Your guests’ tastebuds will think they’ve died and gone to a tropical paradise.

You don’t have to tell anyone that such a beautiful and delicious breakfast is actually healthy! What they don’t know won’t hurt them.

Just stir all ingredients together in a bowl, ladle onto a greased skillet, and flip as soon as they start to bubble.

You can add some shredded coconut or mini chocolate chips if you wish, and I recommend topping the pancakes with homemade whipped cream!

I linked my favorite vegan-friendly whipped cream recipe below in the recipe, but feel free to use coconut whipped cream or even your favorite store-bought whipped cream if you prefer.

Their fatness rivals my Blueberry Pie Pancakes.

And I didn’t try to shape the one above into a heart; it just happened to fall that way!

  2. Ragnhild says

These photos are just stunning Katie! They look so so good <3

Haha, love the question 😀 How much do you love pancakes? 😀
I love pancakes because I know I like them, and because my friends+brothers dies of happiness when I make it for them 🙂 I dont have the best relationship with them though, but Im working on it. Im actually planning on making oat pancakes (without baking powder.. haha- silly fear food ) 😀

  3. Holly @ The Runny Egg says

I love pancakes — blueberry is my favorite but nothing beats regular old buttermilk pancakes covered in maple syrup.

  4. Stephanie @ StephSnacks says

These look amazing! I have to hop on this… just made volumous chocolate ice cream the other day, definitely satisfying.

  5. Dawn @ Blonde on a Mission says

These look so summery & delicious! And I love the ‘love pancake’! 😀 I have an on/off relationship with pancakes. For a while, I used to make them every sunday with dark chocolate chips in them & topped with banana. This recipe might rev up my love for them again!

Hi Katie! New reader here… I am loving reading your recipes and trying different ones out. I tried your banana pancakes on Saturday, and OMGoodness!! They were so yummy, so dense, so moist- I was in pancake heaven! Thanks!

  7. Aja says

    Yum!
I tried making the cookie dough ones a while back but they always hated me and would stick even if the pan was non-sticked or would fall apart and refuse to flip.

    Hello!
How funny, I’m halfway through writing a blog post on pancakes too, but mine are blackcurrant. Great minds and all that! Seriously though these look really good. And luckily I have some not-to-great-to-eat-raw strawberries in the fridge. Yum!

Now I seriously can’t WAIT for Pancake Sunday!! Aaah noo wait I’ll be on holiday so I won’t be able to have one for WEEKS!! How will I live?! I guess just the anticipation of your strawberry shortcake pancakes will tide me over 🙂

  10. Heather says

I love you, I love you, I FRICKIN LOVE YOU! I thought about making a strawberry version after trying your blueberry pie pancakes (which were insanely delicious)!

How much do I love pancakes? Must you really ask me that question? 😉

Great post as always Katie!! Long time reader, first time commenter, just wanted to let you and all your fans know that I’ve started a blog as well called Chocolate Covered Mitchell!

It’s a lot like your blog, but more chocolatey and maybe even a bit naughtier! Ha! Would love to know what you think! Keep up the great posts!

  12. Errign says

I have been eating pancakes every morning for breakfast for days…another awesome recipe… think I will try with cherries since I have them on hand 🙂

  13. Nathalie says

How much do I love pancakes? Let me count the ways…..

Wow, these look awesome! Unfortunately, the strawberries at my primary grocery store seem to have gone AWOL since summer began (??) Maybe I could use biwa instead (called “Lorquat” in English, apparently). With yuzu zest. It’ll be a Japanese-flavored bonanza.

OH. I bought an ice cream maker yesterday. Just so I could make your awesome ice creams (or try to). My blender is weaksauce and I really wanted to see if they could work in an ice cream maker instead =D. I’ll let you know how they turn out!

  14. Lauren says

love this recipe dear!! i’ve been trying to make pancakes lately for our weekend brunches (my fiance just LOVES waffles..even though its basically the same..dont ask lol i dont even understand!) but i think these will definitely be happening this weekend since i’ll be with my girlfriends instead! 🙂

  15. Michaela says

    I. WANT.THESE.PANCAKES.RIGHT.NOW!!!!!!!!!!! they look absolutely delicious!! I love pancakes, I love strawberries, and I am hungry, so please, pretty please, bring me some strawberry pancakes? 😉
I absolutely adore pancakes, bc you can add whatever ingredients you have on hand and they are super quick to cook. I love them!! Loooooooooooooooove them! Love that THAAAAAAAAAAAAAAAAAAAT much!!

  16. katie says

I must make these! I love how thick the pancakes are! look amazing!!! I might do a kiwi and strawberry pancake! love ya girl! You are amazing, always coming up with out of this world recipes!!

  17. Emilia says

I’m usually not a big pancake fan, I find them kind of boring, but I think this could be the recipe that changes that for me! I love strawberries…will definitely be making this soon

  18. Kate @ NaturaStride says

Those look so thick and filling! I made homemade pancakes over the weekend and was pleasantly surprised how well they came out – after being dependent on pancake batter my whole life! Definitely need to try these and incorporate oats. Thanks!

  19. Averie @ Love Veggies and Yoga says

    Katie these look phenomenal!

Both the recipe AND your photography!

I love how they are thick and not some little flimsy pancake. I am always so impressed with your pancake cooking skills b/c I can never seem to get the batter consistency down pat or the cooking. They either burn on the outside and are raw in the middle or they are too thin and dont hold up in the flipping process.

After my move and when I get my kitchen functional again, I must try these!
