Banana. Chocolate. Coconut.

‘Nuff said.

From its moment of birth, Coconut Banana Butter screamed (loudly!) for a chocolate fix. Not a fan of whining, I gave the crying baby what it wanted:

Pure love on a spoon. Or in a jar. Or in my mouth. I like the sound of that last one.

Naughty Girl Butter

(or Chocolate-Fudge Frosting!)

  • 4T melted coconut butter or homemade coconut butter
  • 2T (or more!) cocoa powder
  • scant 1/16 tsp salt
  • 1/4 tsp cinnamon
  • 80g very-ripe banana (1/2 a large banana)
  • optional: Feel free to sweeten, if needed

Blend everything (or mash with a fork).

Adding chocolate was a no-brainer, but naming the baby proved trickier. For this, I turned to Twitter. And I discovered y’all are way more creative than I am.

By the way, I changed my twitter name to @ChocCoveredKt.

A peek into my brain: When asked for ideas on a topic, it’s natural to sometimes draw a blank. In the written world, they have a name for this phenomenon: writer’s block. But do you ever experience idea overload? If so, welcome to my world! Sometimes people email me and say, “I’d love to start a blog, but I’m afraid I’d quickly run out of things to post about!” I want to respond, “Please, take some of my thoughts! I have too many!”

For example, Coconut Banana Butter:

Now that I know coconut and banana go well together, it’s opened the door to a million and three new possibilities. Maybe a million and four.

  • Coconut Butter blended with raspberries or strawberries
  • CBB blended with maple syrup or extract
  • Banana Butter made from Gingerbread Butter
  • Coconut Banana Butter balls (with crushed oats)
  • Raspberries blended with Cacao Bliss or Hot Chocolate Butter
  • Coconut Butter mixed with PB2 or peanut butter
  • Coconut Banana Butter blended with applesauce
  • Coconut Butter (or coconut banana butter) with pumpkin

And that’s just the list of coconut-banana-butter recipes. You don’t want to know about all the other ideas fighting for room in my mind. It’s as if Full House were back on the air. Your Mission: Please help a girl out! Try some of these and let me know what you think. There’s just not enough time in the day to try them all, myself. 😕

    I don’t have a name for this but I have an opinion – WOW! Banana, chocolate and coconut is one of the best combos ever! This spread on top of some rye bread…perfection!

    This is kind of weird, but yesterday, I posted a “recipe” on my blog for toast spread with coconut butter and topped with banana slices and chocolate chips. I guess great minds think alike 😉

    I want to try the coconut banana butter blended with oatmeal and some frozen mango! Or freeze it to make coconut banana melties – YUM! Or maybe make a coconut-banana variation of one of your raw pies!

      Great minds DO think alike! Yesterday, I turned the chocolate coconut banana butter into a Raw Fudge Cake. I haven’t written the post for it yet, but I am REALLY REALLY excited about this recipe. The cake is soooo dense and fudge-y :).

          Katie, I just made the coconut chocolate banana butter last night. I do not care at all what you call it, it TASTES so incredible! Like eating something so decadent it’s unreal. Thank you so much for the yummy idea! I was a bit wary about the cinnamon at first, but I added it because you’ve never steered me wrong before. And you were right again. This stuff is awesome! I have to stop this comment so I can go eat some more!

    Girl, I totally feel ya on brain overload. In fact, this always seems to happen to me when I’m either a) trying to fall asleep or b) on a run. Neither of these times are too conducive to writing my thoughts down, so I actually tend to lose some of my best ideas… le sigh…

    Haha, mostly, I am the same! My brain sometimes is too fast for other people to follow my thoughts 😀 though speaking extremely fast doesn´t really help here… 😉
    I will definitely try some of your ideas out! I haven´t tried suggested coconut butter for ages and now… I am ADDICTED!!! It is exactly as you said! I can´t get enough of it! I made a Pizzert this morning and, guess what, topped it with coconut butter 😀

    I have idea overload too! My problem is I hardly ever scribble down an idea when it pops into my head and then I forget! 🙁

    Pretty sure I jumped out of my seat to run to the kitchen to make chocolate banana coconut butter after reading your post this morning. It is amazing! Strawberry or raspberry coconut butter sounds sooo good too! and I have strawberries and raspberries right now, so both are going to happen this weekend. 🙂

    I have idea overload! Every read some of my posts?! lol. They are a smorgasboard of everything! I have tried the past 6 mos or so to really: Focus. Narrow it down. Hone it in. And have switched to 2x/day posts so each are shorter. So yeah, i totally understand!

    Love the choc-coconut-banana combo…and yes, there are a zillion places to go with that in the future. Endless combos!

    Yum, seems like you have been tapping into my brain! Last week I made one batch of Chocolate Coconut Almond Butter (mixed Artisana CB with Maranatha crunch Almond butter, Navitas Cacao Powder and stevia), then I had Justin’s Chocolate Hazelnut butter which was much too sweet for me so I mixed that with the Coconut Butter (OMG BEST BLEND EVER!) and this week I’m going to mix the rest of the coconut butter with pb! Great foodie loving minds sure do think alike =0P

    Okay so you introduced me to coconut butter and I went on a hunt to find the Artisana coconut butter and I am soooo glad I did! It is amazing!! I cannot wait to try all of the recipes that use it! Though I must say that it is not below me to eat it with a spoon out of the jar, it is THAT good 😉 Thank you!

    hmm… does coconut butter taste at all like coconut? I assume it does… if so – has anyone made it with something else? looks SO yummy, and I can even overlook the banana with all the chocolate (my real issue with banana is the texture and the smell anyway and I’m semi-over that), but there is no way I am eating anything coconut-y even if it looks this yummy…

      Hey B,
      I actually don’t think coconut butter tastes like coconut AT ALL. And as for banana, you could use a very-unripe one (and add a little sweetener) to lose the banana taste. But you can try it with peanut butter… it won’t firm up like a cake, but it does make a delicious spread. If you do try this, let me know how it goes! 🙂

    holy smokes this stuff taste goood!!! i think i put in too much coconut butter though (i measured it very roughly with a large spoon and i did about 4 big spoonfuls of the butter not the oil) because it turn out into more of a pudding consistency, which still tastes delicious! i also tried it with peanut butter (two big spoonfuls of peanut butter), half a banana, some cinnamon and i didn’t measure out the cocoa powder, but i put in a good heapings worth! thanks for the delicious recipe ideas!

    P.S. I didn’t use any sweetener and it still taste delicious! oh and i’m using Nutiva Coconut Manna that I got from Whole Foods. Have you ever tried this kind of coconut butter? and how does it compare to Artisana Coconut Butter? Thanks! =D

    Hi Katie, just spent an early morning hour reading your recipes, love all of them, i am allergic to banana, aswell as wheat, gluten, sweetners, i am wondering what would or could i put in the recipes other than banana? I am new to the allergy diets, as in this is my 6 weeks of giving up wheat and gluten, and my 1st week of giving up banana’s and sweetners, i had an allergy test done, and trying to cut out the foods giving me the silent inflammation. Look forward to continuing to read your website.

    Kate! i’m really excited to have found your website, it’s fantastic! i have been making something along the same lines as your butters. my daughter (she’s four) loves nutella but of course i never buy it so…..i mixed cream of coconut concentrate from tropicaltraditions.com, almond butter, coconut oil, dark cocoa powder, raw protein powder from sprouted grains, some green food (can’t taste it at all so why not?), either raw honey or liquid stevia or both for a sweetener and a pinch of salt. my daughter LOVES it either as dipping or on a sandwich and i LOVE that it’s good for her. also, i just LOVE it 🙂

    I saw your recipe for coconut concentrate chocolate pudding, which could be turned into fudge ( no bananas in it). Now that I have assembled all the ingredients, I cannot find the recipe. Would you be kind enough to send it to me ir tell me where to find it? I tried all kinds if key words without luck.
    BTW, I accidentally bought sweetened coconut. Would that work? I would just omit the honey it called for. However, I was looking forward to trying my Calabrian pepper honey, which I think would be delicious with the chocolate – next time.
