The healthiest fudge ever?
Dairy-free, soy-free, and even sugar-free!
Every good boy does fine Every good girl eats Fudge. (Never before have piano lessons looked so appealing.)
Good Girls go Bad…
Above is the result of freezing Coconut Banana Butter.
It hardens and turns into fudge, proving wrong my previously-held assumption that warmed, spreadable coconut banana butter could not get any better. It just did.
Good Girl Vegan Fudge
-
- 4 tablespoons melted coconut butter (or homemade coconut butter)
- 1/2 a large, very-ripe banana (80g)
- 1/8 to 1/4 tsp cinnamon
- scant 1/16th tsp salt
- You can add sweetener, if desired
Make up a batch of the above recipe. Then smooth it into a container. (Plastic containers work well, because you can pop the fudge right out.)
Place in the fridge for a few hours, or freeze for a few minutes if you’re an impatient mamacita. You can freeze it for longer periods of time, but just be sure to thaw for at least 20 minutes prior to eating.
Mmmmmm healthy fudge. It’s almost too good to be true!

Me too! I mean, sugar-free fudge? Usually sugar-free means it has loads of aspartame or sucralose, neither or which I trust. Oh, or now companies are saying “sugar free” when it has agave. Umm, agave is a sugar last I looked.

Oh, it was still -5C/23F (plus a light wind) but we’ve had such terribly cold weather for so long this felt so warm and nice. It’s all relative. And it’s only going to last a week before the -27C/-17F returns.
PS – You complain about the cold, but I complain about the heat. We very rarely go on holiday anywhere tropical because anything above +26C/79F is way too hot for me. I remember visiting Florida and Alabama when they were +118F and it was unbearable! I don’t know how you do it!

Around some friends I felt like the good girl and around others I felt like the bad girl. I guess that’s because I’m adventurous and open-minded but I had boundaries I refused to cross, didn’t like to drink, and was really dedicated to school.

hooray- I just made the peanut butter version! It is heavenly- so smooth! I think next time I’ll do 50-50 peanut butter though, as I LOVE peanut butter. Oooh and I’ll have to try an almond version… and macademia…. also all I had was relatively coarse sea salt, so I kept getting salty bites, but it was like those gourmet caramel / sea salt candies- so yummy!
Do you have any hints on making small batches of things in the magic bullet? I halved the fudge recipe and it was really hard to blend because everything kept getting stuck on the sides and top. I thought about adding some liquid, but knew that would throw off the recipe. I even considered adding water then letting it evaoprate as most of the ingredients aren’t too water soluble, haha, but then I stopped playing amateur chemist and figured I’d ask you (or other readers!) for any tips. Thanks!

Hmmm… I’ve had trouble making small batches of things in the MB sometimes too. What you can do is make a bigger batch and then freeze the leftovers (in this case). Or blend, then open the bullet and scrape the sides. Then blend some more. Scrape, blend, scrape. Definitely don’t dilute with water, because it sacrifices the rich taste.

I went through a rebellious side in high school, and another one in my early 20s. I have since grown out of a lot of the craziness, but what’s funny is now that I have a lot of visible tattoos including a full sleeve, I get labeled as a “bad girl” on occasion when that could be farther from the truth these days! 😉

Girl, I hear ya! There is nothing more fun to me than cuddling with the pups and the man watching a movie on the couch! I hardly ever go out anymore! 🙂 I will admit though, because I’m such a big softie, sometimes the tattoos come in handy. My stature as well, I’m 5’9” and pretty broad, so people are intimidated by that too!

Also I wanted to say that I am a very petite person as well and I’ve gotten all those “well-meaning” comments from people about my weight. It can get old at times! It is also frustrating at times because honestly I wish I could easily put on some pounds if I wanted! Sometimes I feel bad because I can’t. Everyone is different and some people have difficulty gaining weight just as others have difficulty losing weight. It’s nice that you have put yourself out there on the blog and let people know your story!

Hmmm… it wouldn’t be the same, because the coconut butter solidifies when it gets cold. But whatcha could try is maybe 1/2 coconut oil and 1/2 pb. Or 2/3 oil, 1/3 pb. Or heck, try it with just the pb and see how it turns out. It won’t be the same, but it might be just as good! Besides, are there any experiments more fun that peanut butter experiments?! 🙂

Katie, from the looks of your picture, you used a “bullet” type blender to make this. I tried to use my bullet blender to make the cookie dough dip but it wouldn’t work because the substance was not liquid like a smoothy so it was hard to get a consistent blend. Do you use the short cup? I want to be sure before i try this recipe with my bullet.

I’m confused… those are two different recipes. The bullet works for the fudge, but as stated in the cookie dough post it must be a food processor. I highly recommend Cuisinart! 🙂

Hello, I am so intrigued by your recipes. I have always been a chocolate chip cookie fiend, ever since childhood, but got tired of eating away an entire meal in one soft and gooey cookie. So anyways, I would love to try some of your recipes but am allergic to coconut :-(. Do you have any other substitutions that might be just as good and healthy?

It would be helpful if you gave some indication of the quantity that this recipe makes. 4 tablespoons of coconut butter and half a banana doesn’t sound like it would make much fudge…

I couldn’t get my blender to process the coconut shreds into a paste. Do you have any advice? I tried adding rice milk but it didn’t help.

It just takes a lot of time! Keep blending and magic will happen 🙂 It took me about 10 minutes.

I made this and it turned completely gray in the fridge! How did you avoid oxidation? (It was still good though :D)

If you look at my photos, they’re kinda grey too… not white. I guess that’s just the natural color for the recipe.

Again I was wondering how much “sweetner” should one put in? I don’t use Splenda or those nasty artificial ones because its bad for your health but in your sugar free recipes I can never find the alternative sugar you recommend . Agave and maple syrup and honey is still sugar so do I have any other recommendations and how much to use? Thank u so much

I tried making this with peanut butter and pumpkin because I really don’t like bananas. It turned out very soft but also delicious! It was like pumpkinut gingerbread fudge!

I played Katie today and made something without a cookbook PB cookie dough!
PB,chocolate chips,a little flour and powdered sugar and mixed it delicious!<3

It makes a very small amount. it also needs to stay cold. I would triple the recipe 🙂

Like others, this recipe finally made me go out and buy coconut butter! My 2 kids and their 3 friends who were over loved it! When I saw how little it made, I doubled the recipe and everyone had a tiny serving. Not sure how many people the recipe is supposed to serve. We first made it and put it in the freezer for a half hour. Kids had a taste test and approved. So then we added melted chocolate chips (enjoy life) and froze it again for a few minutes. huge hit! Thank you!
