    There is nothing wrong with mint and chocolate together. 😀 I am sure I will be eating something green on St. Patricks day.

    Yes, we’ll have spinach smoothies in the morning (like every other day!) and I usually make fake Shamrock Shakes (very similar to the recipe you posted yesterday).

    Our first date was on St. Patty’s Day so we usually go back to that same restaurant — no green beer though!

    I don’t even celebrate St Patrick’s day :p I don’t think anyone does in England! But I like green things – spinach rules my life, so yes, in answer to your q!

    I love eating green (i.e. not to be confused with Kermit’s declaration that he “loves being green!”). I usually have either a huge bowl of salad greens (i.e. spinach, mache, arugula, romaine – with nuts and berries) or a saute of zuchinni, onion, and collards for lunch! I also LOVE broccoli – I can’t seem to get enough of it! I like it raw, steamed, or stir-fried. Another favorite of mine is collard green rolls (i.e. collard green leaves with nut butter and bananas/raisins/goji berries/etc.) Can you tell how much I love green, not to mention it is my favorite color, so I will definitely be wearing green tomorrow!

    Most people think (and will think) that I’m crazy, BUT I absolutely can’t stand the combination of mint and chocolate!!! I never have liked it! LOL! On their own, I love love love them, but together, I get so grossed out! Have a great day! 🙂

    oh wow.. for a second i thought st pattys was TODAY- mega confused there…. but they dont even celebrate it here.. WEIRD
    ANYWHO.. I LOVE THIS MINT KICK!! did di mention how i got peppermint extract at the store the other day? HALLELUJAH that stuff is SO SO SO SO GOOD!!! all thanks to yoU!

    i wear purple on the 17th, b/c when i went to ireland, most people in the area were wearing purple. i’m not irish though :(, and i’ll probably be having falafel

    hahha hmm green. im weired out by those green bagels- mostly bc theres probably wayyy too much green dye in my opinion. and im not a fan of the “corn beef and cabbage” nor do i really enjoy soda bread (depends…) so, i usually wear this cute little leprachaun pin I have for my green spirit!! 🙂
    altho i will most likely be eating broccoli tomorow, so that counts for green right? 😉

    Happy Saint Patrick’s Day! I just wanted to say thank you for your response to my comment/question yesterday. I really appreciate your time and advice. Also, you’ve put me so in the mood for something green and minty. Still deciding what to make tomorrow although I did make shamrock shaped granola bars to share after yoga class today. Coconut, chocolate, banana, yummm!

    You can never go wrong with mint chocolate, in my opinion. The grasshopper pie looks outrageously good! Unfortunately I probably won’t have any time to cook anything tomorrow, so it might be that the only green I eat will appear in salad veggies. Still delicious! And I’m definitely wearing a green shirt!

    I agree, mint chocolate should be a food group! It’s been my favorite since I was little and we owned an ice cream stand. My parents made fresh gelato every day!

    I’ll probably eat so ethibg green on st. Patrick’s, just for fun. Hehe

    Mint chocolate chip was also my favorite when I was a child! My mom and I usually bake a ton of Irish Soda Bread for Saint Patrick’s Day. I also wear a lot of green, but that has the sort of unfortunate effect of making me look like a Really Tall Leprechaun.

    I fixed my blender and whipped up a batch of Coconut Butter so that I can make some of your lovely coconutty recipes, only to discover I’m seemingly allergic to coconut! No Melties for me 🙁

    On the plus side, mint and chocolate do not pose a problem! So I think the thin-mint Brownies are next on the list (and for the record, I think they look beautiful!)

    At the bakery I work at almost all of our cakes decorated for St. Patricks day are mint chocolate chip! Your recipes look much better than the cake slathered in buttery frosting we make though, haha.

    I try to eat something green everyday! My stepdad calls me a rabbit, because all I eat are “twigs and trees” 😀 Loving all of this green food, except the spinach ice cream scares me a little!
    Maybe I’ll start off with the baked oatmeal and go from there 😉 And I have yet to make the red velvet pancakes either! Slow down, woman! Hehe

    I wear green all the time and my coat is green so i feel safe. It used to be a big deal when I taught so I’d give all the kids a green sticker to be safe from pinching. Trader Joes always delivered with the freebie stickers.

    My original goal was to eat all green food for St. Patty’s Day, but somehow I’m not sure how that will work out unless I go shopping and buy lots of kale, spinach, bananas, and lots of green food coloring? Hahahaha. I guess I’ll just stick to at least 2 green meals and see how that goes. 🙂 I definitely plan to make a minty shake though. 🙂 Hopefully raw, but if not, I’ll make it as close as possible. 🙂

    Fun- I need to get on posting my St. Patty’s day recipes- i’m a bit late, but no worries! I guess I just don’t really think of it as an actual holiday, as I’m not irish. Heck, it’s an excuse to eat more greens, in my terms!

    Mint chocolate chip was my favorite icecream as a kid (same as the thin mint girl scout cookies, aside from the peanutbutter patties 🙂 ) 🙂 These recipes make me happy!! 🙂 Especially since there’s spinach–totally guilt free, yay.

    I’ll probably have guacamole, cucumber, and broccoli tomorrow 🙂 But that’s kind of normal for me!! 😛 I’m pretty much always chock full of vitamin k 😛 Next monday is my grocery day again though–I’ll make the day special and pick up the ingredients for the mint icecream 🙂 That would make my day!

    Mint chip is one of my favorites (we used to beg my mother to make her grasshopper pie…she’d relent about once a year). I’m excited to see your minty recipes.

    Mint chocolate is one of my favourite flavour combinations so I don’t mind a bit, keep ’em comin’. 😉

    I start off my day with something green everyday in juice or smoothie form so I guess I will unintentionally. But perhaps I will make time to whip up one of your delicious desserts for a special treat.

    haha! that’s so funny! when i was little mint chocolate chip ice cream was it’s own food group. tomorrow I’ll probably have some spinach in my shake and a salad:)

    Of course I’m wearing green. I’d get pinched in this family if I didn’t. Even my underwear is green. Ha ha. I can’t believe I just typed that online.

    So far, I’ve had green juice before my workout, followed by some overnight oats inspired by your Irish Soda baked oatmeal. I used the same flavors, including the baking soda, even though I didn’t bake it. The baking soda is important for that authentic flavor.

    Later, I’ll probably make a raw pudding with lots of greens and spirulina. Then, I might have a mint chip smoothie for a mid-day snack (shamrock shakes are a must on St. Patty’s Day).

    For dinner, I’ll probably make a vegan Irish stew or some kind of potato dish. Colcannon or vegan bangers and mash are some of the possibilities. Oh yeah, and the kids have requested broccoli, celery and green apples as their sides.

    I have such fond memories of Blue Bell’s mint chocolate chip ice cream from when I was a kid… such a tasty combo!
