Exactly two years ago…

Two years ago, I published what is now the #1 most viewed recipe on my entire blog.

To date, the post has gotten over 450,000 facebook likes and almost 130,000 repins, with more people writing in every day to say how much they love the recipe!

So today seemed like the perfect time to debut these portable trail mix breakfast cupcakes–chock full of wholesome ingredients, just like the famous originals. These cupcakes can easily go in a lunchbox, and their fiber will keep you full for hours!

And, just like the originals, they are egg-free, dairy-free, gluten-free, and can be oil-free and sugar-free as well.

On-The-Go Breakfast Oatmeal Trail Mix Cupcakes

Makes 11-12

  • 2.5 cups rolled oats
  • 1 1/4 cup over-ripe mashed banana OR applesauce
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/16 tsp uncut stevia OR 2 1/2 tbsp pure maple syrup, agave, or honey
  • 1/2 cup dried cranberries or cherries or raisins, chopped small
  • 2 tbsp wheat germ or flaxmeal (or oat bran)
  • 1 1/3 cup water (If using the liquid-sweetener option, scale water back by 3 tbsp)
  • 1 1/2 tbsp oil OR more applesauce
  • 1 tsp pure vanilla extract

Preheat your oven to 380 F, and line 11-12 cupcake tins. Combine all dry ingredients in a large mixing bowl, and stir very well. In a separate bowl, whisk together all liquid ingredients. Mix wet into dry, then pour the batter into the cupcake liners and bake 21 minutes. Broil 3 additional minutes, then let cool. If you let them cool overnight, they will no longer stick to the liners. Leftovers can be refrigerated or frozen and reheated.

    I still have yet to make the original version of these which is weird because I’m always looking for breakfasts I can eat on the way to school and these would be perfect! I might actually make them today as I’m off from school due to the cold. I’m thinking of doing a mashup of this recipe and the original because I love chocolate but think they’d be good with some dried fruit as well.

      By the way, I just noticed that this recipe is half the size of the original so if anyone sees this and is trying to decide which recipe to follow, you might want to keep that in mind.

        Thank you for the feedback! I noticed fewer people answering the question of the day, which made me think maybe people weren’t interested as much anymore. I know many readers are not interested in long blog commentary (although I love writing it!) and just skip to the actual recipes, which is why my longer commentary posts of the past are often being replaced with shorter posts and more photos. Many times, I will write a long post and then delete half of what I wrote for the purpose of concision. (As this reply can attest, I am a long-winded writer by nature ;))
        Reader feedback is always appreciated, so thank you for this! And I will go back to sometimes including the questions!

    I actually can’t see how anybody HASN’T tried this variation with the original recipe. Except I go all-out trail mix: dried fruit, chopped nuts, maybe a lil’ granola, the whole shebang.

    YUM!! I absolutely LOVE LOVE LOVE the original version. I take one (or two) to work with me for a mid-morning snack. My co-workers and my kids also love them. I make a batch on Sunday, freeze them, then pop them into a gallon size freezer bag. So easy to grab one or two on your way out the door.

    I made these yesterday for myself and my daughter who is almost 2, and they are fantastic. She gobbled up two of them in a matter of half and hour which is a huge fete for her. Usually she picks at things and barely eats more than a bite. Thanks for the treat recipe, Katie. We’ll definitely be making these again 🙂

    I made these a couple of days ago, they’re absolutely delicious! I love oatmeal so much and always look forward to trying new recipes, I’ve made many of your single serve baked oatmeals as well as ones served for a bunch of people. I love that this recipe makes so many and it freezes really well so my husband and I have an easy and quick breakfast in the morning!! Will definitely have to try the original recipe soon.

    I would like to try your oatmeal trail mix cupcakes but have a few questions. I feel as though I should know the answers to these questions, but here goes:

    Are “rolled oats” the same as steel cut or old fashioned oats? What is “uncut” stevia? Is flaxmeal the same as flaxseed?

      There wasn’t a print function for some of the older recipes, so what you do is hi-light just the recipe itself, right-click copy; then open a new Word document, right-click paste and save that document. You can print from there.

    Just made these and used pumpkin instead of the applesauce — added 15 drops of stevia. I used pumpkin pie spice blend and added raisins; didn’t add the extra oil. They turned out great!
