Spinach Ice Cream?

It’s an ice-cream version of a recipe posted a few weeks ago.

Finally the weather’s getting warmer. When I discovered that the temperature was a perfect 74 degrees, I decided to celebrate: with ice cream. Taking advantage of the waning spring-break hours, I invited two friends over to eat ice cream on the patio.
Yes, I really did serve spinach ice cream. And yes, my friends really did eat it all up! I honestly don’t even know why they allow me to feed them anymore, for how many times I’ve snuck funny things into their food—tofu chocolate mousse, spinach ice cream, kale milkshakes…My friends laughed when I told them the truth (after they finished eating). Then they requested more. (For theirs, I replaced the cacao nibs with regular chocolate chips. I know not everyone shares my love of those bitter little crunchies.)
Spinach Ice Cream
(sugar-free)
One of my Raw Dessert Recipes.
- 2 frozen bananas, as ripe as possible
- 2-3 drops pure peppermint extract
- scant 1/16th tsp salt
- 1/4 cup or more frozen spinach (I used 40g) (If you don’t like spinach, you can sub food coloring or omit completely.)
- scant 2 tbsp milk of choice (I used almond milk)
- chocolate chips or cacao nibs
Blend everything together in the Vita-Mix. (If you don’t have a high-powered blender, just add more liquid; it won’t be as ice-cream-like, but it’ll still taste good!) Use an ice-cream scoop for authentic-looking ice cream.

After my friends left, I continued the St. Patrick’s Day theme (and the leafy-green theme) with dinner. It’s just a simple stir-fry over bulgur. But the mache greens look like four-leaf clovers! I also ate a spoonful of raw cashew butter, straight-up. Anyone else like eating nut butters straight-up?

This isn’t about this post, but I didn’t really know where else to put this so I just decided to post it here anyway. I just wanted to say thank you so much for writing this blog, as it has really changed my life. I know it sounds silly but it is true. I have been recovering from a variety of illnesses recently and reading your posts has really changed my outlook. I won’t go into much about me, because really the point is to say thank you so very much, you will never know how much you have affected me. So I guess, regardless or whatever else happens, just know you have changed one person’s life for the positive

I eat my nut butters straight up on a fairly regular basis… in fact, I usually polish off a spoonful of peanut butter before bed… keeps me full all night while I sleep!!! 🙂
That ice cream is so pretty, and so healthy too!
I prefer to get my greens via hughjass salads. I eat one every day!!! A lot of people say “aren’t salads diet food? you’re not dieting!”, but the truth is I’ve always loved salad! My sister is 9 years old and asks for a salad for dinner every night. At least our parents got one thing right!!
Haha people who say salad is diet food clearly don’t know how many calories are in places like Chili’s salads!
I made the skinny fudge babies using the directions you gave me and they taste great!
The “batter” is a lot stickier than any I’ve made before, but I let them set in the fridge for an hour or two and they firmed up just fine 🙂
Yay!!! I’m so excited you tried them… and that they worked! Yeah, the batter will be stickier because the nuts are dry and soak up the stickiness. But hey, sticky isn’t always a bad thing… look at caramels ;).
Great idea! I love my leafy greens–I most often eat them in salad form or in tofu or egg scrambles.
I love green ice cream! Never made it mint though. Nice touch for St Patty’s.

that looks amazing! my favourite ice cream is mint chocolate chip but i can never eat it, so it makes me so happy that there is something out there that looks like it! i get my greens in the form of spinach in my smoothie every day. i also am having roasted veggie sandwiches for lunch this week and am adding some baby spinach to those. i should probably diversify my green intake 🙂
I am kind of LOVING the idea of “spinach ice cream”! I usually get my greens in by making GMs or creating salads with tonsss of toppings 🙂
I always put spinach in smoothies so I can’t wait to make ice cream with it! Especially mint chocolate chip which is my favorite flavor!
