Two days ago marked the birthday of a very special friend of mine. She seriously is one of the kindest, most selfless girls I’ve ever been lucky enough to meet. Because my friend is always so sweet to others, three of us decided that, for her birthday, we ought to reciprocate some of that kindness. This is why, on Tuesday morning, at an insanely early hour, I was in my kitchen making pancakes.
And to go along with the Pancake Challenge, I made Pancake Roll Ups :).
Mounds Bar Pancake Roll Ups, to be exact:
(I used the Brownie Batter Pancakes as a base.)
Pre-rolled stage:
And reeeeaally close up:
So what exactly did my friend think of her birthday surprise Pancake Roll Ups?
I’m not sure… She didn’t come up for air long enough to tell me!
Question of the Day:
Have you ever surprised a friend for his/her birthday?
One of my favorite “friend birthday” memories is of one year in high school, when we “kidnapped” a friend before school and took her to breakfast in her pajamas.
Brandi says
these look FANTASTIC Katie!
I need to get on this pancake roll up train 🙂
Little Bookworm says
Those Mound Bar Pancake Roll Ups look absolutely amazing! 😀 So sweet of you to make them for your friend!
McKella says
That looks amazing. I love making mounds bar oats, or almond joy oats, but I’ve never tried with pancakes! I know what I’m making for me and hubby tomorrow. (No class on Fridays! I love having time to make a fancy breakie.)
Gena says
You and HEABS have me drooling round the clock, girl! this looks awesome.
Kara says
Can I come over for breakfast?
Jessica says
You’re such a great friend! I always make over-the-top cupcakes for my good friends’ birthdays. 🙂
Love your mounds roll-up idea…yum!!
Jessica says
My birthday is on the 25th of March. Make me some? Please?! I need a friend like you, CCV!
Jessie says
Hey Katie, I made your oatmeal cookie crepe cakes today for breakfast! They were so good! I can’t even begin to thank you enough for posting such a delicious recipe. And now I need to get on that Mounds recipe!
Wow there are a lot of Jessica type names here. Haha just saying!
Sarahishealthy says
How do you do it? How do you come up with these things? YUM!!!

Favorite birthday memory: Going to 7-11 with all my friends every time one of us turned 18 and buying a lotto ticket. Cheesy but so much fun!

These look delicious! It’s totally making me think my next oatmeal needs to have chocolate chips and coconut. Do you buy any specific brand of shredded? I have Let’s Go Organic but they’re such small shreds
Bianca- Vegan Crunk says
Yumalicious! I used to love Mounds bars, and I actually have one of the Go Max Go Mahalo vegan “mounds-style” bars in my pantry waiting to be devoured. But your pancakes look sooooo good. I’ve got pancakes on my to-make-for-breakfast list for next week. I wish I had access to that coconut butter so I could make those.
Bianca- Vegan Crunk says
Question: On the contest, after making pancake roll-ups and blogging about it, do we leave a comment on that post. Or just email. I couldn’t tell from the instructions. I’m kinda slow sometimes. 🙂 I think I may do a peanut butter pancake roll-up next week. I’ve been craving peanut butter pancakes, and why not roll ’em up?
Deb (Smoothie Girl Eats Too) says
oh lordy. I am on a total coconut obsession at the moment- thanks for just kitting that one outta the park!
Katie says
Wow Katie!! Those look AMAZING!!! I am sure your friend loved them!!! How sweet!! You are the sweetest girl!!!

I notice you often eat pretty decadent meals. How do you do it and stay so thin? I’m jealous. I have to constantly workout and watch what I eat or the pounds start adding up.
These look absolutely delicious!

Lindsay says
My word, you have me craving pancakes now. Chocolate pancakes, of course!
And I wish I could find that coconut butter you love so much!
Bekka says
Hello Mounds! Why’d you have to go and post that when I have no coconut in my house? Now I have to go to the grocery store and get some!
Daria @ Daria Can Cook says
Oh my word, Katie, you have outdone yourself this time. I want to jump through my screen and gobble those up!
I love the idea of a birthday morning surprise. I’ll have to think one up for some friends. 🙂
LindsayRuns says
How cute! One of my favorite birthday memories is very similar…I was kidnapped for late night ice cream! Also, decorating my friend’s car at 5am before school…we would always repeat for others, but the firsts and the actual surprise was always the best.

You are the pancake QUEEN!
Mae (OhhMay.Wordpress) says
I WISH I LIKED PANCAKES. Actually, I wish you could roll up waffles.

lunchiemunchies says
MmmMmmm…I made crepe cakes this morning! Totally fab, topped with sliced banana and chocolate almond butter sauce (almond butter, unsweetened cocoa, vanilla rice milk and stevia) Amazing and easy peasy. Maybe the carrot cake version next, or these mound bar ones!
Love xxx
Katie says
Hey Katie, I made your carrot cake pancake rollups the other night…but they didn’t turn out very well. :/ I don’t know what was wrong. They were really rubbery. Any tips? I really want to submit a photo for the giveaway, but I would like to try them again first.
Thanks…you can respond on my blog or email, so it will be easier for me to find. 🙂

Hi!
I just happened upon your blog today, I can’t remember how, after a number of clicks from one blog to the next I ended up here. And I am SO happy I did! I love your blog! I became vegetarian last October – I cut out everything except for milk, yogurt, and cheese. Last month I decided I want to work toward becoming completely vegan – I’ve had no problem eliminating the milk and yogurt – soy does me just fine. I am having a tough time with cheese, however. My live-in boyfriend is from Wisconsin, and you know how they are about their cheese. I haven’t found a non-dairy cheese that I have really liked so far – any suggestions?
Anyway, I love that you put all these awesome recipes up here – I’ve been cooking a lot more since I decided to go vegetarian/vegan, and I’ll definitely have to try some of the ones you have one here!
I’ve got my humorous blog already in full swing, but I’m in the process of developing a vegetarian/vegan blog as well to put up recipes, vegan shopping sources and health/beauty products as well as information about cruelty free and green living. Again – I’m so glad I found your blog – you have some great stuff here!
Stop by my regular blog any time 🙂 Once I get my veg blog up, I’ll stop back in and post you a link so I can get your input!

Glorious!! I love me some Mounds…but I think I might add some almonds for a little Almond Joy action:)
catms916 says
OMG must get machine to let me steal food from my computer screen!!! I would get up at any hour of the day to get me some o’ that!
I love surprising people for bdays, etc. My favorite memory though was taking the campus bus over to my fiance’s (then bf) apartment off campus, letting myself in and cooking up mini quiches before he woke up. I had time to cook up a ton of tiny quiche lorraines & made a homemade strawberry smoothie just in time to catch him stirring. Man was he surprised!!
Naomi (onefitfoodie) says
i think YOU Are one of the selfless amazing people for making her those! I bet she DEVOURED them!!!
for one of my friens bday i made her cupcakes with purple (her fav color) frosting and big “L” on each one bc her name started with an L..she loved them! (I thanked duncan hines ;))

I surprised the husband-friend one year by taking him on a weekend trip to the dunes for his birthday. And come to think of it, this year was a surprise birthday party.
How could your friend be more selfless than you? I’m being serious.
The Voracious Vegan says
These look AMAZING! What a perfect birthday treat. I wish we lived closer so you would surprise me like this when it was my birthday. Delicious and such a sweet idea.
Lauren says
Hi Katie,
I am definitely going to have to try these…
For my husband’s birthday this year I surprised him with Peanut Butter and Jelly Crepes. I think he enjoyed it!

ohkansascity says
For my best friends birthday one year, I surprised her with a party with her friends. She was always complaining how “depressing” her birthday was, so I went out of my way (cake and everything) to make it the best ever. I also made her rainbow pillows as a present.

RhodeyGirlTests says
Oh I love surprising friends for their birthdays!!! I tried surprising my husband the year we were engaged. I was supposed to fly in for the night just for dinner (long distance relationship) but it didn’t work out.. the flight was delayed many times and then they didn’t fly at all! I was devastated and cried and cried! Funny now when I look back on it but it wasn’t then!
JoLynn-dreaminitvegan says
You need to make a pancake and oatmeal cookbook with all the things you do to those two breakfast meals!
What a sweet friend you are to get up early and make breakfast for your friend!
restrainedchaos says
Oh my word. I just about swallowed my tongue when I saw that picture and title.
I think I know what I’m making for dinner Sunday night…
Thank you for a delicious recipe,

Hi Katie! I’m a ancient lurker but newbie blogger and I would like to link you up on my blogroll would that be okay? I love your site because I’m a fellow chocoaholic! Is there any other way to enter this contest? I don’t eat flour or own egg replacer. I tried to make pancakes using almond flour flax and water and failed miserably. I would love to enter this challenge but I’d rather not waste food.
Thanks.
Chocolate-Covered Katie says
Hi Victoria!
You definitely do NOT have to make traditional flour pancakes!! (And they don’t have to be vegan either. Just because I’m a vegan doesn’t mean I want to force my beliefs on anyone else.)
You can make any kind of pancakes you want: potato pancakes, oatmeal pancakes, or something else entirely! Be creative and have fun! 🙂

anywho, i’m a coconut addict at heart, and currently have two jars of coconut butter. i would love to try making my own at some point! also, went on a whole foods spree this weekend and picked up a bag of coconut flour and unsweetened shredded coconut (to replenish my stash)… gotta love bob’s RM.

These look so good! And since my husband doesn’t like coconut, they could be all for me!
Thanks for introducing me to Artisana – I’m addicted. I like to add a spoonful to my smoothies and let it turn into a hard ball of coconut. Sounds odd, but it’s so good that way!
keegan says
Chocolate, coconut, and in pancake form. Katie- you’re basically a genius!! My husband gobbled these up in about a minute, asking for more. Definitely a success 🙂
