Mounds Bar Pancake Roll Ups

Two days ago marked the birthday of a very special friend of mine.  She seriously is one of the kindest, most selfless girls I’ve ever been lucky enough to meet.  Because my friend is always so sweet to others, three of us decided that, for her birthday, we ought to reciprocate some of that kindness. This is why, on Tuesday morning, at an insanely early hour, I was in my kitchen making pancakes.

And to go along with the Pancake Challenge, I made Pancake Roll Ups :).

Mounds Bar Pancake Roll Ups, to be exact:

mounds2

(I used the Brownie Batter Pancakes as a base.)

Pre-rolled stage:

And reeeeaally close up:

So what exactly did my friend think of her birthday surprise Pancake Roll Ups?

I’m not sure…  She didn’t come up for air long enough to tell me!

Question of the Day:

Have you ever surprised a friend for his/her birthday?

One of my favorite “friend birthday” memories is of one year in high school, when we “kidnapped” a friend before school and took her to breakfast in her pajamas.

That looks amazing. I love making mounds bar oats, or almond joy oats, but I’ve never tried with pancakes! I know what I’m making for me and hubby tomorrow. (No class on Fridays! I love having time to make a fancy breakie.)

  2. Jessie says

Hey Katie, I made your oatmeal cookie crepe cakes today for breakfast! They were so good! I can’t even begin to thank you enough for posting such a delicious recipe. And now I need to get on that Mounds recipe!

Wow there are a lot of Jessica type names here. Haha just saying!

  3. Stef @ moretolifethanlettuce says

  4. Meg says

Oh I’ve madeyour brownie batter pancakes before, so I KNOW how much of a treat these must have been for your friend. I only wish I’d been there to get some too!

Favorite birthday memory: Going to 7-11 with all my friends every time one of us turned 18 and buying a lotto ticket. Cheesy but so much fun!

  6. *Andrea* says

i used to love the mounds candy bars! and almond joy! these look DELICIOUS!!!!!! i’m sure you’re friends are all sweet and fun if they’re friends with you 🙂

i’ve never stolen a friend away but friends have thrown me surprise 18th and 21st bday parties at mysterious locations and just told me to dress cute haha

  7. Evan Thomas says

These look delicious! It’s totally making me think my next oatmeal needs to have chocolate chips and coconut. Do you buy any specific brand of shredded? I have Let’s Go Organic but they’re such small shreds

  8. Bianca- Vegan Crunk says

Yumalicious! I used to love Mounds bars, and I actually have one of the Go Max Go Mahalo vegan “mounds-style” bars in my pantry waiting to be devoured. But your pancakes look sooooo good. I’ve got pancakes on my to-make-for-breakfast list for next week. I wish I had access to that coconut butter so I could make those.

  9. Bianca- Vegan Crunk says

Question: On the contest, after making pancake roll-ups and blogging about it, do we leave a comment on that post. Or just email. I couldn’t tell from the instructions. I’m kinda slow sometimes. 🙂 I think I may do a peanut butter pancake roll-up next week. I’ve been craving peanut butter pancakes, and why not roll ’em up?

  10. Katie says

Wow Katie!! Those look AMAZING!!! I am sure your friend loved them!!! How sweet!! You are the sweetest girl!!!

Loving these!!! I just bought coconut butter yesterday!! Never had it before, had it this morning and LOVED it!!!

    Love you!!! xoxo

  11. lisa says

I notice you often eat pretty decadent meals. How do you do it and stay so thin? I’m jealous. I have to constantly workout and watch what I eat or the pounds start adding up.

    These look absolutely delicious!

  12. Lindsay says

My word, you have me craving pancakes now. Chocolate pancakes, of course!
And I wish I could find that coconut butter you love so much!

  13. Bekka says

Hello Mounds! Why’d you have to go and post that when I have no coconut in my house? Now I have to go to the grocery store and get some!

  14. Daria @ Daria Can Cook says

Oh my word, Katie, you have outdone yourself this time. I want to jump through my screen and gobble those up!

I love the idea of a birthday morning surprise. I’ll have to think one up for some friends. 🙂

  15. LindsayRuns says

How cute! One of my favorite birthday memories is very similar…I was kidnapped for late night ice cream! Also, decorating my friend’s car at 5am before school…we would always repeat for others, but the firsts and the actual surprise was always the best.

  16. lunchiemunchies says

MmmMmmm…I made crepe cakes this morning! Totally fab, topped with sliced banana and chocolate almond butter sauce (almond butter, unsweetened cocoa, vanilla rice milk and stevia) Amazing and easy peasy. Maybe the carrot cake version next, or these mound bar ones!
    Love xxx

  17. Katie says

Hey Katie, I made your carrot cake pancake rollups the other night…but they didn’t turn out very well. :/ I don’t know what was wrong. They were really rubbery. Any tips? I really want to submit a photo for the giveaway, but I would like to try them again first.

Thanks…you can respond on my blog or email, so it will be easier for me to find. 🙂

  18. Carrie says

    Hey Katie,
It’s my first time commenting, but I’ve been an avid reader of your blog for a few months now. It’s one of the only ones I read. Thank you for your fun posts, sweet kindness, and sense of humor! It always puts a smile on my face 🙂

  19. Simply T says

    Hi!

I just happened upon your blog today, I can’t remember how, after a number of clicks from one blog to the next I ended up here. And I am SO happy I did! I love your blog! I became vegetarian last October – I cut out everything except for milk, yogurt, and cheese. Last month I decided I want to work toward becoming completely vegan – I’ve had no problem eliminating the milk and yogurt – soy does me just fine. I am having a tough time with cheese, however. My live-in boyfriend is from Wisconsin, and you know how they are about their cheese. I haven’t found a non-dairy cheese that I have really liked so far – any suggestions?

Anyway, I love that you put all these awesome recipes up here – I’ve been cooking a lot more since I decided to go vegetarian/vegan, and I’ll definitely have to try some of the ones you have one here!

I’ve got my humorous blog already in full swing, but I’m in the process of developing a vegetarian/vegan blog as well to put up recipes, vegan shopping sources and health/beauty products as well as information about cruelty free and green living. Again – I’m so glad I found your blog – you have some great stuff here!

Stop by my regular blog any time 🙂 Once I get my veg blog up, I’ll stop back in and post you a link so I can get your input!

OMG must get machine to let me steal food from my computer screen!!! I would get up at any hour of the day to get me some o’ that!

I love surprising people for bdays, etc. My favorite memory though was taking the campus bus over to my fiance’s (then bf) apartment off campus, letting myself in and cooking up mini quiches before he woke up. I had time to cook up a ton of tiny quiche lorraines & made a homemade strawberry smoothie just in time to catch him stirring. Man was he surprised!!

  21. Naomi (onefitfoodie) says

i think YOU Are one of the selfless amazing people for making her those! I bet she DEVOURED them!!!

for one of my friens bday i made her cupcakes with purple (her fav color) frosting and big “L” on each one bc her name started with an L..she loved them! (I thanked duncan hines ;))

  22. EE says

I surprised the husband-friend one year by taking him on a weekend trip to the dunes for his birthday. And come to think of it, this year was a surprise birthday party.

How could your friend be more selfless than you? I’m being serious.

  23. Lauren says

    Hi Katie,
I am definitely going to have to try these…

For my husband’s birthday this year I surprised him with Peanut Butter and Jelly Crepes. I think he enjoyed it!

    Have a good weekend!

  24. Hannah says

Wow, did you go to her place early to make these, or was she at yours already? So kind of you – I can’t think of a better way to start a birthday!! 🙂

  25. ohkansascity says

For my best friends birthday one year, I surprised her with a party with her friends. She was always complaining how “depressing” her birthday was, so I went out of my way (cake and everything) to make it the best ever. I also made her rainbow pillows as a present.

  26. RhodeyGirlTests says

Oh I love surprising friends for their birthdays!!! I tried surprising my husband the year we were engaged. I was supposed to fly in for the night just for dinner (long distance relationship) but it didn’t work out.. the flight was delayed many times and then they didn’t fly at all! I was devastated and cried and cried! Funny now when I look back on it but it wasn’t then!

  27. Lindsay says

Oh my gosh Katie! I’m totally going to make these… they seem amazing. I just bought my first jar of artisana coconut butter today! I can’t wait to try it 🙂

  28. Danielle says

I was kidnapped once for my birthday! It scared me at first but I loved it. I’m glad your friend enjoyed the pancake roll-ups but honestly, who wouldn’t??

Oh and F.Y.I, I do NOT have a sixth toe hahaa. That was one of the lies…but I love The Princess Bride 🙂

  29. Sapphire Speaks says

Hi Katie! I’m a ancient lurker but newbie blogger and I would like to link you up on my blogroll would that be okay? I love your site because I’m a fellow chocoaholic! I’ve also been thinking of becoming vegan so I really appreciate the recipes! I’m so encouraged by you, seeing how veganism doesnt mean deprivation at all!

  30. Victoria says

Is there any other way to enter this contest? I don’t eat flour or own egg replacer. I tried to make pancakes using almond flour flax and water and failed miserably. I would love to enter this challenge but I’d rather not waste food.
    Thanks.

  31. Chocolate-Covered Katie says

    Hi Victoria!
You definitely do NOT have to make traditional flour pancakes!! (And they don’t have to be vegan either. Just because I’m a vegan doesn’t mean I want to force my beliefs on anyone else.)
You can make any kind of pancakes you want: potato pancakes, oatmeal pancakes, or something else entirely! Be creative and have fun! 🙂

  32. Jen says

I am in love with chocolate as well…I tell my husband it will be my last meal. Please enter me in the Artisana Coconut Butter giveaway! I’m sure the coconut butters could make all my wildest chocolate dreams come true!

  33. Abby says

These are a must try–they look scrumptious!! Over the weekend, I made a batch of pumpkin blueberry pancakes topped off with some coconut butter. Love this stuff!!!!

  34. mai says

these look amazing! i think i just drooled on my keyboard a little bit 🙁

also your giveaway is eerily perfect timing for me. i was just thinking about how there are so many nut butters i want to try but i am way too poor to ever justify buying jars of expensive butters ‘just to try it out’. i’m keeping my fingers crossed for the prize…!

  35. Madison says

how can you not want to wake up when wake up would mean these pancakes!!! i cannot wait to try these, meaning i cannot wake to go to the grocery to buy the materials, then make them, and then eat them to my hearts content!!

(sure would help to have that array of nut butters to expand the breakfast creativity in my house!)

  36. Jazmin says

Those pancakes look AH-MAZING. If only I had some coconut butter 😉 Too bad i”m just a broke college student *sigh*. I’m going to try it with regular coconut though!

  37. Nicole says

I agree with Jazmin- amazing! But, like her, I am also a broke college student. I’ll have to see what I have in my cupboards

  38. Katherine says

mmmm these look deeelish! i’ve been on a pancake kick recently…made some the other day that mixed FOUR (count ’em) different kinds of flour for a fun and unique flavor combo. the mix was: chestnut flour, sweet potato flour (!!!!), peanut flour, and spelt flour. half the batter mixed with banana chunks and chestnut pieces. yummers.
anywho, i’m a coconut addict at heart, and currently have two jars of coconut butter. i would love to try making my own at some point! also, went on a whole foods spree this weekend and picked up a bag of coconut flour and unsweetened shredded coconut (to replenish my stash)… gotta love bob’s RM.

  39. Kelly says

Well I LOVE mounds bars and pancakes so I would def try this out.
I have wanted to get this coconut butter for a long time but it’s sooooo expensive!! It would be awesome to win this giveaway! 🙂

  40. veggie365 says

I *love* Mounds bars – the only thing that would make this dish better would be to have someone make it *for* me! Looks so delish!! 🙂

  41. veggie365 says

I *love* Mounds bars! The only thing that would make this dish better would be if someone made it *for me*! 🙂 Looks delish!!

  42. Robin says

These look so good! And since my husband doesn’t like coconut, they could be all for me!

Thanks for introducing me to Artisana – I’m addicted. I like to add a spoonful to my smoothies and let it turn into a hard ball of coconut. Sounds odd, but it’s so good that way!

  43. keegan says

Chocolate, coconut, and in pancake form. Katie- you’re basically a genius!! My husband gobbled these up in about a minute, asking for more. Definitely a success 🙂

  44. Tara says

I think this recipe is awesome! I’ve made it before, but I had to substitute out the artisana. I need to win the giveaway to make the REAL DEAL!

  45. DCKate says

Yum! These look so delish. I will definitely have to try them if I win! Maybe I’ll add some sliced almonds on top and make them Almond Joy pancakes 😉

  46. caroline m. says

chocolate and coconut comes darn close to my all time favorite chocolate and peanut butter combo. i can only imagine topping these with some peanut butter. mmmm!! i would love to win some artisana! =]

  47. Kristin says

    Hi Katie 🙂

I’d like to enter the giveaway and if I won I would totally make these pancake roll ups. Chocolate and coconut are a perfect match 🙂

  48. Heather says

Holy Deliciousness! I have wanted to try Coconut butter forever. I couldn’t think of a better way than as an icing on pancakes (or oatmeal) 🙂

  49. Meredith says

I actually tried my first mounds bar when I was trick or treating wayyy back in elementary school. Ever since then I’ve been hooked! They’re so darn good. In the spirit of Halloween, I definitely plan on making these pancakes.. they sound so delicious!

  50. Livvy says
