Ok. I’ve just stumbled across your blog and am now severely annoyed that I’m only just finding it and haven’t been trying all these delicious recipes for ages. I think that some of these may prove to be real winners for me on my early run days – which is awesome for me as I need something before a run and have struggled to find stuff that works. I’m so glad you found me :). I can’t really recommend a diet plan for you, since I don’t know anything about your specific situation… and I’m also not qualified as a nutritionist or anything. But most of my recipes can be easily modified to fit a low-calorie lifestyle. Just use the optional applesauce in place of oil in my recipes, and try stevia in place of sugar.

Sadly, I wouldn’t have tried it in a MB… I just don’t think it’s powerful enough. If you can find it, I highly recommend buying the Artisana. It’s expensive, but a little really does go a long way (when you think about the fact that a candy bar is like a dollar, but you eat it in a single sitting!)
Oh, and I use regular rolled oats for the boatmeal (either Quaker or Old Wessex organic. I don’t use quick oats for this recipe).

I tried this recipe i found on the web the other day (can’t remember where i found it though) and thought i should share it with you.
Its for a chocolate avocado mousse recipe
1 Avocado
1/4 cup of cacao powder
Agave nectar or honey to taste (i used 1/4 cup, but i like it sweet)
1 tsp of vanilla
Blend it all together until it is very smooth and creamy, put in the fridge to chill and enjoy the richest chocolatey mousse ever.
Next time i’m going to add some hazelnut butter, so it will taste like a nuttella mousse…oh i am soo excited.

Just another suggestion: Maybe you could also group them by purposes like wedding *g*, holidays and so on….
Recently I was looking for some vegan party snacks (especially fingerfood) that are as healthy as possible and especially sugar-free ( I can’t prepare a batch of muffins without eating some – too many- of them …) and easily to transport on a bicycle (so facy creamy cakes don’t work unfortunately..). Do you have any suggestions?
Would be cool if you had an idea :).

I’ve never been good at following recipes, but I usually use several recipes at once as references and your recipes have been at the front of all my desserts lately. I’ve stumbled on a problem, though. I’m trying to make a flourless chocolate cake using sweet potato. I haven’t been able to find any recipe of this type, either. I came up with a recipe using about a cup of sweet potato puree, 3 eggs, half a banana, a handful of oats, copious amounts of cocoa powder (6 Tbs?…) and about 1/3C honey/molasses, as well as a bit of baking powder&soda. Its not quite sweet enough. Do you have any suggestions other than more honey/molasses/sugar? Hey! I’m in loooove with your website! I’ve just recently become super health-conscious and love experimenting with recipes. I’ve never been good at following recipes, but I usually use several recipes at once as references and your recipes have been at the front of all my desserts lately. Better for you Pancakes (Serves 2)
1 cup Traditional Oats
3/4 cup Fat-free Cottage Cheese
pinch of cinnamon
2 eggs
Combine in a food processor or blender, panfry, then top with your favorite fresh fruit and a dash (behave) of maple syrup!
So delicious! I hope you enjoy them as much as I do!

It’s so funny you’d mention snickerdoodles, because I JUST made some today!! I haven’t posted the recipe yet, but I’ll write it out quickly here. If you try them, I’d love to know what you think!
Skinny Snickerdoodles
(Makes 20-26 cookies)
3/4 cup ww pastry flour (or white?)
1/4 tsp baking powder
level 1/4 tsp salt
1/4 tsp cream of tarter
1/4 tsp plus 1/8 tsp baking soda (level)
1/4 cup white sugar (or sucanat?)
1/2 tsp pure vanilla extract
1 and 1/2 tablespoons nondairy milk of choice
1/4 cup vegan butter substitute, such as Earth Balance
Preheat oven to 350F. Combine dry ingredients and mix very well. In a separate bowl, melt the vegan butter, then stir in vanilla and milk. Pour dry into wet and mix again. Form balls. You can opt to cook them as-is, but for true snickerdoodles, roll each ball in a mixture of cinnamon and sugar (either equal parts cinnamon-to-sugar OR two parts sugar to one part cinnamon, depending on how cinnamon-y you want your cookies). If you want soft cookies, you will need to get the balls very cold before cooking them. (So roll the balls, cover in the cinnamon-sugar, then fridge until cold.) Cook for 10-12 minutes. They’ll look underdone when you take them out, but that’s ok. Allow to cool before trying to move them from the cookie sheet. Store in a plastic container.

You can use cookie cutters on any of the larabar-type recipes (like the pb cookie dough cookies). You could probably also do the snickerdoodles into cookie cutters, but I’d fridge the dough after cutting them, because they’re softer if they’re cold before being put in the oven.
Same with the dough for the pumpkin-stuffed cookies (minus the pumpkin part)… I *think* it’d work with cookie cutters, but I’ve never tried it.
Oh, and the graham crackers can be cut into shapes too. Hope that helps!

Since I found your blog two weeks ago, I have been making the 1-Minute choc cake everyday and have recently started baking the Not-Guilty choc chip cookies. They are out of this world! I love that you use whole grains, a bit of healthy fat and minimal sugar in your recipes. That is just the way I like my desserts! I also have a little baby, and am really excited that there are healthy desserts we can make together when she gets older. Yes, we will be making your desserts for years to come!
A couple questions for you: 1) You seem to use spelt flour in a lot of your recipes. Is there a reason you opt for that particular flour? Can I sub with ww pastry flour or oat flour? 2) I am planning to make your sugar cookies next. How did you make the frosting for those cookies? Also, do you have any good recipes for healthy cream cheese frosting (for cinnamon rolls)?

I love the MB because it’s single-serving and because it’s so easy to clean (just pop the cup in the dishwasher). It’s only $49, and if you print off a coupon for BedBathBeyond, you can get 20% off as well :).
Other than that, I also use my Cuisinart food processor a lot. It’s 7 years old and still works really well!

I have only tried one of your recipes so far, but am excited to try the rest. I have found out that I am sensitive to wheat, so your gluten-free ideas sound great. I am also trying to lose weight, so your recipes will help me have some dessert. I do have a couple of questions. Is there a difference between coconut butter and coconut oil (which is in solid form in the store)? Also, do you think brown rice flour could be a substitute for the spelt flour?

I don’t think you can sub brown rice flour 1-for-1 for spelt, because it lacks gluten (a binder). I don’t know much about gf baking, but I do know they advise you to mix up flours and add xantham gum… Sorry I can’t be more helpful!

Hi, I’m sure you’re just inundated with comments and questions all day so I won’t be offended or anything if you don’t ever get to this question.. I’m a mostly-vegan with annoying stomach issues so I can’t do (a lot) of gluten or (a lot) of sugar or fructose or sugar alcohols… yeah, tons of fun. I found these great bars, Nugo Slim, that are sooo close to perfect. Except (1) I’d like to step away from relying on whey protein and (2) they’re kind of light as in I eat one and they’re fun and all but don’t really hit the spot. Like Crunch bars.
So I was thinking, who better to make a vegan delicious version than you? The soy crisps they use are fun, but maybe if they also had something with tooth like almond meal or oats or..? So they’re more a 200 calorie 20g protein “meal snack” or breakfast (in a diet that is 5 small meals a day) and cheaper per serving would be great too, of course.

I was wondering, it seems like most of your dessert recipes call for a food processor. Are there any that don’t need one or that I can use a blender for instead?

Many of them don’t need a food processor! Or you can use a Magic Bullet for many of them :).
But if it specifically says food processor, I can’t vouch for the use of a blender. (And in the chickpea cookie dough dips, I would definitely caution against a blender because it’ll crowd the blender and the top beans won’t blend at all… maybe try it in batches if you must use a blender?)

By the time it reaches the plastic bottle made with BPA and gets to the grocery stores it is rancid. I think you would be interested in reading about the health value of coconut oil and safflower oil. Thank you for giving us your forum for healthy options.

I have been recovering from cancer, and people say that weight gain does not happen during this time, but I’m proof it does. Hi Sarah, I try to list serving sizes as often as possible, but for some recipes it is difficult to say an exact number because you can roll, shape, or cut things like cookies, pies and bars, into different sizes.

I spent most of last night reading it, and this morning I just couldn’t help myself coming back for more! You’ve inspired me – hopefully you’ll deem this recipe I came up with over the past couple of days worthy of inclusion in your blog!
You’ll Never Guess Chocolate Pudding!
(No dairy, no gluten, no sugar and surprise healthy ingredients!)
½ ripe avocado (make sure it yields slightly to touch like a ripe pear)
1/3 lb Silken Tofu
2 squares unsweetened Bakers chocolate
8 packets Truvia (I like dark chocolate so I’m not used to things being SUPER sweet – 8 packets should do it but feel free to add 1 or 2 more to taste)
Dash vanilla extract
Tiny pinch salt
4-5 Tblspns regular almond milk (or rice milk)
Blend avocado and tofu and vanilla extract in blender until smooth. Melt chocolate squares with dash almond milk in microwave for 1 minute, stir until completely melted (may need to micro for a few more seconds – if too hot add dash more almond milk and stir to smooth out). Add melted chocolate and Truvia to avocado/tofu mixture and blend until completely smooth. Divide into 3-4 pudding dishes and chill in refrigerator for 20- 30 minutes until set. I don’t think it will really last more than a day or so (no preservatives and it’s yummy) so only make a batch the size that you’ll eat within that time. Whips up quickly though.
I also tried adding a drop or two of banana extract – that was awesome (you could probably add real banana too but haven tried that). I’m thinking mint chocolate or raspberry might be tasty too!

I just found your blog and all I can say is wow!! I have been toying with going vegan for a while but my main issue was my love for dessert. You just solved that problem. I’ve looked at pretty much every online tutorial and it might as well be in Chinese because I’m just not getting it! I was wondering how you created your drop down labels and recipe index with pictures and I would really appreciate any advise you could give me or any tutorials that you used to help you.

I LOVE this Site!!! My girlfriend who is super into healthy eating turned me onto it. It’d be cool to have a section that talks about your tips and tricks with substitution and ingredients. I know you make notation about the properties of vinegar or substituting yogurt in cooking but it would be so cool to have a separate section for it. Blessings to you! I am inspired (and awed) by the work you are doing here. I have been using your recipes in coordination with my WW program, and they work seamlessly! I’ve loved everything I’ve tried. While I am not vegan, I have to admit that, using these recipes, makes me realize how little I need/want animal products. Pretty cool, indeed!

I think the food and pictures look great, but every time I click on chocolate breakfast bread recipe I get video, pictures of ingredients etc. there are no ingredient amounts? I see ingredient amounts for cookies and many others but not for the bread?
