But Where’s the Cream Filling?

(More importantly, where is my brain??)

I forgot to show you the most-important part of Tuesday’s post…

vegan cream cupcake

The money shot: chocolate Cream-Filled Cupcakes.

Taking healthy desserts to a new level. (Also, does anyone remember those “Where’s the cream filling” Hostess commercials? The ones where the bear tries to bite a giant truck that looks like a Twinkie??)

If you can’t find Ricemellow Cream and don’t want to use the not-so-healthy (but still entirely vegan!) Smuckers…

Other cream filling options:

1. Soy-Free Vegan Cream

2. Vegan Cool Whip

Moving on… Yesterday, I finally got around to updating the New Product Alerts page with items such as this White Chocolate Chip Brownie Clif Z Bar:

Oh, tease me with Pumpkin Cream-Cheese Bars! I have been unable to buy canned pumpkin for months here in CA. Supposedly there has been flooding in the pumpkin fields this year so my regular store will receive little of it and expects to sell out quickly.

  2. Jenny says

    Pumpkin pie brownies all.the.way. 😀

And ahh, re: your response to my response on your first post with these… I never doubted you being vegan with the comment about the cream, it was more of the fact that I hate creamy things, haha. Obviously this post would bring me even more agony. XD Though it just occurred to me that, duh, I’ll just make them without cream… Definitely not a fan of creamy consistencies unless it’s ice-creamy. (And that’s why I voted for pumpkin brownies… Well, that and I love brownies. Brownies have CHOCOLATE!)

I’ve never had a Clif Z-bar… Even though we have Clif bars in Canada, we don’t have the Z-bars, nor do we even have all of the Clif bar flavours. Definitely not the chocolate brownie ones, which I wanted to try. 🙁 You probably don’t eat Clif bars often anyway, do you? If you did, what would your flavour of choice be? (Is that a stupid question? Is there a chocolate-coconut one? Heh heh.)

    • Chocolate-Covered Katie says

Yeah, I don’t eat them very often. Once in a blue moon, I’ll have a Maple one (purple package) or an Oatmeal Raisin one (green package), but I don’t really like any of the others. I do like the chocolate chip z bars, though!

  3. Anonymous says

Cheese bar! But anything pumpkin is fantastic, although I would substitute pumpkin with Kabocha :P, pumpkin is more festive!

  4. Kara says

    Brownieeeeeeeeeeeeeees!

And it’s all good about the creamed-filled picture; I read your post thoroughly yesterday morning and it didn’t even dawn on me.

  5. Sarah says

Pumpkin Pie…………oh how i love you. Brownie, you are divine. I hate cheating on you two. It’s just not right, i know. But i can’t have you both, can I? That’s just…………… um, not gonna happen. Wait i can have you both at the same time? REALLY? I mean, people actually DO that? I would love that! Meet me in my kitchen around 5. See you there. Signing off 🙂

  6. Ashley says

haha I love the title of this post!! How could we have a chocolate dessert without cream filling!!?? As for tomorrows post, anything with pumpkin in it is fine with me 🙂

  7. Sarah says

Pumpkin Pie, oh how i love you. Brownie, you are divine. I hate cheating on you two. It’s wrong, i know. But i can’t have you both at the same time, can i? That’s just………….. not gonna happen. Wait, i CAN have you both at the same time? You mean people actually DO that? I love that! Meet me in the kitchen tomorrow at 5. After i talk to my therapist Katie and ask her how we can make this work. See ya later. Signing off 🙂

  8. Alyssa says

Ooooh, Ricemellow cream! Perhaps one of the best vegan inventions ever!!!!
I can’t decide between the two pumpkin recipes. I’ll be happy with either.
And that new Cliff Z Bar looks AMAZING!!!!!

  9. Natasha says

Yeah – what she said above – I want both!!!!!!!!!!! 🙂 J’a-friggin-dore both!
Girl – you should submit some of your photography to Gormet Magazine – Truly.

    – Natasha
OH! Why do you hate pie crust so much? I kinda do too – curious…

  10. Emilia says

Those cupcakes looked good yesterday, but they look even better today! Just something else that I must make soon. I would love to see the recipe for pumpkin pie brownies, they already sound delicious 🙂

  11. Faith @ For the Health of It says

I’m totally down for the pumpkin cream cheese bars! And I’m so excited about that z-bar! White chocolate is my fave but rarely vegan 🙂

  12. Becky @ Skinnyfat Girls says

Pumpkin Cream Cheese Bars, PLEASE! I’m already salivating. I’m interested to know what you use for cream cheese. I’ve been looking all over the internet for a good vegan cream cheese recipe but have yet to come across anything promising. I like the Tofutti brand, but it’s overpriced and I’d rather make it from scratch. Anyway, can’t wait to see tomorrow’s recipe! 🙂

    • Audrey says

If you don’t like Tofutti or the Follow Your Heart Brand, you can make your own cashew cheese. I’ve seen recipes where people use this to make frosting or in place of cream cheese. You can even use some probiotic powder to make it tangy. I admit that I’ve never tried this myself, though. I would Google it! Also, Wayfare vegan cheeses might be developing a cream cheese. I’m not sure. All of their products I’ve tried are really good (I’ve tried the cheese spread and sauces, but I hear that they also make sour cream, pudding, and ice cream). Their products are made from OATMEAL, but you’d never know. I would ask on their Facebook about the possibility of them developing a cream cheese.

  13. Megan says

Oooo…pumpkin cream cheese bars!!!! I have wanted to find a way to make them lighter, but I will defer that job to you because your recipes are always fantastic. Pumpkin cheesecake flavor is pure deliciousness! However, if you do pumpkin brownies, you won’t hear me complaining!

  14. Emma (Sweet Tooth Runner) says

Um, drooling here!! And Clif Z bars are my FAVE!! So jealous…I’d move to America JUST for those (but more importantly, for YOU 🙂 )

I vote BROWNIES but they both sound AMAZING!! 😀

  15. MANDEE says

OMG… you have def set me on a wild goose chase for those bars!!! because whenever i find something awesome on a blog, i usually cannot find it in stores! (i.e. lipton watermelon green tea… still bitter months later) not only does that flavor sound yum but the wrapper is SO CUTE! the cliff z smores bars are my fav.

  16. Moni'sMeals says

There is the cream filling, but of course, ricemellow cream! ( I would even try a nut butter filling, that could be good!)

Pumpkin Brownies is my vote. 🙂

  17. Emily @ Glitz Glam Granola says

Oh man, that creme filling one is the money shot! Haha, and I totally forgot about that commercial until now! That was a pretty good advertisement! And ohh I love those Z bars so I’m going to have to look for that one! And both recipes sound great!!

  18. Laura says

    Pumpkin pie brownies!
Also Katie, I was looking for a pancake recipe to make this morning and I noticed that Carrot Cake Pancakes are not listed in the pancakes section and the directions for how to make a single serving of them are a bit confusing. Can you put the recipe on a separate page from the 24-Carrot Cupcakes and list it with the other pancake recipes?

    • Chocolate-Covered Katie says

Yeah, I didn’t include it on the recipe page because I am embarrassed at how convoluted the actual post is! I look back at some of my old posts and can’t believe how confusing they are!

I’m working on a new post; the only problem is that I need to make them again and force myself to take pictures before I eat them!

  19. natalie @ southern fit foodie says

Pumpkin cream cheese bars! Actually, as long as tomorrow’s recipe has pumpkin, I’m good! I absolutely LOVE pumpkin recipes. Last year for Thanksgiving and Christmas I made a vegan pumpkin brownie pie. It was SO SO SO good and no one knew how healthy it was!

  20. em says

umm…those look amazing! you are so creative, katie. 🙂
and i vote pumpkin pie brownies. i’m so excited about fall and the return of pumpkin everything.

  21. Nichole says

dude, those hostess commercials were great!
I distinctly remember the one where the shark tries to eat the woman in a black and white bathing suit, floating in an inner tube (she resembles the cream-filled chocolate cupcakes), which goes perfectly with this post! as for tomorrow, i think pumpkin pie brownies sound sooooo cool. I’ve never heard of anything like that!

  22. ChocolatePBCups says

haha the cream filling! I remember those commericals 🙂 and I would love to see both, but for some reason the pumpkin pie brownies are just calling my name!!

  23. Gracie says

    Dearest Katie,

Oh, how I love you!!! I know I’ve been MIA communication-wise for the past few months, but I hope you know that I religiously check in to CCK to see the amazingly-delicious recipes you’ve come up with; you never cease to amaze me! Life is going to have a few changes in the near future for me, and one of the main things I’m excited for is to get back in the kitchen and make as many of your recipes as possible! (Seriously!).

I hope all is well for you…it seems like it is…and I’d love to catch up one of these days! LOVE. xoxo G

  24. Danni (Healthy Kitschy Vegan) says

Have you ever tried clif z (or even just clifbars) warmed up in the microwave and ate with a fork like a piece of cake? That’s my favourite way to eat clifbars, especially the white chocolate macadamia nut flavour! Just sayin’!

Oh, and when you made your cupcakes, did you make normal sized cupcakes or mini ones?
