haha I cannot imagine that there can be so many uses for the word “chocolate.”

BTW Thanks for this amazing site! I’m currently enjoying…obsessing about all your recipes. Although I’ve never been much of a cook, your site is making me cook so many healthy things! Plus, I love the raw recipes and am more open to vegan foods now! :) So hopefully I will be healthier as I have really bad culinary skills (i’m impatient- currently working on it) and acid relux :(
Please don’t ever stop blogging!

Aww thanks, Kit! And LOL I am so impatient too! That’s one of the main reasons my recipes usually don’t have a ton of ingredients or take a ton of prep work… I don’t like to cook. I just like to eat! ;)

I love your blog!!! I have shared it with a number of friends who are lactos intolerant or have issues with gluten. I just love to eat. My only question is…do I have to eat “other stuff” or can I subsist on “Chocolate Covered” Yumminess alone? Keep up the good work!

Haha of course you can subsist on chocolate alone! That’s my favorite saying: “Man cannot live on chocolate alone… but woman can!” ;) ;)

Wondering if you ever posted the recipe for the lasagna you made over the holidays? I have been looking for it but haven’t found it and wonder if I missed it somewhere?

Chocolate-Covered Katie January 24, 2012 at 5:22 pm

I haven’t! I need to make it again so I can remember to get a photo this time ;) .

Do you have a yummy chocolate granola recipe? If not, I think you should create one. Thanks for all your wonderful recipes. I love your chocolate lace cookies.

I don’t have any granola recipes… I need to work on that!

do you happen to have any tried and true recipes for vegan alfredo sauce? any that i have tried just don’t make the cut.

Reply

Chocolate-Covered Katie February 10, 2012 at 5:59 pm

I have my three-ingredient alfredo: http://chocolatecoveredkatie.com/2008/11/21/three-ingredient-alfredo-sauce/

I’m not sure if it’s what you’re looking for, though. I’m working on a vegan fondue recipe that’s more like traditional alfredo, but it’s not finished yet :( .

I came across your recipes and essentially, your blog, a few days ago. I have been looking for healthy alternatives to baking scrumptious and decadent desserts and was so excited to find your site!
My only request? Come out with a cookbook! :) I have bookmarked favorite recipes but I would totally prefer and love to buy a book of yours!

Keep the recipes coming! As soon as my VitaCost order arrives, I will be trying your deep dish cookie pie and chocolate chip blondies!

That means so much to me, Lindsey! I *have* started on a cookbook, but it’s a slow process!

You are a genius! Such yummy recipes that are so much healthier than other recipes that involve processed ingredients! Your website is my new go-to site when my “no refined sugar” diet deprives my sweet tooth…which is pretty often :)

THANK YOU so much!

I’m sitting here snacking on your Snickerdoodle dip and it’s simply scrumptious. I’ve made a few of your other recipes and they’re all soooo good. Just wanted to drop a comment saying THANKS FOR YOUR BLOG, KATIE! (: You rule immensely.

Katie…..I have a challenge for you……to create a recipe for a creamy fruitsicle! I have been working on it for months and cannot seem to get that same creaminess as the store bought type. My fave is So Delicious dairy free Creamy Orange. It’s made with coconut milk….and it is so creamy and tasty. I just can’t figure out how to replicate that same consistency. Any fruit flavor would be delightful…..like mango, pineapple, raspberry…..yum!

Hmmm… I can try! Maybe with coconut milk (the canned, full-fat type) blended with fruit?
Or, there’s a recipe in “How it all vegan” that uses soft tofu.

CCK!! Personally, I love salty-sweet combos, so it would be awesome if you could think of something for caramel popcorn, or of course ChOcOlAtE covered popcorn or pretzels!

I made your mini-lemon poppy seed muffins the other day, your chocolate pie before that (mmm it was SO good, couldn’t even tell it was made with tofu!) and now, I am waiting for breakfast coconut bread to finish baking. :-) I’ll let you know how I (okay, WE, if I MUST share) like the bread!

Thanks and have a GREAT day!

Katie,
First of all I love your blog…and yes I think you are a cutie pie just like everyone else.
Your banana-split chocolate butter reminded me of when I was a child and my mother would
smash bananas and mix peanut butter with it and spread it between 2 Jacks cookies…they were heavenly.
Thanks so much for all your time and hard work and for sharing all you wonderful recipes with the world.

Hi Katie! I’ve been following you on Pinterest for quite some time and I’d love to try some of your recipes, but somehow I’m always missing one (or more) of the ingredients. I thought it would be a great idea if you could include on your website a list of cooking essentials, maybe? Like all of the ingredients you should always have on hand. Thanks! Your site is great!
