Strawberry Shortcake for One

Hi, my name is Kate.

I was born in London, I have long brown hair, and I have a younger sister.

Sadly, no prince charming… yet.

Despite the similarities between Kate Middleton and myself, I must confess I’ve not been keeping up with the royal wedding at all. In fact, I didn’t even realize it was so soon until yesterday, when #royalwedding tweets bombarded me on Twitter.

Always up for a “theme cooking” challenge, I scrambled to create a recipe for the occasion:

Or, rather, it would have been healthy cream if there’d been more time! With less than 24 hours to think up a recipe, make it, photograph it, and then blog about it, I had to take a few shortcuts (hence the soyatoo in the photo). Please don’t tell the queen! Winking smile

Having not lived in England since I was a baby, I was pretty clueless about British desserts (aside from a reference to Banoffi pie in one of my favorite movies, Love, Actually). I often think of berries and cream in association with my birthplace; normally with scones. However, time did not permit me to create a healthy scone recipe, since I’ve had no prior scone-making practice. Therefore, I turned to a recipe with which I do have previous experience—the single-lady cupcake!

Of course, married maidens (like Kate Middleton, as of today!) will need to double the recipe. Perhaps this single-lady cupcake is not truly traditional. But it is truly delicious.

For a more-traditional treat, do top with the above-linked healthy cream. Alternatively, this cupcake is sweet enough and flavorful enough that you can easily opt to eat it completely naked. (Interpret that statement however you wish.)


Strawberries-n-Cream Cupcake

(Makes one cupcake, Single-Lady style!)

  • 3 tbsp flour (I used white-whole-wheat. You can use all-purpose, Bob’s gf, or even ww pastry)
  • 1/4 tsp baking powder
  • heaping 1/16 tsp salt
  • 1 or 2 tbsp chopped strawberries
  • 1/2 tsp vanilla extract
  • 1 tbsp coconut oil (You can sub a different oil; however the coconut oil gives it a rich flavor and fun texture. You can use applesauce for a fat-free version.)
  • 1 tbsp plus 1 tsp milk of choice (Use less if using liquid sweetener.)
  • 1 tbsp sugar or 1 packet stevia (I omitted, but most people will want some sweetener)

Preheat oven to 330 degrees. Mix dry, then add wet. Mix until just combined (don’t overmix), and bake for 17 minutes or so. (Baking time will vary, depending on the flour and oil/applesauce you use.) Or, you can cook it in the microwave, in a mug or small dish.

Did you watch the Royal Wedding?
Have you been following the coverage at all?

I didn’t watch this morning, but I most definitely will be interested to see the photos (the gown! the cake!) in People magazine. I wish them well and really hope it lasts; they seem to have a strong bond, not rushing into anything. And I admire her courage. As handsome as Prince William is (and as nice as he seems), I don’t think I could handle all the media scrutiny that comes with being a princess!

    1. No, my dad works in intl. insurance, so they lived in London. I only wish I had been older when I lived there! We went back once when I was five, but I wanna go back again!! I love everything about England (including you ;)).

  12. I watched the two proceed from the church and the great kiss on the balcony, but I didn’t get up at 4 am to see it all! I watched the highlights 😉 But Kate was absolutely gorgeous! I wish her and William the best of luck. Kate especially, though, because she gave up a lot to marry William. I’m sure she will be a wonderful queen, though!

    1. Haha I saw the first kiss, because my friend had it on… but I went away and apparently there was another (better) one. It must be so awkward for those two to have to share a kiss in front of so many other people! I felt bad for them LOL!

    Love the cupcake! So pretty. Berries and creme are definitely British. The wedding was at a gnarly 3 AM local time, and I have to work today, so I didn’t get to watch it. I wish I could though. The whole royal wedding thing has been pretty exciting. I’m not usually one to follow celebrities, but royals are worth celebrating, especially in a Commonwealth country. :) I wish them all the best.

  14. I watched the end of it while I was doing my strength training just to see the dress and hear the music. I have not followed any of it, but I will look at pictures later too! The cake looks perfectly delicious!

    1. Oh darn it! I should’ve taken a weight-lifting day and watched while I lifted! I am always looking for ways to make weight-lifting less tedious for me!

She’s gonna be great :-) British desserts…..hmmm…..over here you see a lot of fruit crumbles, sticky toffee pudding, scones with clotted cream, Shortbread, good old carrot and choccie cake, spotted dick(!) , pavlova, apple pie and custard/cream…..the list goes on! i”l make scones and put them on my site to show you what it’s all about here in England :-)

    1. Awwwwww thank u! But in truth I still really am NOT a good photographer :(. I’ve heard that a good photo is one where you hardly have to edit it at all… that is not the case with any of the photos I take. They need a lot of editing to look pretty! I’m just starting to learn more about my camera, and I finally took the plunge to not shoot on automatic all the time anymore! That was scary lol!

      So in summary, I can’t really offer any photography tips because I really am still learning! Now if you want photoshop tips… 😉

    1. No, I haven’t posted it yet :-?. I just haven’t been able to find the right way to word it without sounding offensive and… well, just having it come across in a way I don’t intend, if that makes any sense.
      And honestly I haven’t really had much time to look at what I wrote and even try to change my wording, due to school obligations. I still do hope to post it someday… I worked really hard to write it!

        I say just post it. People who follow you and have read your blog know that you would never mean to offend anyone, and so I think that won’t be a problem. Nobody will put you down for putting your honest opinion out there. Some people might disagree, but there is nothing wrong with that. You worked hard on it, and I am dying to read it, so I say post it and if worse comes to worse (which come on, have you seen how much your readers love you? that won’t happen) you can simple take it down or lock the comments.

    I have the perfect scone recipe – veganized from my granny’s traditional Scottish recipe.

    4 cups flour
    2 tsp baking powder
    2 tbsp sugar
    1/2 tsp salt
    about 1/2 cup vegan margarine
    1 handful of sultanas
    Enough soy milk to make the mixture come together

    Mix margarine into flour with your fingertips. Add sugar, salt and baking powder. Add sultanas and soya milk. Roll until about 3/4 inch thick and cut out with scone cutter. Bake in oven at 180 degrees for around 15-20 mins.

    Mmm… a strawberry cupcake would be the perfect addition to my wedding ceremony evening. I watched the whole ceremony but I had coconut crackers instead (Any idea if I can find coconut oil or butter in Japan?)

    As for the wedding, Kate was sooo beautiful! I’m glad I watched it. The dress, the hair, the make up, the flowers – everything was perfect. My romantic side was on seventh heaven :) .

    1. Me too! I wanted to make a true strawberry shortcake recipe, which is why I didn’t call them “strawberry shortcake for one” in the first place… but with all the other recipes I want to post about, I might just scrap my shortcake plans and simply go with this one!

    It’s weird, because it’s TOTALLY something I would be into, but I’ve been so busy with other things! I do hope to read/watch some recaps of the wedding when I get the chance though!

Ugh, I guess that figures, since it’s a traditional “sport.” I am with you… I just don’t understand how you can call shooting at an innocent, unarmed animal “sport.” I mean, if you took a shot (or punch) at an unarmed man, it’d be considered “UNsportsmanlike”! Now give the foxes a gun, teach them to defend themselves, and then you’d have a fair fight (not that it’d make me hate hunting any less)!

    Can I sub raw honey for the sweetener in this/and also the deep dish cookie??? Do you think it would make it too runny? also what about using coconut flour??? any luck with that?

    1. I’ve not tried it, so you’ll have to experiment… if you use liquid sweetener in this recipe, just add a little less other liquid :). I wouldn’t use coconut flour, though. It has a crumbly texture and doesn’t hold up well when used alone in baked goods. It’s best mixed with other flours. Unless you WANT a super-crumbly muffin… that’s not always a bad thing!

    My mother was slightly obsessed with following the wedding (good grief). But i must admit, when the coverage was on all day, I COULDN’T LOOK AWAY. I was completely addicted =). Also, the hats were completely fantabulous!!!
    But i was wondering if you could sub peanut or almond butter for the coconut oil, or would that make the batter too dense? Or maybe that could be alleviated by mixing it with a little milk or water?? Hmmmm…. but either way this looks fantastic and i cant wait to try it!!!! Thanks for the recipe

    1. You definitely can… but I think, like you said, you’ll just have to add a little bit of liquid to make a thinner batter. If you try it, let me know how it turns out! :)

    This tasted great! I found that just half the amount of stevia was fine but then again, I might be like you and not be fully attuned to our sweet tastebuds. I tried it with whole wheat flour and found that it still tasted alright as long as you don’t mind a denser muffin which is actually the kind I like!

    Tried theese now. I used ww flour, 1 tbsp oil, 1 tbsp milk, ½tsp honey and 3 small strawberries. I put it in mini muffin forms, so I got like 3 mini muffins. I only had them in the oven in 7 minutes. They were kind of gooey on the inside and crispy on the outside. DELICIOUS! Thanks for this recipe :)

    I may have put just a tad too much strawberry — one large strawberry, one smaller one — as I got a lot of mushed strawberry in one of the two I made. That aside, I liked these even more than the banana muffuns! (BTW: I used one tbs wheat flour and 2 tbs all-purpose)

    1. You can… it’ll give it a completely different taste (slightly strong, from the oil). But if you don’t mind the flavor, it certainly will work!

    But I was wondering if you had any recipe measurements for a regular sized batch of your single lady muffins? As a college student these could be a good thing to freeze and thaw for a quick breakfast or snack
