These no bake Oreo cookies are even better than an Oreo…
Homemade Oreo cookies?!
Ah, your eyes are playing tricks on you. What you really see is even better than an Oreo. These sandwich cookies look like Oreos, but they’re softer and chewier… imagine a cross between an Oreo and a candy bar.
That sounds fun, right?
Even more fun:
You don’t need an oven. These cookies are no-bake. 🙂
No Bake Oreo Cookies
Makes 30-34 sandwich cookies
- 1 cup walnuts (see nutrition link below, for substitutions) (120g)
- 1 and 1/3 cup pitted dates (I highly recommend Sunmaid, which are softer) (200g)
- 1 tsp pure vanilla extract
- 1/8 tsp plus 1/16 tsp salt
- 3 tbsp regular cocoa powder (or Dutch-processed for more of a “cookie” taste)
- coconut butter or raw cashew butter (see nutrition link below, for substitutions)
- optional: sweetener of choice, if a sweeter filling is desired
Combine first 5 ingredients in a food processor, and process until the dates are completely broken up. (I used a Cuisinart. For best texture results, don’t use a blender.) Transfer the dough to a ziploc-type bag, seal, and smush it into one tight ball. Then roll out onto a sheet of wax or parchment paper, and use cookie cutters to make circles (or other shapes!). Fridge or freeze the circles for a few minutes, so they’re firmer and therefore easier to frost. Once firm, spread the filling on 1/2 the circles and then top with remaining circles.
These are best stored in the fridge or freezer, as coconut butter melts at room temperature. (P.S. coconut butter really doesn’t have a coconutty flavor, if you were worried about that. Its flavor is more like shortbread. However, feel free to use one of the other options if you’d prefer.)

I don’t like hard cookies, so I was never really big on Oreos. But I love the cookies ‘n cream flavor. Cookies ‘n cream ice cream, cookies ‘n cream cupcakes, cookies ‘n cream lip balm… yes, they do make such a thing!
Do you remember the game where two people twist the Oreo, and the person with the cream side will supposedly have good luck? In elementary school, I think we played that game every single day at lunch. It never got old.

Side note: As I wrote earlier, today’s recipe isn’t supposed to be an exact copycat for Oreos. I’m still working on that… I have the cookie part down, but I’m stuck for filling ideas since I’m trying not to use coconut butter or tofu (since so many people ask for substitutions when I make recipes with those ingredients. Y’all are a tough bunch to please! 😉

Oreos. I would say probably over a year? Comes and goes for me. When I do eat them it is the peanut butter filling ones. And I get sick every single time which is probably why I am finally getting wise and not eating them. 🙂 Besides, these days I have SO many better options thanks to you!

I prefer soft and chewy rather than hard/ crunchy. When I was younger I used to lick the filling out of the oreos and put the cookie part back.
Could I leave out the salt? I have a family member on a very low salt diet.

what about carob powder? it’s even healthier than cocoa! the taste is a little sweeter than (unsweetened) cocoa, so I’d think you wouldn’t need another sweetener. Not everyone loves carob, but I think it’s delicious and goes very well with lots of recipes that call for cocoa/chocolate.

Question on coconut butter- I made some and put it into a jelly jar in the fridge, but now I can’t figure out how to get it out to measure it! Should I microwave the jar until it’s smooshy? Or should I have not put it into a jar? It’s a really hard texture right out of the fridge, and it can kind of be scraped at with a knife, but not well enough to measure.
These cookies look pretty good – I’m going to try them and bring them to work and see if I can convince the people on my team to try them!

I don’t think you need to put coconut butter in the fridge, I never do anyway. At room temp. it’s supposed to be spreadable, but mine is always kinda hard except when the weather outside is really hot (which doesn’t happen that often around here). You could wait till it’s a little softer at room temp., then scoop out some spoonfulls and melt them on the stove/in the microwave. that’s what I always do. Or you could put the jar in a waterbath and heat the water till the butter gets soft. I don’t have a microwave, so no idea if you can put a whole jar in there…

I fully admit that I am not patient enough for a water bath and put the entire jar (minus the lid) in the microwave. In WA state I am sure I am going to be lucky if mine is soft maybe one month out of the year sitting on the shelf.

The oreo filling you are stuck on …. how about something like quark (do you guys have it?) … its a low fat soft cheese – with something like vanilla and ground almonds it might give you a good consistency?

No, coconut cream and coconut butter aren’t the same. As for the dates… My food processor doesn’t like the Medjools as much because they’re not as soft. But maybe if you soak them a little first… Or if you have a really powerful food processor, they could work!

I love the idea of a healthy Oreo recipe only because so many healthified recipes – like Cookies’n’Cream ice cream or pie, for example – still require Oreos as a base. That’s because people are usually most concerned with calories, which I get, but I would still like to have the whole recipe be healthified – even the Oreos! So if you can help out with that bit, I’d love it. Because, of course, for pies and ice cream you only NEED the cookie part – the filling part is negated by the ice cream! So you could post that! 🙂 🙂 🙂

Last time I had an Oreo was probably a couple months ago. My mom offered me some when I came to see her but, since I’m recovering from a cold, I had to refuse the sugar.
But it’s great that these are sugar-free! I always opt to using stevia whenever possible. 😉

I was thinking maybe you would wanna try an avocado base for the middle of the oreos… I know I know, you don’t like avocados and all, but if you mix them with other things, they go chameleon, and tend to take on other flavors. I just made the avocado butter cream frosting, which is what made me think that you might take a shot at that. It tastes a bit more like kiwi when you add sugar to them. I haven’t tried stevia, as I’m not sure how to mix it in or anything. Anyhoo, I’m sure there’s inspiration for you somewhere!

call me crazy, but i also have used artisana coconut butter many, many times and it most DEFINITELY has a strong “coconutty” taste. it tastes like pure unsweetened coconut, which is what it is. when i add it to chocolate or on top of brownies, it definitely tastes like coconut.
that being said, i wish there were more recipes that did not include coconut as the filling/frosting/glaze/etc. i love coconut, but i don’t want it in every treat, if that makes sense.

Honestly… I’m kind of… idk.. disappointed that people like you exist, to think it’s ok to put people down who obviously work really hard. What exactly do you want? Most recipes use the same ingredients. I can even think of entire cookbooks called “1 mix, 100 cookies” or something like that. Many of us appreciate that CCK uses easy to find ingredients so we don’t have to spend a fortune buying new ingredients for every recipe. The creativity is finding new ways to use the same ingredients, not forcing readers to shell out money most of us don’t have to waste on an entire bag of some new ingredient we’re only going to use for one recipe.
How about this: If you don’t have something nice to say, don’t say anything at all.

Look, I personally don’t think that Jenny’s original comment was mean or unkind. It is true that there is a limit to how many ingredients there are that are super-healthy that taste good in a dessert, so yes, most of her recipes have similar ingredients. I agree with her in that a regular Oreo probably tastes better. That’s not to say that Katie doesn’t work hard or have creativity, because she has a talent for baking healthily (and making it taste good! although coconut butter on a date cookie does not totally appeal to me, but I do love some good junk food treats every now and then), but it is true that the only real substitutes for butter are coconut butter/oil, etc.

Ok this is gonna sound weird, but I thought they did! I didn’t think they would, so I made sure to use the Dutch cocoa to give them a better chance. I also added a little bit of stevia (nu naturals brand) to my coconut butter. The “cookie” part actually did remind me of an oreo, and the filling was even better than oreo filling! I think the only “un oreo” thing about them was the texture. Maybe if you had a dehydrator it would be more oreo like?

I used to do the majority of her no-bake with prunes instead of dates (I can get huge bags of prunes at Costco and go through a lot of them). One day I bought dates and did a bit of a recipe show-down between a couple of recipes I know well to compare dates versus prunes.
I like prunes and they work fine, but there is no denying that dates are sweeter and less “fruit-juice” sweetened in final flavor.
Not sure if this helps or not, but in my opinion prunes are a cheaper option although not a superior one.

Then I realized they are probably vegan because they are made with mostly chemicals. Now I don’t eat them at all. Which is sad because they were delicious in a chemical-ly kind of way. 🙂

I made these last night! My boyfriend saw me perusing the recipe and started asking what time I was going to make “Katie’s oreos.” 🙂 Added a few cashews because I didn’t have quite enough walnuts. Also upped the vanilla (I LOVE vanilla) and added vanilla and a little bit of agave to the filling. These were really good! Honestly, I buy the coconut butter from Trader Joe’s, and it definitely has somewhat of a coconut flavor (not strong, but it’s there). From someone who loves and knows about all things buttery treats, coconut butter doesn’t taste like shortbread with its glorious butter flavor in the slightest. To me, plain coconut butter as a filling sounds sort of gross. Coconut butter is also quite solid after being refrigerated, so the filling would likely be fairly hard and unpleasant. I love healthy treats, but plain coconut butter is not something I would eat.

I think you’re confusing coconut butter and coconut oil, because TJ’s doesn’t sell coconut butter (at least, all the ones I’ve ever been in don’t!). Try Artisana coconut butter. It really is delicious, yes even plain!

The TJ’s near me (I live in PA) does indeed sell Coconut Butter near their baking section. I believe it is a new or trial item, because I only noticed it twice. I honestly was not a huge fan, but then again I don’t really like Biscoff spread or Nutella either, which are really popular and loved by about 99% of bloggers. I’ve had coconut oil as well, cooked in things, and from personal experience (I made the mistake of melting it over popcorn-yuck!) I know that that really is not good on its own! I guess it’s a matter of taste. I know some people love coconut butter though. For me, I would have to mix it with powdered sugar and vanilla to somewhat enjoy it. The flavor is just too strange in my opinion. But Katie, and Sara, if you like it, good for you! It’s healthy.

That just means you get to experiment with a different filling! I think I heard canned frosting is vegan, so if you weren’t worried about added sugars that would certainly work.

There’s actually no coconut oil in the “crust” — just the dates and walnuts when processed can be pressed into shapes! And the filling, which is separate, is coconut butter rather than oil. This post has a pic of the “dough” after processing:

Funny that you posted an Oreo recipe. I was wanting to ask if you’ve ever done a healthy version of “mud”‘or “dirt” which is a classic kids dessert made from vanilla pudding, cream cheese and crushed Oreos. It’s one of my all time fave desserts but I don’t make it any more for obvious reasons.

Ok this is gonna sound weird, but I thought they tasted like oreos! I didn’t think they would, so I made sure to use the Dutch cocoa to give them a better chance. I also added a little bit of stevia (nu naturals brand) to my coconut butter. The “cookie” part actually did remind me of an oreo, and the filling was even better than oreo filling! I think the only “un oreo” thing about them was the texture. Maybe if you had a dehydrator it would be even more oreo like?

I made a batch of these tonight and am excited to try! The kids loved them. Was not clear on how much coconut butter to use though – especially since there were nutrition stats. I’m sure it was supposed to be a set amount…was I missing something?

I was very skeptical about this recipe. But it was yummy. I LOVED the dark Oreo part because it really DOES remind you of an Oreo but I didn’t care for the filling. Katie first off I love your recipes and website! I made the cookies and I agree that they are quite good. However for my filling I used a banana and then added vanilla, sweet almond extact, a touch of maple syrup, and rice flour, it still needs some tweeking but I think it is a very nice touch with the chocolate cookie!

First time I have ever left a comment. I agree with people who do not like hard cookies but I am a big Oreo’s fan when they are dunked in milk. Makes them soft and ooohhh so yummy. As for oreos made from dates, not a bad idea but I like dates so well that I just eat them as they are.

I love these! Just made my own chocolate filling: 1 can black beans, one banana, 1 pkt nunaturals stevia, 1 squirt agave and 3/4 cocoa powder. Processed very well. YUM!!!!

Made these today, and they were a hit! And yes, my family all agreed they tasted remarkably similar in flavor to Oreos–I did use the dutch cocoa, and I’m positive that is what makes the difference between just chocolate and Oreo-cookie flavored chocolate. For filling I used homemade coconut butter mixed with xylitol “powdered sugar” and it tasted very much like real Oreo filling, right down to the texture. I may be biased because I prefer soft Oreos to crunchy ones (a slice of apple put into the package overnight makes ’em perfectly soft the next day, lol!) so I think these are a PERFECT healthier substitute and I don’t even have to wait a day for them to soften up–instant gratification 🙂

I need troubleshooting. I have made this recipe for my boys numerous times, but now the ‘dough’ it coming out greasy. 2 things have changed: I burned out my 300 watt processor and bought a bigger one. I am now using a 600 watt motor (14 cup capacity). The other difference is that it is summer -but the house is cool. I should add that ‘no’ I am not doubling the recipe and the dates are not greasy to touch. The mixture does feel warm to me right away when I get it out, but I can’t say it didn’t with the other appliance, I just didn’t notice until now as I try to figure out why this is happening. Ideas? I would love some suggestions.

However, I was wondering if maybe you could share the recipe for the cookie part of an oreo (the one you said you had down)? I’ve been searching everywhere for a healthy oreo recipe, and the cookie part is something I just can’t find. With that being said, it’s totally fine if you don’t want to share the recipe, too, because your saving it for your cookbook (so excited for that, by the way), or don’t want to give it out early for some other reason. I’d totally understand.

No-Bake Oreo Cookies:
You note that these should be kept in fridge or freezer due to coconut butter. I am doing a construction theme party for my son’s second birthday party. Initially I thought I’d make Oreo balls & put them in a dump truck (in place of a cake), but I was concerned about the cream cheese being outdoors in June if it’s a hot day. Then I learned that my 1 yr old nephew tested positive for peanut allergy a couple of days ago. I’m concerned about Oreos possibly sharing manufacturing lines with products that do have peanuts. So here I am looking for other alternatives…are there any substitutions for coconut butter that will work in this recipe & make it safer to have outside in possible heat? We can store them in fridge until we set up for the party, but it needs to safely be able to stay in warmth for at least an hour or 2. Thanks for advice!

and just that day i picked up a pack of oreo (who doesnt like cookie and cream once in a while right), and omg i was outrageously sugar high, and one led to another and made me crave for even more biscuits and sugary junk! If you were to look at the ingredients list, not only the first ingredient is sugar, there is HFCS. There is really nothing good about it so dont feed that to yourself or your kids! Just a two cents here 🙂

Hi! I recently made your copycat vitamuffins and found them to be a bit high on cocoa, not a big fan of the bitter taste, same is also true for my 2 yr old daughter. Now I am not sure on whether I should reduce the cocoa powder or increase the sweetener in your recipes to get a ‘sweeter’ taste. I really want to try these Oreos, can I skip the cocoa powder here and use lots of chocolate chips instead? It would be easier for me to control the chocolate ‘bitterness’ in that case and also have a little crunch in the cookies. Im an oreo addict and have been terribly missing em ever since I turned keto. I so badly wana try this out, but have a few doubts.
1. If I were to use granulated sweetener specifically erythritol instead of dates, how much would you recommend?
2. Can I just use my homemade no churn vanilla ice cream as the filling, or would that make the cookies soggy and wet?
