These no bake cookies will make you forget what time it is, what day it is, and basically everything else that was once important in your life.

Mocha “No Bake” Cookies

Healthy Chocolate No-Bake Cookies

Ingredients

  • 2/3 cup quick oats (60g)
  • 1/4 cup plus 3 tbsp oat flour (or make your own by blending oats in a food processor until they become powder. Measure after blending.) (60g)
  • 2 tbsp cacao or cocoa powder (10g)
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup plus 1 tbsp xylitol or sugar (60g)
  • 1 1/2 tsp instant coffee granules (I used decaf Mt. Hagen)
  • 1/4 cup chocolate chips or mini chocolate chips
  • 1/4 cup vegetable oil or coconut oil
  • 2 tbsp water
  • 1/2 tsp pure vanilla extract

Instructions

No Bake Cookies Recipe: In a mixing bowl, combine all dry ingredients and stir very well. In a cup, combine liquid ingredients, then pour wet into dry and stir until incorporated fully. Transfer to a plastic bag and smush into a ball. Now you can roll into smaller balls or fridge until a little firmer. (If you use coconut oil, these cookies will harden when chilled, but they go back to being soft if left out.) You could also bake these if you wish. For gluten-free no bake cookies: be sure to use certified-gf oats and oat flour.

What’s your favorite type of cookie?

My favorite is chocolate chip, and no bake cookies come in as a close second. I’m one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake. I’d initially planned on baking these mocha chocolate no bake cookies… but the dough was entirely too good to wait that long!

    I LOVE your no-bake recipes and that they’re also “no heat.” Often, when searching for “no bake” recipes, they still require you to melt things on the stovetop. It’s summer! I don’t want to stand by a hot burner.

    Good ol chocolate chip are my favorite too – probably because I have so many memories of sitting on the kitchen counter “helping” mom make cookies. My contribution was more as the official ‘beater licker’. 🙂

    My favorite in the whole world is your Flourless Chocolate Chip cookies. I’ve said it a million times but they are the best thing ever. I do love coffee in my food (especially ice cream!) so maybe they are the best thing ever until I try these! They would be pretty hard to top though….

    Hi Katie! I love your recipes soooooooo much & I’m not even vegan but your food blog is my favorite! I was just wondering, do these cookies have the “baking soda kick” that you sometimes talk about? I don’t really like that strong baking soda taste in cookies so I was just wondering if I should scale down the amount in these cookies. Also, I think it would be useful if from now on you would include baking soda measurements in cookies for both people who do like a baking soda kick, and those who don’t (i don’t know if that makes sense??). Just an idea! Anyways keep those amazing recipes coming Katie!

      I made these and did not notice a baking soda taste at all. I think you could cut the amount of baking soda in half or just leave it out and these cookies would still be great.

    My favorite has to be oatmeal cookies! For some reason, I find oatmeal cookies to be very polarizing…either you really like them or you really don’t! Chocolate chip is a close second!

    Oh, that’s a tough one. Cookies are probably my favorite type of desert, so choosing just one is difficult. Texture is more important to me than flavor, so I’d have to say a really dense and chewy ginger/molasses type cookie. Though a close second would be monster cookies (flourless oatmeal peanut butter cookies with chocolate chips and M&Ms in them.)

I used to make oatmeal honey cookies when I was a kid and they were HEAVENLY, but I can’t find the recipe anywhere! I’ve tried a million different ones but none of them taste like the ones I made as a kid. I’ll just have to keep on trying 😛

    I love snickerdoodles (if i have to buy them, and i buy cookies like once every two years)
    but chocolate chip are amazing – i usually make those at home for the kids (that includes hubby they’re his favorite and kids don’t care)
    oatmeal cookies are pretty yum too. mother in law makes them bit dry – which is perfect for my tea addiction (russians I think are born with tea cup in hand) but those i get like once a year as well.
    I dare say I love cookies about three times a year basically 🙂 🙂 🙂
    but i am going to make these mochas. They look delic.
    I had a question about your future book Katie, will it include all the recipes that you have on your website (at least up to that moment of publishing)?

      She’s mentioned before that the publisher wants primarily new content, so some recipes will be from the blog but most will not. I just can’t believe Katie has so many amazing recipes that she can keep posting on the blog AND be saving some for the cookbook! 🙂

    Just made these without the instant coffee and they’re really great as no-bake chocolate cookies too. I’m going to try them next time with the coffee because my mom loves coffee-flavored things. 🙂 So easy and so good!

    I was wondering if you could recommend a brand of dairy-free chocolate chips? I typically use a Baker’s German Chocolate baking bar chopped up because I’ve heard from friends that the brand sold at our local store in their limited section is absolutely flavorless, hence not worth the $.

    Thanks so much for sharing your recipes. I have a 2 1/2 year old son who cannot have dairy or egg, so it is a real help to find desserts that the whole family will actually eat rather than having to make 2 separate batches each time!!

      I don’t know if they have one in your area, but Trader Joe’s chocolate chips are dairy free, are reasonably priced and taste great!

        It is a bit of a drive, but there’s a town that has a Whole Foods & Trader Joe’s so I think next time I make my way in that direction I will pick up bags of each of the above kinds and then after sampling them I’ll know where to go back for more!! Thank you all!

      I just bought a bag of the Ghiradelli semis sweet and now it says “may contain milk”. Ugh, this was my go to choc chip because local stores had it. Guess ill have to head to Whole Foods for Enjoy Life chips.

        Just a note on the “may contain milk” (or any other “may contain” ingredients). Usually that means it’s simply made on the same equipment as products that contain milk. For example, with the chips, it’s possible that Ghirardelli makes their milk chocolate chips on the machines, then when done they clean the machines, and the next batch is the semi-sweet (which is dairy-free). Or perhaps they are manufactured on equipment that is near to something made with milk and it’s possible that could splash or somehow get into the mixture. Because there is a small possibility that a small trace of milk may be left behind after cleaning they have to list this. However, the ingredients of the chips themselves do not contain milk. It just depends on either your strictness to being vegan, or if you are severely lactose intolerant. Otherwise, the chips are dairy-free. For me, “may contain” items are ok since it means they are not primarily made with the ingredient I am trying to avoid. http://vegangstaz.wordpress.com/2011/02/22/what-does-may-contain-milk-mean/

      Wegmans chocolate-chips are dairy-free. My kids are gluten and dairy-free so I use those often – much cheaper than the Enjoy Life ones!

      newbie here, I made these tonight subbing 1 TBSP cocnut oil+ 3 TBSP applesauce for the oil. I added in more oatflour and unsweetened coconut to dry it up a bit and used a cookie scoop to make cute little mounds that I pressed an almond into like someone else mentioned. Sooooo fudgy good! I also used dark cocoa, this is a keeper, thank you for sharing!

    YUM! No-bake cookies are perfect for summer, too! These look awesome. Also, I loved your post about the gas station yesterday! In NC there’s one I love going to that’s a reconverted gas station – tons of vegan baked goods (always chocolate ones you would love), organic farm produce all around the store, and even lunch and dinner served out of there by a chef making daily creations from local ingredients.     Hi Katie! I’ve been reading your blog for a while now, but just recently went gluten free. I’ve been seriously craving some baked good action but I’m kind of scared to adjust my tried and true recipes to make them gf. These look too amazing to pass up, and I was wondering if you had suggestions to make them gf without losing their integrity. i.e. any particular flowers taste least gf? Also, how to make your lemon squares gf would never hurt either.

      These cookies are gluten free, since they use oat flour. Just make sure to buy certified gluten free oat flour.

    Hmm… the first thing that came to my mind when you asked about our favourite cookies, was my grandmother’s peanut butter cookies. She used to make raisin cookies for everyone, but I didn’t like raisins, so she made a special batch of peanut butter cookies just for me! That actually kind of makes me sad to think I’ll never get to try them again- sorry, I didn’t mean for that to be a downer… it’s really a happy memory!

    Hmm, I’d say my favourite cookie is a Scandinavian Christmas no-bake cookie like thing called something very creative like ‘chocolate ball’. It’s essentially oats, butter, sugar, cocoa powder and milk, and most often rolled in coconut flakes. I have my own (slightly healthier version) that I’ll sometimes make, but I never bother to roll the dough into balls! This recipe is somewhat similar to mine, but I’ve never tried using any kind of flour.

    This is a tough one for substituting the oil but I tried with almond butter, milk, agave (instead of some sugar), and applesauce. The texture was pretty different and it didnt form into much of a cookie so I froze them and theyre great frozen treats! I think substituting half the oil would be more effective.

    I also tried adding sprinkles and coconut extract with great results!

    It’s weird… but I’ve never been a big fan of cookies! I love the dough though… so no bake cookies sound good to me!
    In order to make me eat a cookie, you really have to give me a tea to have with it 😉

    This takes me back to my grandmother’s farmhouse on a Saturday morning when she did the baking for the week. We were allowed to help and got to scrape out the bowls afterwards, which is the hope of any small child watching all the deliciousness that goes into a cake or cookies.     Oh. My. Goodness. These are SO good. THESE are my favorite cookie now. (Previously, my own pecan choc. chip cookie recipe was my favorite). Addictive, crazy good–and very rich, which is good, because that makes them sort of self-limiting that way–I *wanted* to eat the entire bowl, but was plenty satisfied with 2 li’l cookies. Family definitely approves. I think I’ll add some toasted pecans next time ’cause I love pecans and chocolate together, but they’re amazing as is, too.

    Stuck to the recipe pretty closely, but was out of xylitol, so used 1/4 c. organic cane sugar plus 1 Tbs. Stevia in the Raw instead of all sugar (was afraid to use only stevia, but will try that another time, ’cause I think it might work). I also used Hershey dark cocoa and Hershey sugar-free choc. chips (maltitol sweetened).

    These are going to the top of my “favorites” list of treats, and even better to not have to heat up the kitchen to make them. Thanks!!!

    Okay, couldn’t wait. Made another batch–experimental this time. Subbed unsweetened applesauce for coconut oil, and subbed Stevia in the Raw for all of the xylitol/sugar. Verdict? Taste just as fabulous, but they’re just a little bit less decadent without the fat from the coconut oil. This version is going to be happening regularly around here, since omitting coconut oil lowers the cost, making it more budget friendly. My kids said you are AWESOME and thank you as well 🙂 Thanks again!

    I subbed 50/50 coconut oil and unsweetened vanilla soy milk – so good! They turned out a little wet so I put them in the freezer to harden or maybe next time I will omit the water. Way too impatient to roll up all those balls – just made into bars instead. Thanks Katie!

    Holy cow, these were AMAZING!! I used the 1/4 cup coconut oil and mine were just a bit too soft/liquidy to hold together, so I put the dough in the fridge to firm up for about an hour. Based on what I tried off the spoon I already knew I was hooked, but wow, am I in trouble. It took so much willpower to even roll them into balls and not just eat the whole batch by the spoonful. I had to leave the kitchen after eating three right away! I think I agree with Lila; chocolate chip used to be my favorite, but these are now in the top spot. I knew there was a reason I’d been saving my quick oats. 😉 Thank you, Katie!

    Ha! I needed a recipe to use up my quick oats too:) Thanks!! I skipped the chocolate chips — they were amazing without! I made them when I was hungry, right before supper (oops!) and am not sure how much I ate as I rolled them into balls. I put in an extra handful of oatmeal because they were a bit too moist. Maybe I’ve been eating less sugar lately, but they were a bit sweet. But I still loved them! Next time I’ll try with agave and more oats.

    my fave cookie is peanut butter chocolate chip so I added peanut butter chips to these instead of plain chips. My 3 fave things in one cookie, coffee, PB and chocolate!
    I think they are really good I just wish to get 26 cookies they werent so small because at 50 calories per cookie that is going to add up fast when I eat half the batch tonight!!
    I wish they were healthier and lower in calories not just sugar and carbs.
    I liked someones idea to put protein powder, then they would be great breakfast bites!

    Hi Katie, I love your site. It’s joyous. Question: why put baking soda in no-bake goodies? I’ve seen this in a few of your. (Of course it makes sense if you’re gonna bake, but why in no-bakes?)
    And one more comment/question: when you call for garbanzos in other no-bake recipes, do you think it would work to use ‘banzo flour, probably cooked up with moo (what I call all non-dairy milk) first. It would be quite smooth and creamy and not require a blender to make some of the mixes. Just wondered your thoughts. I like to stay away from canned goods when possible, and flour is easier than cooking up batches of beans… thx.

    I made these last night and they were DELICIOUS! Thanks so much for the awesome recipe. I measured all of the ingredients perfectly and even double and triple checked to make sure I followed the recipe exactly. However, I have no idea how you made 26 cookies. I tried doing that and mine were so tiny they were even smaller than normal “bite-sized” pieces. I ended up making about 6-8 small cookies and that seemed to work out well. I was wondering how small they are supposed to be? Did I do something wrong? Thanks again for such awesome recipes, though! 😀

        I ended up with 22 cookie balls, so it must just depend on how big you make them. If you go for something closer to a standard cookie size I’m sure you’d get less, but I like the mini-size because it feels like they last longer! 🙂

    I sent my husband to the store the other day to buy coconut oil and he came back with an organic version that tasted like coconut. I used that oil and left off the coffee granules. Tastes like a Mounds bar! Add an almond on top and you have Almond Joy! I live in a health food challenged area so not sure if I can find that brand of oil again. If not, I plan to add coconut flavoring.

    Hi Katie .. I just made these and since I don’t like coffee, i subbed in 1 tsp on cinnamon for the coffee granules and they are so good. I loved this recipe because often a ‘no-bake’ cookie still involves stove top cooking so it was a nice change to have a raw cookie when it was too hot to turn the oven on! I only got 16 cookies but maybe mine are bigger.

    oh, and.. chocolate chips are ‘optional’? .. Katie! Please! Chips are never, ever optional.

    Mine didn’t stay together very well and I followed the recipe exactly. But, you are right, these are like crack. The flavor is really good with the coffee. I will refrigerate these for a while and then try baking them.

    I just made these cookies and put them in the fridge. I know already that they’ll be wonderful because I kept eating some of the dough :3
    However, is there anyway to make these cookies so that the dough will be more “sticky”, if that makes sense? After adding all the ingredients and stirring, it was still a very powdery/oaty consistency, and I don’t think they’ll hold their shape once I shape them into balls. Is it possible to add more oil or water or something?

      I actually had the opposite problem (slightly too much liquid)… are you sure you measured everything correctly? If so you could always add another 1 T of water (or oil, or brewed coffee!) at a time until it’s sticky enough to hold together.

    I would have to say before going low-sugar my favourite cookie was a good old chocolate chip cookie with soft dough….my favourite now is a healthy double chocolate chip cookie I make with part whole wheat and part hazelnut meal. Cookies have to taste good, but my mind and body love it even more when it has fiber and protein.

    These were yum and super-easy – thanks! I did the substitution with spelt instead of oat flour and left out the coffee (just because coffee gives me headaches). I think next time I would cut down the sugar – it probably doesn’t need so much without the coffee. The spelt worked fine and there was a lovely texture to them.

    I made these last night but they were too oily to hold together. I may substitute half almond butter fir half the coconut oil next time- but on the upside they tasted fab.

      Hi Kendra,

      Did you put the dough in a plastic bag and form the giant ball while inside the bag? Then chill? If you chill the dough, it shouldn’t be even the slightest bit oily with coconut oil, because coconut oil hardens when cold.

    I made these but I don’t know what I did since they look nothing like yours! I measured my coconut oil solid and then melted so I wonder if I should have measured again after I melted. They wouldn’t hold together. I did manage to stop scooping the raw dough into my mouth and bake some. Those turned out really well! There’s no way I would have gotten 20 cookies out of the batch either, I got maybe 11 small cookies. The raw dough was so stupid-ridiculously good I can’t say how much I actually ate before I baked (I baked 8 cookies). So basically, even if you screw it up somehow these cookies are still worth eating the entire batch yourself. I will definitely try making these again to try and get them to look like they are suppose to! I baked at 350F for about 8 minutes

      I just read some of your replies about storing it in the fridge. I didn’t do this either so I definitely will next time. I guess the way that I read it was the fridge step was optional, not that I actually needed to do that step before they would hold together. But like I said, they were still so delicious!

    I made these Mocha Chocolate Chip Cookies before work this morning. They are amazing. I substiuted teeccino for the coffee and used coconut sugar. I was able to get 16 small cookie out of the recipe. They’d have to have been quarter sized to get any more. These are spectactular!

I am not a coffee drinker though so i left that out and i used applesauce instead of the oil and honey for the sweetner. I didn’t put any chocolate chips in either. My 3 boys love them too.     Hey Katie! I just made these for some people at work. (We have rotations we switch up every 2 weeks in this training program and I always reward the people I work with by giving them cookies on the last day if they were pleasant to work with.) I just used regular oil because of the pricing on coconut oil and they came out too liquidy to be no-bake. I’m sure they’ll come out gloriously baked, but just a head’s up that some sort of nut butter might sub in for half the oil and make the texture more formed. 🙂 The batter was absolutely delish, though!

    My favorite cookies are oatmeal chocolate chip.

    These are awesomely addictive!! So rich and chocolatey. I used 1 tablespoon canola oil and 3 tablespoons applesauce. The dough was still pretty moist so I just added a little more oat flour and it came out perfect (I didn’t chill the dough). I got about 20 bite-size cookies from the recipe but then I ate about four while I was making them! I made them into little balls and then pressed a chocolate chip into the top of each one so they look like mini chocolate thumbprint cookies.

    I just found your website and have just started using coconut oil. I made your lemon bars and they turned out fantastic. I would like to make these cookies as well but was wondering if you melted the coconut oil for this recipe or used it in its solid form.

      You should melt it so that when mixed with the water and vanilla extract you have the liquid part that you can pour into the dry and combine. If you don’t melt it first it won’t get evenly distributed throughout the dry ingredients it will just be a big lump in your dry stuff.

      I can seriously recommend you to make them having just whipped up an amazingly good batch in all of about 3.5 minutes!

    I just made these cookies and they are absolutely delicious! The ratios are perfect love the slight saltiness and rich chocolate-mocha flavour. They literally took less than 5 mins to make too. I didn’t bake and used veg oil because I was out of coconut. Highly recommended.

    I just made these in hopes that the kids will eat them. I don’t think they will (too much texture), but I WILL! They are awesome! I didn’t have “non-stinky” baking soda so i omitted it, and I left out the coffee -in the hopes the kids would eat them-, and I subbed Splenda for the sugar. I baked a few in hopes that the smell would entice them (it didn’t)- they came out great and I think I will bake the rest later.

    I made them with almond flour to send to my sister in Afghanisgtan, but they didn’t last! So yummy! I thought I made them small, but only got about 15. I’m going to try them again with the almond flour and hemp seeds instead of oatmeal (grain free!).

    OMG! Words dont describe how fabulous these were! I made acouple substitutions you should try. Instead of mocha, i put peanut butter in, it was fantastic!!! my chocolate was from a godiva bar i got for my birthday, HALLELUJAH! i thought i died and went to heaven! i used palm sugar because that what i had in my house, and you couldnt taste the difference!     I had to make these as soon as I saw them. No instant coffee, so I added brewed coffee in place of the water, and I used regular white flour. I made what I considered to be super-mini cookies, but still only ended up with 14- I guess that just means I didn’t make them as teeny-tiny as you!

    Mine taste divine, but look way more “oaty” than yours. To deal w/the serving size issue, I rolled my dough into a log in plastic wrap and refrigerated it. Then I sliced off cookies. When at room temperature my dough completely fell apart, just crumbled. Any ideas?

    These cookies are MUCH better baked. I followed the no-bake recipe, and the dough would not even hold together if rolled into a ball, so I baked them at 350 F for around 8-10 minutes and they came out great.

    I don’t have a food processor or special flours so I use white flour to make this (I wouldn’t even have that but a friend left some at my apartment once haha).Instant coffee is expensive so I don’t use tht either an sub peppermint extract. Nevertheless, these are great! I make small batches for myself using a food scale so I can eat it all at once 😀

    Hi, I tried these cookie bites today and I think they came out so so good ….I did how ever sub a few things,omit an ingredient and added an ingredient as well lol … I used a 5 calorie stevia-sugar blend (8 tsp) as the sweetner and used apple sauce instead of oil. I also left out the coffee bc I was giving it to my young kids.. And I added 1/4 cup slice chopped almonds. I got 17 bite size balls … Yum yum yum! Thank you

    I just want to say YOU ARE MY HERO! 😉 I love this recipe! I baked them at 350. They were great but would like to make them a little thicker maybe, they were a tad runny and thin when I made them. Would I add more oat flour do you think? or? And what are the benefits of using oat flour? Is it just that it’s gluten-free, are there other things about it?

      Hi, Jamie, did you chill them long enough? I made them twice, and the first time I chilled them for the exact amount of time that the recipe said, and they came out perfect. The second time, I cut the chill time by a little, and then they ran a little too much during the baking. It definitely made a difference!

    My roommate and I made these last night. The flavor was delicious but we couldn’t get a cookie-like consistency (too soft- probably our wacky weather). So we pressed them into a pan and coated them with a layer of melted chocolate chips to hold everything together. Tada- best mocha bars ever!!

    I’m usually a very nervous substituter (is that a word?), to the point that if I don’t have the ingredients for a recipe, I just don’t make it. But I have a lot of oats to use up, I really wanted chocolate, and I had a chance to read through the comments while nursing my daughter to sleep. I used rolled oats and raw cacao powder, subbed hemp seeds for the oat flour (couldn’t risk waking the babies with the blender), date syrup for the sweetener, coffee in place of water and left out the instant coffee (didn’t have it), and applesauce for the oil (coconut oil is expensive!).

    I made these for my dad and brother last night and they were a huge hit! I subbed almond meal for the oat flour, but added extra oats for a bit of an extra crunch (GF certified of course!). The espresso powder (I used full strength) added a delicious coffee kick and the crunch from the oats and the mini chocolate chips ( Enjoy Life brand) is divine, according to my test subjects. Thank you so much for a delicious no bake recipe!

    (I also put the mixture in a big ziplock bag in the freezer overnight to let it all harden together before cutting it and putting the chunks in a Tupperware container and sticking it back in the fridge to keep it all cool and fudgy)

    I subbed 20g of Coconut, 10g of pea protein and 30g of maize meal for the oat flour. Added an extra 10g of cocoa, and split the sugar 30g brown and 30g Fruisana fruit sugar, and add nuts and sultanas instead of the choc chips. It comes out like cookie crumble, but tastes AMAZING

    These are so good! and much appreciated in the hot climate here in Nicaragua…I miss fall! I made these yesterday without the coffee or chocolate chips and ended up eating them all….not so healthy. I felt horrible thinking of 1/4 cup of coconut oil rolling around in my veins. Today, I still had a chocolate craving, and ended up making these again with some changes. I doubled the recipe (still omitted instant coffee and chocolate chips) and used 3/8 cup honey, 1/8 cup coconut oil, replaced the water with coffee, and only used about 2 tbsp of sugar. I added a little more coffee until the consistency was perfect. They were really tasty! My family preferred today’s, although they would have preferred a touch more sugar. Just suggesting this to anyone trying…cut the fat! It turns out just as well. Thanks for another great recipe!

    Oh my! I have always been leery of no-bake cookies, but these are wonderful! But,mi did make some minor changes, I used a rounded Tbsp of Hershey’s Special Dark Cocoa powder and a rounded Tbsp of regular cocoa powder and replaced the 2Tbsp of oat flour with vanilla whey protein powder. Plus, I just used a plastic bag to mix it all up. AmAzInG!
    Now to try those pumpkin cookies! 🙂

I used almond flour instead of oat flour (cuz that’s what I had) and brewed coffee instead of water (cuz I didn’t have instant). Also used coconut sugar and coconut oil. Amazing!     I doubled the recipe and found them very salty. I think the baking soda amount should have stayed the same, maybe the salt too. This might be common knowledge for more experienced bakers! Also texture-wise I suspect mini chocolate chips would have worked better.

    Honestly the healthy deep-dish cookie is my favourite, it might even be my favourite food!

    I just made these cookies and they are freaking delicious.My housemates love them too 😀
    I used rice bran oil and a granulated stevia product in place of sugar. As I was making the mixture into balls and flattening them prior to baking, I thought hmmm that crumby mixture looks like a kind of chocolate granola of sorts…what would happen if I spread the mixture across a baking tray and toasted it as if it were granola? What a decadent breakfast that would be…

    I love that these are truly no bake and no stove, or absolutely any actual cooking required lol. I did add about two teaspoons of peanut butter to give it that nutty taste traditional no bake cookies have and also found it helped the dough to stick together better. Totally addicted to your recipes! Seems like I’m trying a new one every other day lol 🙂

    I absolutely love these cookies – I’ve made them several times now and they’re so simple and delicious, I could eat them every day. I’ve subbed the water and coffee granules for brewed espresso and it worked just fine. I always make them with coconut oil and Stevia, and I have tried them with applesauce, but I didn’t really like the way they came out. Yet another fantastic creation, Katie, thank you!

    I’m not vegan but i have my vegetarian and vegan days every week. Sometimes more then once. I used to be a strict vegetarian like no milk bc of how cows were treated and no cheese bc of the enzymes. And buying horizan organic milk wasnt an option until recently (by now i’ve been drinking soy or almon milk vanilla or chocolate for so long i just stick with that) my food could not be cooked in the same pan and if i didnt know ifu cheese had enzymes when we went out i didnt eat pizza. Wouldnt eat french fries (it was cooked in the same oilnas chicken nuggets). Now i dont eat anything by a product that tests on animals. Been cruelty free for years. So i love this website bc i often find recipes that cater to that need and for my healthy journey. I havent had these cookies yet but i have all the ingrediants. Blondies first though.

    My husband loves the chocolate peanut butter chip cookies on the back of the Reese’s peanut butter chips bag. I make them once a year on his birthday. It would be great to have a healthy version that we could enjoy more often. I think I might try these with peanut butter chips instead (although there’s not really a healthy version of the peanut butter chips).

    These didn’t work for me as no bake cookies. Not sure where I went wrong. Dough was very sticky/oily and couldn’t roll it into cookies shapes even after putting in fridge. Iused olive oil as that’s all I had which gave it a very strong taste! However, I did end up baking them and have added a bit of chocolate icing on top and they are very yummy. Turned out like a healthier version of Afghans.

    These were delicious! However, they were quite dry and crumbly and wouldn’t stick together so I added more oil… Still not great so I baked them for about 15m. Still a bit crumbly but not falling apart anymore. I also only got 12, to get 26 I would have had to make them really small, like thumb size.

    I used coconut oil, 90% cocoa chocolate bits, ground coffee and sugar. Yum yum!

    I substituted the oil for applesauce (which cut the amount of calories and fat significantly!) and 1.5 tbsp of flour for 1.5tbsp of protein powder (chocolate and hazelnut flavor) and they turned out amazing. I’ll definitely repeat a million times!
