There is nothing wrong with mint and chocolate together. 😀 I am sure I will be eating something green on St. Patricks day.

  2. Yes, we’ll have spinach smoothies in the morning (like every other day!) and I usually make fake Shamrock Shakes (very similar to the recipe you posted yesterday).

Our first date was on St. Patty’s Day so we usually go back to that same restaurant — no green beer though!

  3. I agree, mint chocolate should be a food group! It’s been my favorite since I was little and we owned an ice cream stand. My parents made fresh gelato every day!

I’ll probably eat so ethibg green on st. Patrick’s, just for fun. Hehe

  4. Wow you have quite the recipe roundup! And I am with you – mint chocolate chip SHOULD be it’s own food group. I love MCC ice cream more than anything!

  5. Freya says:

I don’t even celebrate St Patrick’s day :p I don’t think anyone does in England! But I like green things – spinach rules my life, so yes, in answer to your q!

  6. I totally agree with you, Katie. Chocolate mint should be it’s own food group.

  7. Anonymous says:

katie, when is the luna bar raffle?

    1. Sorry, I think you might mean Angela’s blog, I think she’s having some sort of raffle?

  8. At the bakery I work at almost all of our cakes decorated for St. Patricks day are mint chocolate chip! Your recipes look much better than the cake slathered in buttery frosting we make though, haha.

  9. Olivia says:

omg that raw grasshopper pie looks INCREDIBLE! I’m totes clicking the link to check it out right now;) your recipes always RULE!

  10. Ally says:

I love eating green (i.e. not to be confused with Kermit’s declaration that he “loves being green!”). I usually have either a huge bowl of salad greens (i.e. spinach, mache, arugula, romaine – with nuts and berries) or a saute of zuchinni, onion, and collards for lunch! I also LOVE broccoli – I can’t seem to get enough of it! I like it raw, steamed, or stir-fried. Another favorite of mine is collard green rolls (i.e. collard green leaves with nut butter and bananas/raisins/goji berries/etc.) Can you tell how much I love green, not to mention it is my favorite color, so I will definitely be wearing green tomorrow!

    1. Haha good! No one will be able to pinch you!

  11. Everything looks so yummy! I have tons of basil at my house…so something green is going to become of it :)

  12. Astrid says:

can’t wait to make that milkshake!

  13. I will totally wear green!!! I would eat anything you make! Your dishes are always THE BEST!!! 😀

  14. Most people think (and will think) that I’m crazy, BUT I absolutely can’t stand the combination of mint and chocolate!!! I never have liked it! LOL! On their own, I love love love them, but together, I get so grossed out! Have a great day! :)

  15. oh wow.. for a second i thought st pattys was TODAY- mega confused there…. but they dont even celebrate it here.. WEIRD
ANYWHO.. I LOVE THIS MINT KICK!! did di mention how i got peppermint extract at the store the other day? HALLELUJAH that stuff is SO SO SO SO GOOD!!! all thanks to yoU!

  16. Jess says:

i wear purple on the 17th, b/c when i went to ireland, most people in the area were wearing purple. i’m not irish though :(, and i’ll probably be having falafel

    1. Hmm, I wonder if they wear purple because they’re tired of the green stereotype. I’m going to google this; I’m curious now!

  17. I cant wait to make ALL of these! Mint Chocolate Chip is my favorite food group too….I thought I was the only one! YAY for mint and chocolate coming together to make the best combo ever!

  18. eve says:

My family used to do corned beef and cabbage for St. Patty’s day, but that was years ago. I might try making the vegan version if there’s time:

And I’m right there with ya on the mint chocolate chip love. One of the best flavor combinations out there!

    1. That’s what my family does too! Luckily for me, I never liked it and always had macaroni! 😉

  19. More than likely I’ll be having a Green Smoothie!! :)

Mint and chocolate were so made for each other. These recipes look delicious! Thanks lady!!

  20. Lisa says:

hahha hmm green. im weired out by those green bagels- mostly bc theres probably wayyy too much green dye in my opinion. and im not a fan of the “corn beef and cabbage” nor do i really enjoy soda bread (depends…) so, i usually wear this cute little leprachaun pin I have for my green spirit!! :)
altho i will most likely be eating broccoli tomorow, so that counts for green right? 😉

  21. I’m going to eat some lettuce! :)

  22. I really don’t like any green things!! I hated when they came up with green ketchup… it grossed me out!! I wil wear green though maybe!

    1. Oh my gosh, me too! And purple ketchup too. Bad, bad idea!

  23. I want to incorporate green into all my meals! Perfect way to use up all my spinach :)

  24. J says:

Happy Saint Patrick’s Day! I just wanted to say thank you for your response to my comment/question yesterday. I really appreciate your time and advice. Also, you’ve put me so in the mood for something green and minty. Still deciding what to make tomorrow although I did make shamrock shaped granola bars to share after yoga class today. Coconut, chocolate, banana, yummm!

  25. A.Cook says:

You can never go wrong with mint chocolate, in my opinion. The grasshopper pie looks outrageously good! Unfortunately I probably won’t have any time to cook anything tomorrow, so it might be that the only green I eat will appear in salad veggies. Still delicious! And I’m definitely wearing a green shirt!

  26. Mint chocolate chip was also my favorite when I was a child! My mom and I usually bake a ton of Irish Soda Bread for Saint Patrick’s Day. I also wear a lot of green, but that has the sort of unfortunate effect of making me look like a Really Tall Leprechaun.

  27. I fixed my blender and whipped up a batch of Coconut Butter so that I can make some of your lovely coconutty recipes, only to discover I’m seemingly allergic to coconut! No Melties for me :(

On the plus side, mint and chocolate do not pose a problem! So I think the thin-mint Brownies are next on the list (and for the record, I think they look beautiful!)

    1. Well, as long as you can have chocolate! 😉
      Happy green day, Mali!

  28. Alyson says:

My original goal was to eat all green food for St. Patty’s Day, but somehow I’m not sure how that will work out unless I go shopping and buy lots of kale, spinach, bananas, and lots of green food coloring? Hahahaha. I guess I’ll just stick to at least 2 green meals and see how that goes. :) I definitely plan to make a minty shake though. :) Hopefully raw, but if not, I’ll make it as close as possible. :)

    Happy Green Day tomorrow! 😀

  29. Anything green for St Patty’s day for me?

Yes green lettuce, kale, cucumbers, and veggies :)

I LOVE all your minty and green themed desserts….yummmmmmmy work Miss Katie!

I hope you have a great St Patty’s Day and don’t drink too much green beer. (kidding!)

    1. Hahaha isn’t getting drunk what the day is all about? 😉
Happy St. Patrick’s Day to you, my favorite green-eatin’ yogi!

  30. Namaste Gurl says:

Fun- I need to get on posting my St. Patty’s day recipes- i’m a bit late, but no worries! I guess I just don’t really think of it as an actual holiday, as I’m not irish. Heck, it’s an excuse to eat more greens, in my terms!

  31. I can’t believe st pattys day is tomorrow. I’ll be sure to eat green first thing in the morning!

  32. I try to eat something green everyday! My stepdad calls me a rabbit, because all I eat are “twigs and trees” 😀 Loving all of this green food, except the spinach ice cream scares me a little!
Maybe I’ll start off with the baked oatmeal and go from there 😉 And I have yet to make the red velvet pancakes either! Slow down, woman! Hehe

    1. lol I feel like I’m going TOO slowly! I have too many recipes and not enough time to write posts for them all :-?.

  33. bitt of raw says:

I wear green all the time and my coat is green so i feel safe. It used to be a big deal when I taught so I’d give all the kids a green sticker to be safe from pinching. Trader Joes always delivered with the freebie stickers.

  34. Gen says:

Wow! I now am craving green food in a major way! 😀

  35. Disturbed says:

My challenge for St. Patrick’s Day is to try something-anything-of your recipes.
Any ones that you think are a must?

    1. The chocolate fudge! Especially the raspberry one… but that’s one exactly St. Patrick’s Day-y. So… well anything with chocolate ;).

      1. Disturbed says:

I will look at it :)

  36. nadia@ says:

katie katie katie… guess what I am about to make??
my first chocolate mint milkshake!! I just got peppermint extract and am beyond excited! XO will let you know if I manage to make it decently :)

    1. Ooo excited! Definitely do let me know!

  37. Renée says:

I appreciate all the mint chocolate chip recipes personally!
I already made some gluten-free cookies with green sprinkles for St. Patricks day :)
And I have green on the lining of my jacket which totally counts, no one can pinch me 😉

  38. I dont even like mint and I want every single one of these

  39. Emma says:

High five girlie! Mint choc is my ultimate favourite flavour combination! Your recipes look amazing as always – you just keep getting better :-) I mentioned you on my blog today :-)

    1. Awww thanks! (P.S. Your link says your blog doesn’t exist!)

  40. Jen says:

I plan on making a pasta dish with peas and spinach. Yay for green!

  41. I probably won’t make anything green, but I’m sure I’ll eat some green veggies…and maybe a green top is in order!!

  42. Zo says:

Mint chip is one of my favorites (we used to beg my mother to make her grasshopper pie…she’d relent about once a year). I’m excited to see your minty recipes.

I’ll probably drink green tea tomorrow (safe bet since I drink it almost every day…)

  43. I’m definately wearing green tomorrow and I want to make something special. However, I’m going to be without my blender tomorrow. Do you have any “green” recipes that don’t require a blender?

    1. LOL I guess I am a bit blender happy, huh? :-/
Hmmm… the baked oatmeal doesn’t! Or my Candy Veggies:

  44. Thanks Katie!
The baked oatmeal is a great idea I’ve been meaning to try it.
I think I’ll make some Candy Veggies for dinner tomorrow. I love roasted veggies!
    Candy! + Veggies = yum

  45. Katarina says:

The green colors are so lovely! Looks delicious!!

  46. Lyza says:

Mint chocolate chip was my favorite icecream as a kid (same as the thin mint girl scout cookies, aside from the peanutbutter patties :) ) :) These recipes make me happy!! :) Especially since there’s spinach–totally guilt free, yay.

I’ll probably have guacamole, cucumber, and broccoli tomorrow :) But that’s kind of normal for me!! 😛 I’m pretty much always chock full of vitamin k 😛 Next monday is my grocery day again though–I’ll make the day special and pick up the ingredients for the mint icecream :) That would make my day!

  47. I’ll definitely be having some salad and probably kale!

  48. Mint chocolate is one of my favourite flavour combinations so I don’t mind a bit, keep ’em comin’. 😉

I start off my day with something green everyday in juice or smoothie form so I guess I will unintentionally. But perhaps I will make time to whip up one of your delicious desserts for a special treat.

  49. haha! that’s so funny! when i was little mint chocolate chip ice cream was it’s own food group. tomorrow I’ll probably have some spinach in my shake and a salad:)

  50. shannonmarie says:

Of course I’m wearing green. I’d get pinched in this family if I didn’t. Even my underwear is green. Ha ha. I can’t believe I just typed that online.

So far, I’ve had green juice before my workout, followed by some overnight oats inspired by your Irish Soda baked oatmeal. I used the same flavors, including the baking soda, even though I didn’t bake it. The baking soda is important for that authentic flavor.

Later, I’ll probably make a raw pudding with lots of greens and spirulina. Then, I might have a mint chip smoothie for a mid-day snack (shamrock shakes are a must on St. Patty’s Day).

For dinner, I’ll probably make a vegan Irish stew or some kind of potato dish. Colcannon or vegan bangers and mash are some of the possibilities. Oh yeah, and the kids have requested broccoli, celery and green apples as their sides.

  51. Everything looks great!!! Happy St Patty’s Day Katie!

  52. I have such fond memories of Blue Bell’s mint chocolate chip ice cream from when I was a kid… such a tasty combo!
