Summer Peach Pie Crumble

See this peach crumble?

Really delicious peach crumble- no sugar, no added fat!

It’s not your average peach crumble.

It’s more like you are serving yourself a warm bowl of peach pie filling… Every bite bursts with sweet summer peaches, quietly accented by a soft and buttery crumble. This recipe is for anyone who likes their pie with extra filling and very little crust!

This crumble is really good topped with my ice cream recipe! It also makes a great ice cream topping, and it pairs nicely with coconut sorbet. Or serve it with your favorite plain or vanilla yogurt for a healthy and summery breakfast.

Summer Peach Pie Crumble

(serves 3-4)

  • 1/4 cup rolled oats, gf if desired (25g)
  • 1/2 tsp cinnamon
  • 1/8 tsp plus 1/16 tsp salt
  • 1/4 tsp baking soda
  • 1 1/2 stevia packets or 2 tbsp sugar or agave (or other sweetener of choice)
  • 2 1/2 tbsp coconut flour (I’m working on a version without coconut flour, hopefully to be posted soon.)
  • 6 loosely-packed cups sliced peaches (fresh or frozen) (580g) (or sub another fruit)
  • optional, for a more buttery flavor: 3 tbsp oil or melted butter-type spread (such as Earth Balance)
  • 1 1/2 tsp pure vanilla extract

Preheat oven to 380 F and grease an 8×8 pan. Combine all dry ingredients in a bowl, and stir very well. Put peaches in a separate (large) bowl, add the vanilla extract and optional fat source, and stir to coat. (If using liquid sweetener, also add it to the bowl of peaches.) Now evenly disperse the crumble on top of the peaches, and stir until it’s as evenly coated as possible. Pour into the pan, and cook 50-60 minutes, opening the oven after 30 minutes to turn the peaches (so all sides cook evenly). As mentioned above, this makes a fruit-heavy crumble: perfect for ice cream!

I brought this to a small “going away” lunch for one of my close friends who’s moving to Singapore. (She’d been married less than a year when her husband found out he was transferred!) I brought two versions—one with peach and one with strawberry. We all decided we liked the peach better. (Also, I really wanted to show you more shots of the actual crumble, but there were 8 of us at the party, so I couldn’t save more than a few pieces of peaches for a photoshoot.)

    Definitely watermelon and cataloupe too! Like you said they’re just not the same frozen…especially watermelon! I have plenty in my garden now to be picked, but I don’t know what to do with all of it! 🙂

    That crumble looks fantastic!! And the fruits I will miss the most will probably be watermelon and cherries. Though you can buy frozen cherries (which ARE delicious!), they are normally quite expensive. Perhaps I should freeze my own before the summer ends…

    I will miss cherries and blueberries the most! I don’t really like frozen blueberries that much. And about freezing watermelon… I tried it and it was kind of weird 🙂 Anyway, this peach crumble looks delicious!!!!!

    I will definitelly miss strawberries most! I can’t get them in fall and winter where I live! Actually, the regular “strawberry season” is over right now and the few strawberries I can find in the grocery stores are really expensive. I am looking forward for the next summer – and it’s strawberries!

    Looks so delicious, and I love that it’s more of the filling! I’ll miss fresh berries, like raspberries. They are lovely when frozen too, but it’s just not the same. I’ll probably miss nectarines the most, though. They can be frozen, but my freezer could never hold the amount I’d like to freeze.

    I love most of the summer fruits. I think I miss plums and cantaloupe the most. Soon it will be September and time for the very short season of one of my absolute favorites, Italian Prune Plums. They are small, sweet, and very juicy. Yum!

    Oh my gosh, Katie! Everything looks so amazing… I wanna make it all! Unfortunately, time doesn’t like me on the weekdays. Lol. Come the weekend, though..! I love how glowing you look (That sentence is correct, right?). It always reminds me to look on the positive side of life. Really! It’s so refreshing.
    WAHHH!!! I’ll definitely miss the cheap peaches. >_< It seems like everything is in season right about now… Like starfruit! I haven't even had a watermelon yet (as of this season). Now I know what I'm getting next time I go to the store!

    You can definitey freeze watermelon! I managed a smoothie bar for a couple years and one of our most popular drinks, year round, was our watermelon flavour. We cut off the rind, cut into chunks and froze in a large bucket. The smoothie blended watermelon with a chunk or two of mango and some fruit juice and the consistency was amazing! Truly thrist-quenching!

    The summer fruit I will miss the most is strawberries. Where I live we have an amazing strawberry season (Fraser Valley, in British Columbia). We are known for our local berries (berry capitol of the world) and California strawberries are absolutely NOTHING compared to our local stuff. We can get California strawberries year round but I honestly don’t even think of them being the same fruit!

    It’s winter here at the moment and gosh I miss peaches! But I would have to say mango and watermelon. They incredibly delicious on their own or in a salad or pie!
    And you can’t forget frozen grapes… Eating them by the bowl full 🙂

    Secondly, this looks simply deelish, Katie. I will miss a fruit I just discovered, pluots. I love them. They are described as 75% plum and 25% apricot. They are sweet, juicy, with a hint of tart. I might even try them in this recipe!

        I LOVE cherries, but I have “mouth allergies” to apples, pears, peaches, and cherries. Usually it just leaves me with an itchy mouth, but the last time I ate cherries, my throat swelled up. So now I’m just gonna have to leave them alone.

    Oh wow, I freeze watermelons all the time, even now; I think I actually like them better frozen than fresh…it’s kinda like a Popsicle! I don’t let the pieces thaw, then they get weird, but if eaten while frozen, it’s delish!

    I know it’s not a fruit, exactly, but I’m going to miss fresh corn on the cob!! In my house, it’s a summer staple. I know you can get it packaged year-round, but it doesn’t taste as fresh. And it definitely isn’t six ears for a dollar in the winter!

    I’m obsessed with peaches (shocking, I know) and peach season is already over for us this year. Very sad! We can’t get decent ones in the store – even during the season – they always are mealy and sour. So the only way to get decent peaches is to buy from the trucks that deliver them from Georgia a few times during the summer. I wanted extras for freezing but they sold out FOUR people ahead of us in line. No fair!!

    Really, watermelon is not good frozen? I don’t like it, so I’ve never tried it. Since my two-year-old is the only one in the house who likes watermelon, I’ve been freezing it for her. I figured it would be like popsicles. She seems to like it! =-)

    I LOVE that you are using coconut flour! I bought a bag awhile ago and just didn’t know what to do with it. I substituted plums for peaches (my plum trees won’t stop producing fruit) with delicious results!! I added some ginger and basil into the crumble, too, and it was great. Topped with some of your almond milk ice cream. amazing. Thank you for representing us Texas vegans well!

    Sounds yum! I have some coconut flour in the pantry. I’ve actually got a few questions for you about it- is it suppose to have a slightly bitter taste to it? Also is it suppose to be a low calorie substitute for normal flour or just low-carb? I am a tad confused about the coconut flour hype I must admit haha.

    Wow, that looks amazing, and I’m totally one of those people who loves pie filling and doesn’t care much for the crust, haha. Eagerly awaiting a regular flour version! I know you said peach was better, but I may try this with strawberries anyhow since I have a bunch of them in the freezer. That, and the last time I bought peaches I was totally grossed out to find a worm on the pit of one that looked perfectly fine and had no holes on the outside! 🙁 I’m kinda scarred by that, so frozen sliced peaches are probably in my near future, lol. And I’ll definitely miss the yummy variety of fresh fruits that summer has to offer, but it’s always nice when apples come down in cost ahead of fall. 🙂

    Katie, You absolutely can freeze watermelon. It is absolutely fabulous in a smoothie with some kale, lemon juice, and apple juice…like a watermelon lemonade slushie! The fruit I am going to miss the most are the melons, definitely. I grew a ton of them, this year, and have so been enjoying eating them…like liquid candy!!! I really don’t want the growing season to come to an end!!! By the way, I love your site. 🙂

      OK so I made the crumble.. Only to discover that I do NOT like cooked peaches :(. I appear to only like them fresh and cold from the fridge.. But when you post a coconut flour-free version, I shall repeat this process, with a different fruit of course.. Or maybe a dew.. I’m thinking apples and raspberries.. Or pears and plums.. 😉

    Can I make coconut flour by simply grinding up unsweetened coconut in my Vita Mixer until it’s flour like consistency?

    Yesterday I made this for my husband and I for breakfast using what I had on hand (regular flour) and with my time constraints, I halved it, put into two bowls and microwaved it. It was quick and delicious!

    I saw this on Pinterest and knew it was meant to be, because we came into a bumper crop of fresh peaches and have been having a hard time using them up! I followed the recipe to a T, and we all agreed it was delicious! The coconut flour, which I picked up from Whole Foods especially for this recipe, gave it such a great flavor, and it was perfect under ice cream as dessert, or eaten plain the next morning for breakfast.       Hi Teri,
      Highlight just the recipe part, then press “control c” then open a word document and press “control v” to paste just the recipe part into a document. For subbing the coconut flour, I think you might have to use more flour… but I haven’t tried it with almond flour. If you do, let me know how it goes! 🙂
