Chocolate Zucchini Muffins

There’s a zucchini in my dessert!

I love zucchini: the taste, the color, even the name. (It’s fun to say, right?) Therefore, it is only natural that I’d enjoy zucchini paired with one of my other great loves: chocolate!

rcc

Such as in the above recipe: Chocolate Grasshopper Pie.

In general, zucchini lends moisture and softness to recipes without leaving an offending flavor. So, although it might sound strange, the squash makes a great addition to desserts.

I’m not the only one who likes zucchini in her desserts. My friend, Lindsay, does as well. And if Lindsay likes it, it must be good… because Lindsay is a best-selling cookbook author!

c

Lindsay and I first became friends through our blogs, and I’ve been so excited to watch my sweet friend flourish into a vegan-cookbook phenom. You might know her super-cute blog, The Happy Herbivore. Today, I am honored to have Lindsay as a guest on my blog, highlighting a recipe from her cookbook—Chocolate-Zucchini Muffins!

In Lindsay’s words: Moist and chocolatey, you won’t believe that these muffins are healthy, almost completely fat-free and have a veggie slipped in! This is also a great way to use up all that leftover summer harvest zucchini!

Chocolate Zucchini Muffins

Servings: 12

  • cups whole wheat pastry flour
  • ¼ cup unsweetened cocoa
  • tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 whole banana, mashed
  • ½ cup raw sugar
  • ½ cup unsweetened applesauce
  • ¼ cup non-dairy milk
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • ½ cup raw sugar (optional)

Preheat oven to 350F. Grease muffin pan and set aside. If using paper liners, lightly spray inside of liners with cooking spray to prevent sticking. Whisk flour, cocoa, baking powder, baking soda, salt and cinnamon together. In another bowl, cream mashed banana with applesauce and sugar (use extra 1/2 cup for a very sweet, dessert-like muffin). Add in soymilk, vanilla, zucchini and any other optional add-ins you might like such as vegan chocolate chips or chopped raw walnuts. Stir until evenly combined. Add flour mix to wet mix in 3-4 batches and stir until just combined. Spoon batter into greased muffin pan and bake 18-25 minutes, or until a toothpick inserted into the center comes out clean.

Chef’s Note: These muffins store well both in the fridge and freezer & the raw sugar in this recipe may be reduced to 1/2 cup.

My favorite zucchini recipe (as of right now..it changes weekly..ok, minutely..) would be zucchini pizza. So yummy and absolutely healthy as can be. 😀 It would be exciting to flip through this cookbook as I’m a beginner in this world of food. 😀

  2. Ashley B. says

I could eat my mom’s zucchini bread every meal, every day…and I’m certain the same is true for these muffins that I’ll be trying soon!

  3. Emily says

Mmmmmm I love Lindsay’s recipes! My mom and I are awful gardeners but our neighbors are generous enough to give us their surplus of zucchini. I love shredding it to make raw pasta noodles and topping it with marinara sauce and nooch.
My favorite muffin flavor is probably pumpkin. Actually, anything pumpkin is my favorite.

  4. Tabitha says

Chocolate in zucchini bread???? When I was a kid, my mom used to make zucchini bread that was to-die-for! Can’t wait to try this! I loooooove zucchini. I use it in so many things. Lately, I mostly use it as a raw pasta substitute, or in raw miso soup.

  5. Emily says

My favorite zucchini recipe is Zucchini Crumb Coffee Cake!!
Grilled zucchini can’t be beat in summer though!

  6. Alex says

My favorite muffins are morning glory – love the shredded carrot and raisins inside. I’m sure I would love a similar zucchini muffin

  7. Alana says

My favorite DAILY treat is an adaptation of Elana’s Pantry Chocolate Chip Zucchini Muffins. I just add more zucchini (tip from HH!) and flax seed instead of eggs and oil then add a little less agave, which sweetens it perfectly, and it comes out a gooey mess!

  8. Shannon says

Ohhh…lala… I may just a NEW favorite use of zucchini as well as muffin flavor with this recipe! Before now, my favorite way to eat zucchini is grilled with other vegetables for a Veggie Fajita!

  9. krickit6 says

Another vote for Zucchini Bread!! Its one the most delicious things my Mom makes, so I always look forward to eating it when I visit my family 🙂 🙂 🙂

  10. Qi Ting @ Misadventures of Fat free Baking says

Sadly, I can’t make the Zucchini muffins!!! I can’t find zucchini in Singapore! Any way these delicious muffins can go without it? Or can cucumber replace the zucchini? Haha I’ve never had zucchini before so I’ve no idea how it tastes like and what can replace it!
By the way, LOVE Happy Herbivore! Been reading it since 2008! 😀

  11. Angel says

I have three favorite ways to use zucchini. I LOVE it sauteed with red peppers and onions, I enjoy it “spiralized” and served with pasta sauce, and we have a fabulous chocolate chocolate chip zucchini bread recipe.

  12. Michelle says

I am addicted to “zucchini bread oatmeal”…grated zucchini, walnuts, raisins, and lots of cinnamon. Sounds weird, but I promise it’s amazing!

  13. Rachel says

Mmmm, I love zucchini! Bread, muffins, raw pasta, ratatouille, you name it. In the summer I could (and often do) eat plain ol’ sauteed zucchini for dinner every single night and not get bored because it’s just that delicious.

My very favorite muffins will always be lemon poppyseed, though . . . still gotta try your recipe! 😉

  14. Ashley O. @ The Vegetable Life says

Oh my goodness I love zucchini in just about everything and those chocolate zucchini cupcakes look like they are to die for!!!!!!! Gah, I would have to say that I am a lover of a traditional zucchini bread. I love things old school 🙂

  15. Beth says

My favorite use for zucchini: mini carrot-zucchini muffins that are so good the neighborhood kids come and ask me if I have any for them! Also I love it sauteed with a little garlic and olive oil. Yum.

  16. Jennifer JCD says

Eeeee… you know THAT Linndsay! Wow! I love her book; it’s sitting on my kitchen counter right now (because I didn’t put it away after making dinner last night.) That’s not to say I couldn’t use another one to gift to someone. 😉

As for cougette/zucchini, chocolate cake is the recipe everyone loves most around here, but I like it best in a courgette/zucchini orzo pasta dish. It’s so subtle and delicious!

  17. Albizia says

I’ve never tried anything sweet with zucchini but I love zucchini and oatmeal fritters. They are just… to die for! Maybe I should try to add zucchini to something different anyway 🙂

  18. Alicia says

There is a Mediterranean Breakfast Bake I LOVE to make that has zucchini in it…. Yummmmmo!!! And I love these muffins, zucchini bread, and veggie lasagna with zucchini in it!!!

  19. Lauren says

I love zucchini too! I’m a big fan of zucchini bread, I love that it adds that moisture and flavor but still tastes like a treat!

  20. Weslea says

So it may not be toooo healthy, but every summer for as far back as I can remember, we would have fried zucchini sandwiches. You put the fried zucchini with lettuce, tomato, onion, horseradish sauce, and may all on bread. Probably horrible for you, but soooo amazingly delicious! One of my favorite memories of summer!

And I love blueberry muffins and chocolate chip muffins! 🙂

  21. Aisatsana says

I love zucchini in almost every way, sliced into “noodles,” stir-fried, roasted, grilled, steamed, or baked into goodies. Lately, I’ve been enjoying it sliced thin and sprinkled with some nutritional yeast, salt, and onion powder (and any other spice that catches my fancy :)). So yummy! Thank you for your blog, Katie!

  22. Lori says

I love grilled zucchini and zucchini in stir frys! Actually, I love it no matter how it is prepared. I’ve made baked goods it before but not very often.
Don’t enter me for the cookbook, I have it. Can’t wait for her next one! Though between all your fantastic recipes and Lindsays it makes it pretty tough to decide what to make next!!

  23. Sarah says

I LOVE cranberry zucchini bread with walnuts! So festive 🙂 Muffin flavor is definitely carrot/walnut (apparently I love walnuts in baked goods??) and Lindsay ROCKS!!

  24. Eryn @ Pumpkin's Pantry says

I love making “noodles” for raw pastas with zucchini. Second fav is baking with it in any kind of bread/ muffin, etc. My zucchini is blowing up in our garden, so I will have to come up with many uses for it this summer!

  25. Kelsey @ CleanTeenKelsey says

These look so good! I’ve never made zucchini bread or muffins. I just might have to make these. 🙂 My favorite use for zucchini is probably roasting it. Mmm, it’s so good. My favorite muffin flavor… that’s a tricky one. I guess it depends on how I’m feeling that day!

  26. Caitlin says

I love to fry zucchini and have them as fries- they’re also really good in a tofu mash with squashes! I’m going to have to try chocolate and zucchini sometime- can you believe I haven’t yet?
And I love Happy Herbivore! Just checked out her blog, and it is definitely going to have to be one of my morning must-haves!

  27. Desi@ThePalatePeacemaker says

My favorite zucchini recipe is my mother’s chocolate zucchini cake. It is the cake of my childhood! I have missed it so since going gluten/dairy/egg/soy/refined sugar-free! Thanks for this giveaway, Katie, and for the lovely guest post, Lindsay!

  28. Tricia says

    Hehe, what a cute book!
My favorite way to use zucchini is roasting them and putting them in lasagna :P, but I’m certainly open to putting them in desserts.
And my favorite muffin flavor has got to be… Banana nut 🙂

  29. Desiree says

Those look so yum! Looks like I’m doing some baking today (or maybe this evening after things cool off!) I love love love zucchini bread, who doesn’t! There is a cake that a local bakery makes here called “Spring Fling” cake that is out of this world and uses Zucchini. It’s not vegan, but I am sure it can be modified. It’s topped with a beautiful arrangement of fruit that makes it almost to pretty to eat!

  30. Chelsea says

I love love zuchinni! My mom taught me this recipe where it’s simple yet delicious as a side. You slice up the zuchinni as a you would a cucumber and cook it on the stove. On the stove you have a mixture of balsamic vinegar, olive oil, and some Mrs. Dash. Mmm they become to moist yet crunchy and delicious!
I love cookbooks as well though ;D

  31. Sarah says

I’m a big fan of grilled zucchini–it’s on the list of veggies I haven’t put in a baked good yet (and that’s a short list!) I’m actually attempting an eggplant bread-pudding, in the oven right now, maybe zucchini would work in that too?

  32. Janice says

I used to work at a cafe all through high school and the zucchini muffins were by far my favorite – tasted even better when toasted with a smear of butter. For some reason it was one of the least popular (blueberry and double chocolate were always sold out) so I was always very happy to take all the leftover zucchini muffins home at the end of the night. 🙂

  33. Kalyn says

Mmm! I love grilled zucchini, zucchini bread, and zucchini bars, but they sound delightful in muffin form, too!

  34. Kristin says

My hubby refused to let me grow zucchini…until I baked it in chocolate and now he is a fan! Thanks for this awesome recipe, I am excited to try vegan! Lindsay’s book looks amazing and I adore your blog! Thanks!

  35. Kristin @ STUFT Mama says

LOVE zuchinni and LOVE this recipe. I can’t wait to try it. Chocolate + zuchinni= fabulous!!!! 🙂 I love just putting a little garlic, sea salt and parmesan on sliced zuchinni and baking it in the oven. Perfect veggie side dish for summer. Happy Friday!

I love zucchini bread! I also just love it roasted with other veggies! I love reading new cook books and trying new recipes.

  38. Karen Faivre says

I love apple muffins – they are soooo good! I am really happy to see this recipe because I really want to get away from all the oil and sugar in muffins; the zucchini muffins look very promising AND I have all the ingredients on hand! Anyway, why I love Lindsay? Her recipe for single serving brownies! It’s the bomb!

  39. Adam says

love breaded zucchini dipped in marinara sauce!

and favorite muffin, wow, I don’t know of there’s a muffin I don’t love lol

  40. kate says

I havent had zucchini muffins but these look delish.. I love zucchini on the grill its my absolute favorite way to cook it!

  41. Priscilla says

Hi Katie! I also love how the word sounds but maybe a little too much, I even named my car zucchy. And I like eating it in a ‘dulce de leche’ muffin. My grandma always makes them when she knows we will be visiting.

  42. Christina says

We once had a cat named “Zucchi”! I love zucchini raw, grilled and in chocolate zucchini bread (yum!). Zucchini is great in a savory breakfast muffin, too. I’ve followed Lindsay’s blog for years and I ordered the book, but it sold out. I noticed that the book is back in stock, and Amazon never bothered to fill my order. Hmmph!

    • Happy Herbivore says

Hi Christina! When the first edition of the book totally ran out, Amazon cancelled all the outstanding orders (you should have gotten an email notification from Amazon). The second edition has been here since April, but you’ll have to create a totally new order. I’m not sure why Amazon did it this way–sorry for all the run around. You can find the book in B&N and other book stores.

  43. Todd says

I like to use zucchini in baking, especially paired with chocolate. I’ve actually made Lindsay’s muffins using her blog recipe (delicious). I’d love to get a copy of her cookbook!

  44. Brieann says

Is there anyway not to love Zucchini?? I love it just sauteed with some sea salt and olive oil or in place of the noodles in a veggie lasagna Yummm!!

  45. courtney says

I am strange and actually LOVE bran muffins! Not the overly sweet ones, but the ones with a bran-taste to them. SO GOOD. Although, I think I need to try these zucchini ones to be sure they are not my new favorite… 🙂

  46. Anne says

I love zucchini just by itself, but my mom & I also like to put it in just about anything (muffins, bread, cookies) to trick my sister and dad into eating it… of course we always tell them after they’ve gobbled it up.

  47. Erin says

I like raw zucchini with hummus. I will have to get more creative this year when my garden starts producing! And my favorite muffin would have to be banana chocolate chip!

  48. Susie says

I’ve been eating so much zucchini lately–this recipe looks amazing! I adore roasted or grilled zucchini!

  49. Kimberly says

I love zucchini in zucchini bread with chocolate chips of course! My favorite muffin is a vegan whole grain muffin with any kind of berry in it. I love Lindsey because not only does she create wonderful vegan recipes but they are extremely low fat which is an extra step I try to follow every day.

  50. Holly @ The Runny Egg says

When I was younger, my parents had a garden and they grew they most massive zucchinis! My mom would make a zucchini bread that was out of this world. That is definitely my favorite use for zucchini!

I love Happy Herbivore so much – I’ve done loads of the recipes from the blog but I don’t have the book so that would be nice 🙂 I especially love her pumpkin muffins!

  54. Stephanie @ StephSnacks says

I love zucchini plain oil grilled with some olive oil, salt, and pepper! yum! And my favorite muffin has to be a pumpkin-cream cheese muffin fo sho 😛

  55. Anne says

my favorite way to eat zucchini is straighttt uppp. but if it MUST be cooked, i like baking it in the oven until it’s slightly burnt 🙂

  56. Monica says

Oh my gosh!!! This recipe was one of the first vegan baked goods I ever made (and they’re awesome, too!), off her website! Awesome!

  57. Alexandra says

Zucchini! How I adore zucchini…my mom made me the best zucchini bread, for sure, but zucchini really is just fantastic however. I have a constant vegetable craving and zucchini, lightly steamed or roasted can make me one happy bunny!

  58. tracey says

How I love zucchini, let me count the ways!!!! For dinner…I love zucchini as a pasta substitute (raw or lightly sauteed in earth balance) with raw pesto or marinara; for dessert, probably chocolate chip zucchini muffins. I can’t wait to give this recipe a whirl…maybe with a little stevia baking blend for the sugar…:)

  59. Amanda says

My fav use for zucchini is breaded zucchini sticks! Loved them ever since I saw the recipe on happyherbivore.com, would love a copy of her book!

  60. megan says

Wow I love all the ways you use vegetables and chocolate together and these muffins sound delicious. My favorite way to eat zucchini is definitaly grilled or made by my friends mom in her mutant sized zucchini bread because her zucchini comes straght from their garden. soooo goooood. My favorite muffin flavor however is banana. iI absolutly love them. I also love this chance to win a cookbook by a Lindsay because I would love to see all the exciting recipes she has to offer!

  61. Jeanie says

I would so love to win this cookbook! The Happy Herbivore would be an incredibly Awesome compliment to my cookbooks!
I love to use zucchini in cookies and bread. But…..mostly I just cut it up in salads. It also tastes fabulous in a sauce for pasta. So, I eat it all kinds of ways. Oh, and it takes ever so delightful in a blender based soy smoothy! Yummo!
    Thanks for sharing this Katie!

    blessings,
    Jeanie

  62. Katie M says

I love zucchini…my mom breaded and fried it in oil. Tasty but not exactly healthy. I love to just spiralize it and use it as pasta. I’m really not a muffin person…except for cranberry orange! Super tasty. I love sweet and tart combinations.

  63. Danielle says

My fave way to “fix” zucchini is by slicing it in 1/3 planks, tossing with EVOO, roasting at 400 for 20 mins, tossing with S&P and red pepper flakes. I think it’s pretty tasty, and my husband loves it! HH is an excellent blog, I’d love to win the cookbook! Thanks for all you do, Katie!

  64. Alyssa says

I love zucchini, love chocolate, and LOVE the Happy Herbivore! (I already have the book, and love that too, lol)

    Have a great weekend, everyone!

  65. Therese says

I’ve been lusting over this cookbook! It’s so predictable, but my favorite zucchini recipe is my mom’s whole wheat zucchini bread with walnuts. Although I do love grilled zucchini slices as well…

    Happy Friday!!!!!!

  67. Stephanie Norton says

I absolutely love love love Raw Zuchini Pasta! Yum! Also, love having it on the grill! Mmm mmm 🙂

  68. Courtney says

My favorite use for zucchini as of late is to grate them in the food processor and add them to turkey burgers with italian herbs. It’s an easy way to make my hamburger-loving family eat a far leaner burger with a hidden veggie they’d never touch otherwise.
Also, my favorite muffin flavor is bran. Boring, I know, but bran muffins are so good warm! Nutty, moist, and slightly sweet but not in that Otis Spunkmeyer heart attack muffin way.

  69. Eleanor@eatinglikeahorse says

I use it, sliced thin, as a gluten-free pasta substitute in lasagne – it’s brilliant! Love chocolate cake with it too though 🙂
Lindsay’s blog’s great; I love the recipes, the writing – and the elephant logo 🙂

  70. Megan says

I love making zucchini pasta noodles, tossing in some bean burgers shaped into “meat”balls, and drenching it in sweet basil tomato sauce.

  71. Sarah says

Nothing beats a fresh, hot out of the oven, blueberry muffin..although I’m not one to turn my back on lemon poppyseed or raspberry marzipan either 😉

  72. Lori says

I love zucchini bread! I also love pasta with zucchini. It is my husband’s favorite summer vegetable!

  73. Lee @ in the pink of condition says

So funny that i just read this post, because I posted about zucchini on my blog today! it is one of my favorite vegetables of all time, so I’m glad it’s in season! gotta try the grasshopper pie for sure 🙂

  74. Kianni says

I definitely like making zucchini muffins! Well I like baking and general. And adding vegetables to it makes it strangely more fun, lol. My favorite muffin..depends on my mood XP I usually don’t like chocolate flavored muffins, but like muffins with chocolate in them. Otherwise, blueberry! or banana nut on occasion. I could never eat poppyseed, the texture weirds me out!

  75. Katelyn @ Chef Katelyn says

I love Lindsay a LOT…and zucchini muffins! I also loooove zucchini bread, you would never know that there are veggies in them!

I would love that cookbook. I can never get too many! I have about 4o books (insane), and I read them like other people read their news papir. It is crazy !

  78. ellalinea says

Just leave a comment on this post, telling me your favorite use for zucchini, your favorite muffin flavor, or how much you love Lindsay!

–> I love eating zucchini in zucchini bread or just grated with hummus
–> my favorite muffin flavor is apple-cinnamon

  79. Rachel says

I love zucchini noodles! I love my spiralizer… I need to get a bit creative though, that grasshopper pie looks amazing!

  80. Marty says

Sweet potato blueberry muffins or rhubarb hands down! Zukes, lightly grilled or sauteed with leeks and summer squash with fresh basil and oregano, with Daiya mozz cheese lightly sprinkled on top! I’d love a copy of Lindsay’s book, as I recently just found her blog, yeah another vegan blogger! Though I’m gluten-free, still figuring the alternatives! Y’all are making me hungry with your choices!

  81. Averie (LoveVeggiesAndYoga) says

Zucchini please as raw pasta noodles with homemade peanut sauce all over them. Nothing better!

Oh wait, yes your cheesecake and grasshopper pie is looking better than zukes as pasta noodles 🙂

  82. Rachel says

coincidence -i just made a zucchini-eggplant-onion-cannelli bean stir fry for my mom and i today, we put it on top of rice pasta and it was pretty good! even though we undercooked the pasta and it was kind of crunchy…and i had the vegetables on the stove top too long and they shrunk hahaha

  83. Anna says

My parents always use zucchini to make their zucchini casserole. It is basically spaghetti without the pasta ^_^

  84. Lindsay@LivingLindsay says

First of all, she has a wonderful name. 🙂 I love zucchini and make a MEAN chocolate zucchini cake. Yum!!! I also just love adding it to salads or sauteeing it as a side 🙂

  85. Tori (Fresh Fruition) says

Zucchinis aren’t a common occurrence in my house, but I want that to change! I’ve heard from a couple people in comments on my grilling post that they’re good sliced up and grilled! I really want to try it now 😀 How awesome would grilled zucchini be on a fresh salad?

And favorite muffin flavor- hmmm. I’d have to say banana! I love the flavor of banana in the morning!

  86. Emilia says

Mmm, did i hear zucchini AND chocolate together? Now I’m most definitely bookmarking this lovely recipe 🙂 Good call, HH and Katie!

  87. Becky says

Zucchini bread takes the cake, no doubt about it! Love your blog and Lindsay’s, too! There are lots of healthy foodie bloggers out there, but only a handful that I visit on a regular basis. My friend and I have a few-months-old whole foods blog: skinnyfatgirls.wordpress.com. Oh, and my favorite muffin flavor would have to be…blueberry! Or cinnamon. Or chocolate chip. Or cornbread muffins. Oh good grief, muffins rock this world.

  88. Dominique @ being domUnique says

Zucchini bread all the way! My grandma also always makes FRIED zucchini medallions, which are not as healthy, but just as delicious!

  89. Jialin Zhang says

I love zucchini during the summer, when it’s on the grill! 🙂 But in stir fry, it’s pretty good too!

  90. steph says

I had no idea how much can be done with ZZZZZZ……I have so much from my garden and never now what to do except grill ir shredd it for hashbrowns….also..the ever favorite chocolate zucchini bread!~

  91. Kelsey @ Unmitigated Grub says

I love The Happy Herbivore! Those muffins looks so good! My favorite way to use zucchini remains good ole’ zucchini bread. With chocolate chips of course! 🙂

  92. Natalie says

Muffin flavor – oy vey, remember those MASSIVE double chocolate chip muffins at costco? WANT.

  93. April says

I love zucchini muffins!!! I can’t wait to try this recipe out! Zucchini pasta is also delicious, but for me, the desserts always come first! 🙂

  94. Vogelstar says

There is a naturally vegan muffin that my mom makes without knowing it’s vegan. It has dates, walnuts, cardamum. It is so flavourful and middle eastern tasting and it’s chewy and moist. Im drooling just thinking about it. But chocolate zucchini muffins sound pretty darn good too.

  95. Monique says

My abosolute favorite muffin flavor is pumpkin chocolate chip <3 <3 I can't get enough of these! Everytime I stop by my local bakery/cafe I have to get a dozen or so to eat for the week (or day . . .) So wonderful 🙂

  96. Mary @ Bites and Bliss says

I’ve yet to use zucchini in muffins! Do they really change the taste that much? Or is it just to “hide” veggies? Anyway..my favorite muffin recipe is lemon poppyseed!! Classic 🙂 It reminds me of my childhood.

  97. amy says

i am usually a zucchini hater, but i love it in baked goods, especially zucchini bread!
my favorite use though is at hugo’s tacos in studio city, ca. they make an amazing potato, soy chorizo, and zucchini filling that you can get in tacos, burritos, tortas, or pretty much anything else you can think of. so good!

  98. Aja says

My boyfriend’s family steams zucchini and we put cheese over it. It is delicious. Zucchini bread is so good, too.
I love lemon poppy seed muffins.
    Muffins, zucchini, chocolate. Yum, heaven!

  99. Maddy says

It’s too hard to choose whether I love Lindsay or zucchini more! I love grilling zucchini for savory preparations but for sweet, nothing beats a warm slice of zucchini bread with chocolate chips and walnuts right from the oven mmmm 🙂

  100. Moni'sMeals says

these are good muffins, I have made them before. 🙂

I love zucchini chips and zucchini pasta (grated up) for a side salad with seasonings, hummus, olive oil, and lemon juice. 🙂

  101. Chris says

Zucchini Rosemary soup is one of my favorites-‘tried it on a wine tasting tour in the Finger Lakes in NY and loved it. Zucchini grilled, in baked goods, and fritters are also great. I love that Lindsay’s style of vegan cooking is low or fat-free yet really delicious–the healthiest!
I’ve gotta try that grasshopper pie!

  102. Rachel says

zucchini is fantastic, and for some strange reason i never thought to use it in desserts! definitely trying this one soon.
    Thanks Katie & Lindsey!

  103. Nancy says

How to choose? I love the pickle relish my mother used to make, I also love it stuffed and baked and I love it with onion and mushrooms in a little olive oil or just grilled. How about in zucchini bread? All of this from a girl who never liked squash! Now it looks as if I will have to try some new ones!! Thanks for the inspiration!

  104. Tara says

Ahhh I’ve made these before!!! Love this recipe! Chocolate zucchini is defintely one of my favorite muffin flavors. I know this sounds weird, but one of my favorite uses for zucchini is in tofu mousse. I add it to chocolate tofu mousse and it’s sorta like chocolate zucchini muffin batter. I know that’s a bit of a stretch, but it works for me!

I’ve always found using zucchini for anything other than baked goods just lacked the flavor punch I want. Any tips? And favorite muffin flavor would have to be a warm, fresh lemon poppy seed with lemon icing….melt in your mouth deliciousness 🙂

  106. Lori says

My favorite muffin flavor? Ham and Cheese Corn muffins. That’s at the top of my savory category. Sweet category? Those gazillion-calorie poppy seed muffins.
Thanks for the giveaway! I can’t wait to poke around the website and see what else is going on here. (Came over from Lily and Thistle http://lilyandthistle.blogspot.com)

Oh you know I’m gonna try making this. I’m thinking to try upping the veggie count by adding cubed, steamed kabocha. Maybe top with sesame seeds. Mmm….. I just finished cutting a bunch of kabocha into fry and chip shapes for shorter prep, and I think a few pieces would be glad to make it into cupcakes!

  108. Donna says

My favorite use for zucchini is ratatouille- favorite muffin is blueberry. And yes, I love Lindsey and will buy her book whether I win any contests or not. Also, I love your blog, Katie! Keep up the great work!

  109. Kristi says

I love making zucchini chips. Seasoning them with bread crumbs and other seasoning and then baking them. Ohh… so good.

  110. Cait's a Runnerchick says

heck to the ya, chocolate and zucchini!! 🙂 my favorite thus far has been zucchini bread, but i’m thinking that would change if i were to try one of these muffins Lindsay has baked up. i think my favorite kind of muffin in general is a tie: a chocolate chocolate chip one, or a coffee cake style one with that crumbly stuff on top. that crumbly stuff is AMAZING!! 🙂 and CONGRATS, Lindsay on your cookbook! 🙂

  111. Veronica says

I love banana in my muffins. Chocolate banana, peanut butter banana, banana nut, banana blueberry, I love it all! Aaaaaaaaaand I bet I’d even like banana muffins with zucchini in them!

  112. Kate says

I’ve never actually tried zucchini in bread or muffins. That clearly needs to change 🙂

Even though I don’t eat muffins ever, really, I loved blueberry and banana nut muffins when I was younger.

  113. mcintosh says

Not a huge fan of zucchini but probably only because I’ve had steamed mushy ones lately but growing up my friend’s mom made amazing zucchini bread. Probably similar to Lindsay’s cupcakes….yum!

  114. BroccoliHut says

I just made a summer corn soup last night featuring the mighty zuke, and it was pretty awesome!

  115. Abby says

My FAVOURITE muffin flavour is citrus-chocolate chip… the lemon juice and orange zest mixed with the yumminess of chocolate is just to die for! Also I love slipping sweet potato into my desserts 😉

  116. Jess (In My Healthy Opinion) says

I love zucchini strips baked in the oven and zucchini bread!

HH’s recipes are SO good! 🙂

  117. Karine says

    Hey!

Oh, I’d love to win one copy of the Happy Herbivore! This cookbook looks really great.

I think my favorite way to use zucchini is in baked goods. And my favorite kind of muffins is a chocolate-y muffin.
Wait, I might just have seen a recipe that combines both! 😀
On a savory side, I also love stuffed zucchini, for instance.

    Take care!

  118. Meghan says

I love roasted zucchini, but my favorite recipe with zucchini is for super healthy lemon-poppyseed-zucchini muffins! I need to make some very soon 🙂

  119. kaila @ healthy helper! says

I love Happy Herbivore!!! Lindsay has such great recipes!!! My fave way to use zuchinni is in chili or in my carob zuchinni muffin tops!

  120. Nikki says

My favorite muffin flavor is blueberry. I prefer to use fresh blueberries rather than the frozen or fake stuff in box mixes. It’s such a treat!

  121. Laura says

My favorite way to make zucchini is stuffed with sauteed mushrooms, onion, and quinoa with melted Daiya cheese on top. My favorite muffin flavor is my grandma’s blueberry crumb muffins, made with wild Maine blueberries. Yum!

  122. Rachelle says

I love zucchini! In bread, in a stir fry, muffins, roasted, raw….the delicious possibilities are endless!

  123. Valerie Premore says

I love zucchini in chocolate chip cookies! It just makes them so moist and way lower in calories! YUM!

  124. wingraclaire says

I’m a gardener…. so you know I must end up putting zucchini into EVERYTHING! Some days when I’m lazy I grill large slices. Then I layer them into a casserole to use for lasagna instead of noodles. It’s really good that way!

  125. Laina says

I love zucchini many different ways. I love it roasted with other veggies like onion, tomato, eggplant, mushrooms, etc.

I love it made into spaghetti noodles. I love it steamed with very little flavoring so I can taste the squash.

I love any zucchini bread recipe. Zucchini is so versatlile, I’m so glad it’s one of those easy veggies to grow.

And I do love Lindsay, her website and her recipes!

My favorite muffin is probably blueberry.

Your recipe above looks delicious, can’t wait to try it. As soon as I have some zucchini ready from my garden, I’ll be making this. I love that it’s so healthy!

  126. Brandie says

Honestly, my fav use for zucchini is a toss up between plain ol steamed (omg yummmmmmmers!) and maybe zucchini bread/muffins (tastes a lot like banana bead to me and gets yer veggies in at the same time!)

My favorite muffin is cranberry orange.. or MAYBE, almond poppyseed.

And I tested for Miss Lindsay for her upcoming HH cookbook – I love her too! I had so much fun testing for her, and actually found myself loving some recipes I never would have thought of… or thought I would have liked 🙂 Expanded my palate a bit, she did! 🙂

  127. Jessy says

I love zucchini! It’s actually one of my favourite vegetables. I often cut it in noodles and use it like pasta. I also like it in lasagna!

  128. EmilyK says

Hi!! I’m a long time lover of your blog and just started my own blog about the small things in life that make me happy! and I would have to say zucchini makes me happy just simply grilled on my George Foreman!

  129. kathy says

I love zucchini steamed and lightly seasoned. I also love it in Dr Furhman’s chocolate cupcakes from his book Eat To Live.

  130. Jackie Smith says

My favorite zucchini treat is the chocolate-chip zucchini bread that my college cafeteria made—there was probably a cup of oil in it. Yikes!!! This no-fat version looks delicious!

  131. Lori says

My favorite use for zucchini is zucchini bread. It’s so flavorful and moist. Can’t beat it. My favorite muffin may be Cinnacrunch Muffins from the American Vegan Kitchen cookbook. Man! Those muffins are heavenly. I took them to work and no one guessed they were vegan. Even my sons, who do not eat a vegan diet, loved those muffins. 🙂

  132. Karen Faivre says

I made these muffins this morning and they were delicious! I did NOT use the optional 1/2 cup sugar so they were barely sweet. I wanted just a touch more sweetness so I added a thin layer of chocolate frosting – I call it Minimalist Chocolate Frosting. Quick and easy. I’ve posted it on my website along with a photo of how great this muffin turned out!

  133. Amanda @ The Beauty Notebooks says

I haven’t had much zucchini in my life yet (sad i know), but I love it in zucchini bread!

  134. Megan@eatmybeets says

I’m not sure if this is still going, but I figure I may as well give it a try. I like to slice zucchini with a vegetable slicer, saute it with some onions, and sprinkle with pepper, salt, red pepper flakes, and parmesan cheese. Favorite muffin is most def blueberry. And I looove her cookbook title and the healthy spin!

  135. TechyDad says

My favorite thing to do with zucchini is roast it. Slice it thick, toss on some olive oil, salt and pepper and put it in a 425 degree oven for 16 minutes (flipping halfway). Of course, in baking, zucchini bread it always nice.

  136. Karen Sederquist says
