I’m going to be on television!!
The Dallas ABC affiliate news team is filming a story on me, for the 5 o’clock news! It’s pretty much the coolest thing to happen to me since… ever?!
For the feature, I’m thinking of either making the Deep Dish Cookie Pie or the Black Bean Brownies.
Right now I’m more excited than nervous, but that’s maybe just because it hasn’t really sunk in yet how many people are going to see this! Today’s agenda: figuring out what to wear, setting up dishes, and going on a cleaning spree. To power me through, I made a stand-by favorite breakfast:
This isn’t your average bowl of peanut butter oats. The cooking method makes this breakfast taste like you are eating a giant bowl of gooey peanut butter pudding. It’s life-changing… at least as far as breakfast is concerned!
Peanut Butter Breakfast Pudding
Ingredients
- 1/2 cup rolled oats
- 1 cup milk of choice
- 1/4 tsp salt
- 1/2 a ripe banana
- 1-2 tbsp peanut butter OR allergy-friendly alternative
- 1/4 tsp pure vanilla extract
- sweetener of choice, to taste
- optional: chocolate chips
Instructions
Cook the oats, salt, and milk (either on the stove or in the microwave). Meanwhile, blend the pb and banana. Then add your vanilla, sweetener, and 1/2 of the cooked oats to the blender (I used a Magic Bullet) and re-blend. Stir in the rest of the oats. You can blend all the oats if you prefer, but I like the chewiness of leaving some un-blended.
Are you comfortable speaking in front of a group?
Or do you dread giving public presentations? Have you ever acted in a play or been on tv? I always loved giving class presentations and speeches in school, so I probably would’ve enjoyed acting. Unfortunately, I was too busy with soccer and tennis to join the drama club. As for the upcoming tv story, I am nervous about one thing (which might sound silly and superficial): what to wear. I’m clueless about fashion. Any tips?? Please send them my way!
Side note: I updated the Chocolate-Covered Katie Press Page.
HOW EXCITING!!!! You deserve this awesome oppertunity! 🙂 Congrats!
that’s SO exciting and such a great opportunity! congratulations girl! and i’m loving the looks of this peanut butter breakfast “pudding” – easy peasy and delicious!
I love the idea of blending the PB, banana and oatmeal together! That looks delicious! And congrats on the TV debut!!! That’s so exciting!!!!
Eek!! How exciting for you!!!! Congratulations!
eepppsss sooo excited for you!!! That is awesome!!! You should def make the cookie pie!
How exciting!! I was on TV for work once and our PR ppl said to wear solid colors, no black or white, and pastels are generally better. I remember because it was cold out, and I had very few warm pastels to choose from!! My mom’s advice has always just been to smile!
I’m sure you’ll be great! You should post a link on here afterwards!
Hi Katie
I think this is awesome! I am so excited for you. I have been following your for awhile, ever since I had to go gluten free, and have found such wonderful recipes from your site. Please be sure to post the interview on you tube…can’t wait to see it!

Ahhhh!! Katie I’m so excited for you to be on TV! You should definitely make the deep dish cookie! You are going to do so great! I’m sure this is just the first of many great opportunities to come! Yay yay yay! And this breakfast pudding just looks amazing! 🙂 Congrats!
I love peanut butter and cannot wait to try this 🙂 I may put jelly on top too!!
I live in Dallas, when/what channel is it going to air???
Channel 8 🙂
Congratulations! This is such a great oppertunity! I hope it’s going to be posted online as well, since I live overseas..Woohoo!
good luck! wear a solid color and fun accessories! I made myself a cookie pie for my birthday today 🙂
the pb banana oatmeal also looks delicious! what an awesome idea…i’ll add chocolate chips to mine 🙂
Aww happy birthday!
Holy COW, that is ridiculously awesome! How fun for you. Can’t wait to hear how it goes. GOOD LUCK!!!
You should wear bright colors. Black, white, and neutrals will wash you out under the camera lights. My two cents? Where something that envokes the mood of your blog, which to me is young, fresh, and fun.
Oops, that’s “evokes.”
I’m thinking of a cupcake apron! 🙂
Good luck on the TV debut! I agree with the comment above about sticking to solid colors. You want your marvelous food and your shining enthusiasm to stand out, and that can be somewhat harder to accomplish with distracting print or highlighter-inspired colors. You could also call your contact at the station and ask for their recommendations – they’re sure to have some!
Congrats again!
Congrats! You had me at peanut butter here 🙂
katie, just recently ‘discovered’ you because of a pin on pinterest. you are my kind of cook and i will be back OFTEN!!
Aww thanks! I’m so glad you found me :).
Thats super exciting. This recipe looks great but I really think you should highlight your oatmeal doubling trick. Its really easy and helps you feel like you are eating more and even sneaks in more water!!
Katie congrats!! Better put a video of it on this blog! That pudding looks amazing, LOVE the banana in it!
I literally have a similar version to this breakfast everyday! It’s so good I never get sick of it.
Congratulations. Totally agree with Annie about wanting to see a video and the cookie pie will be perfect – innovative but not too scary to non-vegans or healthy food first timers!
Def go with plain, crisp coloured clothes and extra face powder (studio lights are really hot).
Good luck! As to what to wear… be sure to avoid small, busy patterns on your shirt. They tend to look bad on TV.
Wow how exciting, I am so happy for you!!!!! I hope you will post the video on your site for those of us who don’t live in your area. The deep dish cookie pie is wonderful, great choice! I eat a similar oatmeal to the peanut butter pudding you posted very often. I was inspired to make it based on your melted banana trick. I make steel cut oatmeal, since I’m not a huge fan of creamy like you are, then I use your melted banana trick and add it as well as a dollop of almond butter in the oatmeal once it has finished cooking. I just stir it together. Too lazy to get out the blender, but it is great. I like the idea of the vanilla extract I will have to add that in as well. I recently added 1/2 tspn of cinnamon which was a nice addition as well. I don’t use any sweetener, the melted banana is sweet enough. Thanks so much for your great site and inspiring all of us to eat better and enjoy it! Wishing you the best on your telelvision debut!
Have fun and wear something you love, that will help calm you down so you can enjoy the moment!
CONGRATS Katie, that is such a cool opportunity! Do you think it’ll air online too?!
Not sure lol
You’re going to be SO fab! The cookie pie is a great choice, I haven’t made it though so I don’t know how quick and easy it is to make but I know everyone loves it! I know your chocolate fudge pie would be super easy to make and impressive, and your cookie dough dip would probably go over a treat too!
Don’t worry about public speaking – just be yourself and pretend it’s just you and the interviewer there. And if you can get it on YouTube so we can all watch! 🙂 x
Congrats and good luck! I’d say solid dark pants or skirt and a bright shirt! 🙂
Congratulations! That is so exciting. 🙂 This sounds like a great recipe to use. I’d go with what other people said about what to wear: solid colors. Partly, that way people can see what you are doing with your hands- an old secret of sign language interpreters. And I would add- wear something comfortable that makes you feel confident and happy. 🙂
Congratulations! If they put it online, please post a link so the rest of us can see it. So happy for you! Don’t be nervous – just remember that YOU ROCK and we think you are fabulous!
Congratulations Katie! Just remember to breathe…you will be awesome! Hope you can post a link to the segment so we can all watch?
Love your blog and recipes, have been following for awhile now. Your posts always bring a smile. Take care!
That’s so cool! Can you put it on YouTube so all of us can watch it? Then I think you need start your own YouTube cooking show 😉 Congratulations!!!
Haha I need to learn how to work youtube.. I’ve never posted anything on there! I need a middle-schooler to teach me ;).
Oh, please put a link to it on your blog! We all want to see it!
I just made the pizza hummus yesterday. I was awesome!
That’s exciting and a little scary! Congrats! And this looks delicious! My husband lives oatmeal and loves pb&banana so what a great idea to combine the two!
OHMYGOODNESS!!! How exciting for you…I can’t imagine why it hasn’t happened sooner. =) I use to be mortified of speaking in front of groups, but then when I was asked to…I learned the empowerment that knowing someone has enough faith in you to think you can do it…and I learned to love it! I relax by beginning with a couple of funny stories (that may not be your option on tv!) and it gives me time to swallow the lump in my throat, and I am off and running. You have sooo much good knowledge and wisdom to share..you’ll do just great! Congrats!!!
Congrats on the feature! You should ask for a copy and post it on youtube for all of us to see!
Congrats!!!!!!!! How exciting!!!
I’m so THRILLED for you!! Your blog has inspired a ton of creativity in my own kitchen as I’ll see something and think…”I wonder if I can do this with ???” You’ll RoCk on air!! When, where…I wanna see!!
I’ve done public speaking (as an Ambassador for a weight loss company) but nothing on “air”. I always got nervous before but once I started…it was a piece of cake…with chocolate of course!!
…that was pretty “dumb” of me to put my last name on my comment wasn’t it? (Ha ha) But I realize there are tons of folks with “my” name…(Yikes!)
No worries! I edited it out for you :).
i had this exact thing, by way of coincidence this morning! how very very spooky 🙂
it was similarly delicious x
Congrats Katie! I hope you can post a link to the video afterwards!!!
I live in Fort Worth so let us know when the feature will air so I can set my DVR!
Oh and total coincidence but I had a dream last night that I was making your pizza hummus and used a whole can of garbanzo beans instead of just the 1/2 cup called out in the recipe and freaked out because I thought I had ruined the batch. But that’s all I remember so I don’t know how it turned out in the end. Totally random! lol 🙂
LOL!
I will definitely update when I know the air date.
Ah, Katie that is so exciting! I wish I lived in Dallas and could watch it. Once it comes out as a video form (maybe like on the news’ website), could you post it on here? 🙂 You’ll be great! Don’t worry about it and it will just come naturally.
Do you think you can make this the night before? (If someone already asked this, you don’t have to answer, I’ll look up at the comments after I write it) Because this would be the BEST way to start my morning and I’m just too crunched for time getting to work.
As for fashion, I am a fashion teacher! I would recommend something black or neutral, because it will put the focus on your face. Do you have an outfit that makes you feel like you can rule the world? Wear that. You’ll be comfortable and you wont waste energy worrying about it while you’re on camera.
Good luck!!! How exciting.
You can definitely make it the night before! 🙂
I pretty much always make my breakfasts the night before, because I hate cooking in the morning.
For my first comment ever on your blog, I want to say CONGRATS!!!! And I wholeheartedly support your recipe choice to share. That is the perfect recipe to show off how amazing your recipes are. It’s how I first found you (through Pinterest). That recipe never ceases to amaze my family and friends when I make it. Keep up the good work! I hope you’re able to share the video when it’s all said and done. I’m sure there are a lot of us who would love to see it. Good luck!!
Aww thank you so much, Amanda!!
Congratulations Katie! That is so awesome. I’m sure you’ll do great.
I hope they put the your interview online. I would love to see it. And I have made your deep-dish cookie pie. It is amazing!
Public speaking, not my favorite. But I’ve done it for issues that are very important to me, like health and veganism.
oh my days, YUM!! I am very comfortable with public speaking and all things like the that:) comes naturally to me!
You will look lovely no matter what you wear! Congrats!
Oh, and I’m making this oatmeal recipe for my breakfast right now!! 🙂
Congrats!!! I only recently discovered you (via pinterest) and your recipes look great. I can’t wait to try them. You’ll do great, best of luck to you!
Public speaking isn’t my forte, I think I manage to pull it off well enough (at least I think so) but inwardly I am in total freaked out mode.
As for dressing, nothing over the top. I think one key bright piece will make a nice outfit have a pop. Perhaps a bright blazer or cardigan. You’ll look great no matter 🙂
Congratulations! If there’s a way for those of us who don’t live there to see it online, be sure to let us know!
Wait so is it tonight?? YAYAYAYA CONGRATS!
No, they haven’t filmed yet. And thankfully it won’t be live ;). But I’ll definitely try to get a video posted.
SUPER CONGRATULATIONS! Wear bright, happy colors because it suits your personality!
This is great! How exciting! I’ve seen you here in a blue sequined top, not sure if you still have it, but it sure made your eyes pop. Best of luck, breathe and enjoy!
Congratulations! TV–that is so exciting!
And you breakfast looks delicious–peanut butter and banana oatmeal is one of my favorites!
Where/how can I watch this in Canada??
I’ll try to post footage after it airs :).
Awesome!!
Congratulations on your success! I will be trying this oatmeal in the morning! Thank you!
deep dish chocolate chip cookie pie all the way! good luck with your interview on the news.
Congrats and GOOD LUCK- I’ll be rooting for you!!
Your recipes are amazing. I am obsessed with sweets and continually impressed with your ability to make healthy and flavorful food!
Oh my gosh, I’m so, so excited for you!! What a wonderful opportunity and you totally deserve it! You create the most amazing recipes and I’m glad you get to share them with the tv-viewing world! I’ve always been comfortable with public speaking and was in plays growing up and then was in Speech and Debate and Moot court in high school! I’m with you, figuring out what to wear is the hardest part! I’d go with something classic and if you are going to be cooking you could wear a cute apron!
My first comment on ur blog..
Congratulations on this splendid TV opportunity!! I was on tv for an icecream commercial. While shooting, they said it’s only an audition.. so naturally I wasn’t very nervous. But as it turned out, they used the audition footage for the commercial. oops! My tip is to wear 3/4 length sleeves… easier to work with, in a kitchen.
I can’t wait to make your deep dish cookie pie! I hope you can suggest a workaround for the 1.5 C brown sugar. That will make the pie completely healthy. 🙂
I use Nunaturals stevia baking blend. You can go cup for cup but I’ve found I get no stevia taste if I use half the amount. It’s still plenty sweet enough!
I tend to halve the recipe and use about 5-6 Tbs of baking blend.
That stuff is *awesome*. Nunaturals is the only stevia brand I like – no icky aftertaste.
I use it for everything – homemade vegan frozen yogurt, ice cream, baking, etc. 🙂 I even used half baking blend and half powdered sugar recently to make a really tasting frosting.
Second the nunaturals love :).
But also, I’ve never baked this following sugar-free recipe: https://chocolatecoveredkatie.com/2011/09/27/new-recipe-sugar-free-cookie-dough-dip/
Maybe you could try it baked? If you do, please let me know how it turns out!! I’d be so interested to know.
