and didn’t touch it up, so it kind of, blah, lol)

And congrats on your latest publication)

Just made these for myself and my husband. They are AMAZING!!!! My husband loves regular pancakes and usually requests them while I make myself a healthier version. I just made these without asking him first and he was blown away! Thanks!

Hi Katie. I love these pancakes! Question: everytime I have made them they seems to be a bit gooey and underdone. Yet they are burning on the top. Any tips for me? Thanks 🙂

      • Alanna says

It definitely works; I tried this a while back because I love waffles! You may need to cook them longer than usual because when the indicator light came on they definitely weren’t done yet (it seemed like the extra moisture in the strawberries kept it a bit gooey), but be patient and they should turn out! 🙂

  86. Bethany says

I just made these strawberry shortcake pancakes today. Wow! They were surprisingly delicious for something so healthy. Although I did have to add more flour because the batter was too liquidy and add more sugar because they weren’t sweet enough with just the stevia. Thank u Katie!

Btw was this recipe made for one serving or two?

Just gotta say, I made these this morning, and they were to die for! Topped them with your strawberry glaze recipe (SO easy!!) from your pop tart recipe, with the leftover strawberries, and whipped cream! SO delish! Will definitely be making again! You are the best Katie!!

Thank you so much for this amazing recipe! I am a huge pancake fan and have always strived to create healthier versions of the popular breakfast food. Nothing beats fresh strawberries, pancakes (in shortcake form) and a yummy filling! I followed the recipe except added some vanilla protein powder/nonfat cottage cheese for a bit more texture. I made the filling from nonfat Chobani yogurt, chia seeds, vanilla creme stevia and a splash of unsweetened almond milk. I was in heaven!!! This is my new favorite, and again, thank you :)!

  90. Julia Smith says

Hi Katie! I calculated this recipie with having 263 calories 2.6 grams of fat using sugar and Unsweetened Vanilla Almond Milk. Also, without the coconut oil. 🙂

  91. Emma Deuitch says

I was not so sure about these at first, but I just made them, and they are amazing!!! I put in only 1/2 TBSP coconut Oil, just cause I dont like the taste of it, and they still turned out perfectly. I will be eating this a lot 🙂

  92. Erica says

I am curious whether anyone has tried vegetable oil instead of coconut oil and how these pancakes turned out? I want to make these so bad but would rather use up the oil I have than go by coconut oil. Let me know! (:

  93. Elizabeth says

Hi Katie, I made these for Valentine’s breakfast for little guy who’s almost 2. He is SUCH a picky eater, and while he LOVES strawberries, I do like for him to eat more than just the actual berries. Enter your pancakes. He ate a few bites and then snacked on the rest all morning yesterday, and he’s working through a new batch today. And they’re healthy, so I can feel good about giving them to him (or a few bites to myself!) Thanks!

  94. Katy says

Hi Katie! I love your site! I especially love your simple pancake recipes. I was going to share that for the recipes that call for 1/3 C of flour (like this one), I usually cut that in half and fill the rest of the measuring cup with toasted wheat germ. It’s lighter than flour and I find it gives the pancakes that perfect golden-brown color when you cook them! Also, I made my ‘cheesecake sauce’ out of plain greek yogurt with a little sprinkling of cheesecake jello pudding powder! It was delicious! Just thought I’d share 🙂 Thank you!

  95. Izzie says

I tried these with GF flour the first time and they were amazing! I then tried them last night with almond meal in place of the flour and they did not work. Recent started reading your blog, your recipes are great!

  96. Traci says

I just discovered your site 3 days ago. My daughter and I were in the mood for something “sweet” tonight and I came across these pancakes. I had some frozen strawberries and I said, “what the heck, lets give them a try”. I followed the recipe using Bob’s gf flour, unsweetened vanilla almond milk and stevia. (I also made sure to add the coconut oil) I doubled the recipe and we ended up with 3 good sized pancakes each and I topped them with sugar free maple syrup! WOW! These are the BEST sugar free, dairy free, gluten free pancakes I have ever tasted. They will forever be a part of my breakfast/dessert rotation. I can’t wait to try more of your recipes.

  97. Vicky says

Hi Katie! I am not vegan, but I am all for finding tasty, healthier alternatives whenever possible. I have made many of your recipes and have had fabulous results with all! I have made the Strawberry Shortcake Pancakes twice now, served both times with just some local maple syrup. The first time, I made the recipe exactly as written. The second time, I had a bit of cooked quinoa left over, so I replaced the oats with about 1/4 C quinoa. They, too, were really good and gave the pancakes the same “bite” as the oats and a slightly different texture. Just thought I’d share!

Thank you for all the work you put into your recipes and your website. I am truly a fan!!

you are the most incredible human being on this planet.. i took a moment to myself after writing that sentence to check if i was exaggerating.. nope

THANK YOU!! these are sooo good

  99. Lily says

These are awesome! Katie, I was wondering if you could also post amounts for more than one serving? Thanks!! 🙂

  100. Marie says

I made these for the first time on Friday and they are FANTASTIC! I’ve had them three times already (and let’s just say only once was for breakfast.) I’ve just recently discovered your blog and I’m so thrilled that I did!

  101. Allison says

These had a great flavor but has anyone had a problem getting them to “set” and then flip? Mine were gobbled up quickly by my family, but they cooked very slowly. otherwise they were just perfect!

Also, any suggestions on making them Paleo? I though of subbing out the flour with almond flour. What’s a good sub for rolled oats? perhaps some flax meal or chia seeds? Thanks Katie and fellow bloggers!

  102. Lexie B. says

I just made these for my mom for Mother’s Day brunch and she loved them! My dad even commented that he doesn’t usually like pancakes because of the “heavy” feeling they give him, but he liked these. Thank you for the fabulous recipe! 😀

  103. Nati says

Made these with my husband for a delicious Saturday morning treat! I love how your recipes are so flexible and don’t require much processed vegan replacement products like soy margarine- like this one uses coconut oil! natural and delicious- my husband is not a vegan and he always is reluctant to try a vegan recipe but then we make one of yours and he loves them. He said these were better than regular strawberry short cake.

  104. Rachel says

I just made these this morning and they are amazing!! Thanks so much Katie 🙂 I love the single-serving aspect too, it makes cooking so easy!

  105. Meredith says

I made these pancakes, over the weekend. My husband and I had a friend visiting who is vegan, and was looking for a good brunch meal. These pancakes were incredible. So sweet, and hearty! Will definitely be making them again this summer!

Can’t seem to find any nutritional information, would you mind calculating? Love your site, thanks!

  107. Adriana says

I wanted to make these for breakfast today but i overslept ;so i made them for dinner and oh my goodness these are AMAZING!!! I’m definitely coming back to this recipe!

  108. Lara Gilbert says

I would love to know the nutritional information on these? I might be over looking it, I have a 4 year old who is whacked out on cold meds to deal with at the same time as my browsing 😉

  109. Lyn says

Pancakes are one of my favorite breakfast foods (when I’m splurging a little anyway) and I definitely enjoy them but I always feel guilty about some of the ingredients. With these ingredients there’s no reason to have to splurge. You can get the great taste and also be healthy at the same time.

  110. Janet says

Made these for breakfast Saturday morning. Topped them with some chopped strawberries & a few dark chocolate chips. Yum! Just one more reason breakfast is my favorite meal! Thanks again for sharing your recipes Katie!

  111. twitchitt says

Great recipe! Just made these for dinner 🙂
Only thing was I had to triple the recipe. This “one serving” is enough for my 18 month-old. I needed two. And I’m 110 lbs.
    Delicious pancakes nonetheless!

  112. Katharina says

    Hi Katie!
I made these today fomy Valentines Day breakfast and LOVED them!!! I had to add some chocolate chips though ;)! I mean … it’s Valentines Day afterall, right ;)?

  113. Nicole says

Ok so for Valentine’s Day this year I used two of your recipes. The day before I picked strawberries and made your peanut butter dipped strawberries. Then the morning of I used the leftover strawberries and PB dip with this recipe. I used the extra PB dip to top the pancakes along with a bit of whipped cream and all of it turned out amazing. Thank you!

  114. GraceJoys says

Now that strawberries are finally coming back in season, I gave these a go and man are they good! I made them for a second day in a row! Today I made a double batch for me and my 5yo son and he devoured them. Thank you Katie!

  115. Tiffany says

Made these for my kids for Fat Tuesday/Mardi Gras/Pancake Day! All out of plain non-dairy milk, so I used Chocolate Almond Milk instead and the pancakes turned out amazing! Chocolate Strawberry shortcake for dinner–can’t beat that. Thanks for the great recipe.

  116. Karen says

Holy cow these are good! Shhh, don’t tell the kids they’re healthy 🙂 We had them with a little chocolate syrup – really these are to die for!!!

  117. Wanda Livengood says

Can I go half and half with spelt flour and WW pastry flour. I am not a real fan of the texture of the spelt flour alone.

    Thanks
    Wanda

  118. Maddie says

Katie can you PLEEEASE post the nutrition info for one of your many amazing single serving pancake recipes??? love your blog! my mother is gluten free and vegan because of allergies and we adore using your recipes xxx

  119. anais says

I was wondering, would it be okay to use quick 1 minute oats instead of rolled oats? Would I have to tweak the amount used?

  120. Claire says

These are absolutely fantastic. I’m a college student living in an apartment, so your single-serving recipes are just perfect. Thank you so much!!

  121. Camille says

I just made these for my 3 year old and he gobbled down all three pancakes. Can’t wait to make them again. Great recipe, I am soooooooo glad I found your blog. You are AMAZING!!!

  122. Stephanie says

These were AMAZING!! I’m a terrible cook and mess up most recipes, but these turned out great! Fantastic consistency and so tasty 🙂 I used brown rice flour and it didn’t affect the recipe at all. I topped my pancakes with blueberry preserves and maple syrup. Can’t wait to make these again!

  123. Monica says

Honestly, I didn’t expect these to be that great since the recipe doesn’t call for an egg or anything. I made them this morning and holy guacamole, I was impressed. These are as good as my dad’s buttermilk pancakes but so much healthier! I will be making these again and possibly modifying the recipe to include chocolate chips 🙂
