Peanut Butter Babies

by Chocolate-Covered Katie on October 30, 2009

These healthy treats taste like eating peanut butter cookie dough!

peanut butter fudge babies

(Above, chocolate peanut butter babies)

Peanut Butter Babies
(Makes 120 grams, which is a tiny bit more than the size of two Larabars)

  • 1/4 cup roasted, salted peanuts (30g) (I use roasted-unsalted, and I add about 1/8 tsp plus 1/16th tsp salt.)
  • scant 2/3c dates (80g) (I use SunMaid, because they’re super-soft.)
  • 1/8 tsp pure vanilla extract
  • Optional: chocolate chips or cocoa powder

Blend the ingredients in your food processor (I used a Magic Bullet short cup).  Smush into bars, roll into balls, or use cookie cutters!  These peanut butter fudge baby bars taste divine warmed up a little in the microwave.  Oh who am I kidding?  They taste divine ANY way you choose to eat them.

Pb’s brothers and sisters:

  1. Add dried banana for Elvis Babies
  2. Dip in chocolate for Buckeye Babies
  3. Other dried fruit for Pb&J Babies
  4. Add chocolate chips or cocoa for Chocolate PB Babies

I love this action Katie…wow soooo delish looking! I don’t cook (un-cook) with salted nuts very often b/c I have no idea why?! LOL but the PB cookie dough… you had me right there :)

I posted once when I first first started my blog about making homemade larabars. My ratio was 1/2c dates to 1/3 c nuts. So your ratio of 3 to 1 dates to nuts would just make things so much more chewy and delish!

Thanks for your touching email, I love you girl :)
Enjoy your night and thank you again…for everything :)

This fudge baby sounds best to me, but I think the first thing I would make in the vitamix would be some carrot ginger soup!

Reply

Amanda January 16, 2010 at 8:32 pm

I’ve always been sucka for peanut butta so this fudge baby is tops for me. The first think I would make in the Vitamix is almond milk. None of my other blenders have been able to handle blending almonds.

Reply

CatMS916 January 16, 2010 at 9:11 pm

I actually just made these today and added in some oats for extra texture and they are ah-mazing!!! My fiance has been all over these, thanks!! Would looove to make these in a vita mix though…. :)

Reply

Karen January 16, 2010 at 9:55 pm

This ‘baby’ sounds the best to me! I would add chocolate chips . . . watch out Reeses!

Reply

Karen January 16, 2010 at 10:01 pm

I forgot to mention in my above comment that the first thing I would make would be THICK smoothies. I like to eat my smoothies with a spoon, but my current blender cannot handle that level of thickness, so I have to add more liquid than I would like.

Reply

Brooke January 16, 2010 at 10:03 pm

these sound amaaaazing, i would make soup first!

Reply

Katie M January 16, 2010 at 10:10 pm

I LOVE PEANUT BUTTER!!!!! oh and almond butter.. and my blender cannot make peanut butter OR almond butter! So i would make both if i got a vitamix! AHHH VITAMIXES ARE FABULOUS

Reply

Dandi January 16, 2010 at 11:15 pm

Hey Katie! I love all things peanut butter so this sounds completely amazing! I would probably make a green smoothie first with a vita-mix because i tried it with my wimpy blender and there were a bunch of chunky pieces…bleh

Reply

Lori January 16, 2010 at 11:18 pm

I don’t know how I would decide what to make first in a VitaMix! Either kabocha soup, a nut butter or ice cream!

Reply

Trisha January 16, 2010 at 11:28 pm

These sound delicious. Except I would make the chocolate chip mandatory instead of optional! :) I can’t wait to try them all!

Reply

Michelle January 16, 2010 at 11:29 pm

I would definitely make nut butters- every kind possible! Then I would eat it with chocolate. :) Amazing giveaway!!

Reply

Andrea January 17, 2010 at 12:39 am

The first I would most definitely make my own almond butter with a vita mix!!!! I’ve always wanted to make my own nut butters, but I don’t have a blender to do so! :)

Reply

Samantha January 17, 2010 at 1:03 am

I would make hummus in the Vita-Mix. I use a food processor but I read you can get it a lot creamier in a blender.

Reply

Tiffany January 18, 2010 at 5:15 am

These fudge babies are my fave flavor! I love nut butter and chocolate anything! With the Vitamix, the first thing I would make is homemade hazelnut milk. I havent tasted it before but I heard it is richer that almond milk. My blender is so low powered that it would probably break if I attempted :)

Reply

Lia January 20, 2010 at 2:53 pm

I can’t wait to make this baby at home! Peanut butter is my LIFE.

The first thing I’d make with my Vitamix would be a frozen banana-peanut butter-choc chip ice cream!
I already had great results just blending frozen bananas but with a Vitamix it would be easier, quicker and possibly even creamier!
I’d add some agave or maple syrup to sweeten, the chips can be added afterwards. :D

Reply

Heather A January 20, 2010 at 6:44 pm

Wow these would be my favorite flavor!!! The first thing I would make if I had a vitamix would be my raw pina colada shake. My blender leaves it so chunky!! Then I think I would make some nut butters then some banana softserve…I want a vitamix soooo bad!

Kelly January 20, 2010 at 9:30 pm

these are my favorite babies. i would definitely make a smoothie!

Reply

Lisa January 20, 2010 at 9:46 pm

These are my favorite babies!

The first thing I’d make in my VitaMix is a nutrient-packed green smoothie – I’d pack that thing with all the veggies my regular blenders can’t handle, and let it whirl!

Reply

Bernie January 22, 2010 at 5:01 pm

Thanks for the recipe, even better than a Lara Bar!!

The first thing I would make in the Vita Mix is some delicious chocolate covered strawberry ice cream. My wife and I have been drooling over this recipe but don’t have a blender quite powerful enough to pull it off.

Thanks for running this contest, best of luck to everyone!

Reply

Amy January 28, 2010 at 2:38 am

My first vita-mix creation would definitely be freshly ground peanut butter! I love my Maranatha as much as the next person but there’s nothing like homemade =)

Reply

AB January 29, 2010 at 3:20 pm

A VITAMIX??!! Whoa! I would definitely make an exotic nut butter first! Maybe a pineapple-coconut macadamia nut butter or caramel-apple walnut butter — or better yet, white-chocolate pumpkin pecan butter. Yum!

Reply

Samantha January 30, 2010 at 2:21 am

If I won the vitamix the first thing I would make is hummus. I ate a lot of hummus every week and when I tried to make my own, I broke the blender :( Of course the second thing I would make is peanut butter babies. yum!

Hi Katie, I just discovered your blog recently and tried these last night. I found I needed to add a couple drops of water to get everything to come together in my food processor, but maybe my dates were just extra dry… but nonetheless, thanks for sharing a great treat! My husband and I each ate half the recipe prior to our run, and it was a great little energy boost that even kept me satisfied for a little while after our workout. I think next time I will make German-chocolate-cake babies using pecans and toasted coconut flakes!

Reply

Melissa April 10, 2010 at 3:13 pm

OMG! I just made these and they are fantastic! I’ve had them 3 days in a row now. Have you tried freezing them? The dates won’t ever actually freeze, they just get CHEWY and wonderful!!! I use Bahri dates since they are sweeter and softer than even Medjools. They make perfect babies. :)

I’m going to be trying to contribute to the Worldwide Vegan Bakesale in April and I’m thinking of making babies and selling those instead of baked goods. :) Would you mind such a thing? I think you’re the creator and I’d hate to make money (even if it’s for charity) without your permission.

I’m not able to get to the official sale in MN due to doing my big art sale of the year (I crochet stuffed animals and cutesie stuff!) but I want to sell at my table on the day and donate the proceeds.

Also, if someone wanted to send you a gift – do you ever give out a mailing address/PO box? I think you are very sweet and I’d love to send you a handmade little something for all your kindness and AWESOME recipes that have made my life happier! :D

Yes, exclamation point happy today. ;)

Reply

Lorin April 21, 2010 at 1:45 am

Is there any replacement for dates? Can you use something else or is it necessary to have?

Reply

Chocolate-Covered Katie April 21, 2010 at 1:59 am

Lorin,
Some people have told me they’ve had success with prunes, raisins, or even dried figs. If you try something, let me know what you tried and how it turned out :) . One of these days, I’d really like to try dried figs in place of the dates!

I’ve been in a major dessert making mood lately and have been trying out quite a few of your recipes. I’ve been eating Blondie Cookie Dough by the spoonful all week! I just made a batch of babies and they are delish. I went for the chocolate peanut butter baby version and made them into balls. They definitely taste better than a Larabar! I see myself making many different versions of these. The nut to date ratio is perfect. I have a minor Larabar addiction so I’m thrilled to find this recipe. I LOVE your blog :) Thanks so much! ~Leslie

Hi Katie,
I got the ingredients to make these but I’m wondering about the addition of chocolate… you say that cocoa powder or chocolate chips can be added to make it chocolatey, but how do you think it would turn out with hot chocolate mix?
Thanks for all your awesome recipes. :)

Hi Katie!
I came across your blog ages ago but lost the link, and came across it again recently and I just wanted to say… I’m in love. I’m not vegan nor is anyone in my family, but I love your recipes! I’ve always been pretty open-minded about what kind of recipes I make so it wasn’t too hard to win me over, but I’ve actually gotten my father, who is definitely harder to persuade to try vegan/more “unusual” ways, to love your blog too. I’ve already made the deep dish cookie pie to great success (making it again this weekend), and I just made these chocolate peanut butter balls and they’re just… amazing. I haven’t yet decided whether I like them more warm or cold (I know, serious business) but either way they’re soooo good. And the fact I’ve converted my dad as well is just more proof. ;) (He’s actually willing to go out and buy tofu for the chocolate fudge pie! Big deal considering tofu is not something often seen in this household…)
Anyway, just wanted to say thank you! I’ve already started using the voluminous oatmeal every day (admittedly it doesn’t work as well for me as it does for you – for some reason it’s still somewhat liquidy in the morning – but it’s still tasty and more filling than any other breakfast I typically eat!) and I’ve bookmarked plenty of other recipes I intend to try soon. :)

Reply

Chocolate-Covered Katie October 25, 2011 at 10:47 pm

Aww, Lena, your comment meant SO much to me!

And lol about the tofu… that pie is actually how I got one of my ex-boyfriends to finally stop dissing tofu. He tried the pie and said it was awesome… then I told him it had tofu. He refused to believe me. ;)
