With Memorial Day coming up tomorrow, these hearty sweet potato burgers could not come at a more perfect time!

I chose to top mine with sliced avocado, butter lettuce, and homemade ketchup, with a side of my favorite Crispy Oven Baked Fries.

However, the veggie sweet potato burgers are also really good without any toppings at all… or even eaten like fritters without a bun or crumbled into a salad for a lighter option.

These sweet potato burgers by Kathy Patalsky are one of over 220 enticing recipes in her new cookbook, Healthy Happy Vegan Kitchen. Kathy’s cookbook has everything covered, from appetizers to salads to the main event.

Being a sweet potato lover, I had to go for these burgers first, and the sweet potato burgers do not disappoint.

Homemade Sweet Potato Burgers (Vegan, Healthy)

Sweet Potato Burgers

This healthy sweet potato burger recipe is totally vegan, no eggs required.
Prep Time 25 minutes
Cook Time 20 minutes
Total Time 45 minutes
Yield 5 burgers

Ingredients

  • 1 medium sweet potato
  • 1 1/2 cups drained and rinsed canned cannelini beans
  • 2-3 tbsp oat or wheat flour
  • 1 tbsp tahini or nut butter, softened
  • 1 tsp pure maple syrup, or pinch stevia for sugar-free
  • 1/4 tsp garlic powder or spice blend
  • salt, pepper, optional cayenne or other spices
  • optional 1-2 tbsp nutritional yeast
  • If frying: 1-3 tsp vegetable or coconut oil
  • optional 1/2 cup panko breadcrumbs or 1/4 cup cooked brown rice
  • toppings of choice

Instructions

  • Preheat oven to 400 F. Pole a few holes in the potato using a fork. Bake until sticky-sweet and very tender, about 1 hr. Remove skin and place the potato’s flesh in a large bowl. Add beans, flour, tahini, maple syrup, spices, and seasonings to the bowl, and use a fork to mash. Cover and refrigerate until the mixture is firm enough to easily handle (15-20 minutes). The mixture will be soft and moist, so add the extra flour as needed (or fold in 1/4 cup to 1/2 cup breadcrumbs) until you can form patties. *If frying:* Heat 1 tbsp oil over high heat in a sauté pan. Form 5 patties and coat them with the breadcrumbs, then place in the hot pan and cook 2-3 minutes each side or until browned. Transfer to a paper towel and let cool. *If baking:* Omit the panko coating, and fold in 1/4 cup cooked brown rice for added texture. Bake at 350 F on a greased baking sheet for 20 minutes. Burgers will be lightly browned.

If I’m in the mood for alfredo suace, I leave it plain… If I’m in the mood for a vodka sauce type thing, I add tomato sauce. If I want more cheddary- I add nutritional yeast… I even have a vegan Welsh Rarebit Mac…. Ohhhhhh… Now I’m hungry!!

    My favorite sweet potato dish is to first boil potatoes until soft, about 30 minutes. Then u quarter them lengthwise, brush with olive oil and salt and pepper and grill about 20 minutes – yummy!

    My favorite meatless meal is definitely a huge salad full of fresh greens, differents veggie and some marinated & grilled piece of tofu or tempeh with a homemade dressing. During cold weather, a soup full of veggie is a real confort food and a treat for me.

    Oooh, that is a hard one (as I predominantly eat meatless). I would have to say daal (Pakistani/Indian lentils) with roasted vegetables is one of the top, and saag (Pakistani/Indian combination of dark leafy greens [NOT only spinach as spinach =palak]) with marinated tofu or tempeh. Nut butters are also one of my favorite vegan foods (as well as your amazing recipes) 🙂

    It’s really hard to choose a favorite meatless meal when you have been vegetarian for nearly your entire life, like I have because it means that I’m really just choosing my favorite meal in general. However, I think I would probably have to go with tofu and vegetable stirfry over udon noodles currently, though I also absolutely adore pesto pasta and last night I made homemade vegan blintzes for the first time and those were amazing too! So it’s really a hard choice!

    I think my favourite vegan meal has to be falafels with sweet potato wedges and hummus to dip. Mmm. But a close second is my newfound favourite portable lunch- lentil wrap with smashed avocado as the spread. Sounds strange but it is amazing and I’ve got my mum hooked too!     I recently had falafel for the first time. I had no idea what it was, and thought it was some kind of Middle Eastern kebab dish. I read somewhere that it was fried balls of ground chick peas and thought that’s something I’d like to try. It was so fantastic! One of the best ‘new’ dishes I’ve tried in a long time.

    I went to a vegan cooking class as I babysit my grandson in another city every week and my daughter and her family are vegan. I have learned a lot and the recipes are very tasty. One of my favorites is the “Quinoa Crusted Tofu Nuggets” with a “Not Your Hidden Valley Ranch” dressing that is made with cashews and garlic olive oil. They were the first meatless meal that convinced my carnivore husband to become more of a rabbit. Topped with avocado “cream” sauce, these enchiladas are the BOMB!     My favorite meatless meal is pizza. I use flat bread and a low calorie tomato sauce. I chop a variety of vegetables(broccoli, zucchini, tomatoes) and drizzle balsamic vinegar. I then sprinkle blue cheese and goat cheese and let it broil in the oven.

    I just made these with the following changes: black beans (because I didn’t have white), no sweetening (the potato was sweet enough without it), 1/2 ts garlic pepper instead of 1/4 ts (it seemed to need it), 1/2 C cooked quinoa (it sounded better to me than rice), no flour (didn’t need it), and a dash of soy sauce (don’t have tahini). Also, I microwaved the sweet potato. But other than that, I followed the recipe exactly! Just kidding. I baked 6 burgers, and they turned out terrific. Luckily, I have a ripe avocado for a topping.     We are making chopped cabbage, cubed sweet potato, grated turnip, sauté in olive oil, add salt and pepper and 1 1/2 teasp of caraway seeds…. you get it going in the skillet, transfer to baking dish and bake about 30 min or until sweet potatoes are tender. There is also a “miner’s sandwich” I make that uses the same filling with the addition of cornstarch. The pastry dough is made with flour, butter and coconut oil. You make individual pocket style “to go” sandwiches with this filling and bake. They are delicious.

I’m a vegan since I was 16 (I’m 19 now) and I mean: choosing my favourite meatless meal? What a challenge.     Although it’s super-simplistic, I also really like it – quinoa and red lentils is one of my favorite meatless meals. I do 2T of each and usually add in some vegetables, sometimes tofu, and depending on how I feel nutritional yeast, or butter, lots of salt, and some pepper. Even without all the add ins, though, I find it nice – if I thought of food as comforting, this would be the dish. 🙂

    It’s hard to pick one favorite, because it changes a lot…but one in heavy rotation is mushroom pasta, with or without vegan sausages. Another favorite, although I haven’t made it in a long time is Isa Chandra Moskowitz’s vegan stew. It takes work, but it’s so good!

    These burgers look like they might make a favorite really quickly. 🙂

    As for our 1 and 3 year old, their favorite staple breakfast is “Everything Oatmeal”. We throw puréed lentils, zucchini/spinach, sweet potato/butternut squash in with banana for sweetener and various berries. 🙂

    These look amazing! I have been following your blog for a while now Katie, and it’s been a great eye-opener for me because I am not vegan or vegetarian, but I love to try new things. This cookbook looks great because recently I’ve been trying to cut down the amount of meat I consume. My current favourite meat-free meal is Taiwanese-style “mixed vegetables chow mien” with lots of tofu and mushrooms, but I am going to keep experimenting!

    I’m sooo trying this. I’m a meatless burger fanatic.

    Even though I’m 28, I think my favorite meatless meals are all geared toward little kids. I loooove things like veggie corn dogs, chik’n tenders, any veggie burger, pizza, etc etc. I also do a lot of soups, stews, etc etc. One pot meals are wonderful. Especially in the slowcooker 🙂

    Our current favorite is from the Thug Kitchen cookbook (my husband just LOVES the prolific use of the F-bomb), 5-spice fried rice and smoky maple tofu. My husband HATED tofu until we tried it in this recipe. It’s like vegan bacon. And we’re omnivores!

    These burgers look great – I’ve seen so many great reviews for this cookbook, would love to own a copy! My favorite meatless meal would be cauliflower “wings”. Anything in buffalo sauce is delicious, but the crispy cauliflower works perfectly with the spicy sauce!

    I made these yesterday, for Memorial Day, and they were soooo good! I actually couldn’t eat the whole thing because it was so filling. Amazing taste. I am going to try baking them next time, as I felt like I used too much coco oil to fry them and they never got super crispy anyways. Still totally worth it and a delicious go-to when you’re over black bean burgers!

I’m new to being vegan so I’m loving experimenting and cooking loads and I would say that at the moment my favourite meal is a big bowl of greens (kale, broccoli and spinach) with a portobello mushroom grilled in maple syrup and coconut oil with my homemade satay dressing! Sooo yummy! If I’m feeling super indulgent I’ll add some sweet potato fries with an avocado dip 😛 who needs animal products?!

    I love making garden soup. Just take a squash and any other fresh roastable vegetables, roast them till there soft and blend in my vitamix with vegetable broth. So delicious.

    This looks like a delicious recipe. I am confused about the actual time it will take to make them though. The recipe says 20m, yet you need to bake the sweet potato for 1 hour, mix it all up, cool the mixture for 15-20 minutes, and then cook them. Do you remember how long they took to make, Katie? (or anyone else?)

    I made these for dinner tonight and they tasted amazing! Only thing is, they were still a bit too soft for my liking. It kept squeezing out the sides of the bun with each bite I took. I added more flour to try and thicken it up a bit but that didn’t seem to help either. Any tips or ideas?

    NO vegan meal is as healthy as a meat & veggies meal!
    You vegans love to tack the word “Healthy” on in front of the names of your vegan meals because you have nothing else to say for them. They’re not high in protein, they’re too high in carbs and they’re full of unhealthy omega 6 fats, to name a FEW problems.

    Making these tonight! I’m using peanut butter since my mom is allergic to both almond and sesame. I’m also using pumpkin purée since I don’t have sweet potatoes at the moment. I’ll let you know how they turn out! Also, my favorite meatless meal would probably be your vegan meatloaf cups! I love those; they’re so convenient to take into lunchboxes, not to mention delicious and easy to make!

      These were great! I had mine crumbled onto baby spinach with hot sauce and Dijon mustard. I have one leftover (surprisingly… it was so good, I’m starting to doubt it will make it through the night…); I’m sure it’ll keep just fine in the fridge.

    These tasted delicious! We enjoyed them with avocados slices, BBQ sauce, grilled onions, and all in a lettuce wrap. However, I don’t think 20 minutes was long enough to bake them. Although yummy, they were too soft and mushy to really be a “patty.”
