Way better than regular baked potato skins! It’s a very good idea to make extra sweet potato skins, especially if you’re expected to share. You can even bake the skins ahead of time and serve them plain, setting up a Sweet Potato Station with bowls of different toppings so the guests can make their own DIY baked sweet potato skins.

Topping ideas include sliced green onions, different flavors of shredded cheese such as Daiya vegan, bac’n bits (which surprisingly do not actually contain bacon), or anything else you can dream of that sounds like it’d go well with sweet potatoes!

Loaded Baked Sweet Potato Skins 

(serves 6)

  • 3 yams or sweet potatoes
  • oil or oil spray
  • toppings of choice

Poke a few holes around each potato with a fork. If using the microwave: wrap the potatoes loosely in paper towels and cook 14 minutes. If using the oven: Preheat oven to 400F place potatoes on a tray or baking dish, and bake for one hour. For both methods, once the potatoes are done, slice each in half lengthwise and scoop out about 2/3 of the flesh (save this scooped-out flesh). Preheat oven to 430 F, and either brush the skins with oil or spray with oil spray. Place on a baking sheet. Bake 15 minutes, then remove from the oven and re-stuff with filling. You can also add cheese-type shreds (such as Daiya) at this time. Place under the broiler, and broil (or bake at the oven’s highest temperature) 3-4 minutes or until cheese shreds have melted.

    This is actually a SUPER classic recipe. People on the gallbladder diet have been making it this way for decades, except we usually add in minced garlic, stir in vegetable broth, and other spices for flavor to keep it low/no fat. While this is far from a new or revolutionary recipe, it’s good to see an oldie but goodie.

    As for the Superbowl, I won’t be going near it. In fact, I hated even typing that, and will not tolerate anything related to nachos, hot wings, beer, Katy Perry, or Seattle. I literally eat, sleep, and breathe Packers and am beyond pissed. They deserved it. I just hope Seattle gets curb-stomped that night!

    Awesome recipe. I love that I can make your recipes for non-health food loving crowds, and it always goes over like gangbusters. You are one of my best foodie crushes.
    Speaking of which, when I clicked on the link for nutrition facts, I saw a link for nutrition facts for a cheeseball using strawberry cream cheese. Is the recipe waiting for its debut? I would love to try another cheeseball recipe!

    OMG! Peanut butter pudding cake sounds like THE MOST DELICIOUS DESSERT EVER! Chocolate pudding cake has been my favorite recipe on the blog for ever! I have made the chocolate version about four times, and the pumpkin version about ten! I’ve even experimented multiple times with a vanilla version just by not adding the chocolate, and it was wonderful! Could you pretty PLEASE post the peanut butter version of the chocolate pudding cake?? 😀
    P.S. I was so mesmerized when I got to the end of the post about the pudding cake I almost forgot about the potato skins! They look delicious! Lol! 🙂

    this looks delicious! Do you have any ideas on how to mix the toppings up a bit? I’m thinking I could put bacon bits in and maybe a little guacamole and spring onion – anyone else got any good ideas?

      You could always google search “baked potato bar” or even google image search it for some great ideas of what to put on/in loaded potatoes.

    I thought that you weren’t supposed to eat sweet potato skins? Not sure why I thought that, I eat regular baked potato skins and LOVE them but for some reason I thought that sweet potato skins were high in something that was dangerous… hm. Either way these look delicious! If anyone can respond if they know anything that would be appreciated.

    When you are sweet potato skin recipe you said you can use toppings of your choice I want to use bacon can you cook the bacon before you put them in the oven to melt the cheese or do you put the bacon on raw unto the potato skins and cook it at the same time the cheese is melting

    These were pretty easy to make and good. I added a tbsp of unsalted butter and sprinkled about a tsp of cinnamon into the mashed portion then topped with 1 tbsp of cooked bacon(25cal. each) and broiled for 3 min. Yum!
