Is there anyone in this world who doesn’t love cookie dough ice cream? Melty vanilla ice cream with bite-sized pieces of soft, unbaked cookie dough packed into each creamy scoop. What’s not to love?!

At least, that’s what I was thinking yesterday as I devoured this cone.

And then went back for seconds.

Cookie Dough Ice Cream (healthy!)

Healthy Cookie Dough Ice Cream

(can be gluten-free)

  • 1 1/2 cups creamer (such as Silk) or canned full-fat coconut milk (see nutrition link below, for notes on a lower-calorie substitution)
  • 1/2 cup milk of choice (or omit and increase the creamer or coconut milk to 2 cups)
  • 1/4 cup brown sugar or coconut brown sugar (Agave or pure maple syrup will also work. I haven’t tried xylitol in this recipe.) (40g)
  • 1 packet nunaturals stevia, or 1 extra tbsp of the sugar or agave listed above
  • 1/8 tsp salt (don’t omit)
  • 1/8 tsp baking soda (This is for flavor and can be omitted if desired)
  • 1 and 1/2 tsp pure vanilla extract
  • chocolate chips

Mix all ingredients (except chips) in a dish. Transfer to your ice cream maker. (I have a Cuisinart, and it took 15 minutes to turn the liquid into ice cream.) Mix in chips. Eat now, or freeze for 20 minutes if a firmer texture is desired. (Note: homemade ice cream has its best texture if eaten the same day it’s made.) If you don’t have an ice-cream maker, freeze mixture and then re-blend in a Vita-mix or Blend-tec. Or you can use a different ice cream recipe as the base and still make the following cookie dough recipe:

For the cookie dough:

(Alternatively to the recipe below, you could also use my recipe for Cookie Dough Truffles.)

  • 1/3 cup plus 1/4 cup oat flour (70g) (You can probably sub a different flour; I’ve just not tried it and therefore can’t vouch for the results.)
  • 1/8 tsp salt
  • 1/4 tsp baking soda (for flavor)
  • 2 tbsp brown sugar or coconut brown sugar (You can use xylitol; you’ll just lose that extra “cookie dough” flavor from the brown sugar) (20g)
  • 1 tbsp plus 2 tsp xylitol or white sugar (21g)
  • 1/2 tsp pure vanilla extract
  • 2 tbsp plus 2 tsp milk of choice, or more if needed (40g)
  • optional: 1 tbsp vegan butter or oil (vegetable or coconut oil) (14g)

Mix your dry ingredients very well, then add in wet and mix. Squish into a giant ball, then break off pieces and stir into the already-made ice cream base.

    I’m with you on the avocado – everyone seems to love it and you see it in smoothies, puddings, cakes, salads, sandwiches…. but I have never been a fan.

    I’m also not a fish eater and most people find that odd too.

      Katie & Ali, your comments about avocado make me so sad! But alas, I won’t take it personal :). Avocados are such a great food–for me, I love the creaminess. Sprinkle it with a little salt & put it on just about anything.

      I’m not a picky eater, but there are a few foods I really can’t stand–clams, flan, meat (never liked the idea of chewing on flesh), egg drop soup, slimy noodles, seaweed in most forms. I’m vegan now so I don’t have to worry about eating most of these things on this list, fortunately.

      I too have tried avocado’s and don’t understand the appeal other than the obvious health benefits. But then I happened to stumble on this recipe and it has, at least in part, changed my opinion of avocado’s. I think you will be in for pleasant surprise. My family loves them too and none of us are fond of avocado’s.

      You can get by with less sugar than the recipe calls for, but I wouldn’t go more than 1/4 cup at a time. Also, you can easily substitute coconut sugar, date sugar, etc… for any or all of the sugar, but it will affect the taste a bit, though still good. I have made them with just the cinnamon as well as all the spices, but don’t necessarily feel like you taste the cardamom especially if the nutmeg is fresher. Good no matter how you bake them. One other thing I always do is put a little oil on a piece of saran wrap and press the cookies down before I bake them since the avocado doesn’t allow the cookies to spread out as much as the butter would.

      As I was looking for this recipe, I noticed that there are other recipes out there that call only for avocado (no butter). I haven’t tried them, but I think if you don’t like avocado’s, this would be a good place to start. Hope you give them a try.

        Carol – thanks so much for the recipe idea. I’ll definitely be looking into that. I often worry that some really great nutrients are missing from my diet because there are many foods and food groups I won’t touch (fish, seafood, limited greens) and the one try with avocado wasn’t impressive. But I like the idea of blending it into something so it’s not green and not detectable but I’m still getting the nutritional value. Thank you!!

    Coconut! Can’t stand the taste, can’t stand the texture. Makes your site difficult sometimes! 🙂

    Luckily, it’s also pretty easy to get around it in recipes most of the time.

      I hear you on that I can’t stand it either esp the texture. Even if I have coconut milk in something my head tells me there are coconut bits in it lol. I can deal with refined coconut though just not virgin.

    I’m curious as to why the cookie dough bits need baking soda, since it’s only getting frozen into ice cream … ?

      I don’t want to speak for Katie, but on some of her other cookie dough recipes she says to add it for taste. So it tastes more like legit cookie dough. Maybe that’s I?

      it’s for the taste…baking soda adds a bit of a taste to cookie dough and cake batters so you see it in stuff like cake batter milkshakes too.

          In fact, forever I assumed it was the Cream of Tartar that gives Snickerdoodles their “punch” (tart/tartar?). But I read it’s the baking soda that gives it the punch and the cream of tartar that helps the cookies rise in the baking.

      I’m not a fan of eggplant either. I don’t like the texture and it seems rather tasteless. But if you really want to find a reason to like it, try eggplant chips. I baked eggplant slices smothered with olive oil and pureed basil–they turned out great! You just have to get them to be crunchy.

    I’m really can’t stand cilantro!! It’s not that it tastes like soap to me, I just don’t like it. lol I’m actually not surprised that you don’t like avocado. It tends to have a very mild flavor – and if I had to guess, you are probably what is known as a non-taster…which is why you don’t care if something is as sweet as what other people like. My husband (who is a non-taster according to testing done in high school biology class) thinks the avocado has NO taste. lol It’s just slimy to him. He says he’ll leave it to those of us who can taste it. 😀

    Love cookie dough ice cream! Do you know of any brands of chocolate chips that stay soft in the freezer? It seems like all the ones I buy become like little rocks and then I can’t taste the chocolate in them 🙁

      if you buy melting wafers or melting chocolate which isn’t as high in cocoa content they will stay much softer in the freezer. I’m in Canada and I get them at Bulk Barn. You could also take also make softer chocolate chips by melting dark chocolate and adding a little bit of coconut milk and firm it in the fridge. Then just before adding it to the ice cream, break it up into pieces.

    I absolutely detest walnuts. I like every other type of nut but cannot stand the taste of walnuts, I don’t like them in anything, I’ve even thought of going the “I’m allergic” route! I don’t understand the dislike of coconut though I love it, it’s a close second to chocolate 🙂

    Oh my god, so many avocado haters?!! I love them, just ate a whole avocado without anything else, haha.
    I hate mushrooms of any kind and mashed potatoes (it’s a texture thing, I like potatoes in general). As a kid I was the most fastidious eater, but thankfully I’ve gotten better over time 🙂

    I can’t think of any foods that I really hate that everyone else loves. There are certainly a few foods I don’t like, but they don’t seem to be popular ones. My big issues tend to be with slimy or gelled textures. Hmm, are olives popular? I don’t care for those at all. They have such a strong flavor.

    I’m very much with you on the cilantro. It tastes very strongly of detergent to me. Even just a tiny amount makes a dish inedible.

    I’ll take your share of avocados though. Love them in salads, sandwiches, and even a soup or two.

    I have the cilantro gene too!!!! People look at me like I’m crazy. I always have to ask about it in restaurants. I can’t even stand the smell of the fresh herb. Here’s a tip I’ve learned though…if you douse it with lemon juice it will neutralize the flavor to at least a tolerable level. I do this with salsa if I really want to have some. Also, if it’s pureed…like really pureed and in something acidic, I can stand it. It’s really about the oils in the leaf for me at least. Crunching into a cilantro leaf will make me choke.

    But yay!!!!! Cookie dough ice cream!

      Really? So lemon can cover that hideous smell/taste? I have been having the same problem with cilantro since I remember myself! I only found out about that gene-thing 3 years ago! Everytime I was eating something that had even a hint of cilantro, was like biting on a soap and when I was telling people, they looked at me like I was an alien! At the beginning I thought that maybe the dishes hadn’t been rinsed well or whatever but then figured it out…
      Thanks for the tip… From now on, I will be carrying lemons everywhere I go eheheh (I live in a country where cilantro is like a national herb!!! IT’S FREAKING EVERYWHERE! 🙁 )

      Im with you on cottage cheese! it tastes like nothing to me and the weird texture didnt help. I did however use it in pancakes and they turned out really good. you blend the batter making it so the weird texture goes away, Im surprised so many people can just eat it as is though.

    I really dislike fish, which a lot of people find odd. Also, I hate cantaloupe and honeydew melons. Yuck. I know there’s something else I really hate that I’m forgetting… what is it??!!

      I think we have the same taste buds! I cannot stand most fish…and cantaloupe/honeydew… disgusting!!! As well as watermelon… I feel like such a crazy person, especially during the summer for not liking them-I’m glad I’m not alone! 🙂

    Definitely on the coconut-hating bandwagon, here. That and pineapple pretty much make me gag the minute they hit my taste buds. Sadly, I’m also horrified by the texture of chia or flax. That sticky, gooey mess reminds me of snot. >_< So gross!! hahaha

    I LIVE on avacados! I really hate watermelon! I keep trying to like it, but it just tastes so gross to me. I’m also not a fan of potatoes… it could eat sweet potatoes with some beets, Quinoa and mustard/olive oil/dill/lemon sauce every day! Mmmm… I better get cooking! Haha!

    this looks so good. i love cookie dough ice cream but it is usually so rich that i feel sick after a few bites, so this might be a way for me to have it! i can’t stand cilantro and neither can my dad. it’s a genetic thing, and like you said, it tastes soapy. to normal people, i’ve heard it tastes minty and fresh. i also hate cooked mushrooms, especially ‘bellas. its a texture thing. i just can’t stand anything chewy which is one of the reasons i never liked meat. i really only like crunchy or totally smooth (like yogurt) foods.

      Okay, so I just made this – kind of! I didn’t have time to make ice cream so I made my usual vanilla protein smoothie and added more gum than usual to thicken it up so it was a smoothie in a bowl. Then I made the cookie dough from the recipe above and broke it up into my smoothie – it was heaven! It was like my favourite part of ice cream – the melted part at the end 😉 – with all the cookie dough pieces! LOVE!

    This looks SO good! Cookie dough was always my favorite flavor, can’t wait to make this.

    As for random foods I hate that other people love, I just can’t stand most cooked veggies. Carrots, broccoli, green beans…I like them when they’re raw, but they just become totally icky when cooked. I think it’s a texture thing, really. Also Hamburger Helper. Not really an issue now that I’m vegan, but my family used to eat it ALL THE TIME and even the smell made me nauseous.

    I’m not a big fan of pumpkin.. I don’t have it very often.. I don’t HATE it.. it’s just nothing to me. I don’t think there’s a food that I just can’t stand. I haven’t tried everything.. so I don’t know yet. I can’t say much about coconut or chia seeds. I’ve only had coconut flakes (on a dessert) and I’ve never had chia seeds… and I’ve had AN avocado.. only once in a salad. So many foods out there …I just can’t think of one I can’t stand.
    I have a question about the ice cream. Do you think it would make a good cookie dough frozen yogurt (maybe vanilla yogurt.. or even better chocolate cookie dough fro-yo) Maybe I could combine this and your brownie batter frozen yogurt. Doesn’t it sound yummy?! I am going to try this!

    I found out after my dad got rid of our blender that we had an ice cream maker and food processor attachment! So, now we don’t have an ice cream maker. I may or may or may not just make the cookie dough to eat… 😀

    Looks delicious! I’m just confused how why you would consider it healthy? It still has plenty of sugar and fat. Yes, I know there are some good fats, but coconuts have such a massive amount of it that even a small serving of this ice cream would give you what you need for the day.

    I would consider it more just a great looking recipe for vegan ice cream

      Hi Megan,
      Yes it has sugar, but it’s much lower in sugar than most other cookie dough ice creams. And I believe (others disagree, which is ok too) that we need much more than the 5 grams of fat you get in a serving of this recipe. Also, the cookie dough is whole-grain… and don’t forget the mental health benefits you’re getting from indulging in a childhood favorite dessert :).
      Oh, and since it’s vegan it’s also cholesterol-free.

        I guess my confusion comes from when you use the term “healthy,” because it implies that this dessert is actually healthy – the same word we use for whole grains, nuts, fruits and veggies. It’s definitely healthier than most ice cream, as you pointed out, but I think it may be a bit misleading to call it healthy. It’s still a dessert and a treat, albeit a slightly lower calorie/sugar one.

        I’ve enjoyed making many of your recipes, both sweet and savory, but I just can’t get my head around calling ice cream “healthy.” Healthier, definitely, but not healthy.

          I’m with Megan… this is a lighter version, but it is maddening how everything on this site is labeled “healthy.”
          Fruits, vegetable, whole grains, legumes and lean proteins in their as close to natural as possible forms are healthy. Adding chocolate chips and sugar and/or artificial sweetener to everything does not make it healthy. I enjoy some of these recipes, but it is misleading (especially to youngsters or people with no real background in nutrition to call every dessert and treat on this site healthy. Lower-guilt? Sure. “Healthy?” No.
          Especially if they are subbing these treats into their diets instead of macro and micro-nutrient rich foods due to calorie control.

    Also, I dislike a lot of foods, with no particular trend. Being picky+being vegan+being intolerant/allergic to a bunch of foods really narrows my food list. I’m trying my hardest to eat more of the things I’m picky about, especially coconut because of how much it’s in your fabulous desserts! I guess I’ve never tried avocados, but I like mushy textures and tend to have an overly sensitive sense of taste and smell, so maybe I would like them.

    Everyone seems to like bananas, but I absolutely cannot stand it. It makes me a little sad, because I would actually like to like it. But it’s not just the smell and taste, it’s also the texture. And I really can’t stand mushrooms, sweetened rye things, most pastas, milk, most meats and all fish except for salmon and all white potatos except for the really new ones. And salad dressing. And a lot of other things that I can’t think ov until I stumble upon them. Being veg*n has helped a lot, but methinks it’ll be a struggle when I move in with my bf, and he likes “normal” food. :S

    Do condiments count? I can’t stand mayonnaise! the only way I can stomach it is if I make it at home with olive oil and lemon juice instead of vinegar. Tastes much different than the jarred version. I can’t even stand the veganaisse. Oh, papaya too! Always tastes like vomit to me. And I live in the Caribbean, so you can imagine how often I come across the ghastly stuff.

    Raisins are humiliated grapes! I don’t like them much either. I like almost every fruit and veggie imaginable, except the texture of avocados deters me; they’re super rich too. I ‘can’t stand’ chard very well though. Anybody have any good recipes for it? Come to think of it, I hate pancakes which is weird because I really ought to love them! *sigh* ooh, coconut bliss ice cream is real good. And I know it’s weird but I like to nibble on that unsweetened baker’s chocolate now and then…=-D

    Maybe there’s hope for all the cilantro soap-tasters out there…..as I once thought about it that way, too. Somehow, somewhere, my taster changed and now I LOVE it! But I hated black olives as a kid and now I love those, too. Go figure! Anyway…..you can keep the ice cream part, I think I’ll just go for the cookie dough stuff! Honestly, if I made some, I seriously doubt there would be much left for ice cream!!!

    Too funny. As a kid, I hated avocado/guacamole and cilantro! Now I love them! I can see how people either hate or love cilantro…it really has a strong flavor. Not sure what made the change for me. I used to hate alot of things….anything chinese/asian, spaghetti…now I love all those flavors, too.

    I have a grudge against fennel and fennel seed. Had some lasagna once that was redolent of the stuff and it made me nauseated. Sausage usually has fennel so it makes me queasy, plus I’ve always had a hangup about ground meat-type textures.

    Most indian-style curry blends aren’t my cup of tea either. I think it’s the cumin. It just… smells like dirty feet or something to me.

    Was never a big potato chip or pizza eater, either.

    I too hate cilantro. I couldn’t figure out why salsa tasted soapy until one day I was watching a cooking show years ago and the host said that it tasted soapy to some people and the light bulb went off! She also said that about 25% of the population felt that way. It’s a rarity to find people that don’t like it so I’m happy to read that I’m not alone! Love your blog!

    Katie, I’m curious as to why you don’t use your chickpea recipe for the cookiedough poriton and use flour instead? is it a textural thing with the icecream? any info you have as to why theres oat flour instead is appreciated. i currently have the chickpea cookie dough chilling in the fridge for dessert after my salad 🙂

    Oh, this sounds delicious! Been way too long since I made CCK ice cream (almost two weeks, lol). I used to think I hated avocado because it was green and mushy, but once I started eating it, I loved it! I cannot be trusted with a bowl of guacamole. 🙂 I don’t hate many foods, but I’ve always despised mayonnaise and mussels / clams / oysters. Definitely a texture thing there, because that type of shellfish just looks like snot! Also never been big on bacon… The squishy fat grosses me out, and I hate that my entire kitchen smells after my boyfriend cooks it.

    Amazing you posted this today. I have been thinking about ice cream all day! I just saw a vegan recipe in the July/Aug. Vegetarian Times for my favorite flavor…Mint Chocolate Chip…with Hot Fudge! Mmm! I wondered if you had ever posted a recipe for vegan ice cream. And here it is! I will have to try your recipe. I would recommend to everyone to skip the Agave and use pure raw unprocessed honey or at least regular honey.     Stuffing. Can’t.handle.it! Also, I always wanted cookie dough ice cream to be made with a chocolate base. As a kid, I was disappointed with anything vanilla. I know, call me crazy. But stuffing is just wet soggy bread to me. ugh! I love your lentil stuffing recipe though!

    wow I LOVE avacado and cilantro! I could seriously wear a perfume made of cilantro, I think it is the best smell in the world! haha but as far as food I don’t like… I can’t say I really hate them, but i don’t like papaya at all, and I’m not the biggest fan of melons.

    I *HATE* soy…any type, any form, in any thing!! I can ALWAYS taste it, no matter what it’s mixed with. I’m not vegetarian or vegan yet (working on it slowly!), but I think I may have a more difficult time than others simply because so many vegan/vegetarian versions of “regular” food is made with soy. Other than that, I also can’t stand any type of squash (except pumpkin, if it’s sweetened), mango, and tea…ugh, I can’t stand any type of tea!

    Besides all that, I just have to say that I love your blog, Katie! I just found you about a week ago and have already tried a few of your recipes and LOVED them…especially the ones with chocolate in them! Haha! 😉

      Don’t give up hope! They seem to be coming out with soy-free versions of more and more veg products these days. When I started out, there was just soy ice cream and soy yogurt and soy burgers (and non-soy milks were harder to find). But now they’re offering coconut-based, cashew-based, almond-based… the variety expands every day :).

    Hey Katie!!
    I’ve been reading your blog for about 6 months now (around the time i switched from vegetarian to vegan) and I really look forward each day to seeing your new and healthy dessert creations! But tonight, as I am eating a bowl of instant microwave grits, a thought occurred to me: Would it be possible to make some delicious dessert using grits? So, I tried it out- cinnamon and stevia, cocoa powder and sugar, all different combinations, and i think it was pretty good! But I figured you could do something truly delicious with grits so I though I’d tell you and see if you thought it was possible/ a good idea or useful ingredient!

    Aw, this recipe takes me back to 6th grade when my best friend and I used to walk to the ice cream shop after school for cookie dough milkshakes 🙂 Might have to recreate one of those with this recipe!!
    I keep trying cheesecake thinking I’ll like it, but it’s just not happening. Ah, well–my health is probably better for it!

    I simply can’t stand olives! Olive oil in salad and stuff like that is fine, though…
    Apart from that anything vegan is fine for me 😉

    I am one of the few nutjobs out there who hates cheesecake. I really don’t like cream cheese in anything . . . I should probably just hang out with more vegans so I can feel normal.

    It took me several times of eating cilantro before I learned to enjoy it. The first few times I had avocados I found them detestable. I have since learned to like both things as well as onions, bell peppers, and ripe heirloom or roma tomatoes. I still hate all types of olives, mushrooms, and any sort of eggplant/okra.

    Yum! Cookie dough ice cream is AMAZING and I’m sure homemade is even better!

    I’ve never been a fan of dates/raisins/thingies in desserts. I’m learning to cope with them as an adult, but for some reason just naturally never liked them chopped up in cakes or cookies!

    I am sooo excited to try this cookie dough ice cream…I am totally addicted to genius blondies (of course I always undercook them + add lots of giradelli dark chocolate chips + ice cream). Now I can have a healthy cookie dough ice cream. As for question of the day I HATE coconut. I always want to try your recipes with coconut butter but I am afraid to splurge on it since don’t know that I will like it. Is the flavor of coconut really strong? And would you suggest a substitute for your 3 ingredient chocolate bars for those who strongly dislike coconut? 🙂

      Not.. Katie, but I have an idea for a substitute for the coconut – cacao (cocoa) butter. I think it’s kinda similar to the coconut so .. it should work. It’s just an idea.. I’ve been wanting to try it(I have not tried it!) for some time now.. I’ve been reading things here and there.. so I think* it will work. I hope this helps 🙂

    Totally with you on the avocado and cilantro. ICK. And imagine how it is when my mother combines the two. My family LOVES avocado like nobody’s business… so I live with having barf bags readily available. After years of witnessing my guac-loving family, I am a MASTER in the art of discreet puking. I know… TMI.
    p.s.- has anyone else, when on a plane, tried poking a hole in the bottom of the person sitting next to you’s barf bag? Quality entertainment, people.

      Like what people use in coffee! It’s milky but way thicker / more fat. You can just use coconut milk for the ice cream, though!

          It doesn’t taste exactly like regular milk, but I don’t think it’s overly coconutty in flavor. Adding vanilla extract helps, too. 🙂

    Just wanted to let you know I tried this today and it was wonderful. Everyone loved it, but I wanted to tell you too that I used white whole wheat in place of the oat flour. I didn’t know if anyone else had tried this. Everyone really liked it and ate it up, but I think it would probably be better with the oat flour (I didn’t have any and didn’t feel like making any, plus I wanted to see if it would work with white whole wheat because oats sometimes bother me). Anyway, the flavor was very good, but it was a little gooey like bread dough in consistency rather than cookie dough if that makes sense. It still tasted great and like I said everyone ate it without complaint. Just wanted to let you and others know in case anyone else wanted to try it with whole wheat. Maybe spelt would work better? Thanks for the great recipe!! Will definitely be making again!!

      Yes, definitely www flour would make it more gummy. Not sure about spelt flour… I think maybe a gf flour would be better, due to the lack of gluten to make it gummy? Maybe almond flour? That’s just an idea, though. I haven’t tried it.

    HOLY. MOLY. This recipe is amazing. I made it using all Silk creamer and was pleasantly surprised at its yumminess. My cookie dough was originally a bit gooey – perhaps the optional tbsp of coconut oil I added? – but I kept adding more oat flour and brown sugar until it was the consistency I wanted. And of course, I had to keep testing it to make sure it still “tasted right”… and ooooooh, baby, it did!! The final combo was mind-blowingly fantastic.

    Thank you for such a DELICIOUS recipe! Can’t wait to try your other ice creams!

    I’m not a big fan of coconut – I try to like it but something about the texture is just not right for me…& coconut water! I have tried every flavor (& suffered through it whether I liked it or not – it’s pricey!!) but the only flavor I like is chocolate. Prob bc the chocolate flavor disguises the coconut flavor 🙂

    I just posted about a healthy cookie dough ice cream recipe! Must be a hot summer day go to. 😛 Although your pictures definitely top mine. I was way too impatient to take pictures and eat it with it being so hot in my house…Oh well!

    As far as what food I can’t seem to get myself to like….Coconut flour! I don’t know what’s wrong with me, but I see so many bloggers ranting and raving about it! Does anyone else think it tastes wheaty/bitter? Do you think I got a bad batch? What is it supposed to taste like?

    This may be a stupid question, but the only kind of ice cream maker we have is the kind u use rock salt and ice with. Would this recipe work in that kind of ice cream maker? I would love to make a huge, family-sized batch!

    UPDATE: I made this in my big ice cream freezer (with ice/ rock salt), and it turned out DELICIOUS! My dairy-loving husband said it was just as delicious as dairy ice cream. 🙂 Thanks for a delicious summer recipe!

    love it love it love it. Making my second batch today!
    I don’t have a ice cream maker, just my trusty kitchen aid food processor. I made the Ice cream base, excluding choc chips, than put into freezer over night. Once frozen, transferred it to food processor for a minute till smooth. Made cookie dough mixture, mixed in with ice cream base, ate far too much, and put the leftovers back into the freezer.
    It re-froze really well too. I thought it may go a bit icy like some of my other ice cream attempts in the past have, but this was just as creamy and smooth after being in the freezer for a few days! Thanks for this amazing recipe Katie! I think I’ll have to give your other flavours a go now too 🙂

    This was just what I needed! My daughter is allergic to milk and eggs and is nursing so I can’t have any of it either. She is almost 2 now and I’ve really been craving ice cream, one of my all time favorite foods. I haven’t found any I really like at the grocery store and they are so pricey.     I made just the cookie dough and it turned out wonderfully! I used 1/3 c oat flour as directed, but then subbed 1/4 c coconut flour for the remainder of the oat flour. Also I reduced the amount of sugar and I found it plenty sweet! And I didn’t use any oil or anything, it was perfect for me without it! Thanks Katie!

    I’ve also heard that to some people, cilantro tastes spicy. I don’t have any weird reactions to foods, I could put green onions and cilantro in everything I make, and I love avocados! I can’t believe a vegan wouldn’t like avocados! They’ve been my favorite thing since I was a kid! I love your blog, I’ve made several things off of it. I just can’t understand putting baking soda/powder and cream of tartar in things that aren’t getting baked. The taste of those ingredients to me is repulsive! I couldn’t stand the baking powder taste in those nature valley granola bars of yours!

    I’ve heard that before about cilantro and genes, but I’m not sure how true it is. Cilantro used to taste like soap to me too… couldn’t stand the stuff (who want’s to eat soap??!!) So I just avoided it.. until one day last year I unintentionally had a dish with cilantro in it.. and it tasted.. NOT like soap anymore. Don’t know what changed or why, but I know like it quite a lot. Don’t love it, but I do like it. And absolutely no soap taste.

    By the way, thanks for the Cookie Dough Ice Cream recipe. I came across your blog yesterday and tried your Vitamix chocolate-strawberry ice cream — DELICOUS!!!. Can’t wait to try this one.

    I made this recipe, but added a very-well blended banana to the ice cream base, and because I don’t have an ice-cream maker, I stuck it in the freezer, and when it started to freeze, stirred it every 15 minutes or so. The result was the most delicious, creamy vegan ice cream I’ve ever had! Thanks so much for the recipe. I’ll definitely be making this one again.

    I have been drooling over your recipes.

    Finally, my ice-cream maker arrived and I made this ice cream (My 16 year old son and I tasted and loved it). We did add a bit more oat flour to our cookie dough and we used 1 cup cream 1/2 cup coconut cream and 1/2 cup lactose free milk (for our liquids). We also added m&m as the choc chip we had at home are gross. Subbed maple syrup for the sugar. Left brown sugar in the cookie dough.

    Now my family can enjoy home made.

    I’m with you on the cilantro (ugggh) but not about avocados. I have a recipe for key lime pie using avocados. Avocados are laoded with vitamin B6, which supports your liver and balances certain hormones such as estrogen.

    Mm, I don’t like the taste of cilantro either- for some reason if leaves this off taste like the inside of a refrigerator (maybe it’s that slightly soapy flavor). Go figure! As for avocado… I don’t like it straight up but it’s good in grilled cheese, and something you might go for… in a chocolate cake(http://www.joythebaker.com/blog/2009/07/vegan-chocolate-avocado-cake/)! You definitely couldn’t taste it; it just added healthy fat.

    I used to HATE seafood, but have come to love salmon, shrimp, certain kinds of fish. I just don’t like if it has a strong fishy flavor. I still can’t stand rubbery clams, and I just don’t get the big deal about lobster. My husband doesn’t mind – more for him! I would never try caviar – I don’t care if it’s a delicacy.

    And then there are some things that I love – like coconut – but can’t stand certain things that are made with them, like ambrosia salad with marshmallows. It makes everything taste really stringy, ick.

    Let’s not even get into aspic.

    OK, it was this recipe that made me find your website! I’m not vegan, but try not to load my kids up with artificial additives, so was actually just looking for a “normal” cookie dough ice cream recipe since it is our favorite. Actually wasn’t expecting much when I figured out this was low-fat, but HOLY COW is this GOOD! My kids would tell me if anything was off, believe me, and they goggled it up as quickly as they would store bought. Yum, yum, yum.     I made this last night for the in-laws. I have to saw it wasn’t as good as pictured. Maybe because I used a different kind of milk? But the cookie dough bits tasted too flour-y to me and my husband. We froze the ice cream and will thaw it later to have as an afternoon snack, but I will probably not make this one again.

    This ice cream looks great! can’t wait to try! I will have to wait until Sunday to make it since i gave up sweets for Lent. I came upon your website a few weeks ago and i love it! I am a grape and cherry tomato hater. I literally will gag if i eat one! i like big tomatoes though as long as they are chopped fairly small as i don’t like big chunks.

    If I don’t have full-fat coconut milk, but still want a creamy texture, would it work to just use regular coconut milk and then add some coconut oil in place of milk? Or would the coconut oil just harden to quickly?

    I can’t stand True Foods ice cream and sorbets! The texture is ridiculous!!!! Fresh/raw dates also known as Khalal are something else I can’t tolerate! Oh papaya and persimmon! Not for me!!! The texture is weird to me my teeth hate it!
