Good Girls go Bad…

Above is the result of freezing Coconut Banana Butter.

It hardens and turns into fudge, proving wrong my previously-held assumption that warmed, spreadable coconut banana butter could not get any better. It just did.

raw fudge

Good Girl Vegan Fudge

    • 4 tablespoons melted coconut butter (or homemade coconut butter)
    • 1/2 a large, very-ripe banana (80g)
    • 1/8 to 1/4 tsp cinnamon
    • scant 1/16th tsp salt
    • You can add sweetener, if desired

Make up a batch of the above recipe. Then smooth it into a container. (Plastic containers work well, because you can pop the fudge right out.)

Place in the fridge for a few hours, or freeze for a few minutes if you’re an impatient mamacita. You can freeze it for longer periods of time, but just be sure to thaw for at least 20 minutes prior to eating.

vegan maple fudge

Mmmmmm healthy fudge. It’s almost too good to be true!

Even better than this recipe?

Be sure to try my healthy Chocolate Peanut Butter Fudge.

Woah. I MUST make this now! I’ve resisted buying coconut butter in the past, but you keep tempting me, and fudge is my weakness.
And to answer your question: Heck no, I’ve never been a “good girl”. With my multiple piercings and tattoos and love of wearing black, I’ve always been a bit of a rebel ;).

Now I need to go click on your “fudge flavor list” and see about this PEANUT BUTTER fudge!

    • Sarahishealthy says

Me too! I mean, sugar-free fudge? Usually sugar-free means it has loads of aspartame or sucralose, neither or which I trust. Oh, or now companies are saying “sugar free” when it has agave. Umm, agave is a sugar last I looked.
So I am psyched about this recipe!

  2. Jennifer JCD says

Haha, our music teacher said it was ‘every good boy deserves fudge’.

Ah, all your coconut butter recipes looks so delicious!! I guess I’ll have to find a place in Canada that can ship it to me, because nowhere near me sells it. Boo. Must. Find. Coocnut Butter.

And the weather warmed up here so much I felt like I was running in Texas this morning. 🙂

      • Jennifer JCD says

Oh, it was still -5C/23F (plus a light wind) but we’ve had such terribly cold weather for so long this felt so warm and nice. It’s all relative. And it’s only going to last a week before the -27C/-17F returns.

PS – You complain about the cold, but I complain about the heat. We very rarely go on holiday anywhere tropical because anything above +26C/79F is way too hot for me. I remember visiting Florida and Alabama when they were +118F and it was unbearable! I don’t know how you do it!

        • Chocolate-Covered Katie says

Woah, it was the same temperature in Canada and Texas yesterday morning? Too funny.
But yeah, I’m with you: when it gets to be over 100, I go from the air-conditioned house to the air-conditioned car to the air-conditioned mall. Even the pool is like bath water!

  3. Jen S. says

Seriously, Katie, my newest addiction is your blog and trying out the recipes. Good thing I have a boy who works in a hungry office! I can make up a batch, keep a little for us, and send the rest to work. =)

Good girls are simply bad girls that haven’t been caught yet. 😉

  4. Anonymous says

hooray- I just made the peanut butter version! It is heavenly- so smooth! I think next time I’ll do 50-50 peanut butter though, as I LOVE peanut butter. Oooh and I’ll have to try an almond version… and macademia…. also all I had was relatively coarse sea salt, so I kept getting salty bites, but it was like those gourmet caramel / sea salt candies- so yummy!

Do you have any hints on making small batches of things in the magic bullet? I halved the fudge recipe and it was really hard to blend because everything kept getting stuck on the sides and top. I thought about adding some liquid, but knew that would throw off the recipe. I even considered adding water then letting it evaoprate as most of the ingredients aren’t too water soluble, haha, but then I stopped playing amateur chemist and figured I’d ask you (or other readers!) for any tips. Thanks!

    • Chocolate-Covered Katie says

Hmmm… I’ve had trouble making small batches of things in the MB sometimes too. What you can do is make a bigger batch and then freeze the leftovers (in this case). Or blend, then open the bullet and scrape the sides. Then blend some more. Scrape, blend, scrape. Definitely don’t dilute with water, because it sacrifices the rich taste.

  5. Christin@purplebirdblog says

I went through a rebellious side in high school, and another one in my early 20s. I have since grown out of a lot of the craziness, but what’s funny is now that I have a lot of visible tattoos including a full sleeve, I get labeled as a “bad girl” on occasion when that could be farther from the truth these days! 😉

    • Aimee says

Isn’t it funny that because we have tattoos, people automatically assume we’re “badass”? I get that too! And yet I am a homebody who likes to go to bed early and would rather cuddle with my cat than go out to bars, so really I’m a good girl in a bad girl’s body I guess LOL!

      • Christin@purplebirdblog says

Girl, I hear ya! There is nothing more fun to me than cuddling with the pups and the man watching a movie on the couch! I hardly ever go out anymore! 🙂 I will admit though, because I’m such a big softie, sometimes the tattoos come in handy. My stature as well, I’m 5’9” and pretty broad, so people are intimidated by that too!

  6. Jillian says

Oh my, Chocolate and Peanut Butter fudge!! I can’t wait to try it!

Definately had a good girl image. Actually, come to think of it, I still do…. 🙂

  7. Alisa Fleming says

You are my sugar-free goddess Katie!!! I’m on a sugar “break” for ten days, and it is killing me! I have loads of bananas on hand (and coconut butter of course), so this will be made today!

  8. Aimee says

This looks incredible! I’m especially keen on the maple variation you posted in your link. And the peanut butter cup one too! 🙂

  9. Bianca- Vegan Crunk says

OMG, Katie! You are brilliant! I’m totally trying this. As for my image, I wouldn’t say I have a bad-girl image, but I’m certainly no good girl either. I think I just come across as fun. I can drink and party with the best of them, but I’ve been pretty good at avoiding being arrested. 🙂

  10. Kelsey @ Snacking Squirrel says

i just finished making that combination version i mentioned of your cookie dough balls, both the gingerbread and peanut butter and OMG not only do they smell like a gingerbread man taking a bath in a jar of peanut butter, they taste I-N-S-A-N-E! i’m going to post them tomorrow morning, can’t wait!!

and now i have delicious fudge to make too it seems! MMMMMMM <3

  11. Gill (snaxandthecity) says

Katie, seriously, I would die without this website and your recipe ideas!!

I have lots of coconut oil but no coconut butter…MUST BUY!

I was always a ‘good girl’ too – straight As, sporty, etc – but I was also quite anti-establishment in my last couple of years of school (quietly) which I found amusing but didn’t really advertise!

  12. Amalfi Girl (EatRunHaveFun!) says

Definitely not the good girl. But I’m not a “bad girl”, either. I think, if anything, I’m the “unique” girl. 🙂

  13. Allison @ Happy Tales says

Yummmm I will be making some of that fudge once I get home from work tonight! (Seriously Katie… could you make my hours at work go by aaannnyyy slower? The treats you put on her look sooo good and I am stuck sitting at my desk for another hour!…. Okay TOTALLY kidding I love that you provide endless hours of entertainment and pretty food pics! Thank you, doll!)

  14. Mary @ Bites and Bliss says

I’m all for fast, super easy healthy fudge! 😀 And as for the good girl image, apparently I do. Probably because everyone thinks I still look 12. But whenever I tell a story about being “wild” (not wild-wild..but spontaneous or what not), people always give me a shocked look and say “You? You did that?! But you’re so innocent!” hahaha..guess it could be used to my advantage if I really wanted to be sneaky. bwahahaha! 😛

    • Chocolate-Covered Katie says

Yeah, that definitely does help. Sometimes, when I was around my “bad” friends, I really would find myself thinking bad things… and then I’d get home and be like, “Was I crazy to even THINK about doing something like that?!”

  15. Heather @ Life Gluten Free says

I want to make a lemon version!! Yum!

    Your blog is great 🙂

Also I wanted to say that I am a very petite person as well and I’ve gotten all those “well-meaning” comments from people about my weight. It can get old at times! It is also frustrating at times because honestly I wish I could easily put on some pounds if I wanted! Sometimes I feel bad because I can’t. Everyone is different and some people have difficulty gaining weight just as others have difficulty losing weight. It’s nice that you have put yourself out there on the blog and let people know your story!

  16. Alyson says

So, this is definitely the best stuff ever! I can’t wait to eat it! 😀 Just the thought makes me giddy! 🙂
I, too, had a “good girl” image throughout high school. It wasn’t a bad thing in any way. I was a christian, love everyone, be nice, don’t swear all the time, eat healthy, exercise, run a lot, draw in my spare time, get my homework done type of gal. 🙂 And, really I wouldn’t have had myself any other way! 🙂 Yay self-love!
    Much love girly!
    Aly

  17. Namaste Gurl says

Don’t you just love the properties of coconut? Hard at room temperature, and drippy when oozing hot? So many of us bloggers have taken advantage of the amazing properties- me included 🙂

  18. Averie (LoveVeggiesAndYoga) says

Coconut Butter + Banana incorporated…great way to use 2 of my fave items together at once!

You being a good girl and having the good girl image….I am not surprised that that’s pretty much who you are 🙂 You totally radiate good girl from all your posts…just sweet, caring, and a kind spirit! Of course, I may detect just a tiny bit of mischievousness…we all have a little of that side, too!

  19. Little Bookworm says

Fudge looks amazing! I don’t suppose you could use another nut butter instead of coconut could you? As it is not possible to buy it in the UK.

  20. Laura @ Sprint 2 the Table says

Thanks for giving me yet another reason to stop by the grocery store after practice tonight! LOL!

I think people perceive me to be more of a “rebel” girl than I am. It is just unusual for a fellow cube-monkey to be a derby girl with an extra earring or ten. 🙂

  21. Melomeals: Vegan for $3.33 a Day says

That looks amazing! I made some chocolate sauce from coconut oil the other day and it has hardened up into almost a truffle like consistency. Tooo delicious. Is there anything that coconuts can’t do?

  22. Jess@atasteofconfidence says

I definitely have a good girl image to some degree…but I think as I get older, that goes away a little bit. Fudge looks awesome!

  23. Helen says

I love fudge! I have a recipe for refrigerator fudge that is similar.

I was a good girl in high school, had a small period of “sort of bad girl”, never did anything illegal but went through my clubbin stage.

  24. *Andrea* says

healthy fudge!?!?!?! my dreams have come true!! seriously! fudge is like my all time favorite treat. i always used to eat it on vacation in martha’s vineyard and while my sister would have a few bites, i would demolish a whole block 😉

now i need to buy coconut butter to make it!

  25. Virginia @ YtotheUmmy says

This looks tastyy! I’ve been meaning to buy coconut butter, but it looks like I have a maajor incentive now 😉

  26. Ashley@Quasichick says

It’s no wonder you have so many CCK followers, you are a genius! Where do you come up with such amazing ideas?!?!? I can’t wait to make this in lieu of our “usual” fudge for the holidays…hmm I wonder of my daugthers classmates would like this instead of the typical Val Day candies!?

  27. Pure2raw twins says

YUM! coconut fudge sounds heavenly and so easy to make 🙂

I guess we were consider the good girls, I guess it would depend who you asked? haha We had some wild friends, mainly they were just more out going, but we were all crazy 🙂

  28. ashley C says

This looks soooo good!! Im definately a good girl too 🙂 Ive always wondered what you were like in high school or how you are now! Would you consider adding more personal stuff to your blog? Id love to get to know more about you (even though i seriously LOVE LOVE LOVE the recipes!!!) Either way your blog is amazing!!!

  29. Emily says

This is kind of unrelated (but not really since everything on your blog has to do with coconut) but I made candied brussel sprouts today. OHHHH MY. I ate way too many but they were so dang delicious. Thanks for the idea!
And I think some tiramisu fudge is in my near future. Maybe coffee, tofutti cream cheese and almond butter?

  30. kristine says

Yep, definitely had that same good girl image here. The only illegal thing I have ever done is speed in my car :0).

    Cheers to “Good Girls” !

And your fudge looks exactly like my grandmas famous banana cake!

  31. bitt says

    mmm this looks quite tasty.

in high school everyone thought i was a good girl but i had another side to me. which i will probably not reveal much of online lest it come back to haunt me.

  32. Claire says

People tend to see me as the innocent one in my friendship group but also the tomboy. Not too sure how the two go together but it’s been working for the last 19 or so years so must be onto something 😛

  33. Gracie says

I am dying over here….that looks JUST like “real” fudge!!! But sounds *better*, which I didn’t even think was possible 😛 You’re so creative, miss thang!

  34. Alex@Spoonful of Sugar Free says

    I’m likin the sugar-free fudge, Katie 😉

I am definitely the good girl of my friends…Always turned my homework in, do what I’m told, don’t do any of the junk others do…..Keep out of trouble 🙂

    • Chocolate-Covered Katie says

Hmmm… it wouldn’t be the same, because the coconut butter solidifies when it gets cold. But whatcha could try is maybe 1/2 coconut oil and 1/2 pb. Or 2/3 oil, 1/3 pb. Or heck, try it with just the pb and see how it turns out. It won’t be the same, but it might be just as good! Besides, are there any experiments more fun that peanut butter experiments?! 🙂

  35. Janel says

I told you before and I will say it again, Katie…….I heart you!!!! And not only is this a vegan recipe, but it can be raw as well.Woohoo!

  36. Amanda @ The Beauty Notebooks says

This vegan fudge sounds great! Especially if it’s chocolate 😉

I enjoy Larabars but never heard of Jocolat until you mentioned them today–now I absolutely have to have some!

  37. Nikki says

I’ve missed my fudge since becoming allergic to milk. Thanks so much for a recipe that’s dairy (and soy and sugar) free! You’ve given me a great reason to splurge on coconut butter.

  38. Lela says

I just tried this recipe today for one of my Thanksgiving desserts. I must say that this was amazing !!!! Thank you for this recipe.

  39. Sophia says

Katie, from the looks of your picture, you used a “bullet” type blender to make this. I tried to use my bullet blender to make the cookie dough dip but it wouldn’t work because the substance was not liquid like a smoothy so it was hard to get a consistent blend. Do you use the short cup? I want to be sure before i try this recipe with my bullet.

      • Sophia says

Thanks for the quick response. I’ll be sure to try the fudge recipe with my bullet and the cookie dough with a processor. Thanks for all your hard work in creating these wonderful treats!

  40. Angela O says

Hello, I am so intrigued by your recipes. I have always been a chocolate chip cookie fiend, ever since childhood, but got tired of eating away an entire meal in one soft and gooey cookie. So anyways, I would love to try some of your recipes but am allergic to coconut :-(. Do you have any other substitutions that might be just as good and healthy?

  41. Kailey says

I couldn’t get my blender to process the coconut shreds into a paste. Do you have any advice? I tried adding rice milk but it didn’t help.

  42. Juliette says

    Hey Katie
Again I was wondering how much “sweetner” should one put in? I don’t use Splenda or those nasty artificial ones because its bad for your health but in your sugar free recipes I can never find the alternative sugar you recommend . Agave and maple syrup and honey is still sugar so do I have any other recommendations and how much to use? Thank u so much

  43. Zarah says

I tried making this with peanut butter and pumpkin because I really don’t like bananas. It turned out very soft but also delicious! It was like pumpkinut gingerbread fudge!

  44. Olivia says

I played Katie today and made something without a cookbook PB cookie dough!
PB,chocolate chips,a little flour and powdered sugar and mixed it delicious!<3

  45. Analuna says

Hey- can anyone tell me how much fudge one batch makes? I want to bring some to my class for treats but I’m not sure how many batches to make! There are 21 people in my class. Thanks!

  46. Nicole says

Hi!! A friend just told me about your blog and I am so excited. I’ve barely even gotten to dig in and see what’s here but what I’ve seen so far is making OH SO HAPPY and Hungry 😉 Thanks for being such an amazing resource!

Can’t wait to make this! I love being a “bad girl” and by bad I mean pretty good with a hint of mischievousness but I need to be good to my body in order to keep being “bad!

  47. Natasha Nadel says

Like others, this recipe finally made me go out and buy coconut butter! My 2 kids and their 3 friends who were over loved it! When I saw how little it made, I doubled the recipe and everyone had a tiny serving. Not sure how many people the recipe is supposed to serve. We first made it and put it in the freezer for a half hour. Kids had a taste test and approved. So then we added melted chocolate chips (enjoy life) and froze it again for a few minutes. huge hit! Thank you!
